They decided to renovate an old farm that previously was a traditional olive oil mill. They have three kids: Stephanie, Gregory and Geraldine who grew up with the pleasure to cultivate de soil and the love of natural products. The family vegetable garden and orchard bring the raw material essential to realize their recipes that they sell on the local market. At the same time, they create their own gastronomic restaurant which quickly becomes a reference. That’s when their children started to help them. And it’s the beginning of a great adventure! Their products are getting more and more appreciated by French and foreign gourmets alike and the family business must structure itself, expand, modernize… to answer an increasing demand. Children are getting older. After different studies and varied experiences in their own fields, they decided to join the company. Stephanie is the first one to join the family business in 2000, after studying in a catering school and working in a vineyard. And then comes Gregory’s turn in 2001, who studied in civil engineering and worked in varied companies. Finally Geraldine joined the company in 2004 after passing a trilingual management assistant degree and working in Spain, in England and back in France. In 2003, Guillaume, Stephanie’s husband created his company called « Plaisirs de Provence » which sells Claude Catrice’s products. Both companies are quickly developing themselves. In 2005, Claude Catrice builds a new factory, modern and more functional that answers the latest European requirements. The new plant The production Sterilization Stock In 2013, Claude Catrice’s ’s company and « Plaisirs de Provence » merge and give birth to a new company called « Catrice Gourmet sarl. Claude and Gaëtane are now retired and each child found his place in the new company. Stephanie handles the accounts department and the invoicing ing together with the paperwork. Gregory handles the logistics and the maintenance and Geraldine handles the production,, the quality and research. Guillaume handles the sales department. Six other employees participate in this success: 3 in production, 1 in logistics, 2 in sales department. The products, the soil Settled in Provence, in the department of Var, Catrice Gourmet sarl, create and manufacture a wide range of Provencal Specialties (tapenade, anchoïade, ready-cooked meals…). On one hand, our inspiration is undeniably rooted in Provencal culture, and on the other hand it comes from our imagination and our love of food. This combination gives birth to original and festive recipes, reflecting our enjoyment in the finer things in life: olives and lemon jam, garlic and walnuts delight, green asparagus creamy sauce, pesto… The wide range of scents (basil, garlic, truffle…) offered by our soil can also be found in our delicious mix of flavored olive oils and salts. Our taste for cooking, the richness of our ingredients, the quality of the spices and our expertise are an invitation to enjoy and a happiness to be shared throughout the year. We are fiercely protective of our use of natural ingredients, our quality and the love of a good piece of work and we know that our clients are always searching for new products, so get set to drool at the sight of our catalogue! The Distribution At first, limited at the South-East area, our marketing is now growing to many French areas and towns (Lyon, Paris, Strasbourg…), and our success in selling our products under the brands « Brin de Terroirs », « Les Terroirs de Tourtour » and « Les Oréliades » is pushing us to open the international market. Our marketing in France is mainly centered on the Vineyards, Delicatessen shops and highquality shops or wholesalers. On the international market, we work with wholesalers for delicatessen shops or on-line shops (Switzerland, Belgium, Germany, England, Luxembourg, Taiwan…). Quality charter Founded in 1983, the company « Spécialités Claude Catrice », now called « Catrice Gourmet Sarl », is specialized in the manufacturing of varied and original regional products. Every recipe is imagined and developed in our laboratory. They are made with strictly selected ingredients and do not contain any coloring, additive or preservative. Regularly controled by the French Veterinary Services, the company « Catrice Gourmet Sarl » meet the hygiene and security requirements. The company is certified by the Sanitary Agreement # FR 83.121.003 CE. The manufacturing process follows the « process flow chart » according the directives of the Veterinary Services : - After being stocked, the raw materials are prepared, cleaned, weighted before being transformed (mixing, cooking). The product then goes into the metering pump machine where the jars are filled and weighted. Then the jars go into the capsuling machine where they are closed before being sterilized in an autoclave (pressure cooker) according precise sterilization values. - After the sterilization, products are marked (batch number and shelf-life), labeled and stocked before being sent to the customers. The process flow chart says that at no time of this process the goods can return from where they come. The implementation of an HACCP (Hazard Analysis Critical Control Point) approach within the company also allows identifying and estimating de risks at every stage of production. Identifying critical control points (CCP), establishing the limits for each CCP and establishing corrective actions all along the food chain allows the company Catrice Gourmet to make sure that produced foods are safe for consumer’s health. Different tests are realized daily in steam rooms to control the quality of the production. Furthermore, a traceability process allows following a product from the raw materials to its sale. Their sterilization allows an easy stocking of the products at ambient temperature and the shelf-life shelf is of 3 years after manufacturing date.
