This Gastronomic Route covers the municipalities of
Tijuana, Tecate, Valle de Guadalupe, Ensenada, and
Playas de Rosarito.
When we talk about the sea, we can be transported
to different locations, but there is one in the North of
Mexico that will take us beyond the impressive and
deep ocean, called Baja California. A land enclave
situated between two magic coastlines, the Pacific
Ocean and the Sea of Cortés, hosts a unique natural
aquarium created just for you, where hundreds of indescribable and singular species invite you to forsake
land and sink into the amazing world of the depths.
Feel free in a mysterious island where adventurers
arrive seeking to open their senses and taste, smell
or touch a whole variety of products that these lands

RED LOBSTER
This native specie from the coasts of Baja California
has been nowadays certified. It is traditionally eaten
in the State, and the most famous way to prepare it
is the lobster with beans of Puerto Nuevo, although
it is also prepared grilled and in salads, among other
preparations.
ABALONE
Baja California is the best quality abalone producer of
the world, hosting great fields of this mollusk. It is traditionally eaten across the State, prepared in ceviche,
shaved, in filet, in brine, in salad, in cocktails and as
abalone chorizo, among others.
TUNA FISH
Mexico is one of the main producers of tuna fish in
the world, and Baja California has the most number of
feeding pens of the Country. Nowadays, this fish plays
an important roll within the contemporary cuisine of
Baja California, being present in a whole diversity of
fresh dishes.
TYPICAL DISHES AND BEVERAGES
CAESAR SALAD
This internationally famous dish was created in 1924
by chef César Cardini in the City of Tijuana. The story
tells that one day, few Hollywood celebrities arrived
to have dinner late at night, but the kitchen had already closed, but still they asked if someone could
prepare a simple salad for them. So, with the few ingredients he had at hand, Chef Cardini prepared in
front of the gusts this salad out of his own inspiration.
First, he scrubbed a wooden salad bowl with a garlic
clove, and then placed romaine lettuce leaves, salt,
grated Parmesan cheese, toasted white bread croutons fried with garlic, extra virgin olive oil, lime juice,
and a touch of Worcestershire. Finally, he sprinkled
the salad with more grated Parmesan cheese and
served it so the clients could eat it with bare hands, in
a very informal way.
LOBSTER WITH BEANS
This dish became popular in the 1950s when the
wives of the fishermen of Medio Camino, nowadays
Puerto Nuevo, began to offer the tourists visiting
the area the most common dish among them: fried
red lobster accompanied with beans, rice, salsa and
wheat flour tortillas. It is the most famous and requested recipe in the port.

DISC FISH
This fish is spread with garlic and salt, and fried in oil
until it turns brown or golden. The name and peculiarity of this dish is that it is prepared in a traditional
utensil from Northern cuisine, called disc. It is a wheel
of thick metal with a slight depression in the center
where different types of food are fried and prepared.
FISH TACOS
They are prepared with marinated school shark, covered with flour and egg. Once fried, it is eaten in corn
flour tortillas with salsa, mayonnaise and lime.
CLAMATO
It is said that this beverage was created in El Acuedcto
Bar at Mexicali. It is prepared with tomato juice, clam
juice and spices. It is usually served with few drops of
lime juice, salt and Worcestershire sauce, or sometimes with beer or tequila.
MARGARITA COCKTAIL
This is the most significant and world famous cocktail
of Mexico. It was created in Ensenada during the 40s
by Mr. David “Deny” Negrete Covarrubias, who was
once asked by a lady friend. Mrs. Margarita Orozco,
to prepare a beverage with salt. Deny took a shaker,
squeezed the lime juice, added white tequila and
Cointreau, shaked it with ice and served it in a champagne glass, frosted with salt along the edge.
WINE
Over the last decades, Baja California has become the
main wine producer of Mexico, achieving international acknowledgment for its great quality. In the valleys of Guadalupe, Calafia, Santo Tomás, San Vicente
and San ntonio de las Minas, grapes like Cabernet
Sauvignon, Merlot, Tempranillo, Chardonnay,
Sauvignon Blanc and Moscatel are produced by
the main producing houses — Santo Tomás, L. A.
Cetto, Monte Xanic and Casa Pedro Domecq among
them— which create white, rosé, red, sparkling and
generous wines.

ACTIVITIES OF THE ROUTE
Baja California is discovery, curiosity, in a fascinating
blend of cultures, which provide great richness and
magnificence to the products developed in it. To
know more abuot the magic of Baja, we will visit the
Culinary Art School, where incredible cooks will teach
us how to prepare some typical dishes from the region, like Caesar salad. It is worth combining the gastronomic experience with few visits to the city, especially to the touristic Avenida Revolución, the Tijuana
Cultural Center, and the Caliente Hippodrome,
among many places of interest.
In the Tijuana and Tecate breweries, we will learn
about the process to create beer, and taste from
the hands of the most famous chefs of the Country,
authentic dishes prepared with regional products but
with the Mexican touch that each one of them inputs.
In La Puerta and Los Chabacanos ranches, we will enjoy unique culinary experiences, from the picking of
fruits and vegetables, to their preparation and tasting.
In the zone of the Valley, we will visit the most important wineries of the State, to enjoy the vineyards, the
matching meals, and if we are wine lovers, the tastings. Baja produces incredible cheeses as well, so we
will visit Marcelo Ramonetti’s Wine Cellar to watch the
milking of the animals and the preparation of chees.
Finally, Baja California is a state rich in seafood, so we
will visit companies dedicated to processing the fruits
from the sea, from the capture to the merchandising
of the great variety of fish and mollusks used across
the region.
There are three municipal icons that we shouldn’t
miss in Ensenada: the Hussongs Cantina, founded by
two of the first settlers of the City, which even after
so many years continues working with perfection;
the Seafood Market of Ensenada, also known as the
Black Market, the main provider for residents and
tourists; and finally, if you wish to try the best tostadas with the best local ingredients, you must visit
La Guerrerense. After such amazing delicacies, it is
worth taking a walk and visiting the Regional History
Museum of Ensenada, or the Russian Communitarian
Museum, located in Valle de Guadalupe.
The gastronomic experience in Baja California is
enjoyed even better with the celebrations that go
from the Ensenada Carnival in February, to festivals
that praise gastronomy, like the Lobster Festival in
October, the Shrimp Festival, the Handcrafted Beer
Expo and the Gourmet Expo in November, and the
Grape Harvesting Celebrations in August.

This plant produces pure beer with the strictest principles, based in the international
regulation of purity. Among its brands we
can find the barrel beers —Bufadora, Brava,

TRAIN TO TECATE
This is a touristic train that takes you across
the richness of the State of Baja California,
and particularly of the Municipality of
Tecate. The tour includes the services from
a historian guide who briefly introduces
the most important data, a stop on the
Abelardo L. Rodriguez Dam viewpoint,
a tasting of wine and cheeses from the
region, games, a tour around the Tecate
Brewery with a visit to the Beer Garden and
live music to dance, and spare time to eat
and tour the city. Back on the train, you can
enjoy Maricahi on board and tequila tastings, raffles, contests and process from the

tuna fish. This is the first successful company in cultivating tuna fish in the Todos

MERCADO NEGRO
This is the main providing center of seafood

This Gastronomic Route covers the municipalities
of La Paz, Ciudad Constitución (Comondú), Loreto,
Mulegé, Santa Rosalía, San Ignacio and Guerrero
Negro.
A magic corner enclaved in the biggest peninsula of
Mexico, where the sea and the desert blend and reflect the blue sky, hosting a large variety of sea species, that seem to be lining up to be enjoyed in this
memorable landscape. The bonfire where the burnt
clam releases its scent, takes you back to the essence of our forefathers, manifest in the cave paintings
and the smell of an intense sea where the marlin,
abalone, oyster and shark live, taking part of the exquisite cuisine for the region.

DAMIANA
It is a small bush, native from the semi-dry lands of
the Californias, whose aromatic leaves have been
used used since pre-Hispanic times as medicine and
to produce fresh flavored water, infusions and liquors.
SEA SALT
Is the main producer of sea salt in around the world,
there are natural salt mines the Oho de Liebre
Lagoon, as well as adapted salt mines that use the
evaporation of water with the help of the sun to exploit this mineral, of which a good part of its production is destined for culinary purposes.
MACHACA
It is salted and sundried meat, which is mashed with
a stone —therefore its name (“machacar” means
“mashing” in English)— and then shredded. In Baja
California Sur, machaca is prepared with mantaray,
lobster or shrimps, stewed with tomatoes, onions
and green chili peppers. The machacados (stews) are
eaten in tacos prepared with wheat flour tortillas.
TYPICAL DISHES AND BEVERAGES
BURNT CLAMS
This is a traditional and very ancient cooking technique, in which chocolata clams are laid on a layer of
small beach stones, one next to the other, with their
opening facing downwards, until the “carpet” is filled.
Then, branches are placed on top of the clams and
fire is set on so they cook. Once ready, they are eaten
with lime juice and salsa.
SEAFOOD IN BRINE
This dish is made with seafood, fish or catarina clam,
which are cooked in oil with carrots, garlic, peas, spices, lime juice and green chili peppers. They are bottled and preserved for a long time.

They are prepared with fish, shrimp or oysters, covered with flour and eggs, fried and then eaten in corn
tortilla tacos with salsa, mayonnaise and lime juice.

TAMALES FAJADOS
They are made from corn masa and wrapped in totomoxtle leaves (dry corn). They are stuffed with pork
meat, stewed in an ancho chili pepper sauce with
carrots, potatoes, peas, olives, raisins and green chili pepper rajas (slices). Their name, fajados (“tucked
in” in English) is due to the fact that they are tied up
with a piece of totomoxtle leaf so they don’t open up
when they are being cooked.
SWEET BEAN EMPANADAS
This is a typical dish from Baja California Sur, made
with a paste of fried beans with piloncillo, clove and
cinnamon, with which the wheat flour empanadas
are stuffed. Then they are fried in oil and eaten for
dessert.
DAMIANA LIQUOR
This alcoholic sweet beverage of yellow color is prepared with the aromatic leaves of the damiana plant.
It is drunk only as a digestive, and it is said that it has
aphrodisiac powers.

We will begin our with the unique show of preparing
burnt clams, an activity in which we can participate and
learn the capture of this mollusk, to its preparation and
proper food matching to accompany this native dish
from Baja California Sur.
Damiana is a plant that grows in dry terrains, which
grows mainly in Baja California Sur. It has yellow flowers
from which a sweet and particular liquor is obtained. We
will visit producers of this beverage to know its process,
as well as tasting its delicate flavor and appreciating even
more its mystical properties.
Just as its neighbor from the North, Baja Sur is also a state
rich in sea products, so it is a must to visit the fishing industries responsible to obtain, raise and merchandise an
endless variety of species that the Sea of Cortés offers to
the world, like the squid, a product of great importance
in the region, learning its processing and merchandising.
The gastronomy of the State is as extensive as its history
and resources, so we will find workshops in schools that
day by day teach their students the best of its cuisine.
Another visit you should pay is to the wine cellars of the
region, enjoying each one of them through professional
tastings.
For those who enjoy sea activities, sports fishing offers
the excitement of capturing any kind of species, or if you
prefer snorkeling and scuba diving, you can submerge
to observe fish, some of which are edible. We can also
participate in the handcrafting of fishnets and learn in
depth the labor of the fishermen from the region. The
companies and cooperatives that dedicate to manufacture processed food play an important roll in the State’s
economy, so we will visit breeding houses of shrimp and
jurel, an oyster processing plant, and the abalone and
lobster cooperatives.

Fishnets, a fundamental element in fishing,
have passed through a long process of perfecting. A net is nothing but a fabric mesh
used in different ways to intercept the passing of fish and other sea animals, either
