AAA Imports' monthly publication for the premier dish garden, lucky bamboo & bonsai grower Volume 13, Issue 05 - May 2013 Trip to North Carolina: Linville Caverns The Linville Caverns are deep inside Humpback Mountain. In 1822, fishermen discovered the caverns by following the swimming trout that mysteriously appeared in and out of the mountain. The Linville Caverns are about 30 minutes away from our resort. They are open only on Saturdays and Sundays during the winter season. There are half hour guided tours that inform you of the most interesting history of the caverns. During the tour, you get to see beautiful and colorful formations. There are also trout that swim in the underground stream. Along the walls, you see amazing stalactites and stalagmites that are formed. In the caverns, the temperature remains a constant of 52°F year-round. There are many life forms that exist in this balanced subterranean environment. It remains active, growing and forming. I was personally amazed with the colors and variety of formations in the caverns. I tried to take as many pictures as I could, but since I was with the group, I could only take so many. I will definitely visit the caverns again if I return to the area. This was our second time exhibiting at the show and we had a lot of fun. This year we bought with us a variety of our new line of Alpine fountains, Bird Houses, hanging baskets, smaller pots and some home decor items. The Festival had a variety of arts and crafts, Plants, Home decor items and they had a butterfly station where you could feed the butterflies. It was great seeing some of our clients at the show and chatting with new clients. We are looking forward to attending the show next year. TammyP Bloody Mary Short Ribs by Debs excerpted from allrecipes.com Beef short ribs are slowly braised with Bloody Mary mix and red wine in this savory dish. INGREDIENTS 4 pounds beef short ribs salt and pepper to taste Ingredients: 9 2 tablespoons olive oil Prep Time: 20 minutes 2 tablespoons butter Cook Time: 3 hours 1 large onion, sliced into rings 2 leeks (white portion only), sliced 20 minutes 1 cup red wine Servings: 4 1 cup beef stock 1 (28 ounce) can diced tomatoes 3 cups bottled Bloody Mary mix 6 large carrots, peeled and cut into 3-inch pieces 20 small mushrooms, stems removed DIRECTIONS 1. Preheat an oven to 350 degrees F (175 degrees C). Season the short ribs with salt and pepper, and set aside. 2. Heat an oven-proof Dutch oven, or wide, shallow pot with a lid over medium-high heat. Stir in the olive oil and butter until the butter has melted. Stir in the onion, and cook until the onion begins to soften, about 3 minutes. Add the leek, and continue cooking until the onion and leek are lightly browned. Remove and set aside. 3. Brown the short ribs in the hot Dutch oven until browned on all sides, about 3 minutes per side. Once browned, sprinkle the reserved onions over the ribs, pour in the wine, beef stock, tomatoes, and Bloody Mary mix. Nestle the carrot chunks among the ribs. Bring to a simmer, then cover, and place into the preheated oven. 4. Braise in the oven for 2 hours, then add the mushroom caps, recover, and continue cooking 1 hour more. Beaver Creek, Colorado In April I went to Beaver Creek Colorado for our family Vacation to go skiing. When we left Florida on Saturday it was a 72degrees. When we arrived in Denver it was 50 degrees. It’s about a 2 hour drive up the mountain to Beaver Creek. Once we reached the resort, the temperatures had dropped to 20 degrees and it was snowing. We had snow everyday we were there which was great for skiing. The warmest it got was 20 degrees except for Friday it was 35 degrees. . The first day we were there we walked around and relaxed to get use to the elevation. The air is a lot dryer in Beaver Creek so you have to drink plenty of water while you are there or you can get mountain sickness. The base elevation is 8,100ft/2469M and the summit elevation is 11,440ft/3,488M. This year we enrolled Gannon in Ski School with half day lessons. Since this was his first time skiing he was in the Mini Mice group. He was with a group of his kids his age and he learned to stop, go and turn left and right. He looked so cute waddling in his ski boots. For his first time on skis he did a really good job. They do not allow parents at the ski ranch because they feel the kids will get distracted and wont want to learn. So we rode the gondola to the top mountain where we could watch Gannon ski from a balcony of the ski school. There, we could not be spotted with the other excited parents. Also, this was Kaitlyn’s first time seeing snow. She did not like being bundled up in her ski clothes and shoes even though she looked so cute. Once we were outside she did not know what to think of the snow. When we put some snow in her glove she would look at it and try to eat it. While Gannon, Daddy and grandpa [Papa] went skiing I spent my afternoons with Kaitlyn and her grandma [Mimi} shopping and relaxing by the fire enjoying hot coco. On Friday evening I got to relax at the spa while Daddy watched the kids. The resort had a variety of activities for the kids such as movie night, story time for the younger kids and in the evening from 4pm to 5pm they had a S’mores Station by the fire pit. We drove over to Vail, CO on Thursday where we walked around the shops and had dinner at Billy’s Steakhouse. Next year my right wrist will be healed and I will be able to ski for a couple of days. I took it easy this time since I had surgery on it and it was still healing. We really enjoyed our family vacation and are looking forward to going back next year to beaver creek.
