To make the salad, mix all vegetables in a
bowl, add octopus with some of the
marinating juices, extra olive oil and lemon
juice. Mix well to combine. Serve
immediately.
Deluxe Octopus Salad
Marinated Semidried Tomatoes
30 (1/2-inch) slices French or Italian bread
9 tablespoons extra-virgin olive oil
3/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
1 7-oz package Fruits De Mer® Marinated Tomatoes
2 tablespoons basil chiffonade, plus more for garnish
1 tablespoon chopped fresh parsley leaves
1/2 lemon, zested
1 tablespoon fresh lemon juice
1 teaspoon minced garlic
4 Fruits De Mer® Marinated White Anchovy fillets,
finely minced
Grated Parmesan, optional
Method
Preheat the oven to 325 degrees F. Place the slices of
French bread on a baking sheet and lightly brush on
both sides with 4 tablespoons of the olive oil. Season
with 1/4 teaspoon of the salt and 1/8 teaspoon of the
pepper. Bake until lightly golden and crispy, about 20
minutes. Set aside to cool.

While the toasts are baking combine the olive oil, 1/2
tsp salt, 1/8 tsp pepper, tomatoes, basil, parsley,
lemon zest and juice, garlic, and anchovies in a
nonreactive bowl and toss to blend.
Serve each toast with a heaping tablespoon of the
tomato mixture and garnish with grated
Parmesan, if desired.
Delicious with Chianti!
Mozzarella Appetizer Skewers with Anchovy Dip
INGREDIENTS
1/2 cup olive oil
Fruits De Mer Fattoush
2 tbsp. fresh basil, finely
chopped
Pinch of black pepper
1/2 tsp. salt
1 loaf Ciabatta style bread
2 balls Mozzarella Cheese, cut into 1” cubes
18 wooden skewers soaked in water for one hour prior to use.
Anchovy Dipping Sauce
4 cloves garlic, minced
1/3 cup unsalted butter

INSTRUCTIONS
In a small bowl combine olive oil and fresh basil, allow to
infuse for 1 hour or cover and set aside overnight.
Preheat oven to 400ºF (200ºC)

Cut Ciabatta into 1” slices and brush both sides with olive oil/
basil marinade, cut each slice into 1” cubes. Place on a baking
sheet and bake until very lightly golden on all sides; turning
occasionally as to avoid burning. Remove from oven. Skewer
cubes of Mozzarella with cubes of bread, starting and ending
with bread.

Anchovy Dipping Sauce:
In a small saucepan combine all ingredients and simmer
lightly until butter is melted. Keep warm until ready to serve.
Sit skewers over a shallow baking pan so that cheese does not
touch the bottom. Bake until the cheese begins to melt
approximately 5 minutes.
Serve with Anchovy dipping sauce.
Makes approximately 16-18 skewers
Marinated Anchovies
with Garlic
Ingredients
2 cups shredded lettuce (romaine and/or iceberg)
1 large or 2 small cucumbers, small dice
1 7-Oz Package Fruits De Mer® Marinated Tomatoes
6 Fruits De Mer® Marinated Anchovy Fillets in Garlic
1/2 cup chopped parsley, leaves only, no stems
1/4 cup chopped mint leaves, no stems
1/2 to 1 green pepper, diced
1 bunch green onions, finely sliced
2 pieces of pita bread toasted until golden brown,
broken into pieces the size of a quarter
Dressing:
1/2 cup lemon juice
1/2 cup olive oil
2 to 4 cloves garlic
1 teaspoon salt
Pinch of pepper
Method
In a small bowl mix all dressing ingredients well.
Put all salad ingredients in a large bowl and toss with
1/2 to 1 cup dressing. Serve immediately.
Delicious paired with Greco di Tufo
or Sauvignon Blanc!
