Grappa Moscato is made from the pressed skins and seeds of Muscat grapes. It has a very floral, easy to like aroma, is smooth and pleasant to taste, and has a clean finish. Bertagnolli, Grappa de Moscato Trentino, Italy (Vias Imports) This alcohol content makes this grappa more light and delicate, enabling the consumer to fully appreciate its taste and aromatic properties. Muscat grappa is undoubtedly the most typical of the grappas from the region of Trentino. The typical aroma provided by the accurate distillation gives the product unique elegance, fragrance and harmony. They bottle this at a higher proof than any other grappa. Very much like a traditional Northern Italian grappa. This is the classic Alsatian marc. In the progression from floral to “earthy” the marc is a fairly big jump. The Gewürz nose is good but a little woodier than the Muscat. There is a little more jolt in the initial taste, but the finish is clean, not hot. Like all our marc or grappa this one is made in the most traditional style–pure pomace from the winemaker’s press. CCDGNONVB12/375 Case: $300 Bottle: $25.00 ____________________________________________________________ Clear Creek, Grappa Pinot Gris Oregon Made from the pomace of Pinot Grigio grapes directly after press, before inoculation. They inoculate the fresh pomace at the distillery. This grappa is difficult to make because the winemakers there press their Pinot Grigio pretty hard. The pomace is so dry that it is difficult to ferment, and when it does ferment the distillation process produces very little grappa. This grappa is intense, earthy, and not for the faint of heart. Founded in 1870, the Distilleria Bertagnolli has carried on the tradition of high-quality spirits for four generations. Once the supplier to imperial courts, Bertagnolli continues to hone its techniques in order to craft smooth, aromatic grappas. The taste is pleasant, light and especially persistent. Clear Creek, Grappa Pinot Noir Oregon Ordinarily it is very hard to make decent grappa from red wine grapes that are fermented on the skins. When the winemaker presses the completely fermented must, often there isn’t much left in the pomace to distill. So they need to search carefully for very good Pinot Noir fermentations with a winemaker who has a light touch at the press. This grappa is made from pomace from Lemelson Winery. The result is a very clean grappa with good Pinot Noir character, and a very clean finish. Makes a great sorbet. Kosher. Clear Creek, Pot Distilled Apple Brandy, 2 Year Oregon This is the same as the eau de vie de pomme, but aged only two years in Limousin oak. Long fermentation of cider and no caramel or sugar added. This is the one you use to make fruitcake, to deglaze a pan-fried steak, for the recipe that calls for “Calvados,” in some dandy apple brandy cocktails. It takes up to 80 pounds of raspberries to make one small bottle of Framboise. Fermentation of fresh whole raspberries is very tricky and some years they don’t get it right. So, some years there isn’t any at all. ____________________________________________________________ Clear Creek, Eau de Vie de Pomme, 8 Year & Apple in a Bottle Oregon Eau de Vie de Pomme: Following the customs of the Calvados makers of Normandy, the high proof apple spirit is aged in old Cognac barrels, made of Limousin oak, for at least eight years. The result is a beautiful amber brandy, with a remarkable amount of apple in the nose, but with the sophistication and complexity gained from all those years in oak. Limited Availability ____________________________________________________________ Clear Creek, Douglas Fir Eau de Vie Oregon This eau de vie is made from an infusion of the springtime buds of Douglas Fir picked by hand into clear brandy which is then re-distilled and reinfused with more buds.
