menu program for Licensees to feature cocktails.
• [OS/M/SS] staff will take this program and blitz the country in two waves: April-June and again in the fall.
Idea*
• Mix one part Canada’s fastest growing Distiller with 2 parts Canada’s Top Suspensions
and garnish with a top notch program = A Recipe for Success!.
How it works
• [OS/M/SS] rep.’s will approach the Licensees and help them assemble the customize artwork.
• The licensee chooses two beverages, the type of card they want, the background,
the details and provides their logo.
• The [OS/MSS] rep. reviews the artwork with the SS rep and then the licensee.
Once approved, it is printed and delivered within a week to 10 days.
• [OS/M/SS rep’s will follow up post the call to assess performance
and secure feedback on its effectiveness.

Custom FSR Research
This report reviewed consumer behaviour with respect to Full Service
Restaurants[FSR] and helps to illustrate the need for promotions like
the Spring Blitz. Heavy users are typically older and wealthier.
• They are cutting back on their spending in in FSR’s
• They will order more tap water unless a intrusive suggestion can
be presented to them in a manner they find appealing
• They can be influenced to buy an item especially with a visual
image and enticing romance copy.

• Beverage programs tactics vary by chain and brand
positioning but there are best practices to follow
• Applebee’s referring to ‘Top Shelf’ Margaritas-possibly trying
to differentiate their offering.
• Beverage offerings continue to increase by consumers
seeking greater selection
• Smokey Bones Double Up for $3 bucks
• Approx. 90% feature signature drinks on their food menu
• 70% feature signature drink photography on their
food menu [except Casual dining plus] Bonefish and
Chili’s do it best.
• 64% use table top merchandising [except Casual
Dining Plus]
• 64% offer promotional features
• 68% have Beverage POS in place
• 68% feature Happy Hour. 70% run everyday, the rest
Monday-Friday
• Best Practice: 4-7 pm and reverse Happy Hour: 9 to close
• 2 for 1 offers diminishing as the economy improves.
Some offer ‘all day’ in the bar only.
• Some chains need to do a better job on clarifying
Happy Hours offers
• Chili’s makes it very clear what the offer is and is
posted at the front door
• Applebee’s offers 2 for 1 drinks ‘All Day, Every
Day and 1/2 price appetizers’ at the bar from
11am to 4 pm and late night 10 pm to 2 am.
• TGI’s Friday’s and PF Chang do an excellent job
posting at the door, but they are still unclear.
• >50% close by 11pm suggesting there is a opportunity
for late night dayparts
• Real Mex-’Buck it up for $1’ Back bar brands.
• Promote ‘Anchor Brands’ , they are the gateway to
prosperity. Instantly recognizable due to full
media support
• If beverage has 1/3rd left, ask if they’d like another,
second sale will only happen 20% of the time once
dinner arrives.
Other interesting trends/insights…
• Flights are working for beer and wine and could work
for spirits. Consumers are seeking new experiences
and are very open to trying new things. Tasting flights
seem to me to be very interesting to consumers and a
very good tool for the operators to drive trial. What’s
more, operators can use tasting flights to drive higher
dollar rings than for single drink and this adds revenue
for them and adds value for the consumers – perception
of more liquid and variety for not much more money.
• Only about 10% publish beer prices, 50% spirit prices and
75% wine prices. Michael Ginley theorized price relativity.
Meaning that, the range in price on beer from low to high is
not that great at probably $1.50 between the cheapest and
most expensive. So, operators probably feel that beer
consumers pretty much know the price of beer and they
won’t have sticker shock between different beer offerings
when they get the check. Spirits are probably in the
middle here with a $3.00 difference between low and
high. Wine needs the most pricing information for
this reason with a difference from low to high of $5-$6
by the glass but as much as $80 by the bottle.

Margaritas remain the most popular cocktail while the
Cosmo continues to drive Martini sales. Mojitos and
Sangrias continue to make headway.

The average top chain in our tracker lists 27.2 Spirit
Cocktails drinks on their menu with 12 Specialties, 5
Margaritas, 5 Martinis, 2 After Dinner Drinks, 2 Mojitos
and 2 Sangrias.
• Maggianos added 5, Skinny Cosmo no.1 The prices
range from $8.25 to $9.50. Cost in the 10-20%
range and profit in the 80-90% range

• The Vodka Cranberry may have slipped marginally in the
rankings from 2009 to 2008; however they really fared well
with so much focus on Mojitos and other drinks.
• Sex in the City helped springboard the Cosmo and
Vodka Cran remains a staple for young and old alike.
• All ‘Outlet Types’ have seen explosive growth except for
the Vodka Cran in Formal Restaurants which really has
been displaced by Cosmos.
• The ‘Cosmo’ and ‘Vodka Cran’ has always remained in
Top 10 since survey started.
• The Cosmo saw greatest % change not surprising
in bars, but as you can see consumers changed
their purchase behaviour in every channel and
remains a crowd favorite.

• Looking at the Top 5 flavors American’s order, 3 moved
up and 1 moved down. The Cranberry flavor moved up
1 ranking. The Cranberry flavor is 27% of all flavors
ordered and with the advent of SKINNY and Sangrias
should continue to gather steam.
• Ocean Spray has considerable opportunities to assist
Operators to expand the cocktail category. Over the last 10
years both the Cosmo and Vodka Cran have been stable.
• Operators have an opportunity to create signature versions
of both and then at the same time use cranberry as a base to
expand consumption with the new adventurous drinker.
