The Auberge, nestled in the Domaine de
Chantilly, between the Château Gardens and
the Grandes Écuries, takes its name from what
was the Jeu de Paume, which now displays the
monumental paintings from the Condé Museum.
As you enter through the Saint-Denis Gate,
the long white façade of the Auberge stretches

On the sand dunes, facing the charming port of La
Gravette, Anne de Bretagne is a contemporary
villa with striking Jade Coast architecture,
perfectly placed to enjoy the best of Brittany. There
are breath-taking views over the ocean from the
suites and the Italian-style terraces. In the excellent
restaurant, Philippe Vételé’s cuisine is inventive
with a touch of the sea, in perfect harmony with
the wines selected by Michèle Vételé, a highlyrecognised sommelier. In season, you can try wild
clams with shredded leek, with white Muscat
vinaigrette sorbet. Fish and shellfish create a perfect
match: “slow-cooked” line-caught sea bass is served
with a sardine concassé, a string of winkles and a
sea lettuce emulsion.

Delightful French-style gardens and the
historic walls of the Logis de la Chabotterie,
a significant site in the Vendée war where General
Charette was captured in 1796, provide the
idyllic setting for this highly renowned restaurant.
Thierry Drapeau takes his inspiration from the
surrounding countryside and its top-quality
ingredients, then adding an artistic flourish to
his fine regional cuisine. He favours herbs over
spices, and creates a fragrant, brightly coloured
‘floral cuisine’, paying as much attention to the
presentation of his dishes as to their flavours.
Savory might accompany an asparagus starter,
and pureed Vitelotte potatoes add a pretty dash
of violet to a brandade of cod delicately flavoured
with parsley juice.

The St. Gerlach Estate is tucked away in the
unspoiled natural environment of the Geul Valley
and the Ingendael nature reserve. With its own
extensive parks, vineyard, herb garden, orchard,
rose garden, and its church with splendid 18thcentury frescoes, the Château’s setting is utterly
delightful. The historic buildings date back to
the year 1200 and were once a monastery built
to accommodate pilgrims who had come to pay
homage to hermit Gerlach of Houthem. The
guestrooms, housed in the former farmstead,
boast views of Baroque gardens. The spa and the
Roman indoor swimming pool offer treatments
and relaxation. The restaurant which has lost
nothing of its aristocratic décor, serves fine

Il Luogo di Aimo e Nadia was opened more than
fifty years ago by Aimo and Nadia, partners in life
and in work, and is now famous both for its cuisine

Mörwald family home in the wine village
of Feuersbrunn, in the heart of the Wagram
wine-growing region, is proof positive of the

contemporary décor, with its leather armchairs
and ceiling decorated in paintings of pop records,
is perfectly in tune with its spirit – it aims to use
its experience and technical wizardry to bring
