When Rolando Ruiz
endi moved to San Francisco, it wa s difficult to find high quality Italian food products in the United
States. He knew thetas of genuine Italian foods and wanted Americans to have the same wonderful flavors of Italy. In 1988,
he founded Manicaretti (the Italian word for little delicacies or treats) to bring products from Italy's finest regional artisan
producers to this country. The regional products were found through family, friends and word of mouth. Whether cooking
with a family on their farm or helping friends with the work in their small factory, he feels he is rediscovering these little gems
and helping to keep centuries-old traditions alive.

Citron, or cedro in Italian, is unique to any other citrus fruit, having a distinctive gnarly
skin and pulpy interior. The thick skin is intensely fragrant, producing bright concentrated
flavors derived from the essential oils in the outermost layer or zest. There is little use for
the interior of the citron, which produces minimal juice. The color of citron can vary from
lime green to yellow orange, depending on the variety.

Carefully selected corn cobs from the Bergamo plains are carefully husked and dried in
temperature controlled ovens to ensure an even texture to the resulting polenta. The
corn ears are crushed and de-grained, and the kernels are stone ground with the hull and
germ, lending more flavor and nutrition to the polenta.
QUICK-COOKING POLENTA LAMPO
The Lampo polenta is made with Bramata polenta. After milling, the polenta is basically
pre-cooked : the flour is steamed at 80 C for a few minutes, then cooled and milled once
again in order to obtain a finer meal. Thanks to the steaming process, the polenta retains
its aroma and taste as well as its nutritional value.

Bergamo where wheat kernels are turned into flour by a process that employs grooved
steel rollers. The rollers flake off the bran and germ while the starch (endosperm) is

separated from the bran: this is semolina.Semolina made from durum wheat is yellow in
