3 • FROM THE COO/GENERAL MANAGER • St Ives Country Club
From the Membership Director
Greetings everyone, and
welcome November - my
favorite month. November is
host of the best weather of the
year, in my opinion, and my
favorite holiday with family and
friends - Thanksgiving!
My special THANKSgiving note:
I want to take a moment to thank you for being
the nicest, warmest group with which I’ve ever
had the privilege to work. When I was first
interviewing here for the position of Membership
Director back in March of 2009, I asked
John Gerdts, “please tell me a few things about
why I would want to move over to St Ives?”
I’ll never forget this - he answered me without
a second’s hesitation by telling me “Mel, this
membership is going to be the nicest, warmest
group of people you’ll ever work with.” You know
what? He was really right. This is truly a special
place, and I am impressed daily by the kindness
you show to each other, Member prospects,
new members, and the staff as well. I am truly
proud to be part of this organization, and just
want you to know in this season, that I am very
GRATEFUL for you. Thank you!
MEMBER REFERRALS FOR THE
UPCOMING FALL/WINTER:
As I noted in October’s newsletter, we received
the highest number of Member referrals ever last
quarter! Wow! As we enter into the challenging
months of the fall/winter, please do keep sending
your friends and associates our way. A Member
referral is THE best compliment you can pay
us, and a way to keep your Club full of great
Members! Please just send me their contact info,
and I will roll out the red carpet for them! As
a reminder, there are strong Member referral
rewards when your nominee joins the Club; look
for that credit to be put on your account once
your referral has been in place for 60 days.
~ HAPPY THANKSGIVING EVERYONE ~
All the best to you and your families!!!
Sincerely,
“Mel”

Chef Marshall Rogers
Wins 1st Place!
On October 21, 2013 our
very own Chef Marshall
Rogers, Chef de Cuisine of
our Ascott Dining Room,
won first prize at the ACF
sanctioned Sutherland
Foodservice and Hunter
Cattle Co Signature
Recipe Competition. The
competition was held at the
Georgia world congress center. Chef Marshall received
1st place, won the $1,000 dollar prize and received a
silver medal for the competition.
Dish: Pan Seared Bone In Pork Chop with Braised
Cabbage and Brussel Sprouts, Truffle Pierogies and
Pear Mostarda
Recipe:
Thyme and Garlic Brined Pork Chop - Marinate the
pork chop in 2.5 cups of water, 1 oz salt, .5oz sugar, 3
cloves of crushed garlic and a bunch of thyme. Let pork
sit in the brine for 8 hours. Pat the pork dry and sear in a
non stick pan with bacon fat and butter. Finish the pork
in the oven at 350 degrees for five minutes.
Truffle Pierogies - For the dough combined one beaten
egg with 2 cups of flour, 1/2 cup sour cream and 1/4 cup
of soft butter. Roll out the dough to 1/4 an inch and cut
with a ring cutter. For the filling make mashed potatoes
with sour cream and truffle oil. Place a small scoop of the
mashed potatoes in the center of the dough and fold the
dough over. Seal the pierogi with a fork. Boil the pierogi
for 3 minutes and then sear in a pan with clarified butter
until crispy.
Braised Cabbage and Brussel Sprouts - Cook 6oz of
diced bacon in a deep skillet until crispy. Add 1/2 sliced
onion to the skillet cook until light brown. Add 1/2 head
of shaved cabbage and cook until soft. Deglaze the pan
with 1/2 cup chicken stock, 2 oz white wine and 1oz
sugar. Simmer over medium heat until the cabbage is soft
and the liquid has reduced. In a separate pan caramelize
8 thinly sliced brussel sprouts then combined them with
the braised cabbage.
Pear Mostarda - Dice 4 peeled pears and cook over
medium heat in a nonstick pan with a small amount of
oil. Deglaze with 2oz of white balsamic vinegar and 1
tbsp of Dijon mustard. Add one cup of honey to the pan
and cook until the pears are soft.
Fall Wine Dinner
Tuesday, November 5th
6:30pm - Reception
7:00pm - Dinner Served
Windsor Ballroom
Washington State’s oldest and most acclaimed winery comes
alive in our Fall Wine Dinner. Situated on 105 wooded acres
in Woodinville, Washington, 15 miles northeast of Seattle,
Château Ste. Michelle Winery is one of the top visitor and
historic attractions in the Puget Sound area.
Built on the 1912 estate, then owned by Seattle lumber baron
Frederick Stimson, the winery’s roots date back to the Repeal
of Prohibition. In 1967, American Wine Growers began a new
line of premium vinifera wines called “Ste. Michelle Vintners”
under the direction of legendary California wine maker Andre
Tchelistcheff. Ste. Michelle Vintners planted its first vines at
Cold Creek Vineyard in Eastern Washington in 1972. Cold
Creek still remains one of the oldest and most renowned
vineyards in the state. The winery now owns more than 3,500
prime vineyard acres in the Columbia Valley. In 1967, a
French style château was built in Woodinville and changed its
name to Château Ste Michelle. As the winery grew, so did its
reputation for creating top quality wines in Washington.
Today, Château Ste. Michelle is known for bringing
together Old World wine making tradition with New World
innovations. Chef Eric Karrell creates his own combination
this November. He has carefully paired each one of the
evening’s fine courses with a wine sure to compliment the
rustic flavor of Old World cuisine while highlighting the
exciting life of New World Style. With an endless variety of
delicious flavors, this wine dinner is sure to be another night to
remember here at St Ives. Pricing for this event is $115.00 per
person.

SIWGA
The SIWGA Member-Member Golf Tournament was held on September 17th and 18th. The event theme was “Fifty
Shades of Pink” and SIWGA raised approximately $7,000.00 for TurningPoint Breast Cancer Rehabilitation, which is a
non-profit organization that helps hundreds of women and is located in Alpharetta. The event was so much fun!
Thank you to the following people who were on the committee to make this event such a huge success: Linda Caminiti,
Sheryl Hills, Joan Kotas, Joanie Rogge, Angela Simmons, Fran Wade, Janice Wilson, and Rhonda Ziegler. SIWGA began
their tournament and festivities with a dinner at Val Lesniak’s beautiful home on September 16th.

News from the Handicap Committee~
HANDICAP SYSTEM PROCEDURES
prior to teeing off. After completing play, post your
adjusted score in the handicap computer. Post as soon as
practical. Post all scores where the majority of the holes
were played according to the rules of golf. If you play 9
holes, post your 9-hole score. If you played 13 holes, but
less than 18 holes, record par, plus any handicap strokes
that you would have been entitled to on the holes you
didn’t play. Then record an 18-hole score. Failure to
post will result in a penalty score being entered by the
Handicap Committee. If you were scheduled to play,
but for some reason did not complete 9-holes, notify the
Pro Shop so they can make the appropriate adjustment
to the tee sheet for that day. Away scores (rounds played
away from St Ives) should be entered in the computer as
soon as practical after you return to the Club. Post these
scores showing the correct date, slope, and course rating.
Certain events determined by the Golf Committee will be
posted as tournament scores.
The USGA
requires
that a club’s
handicap system
procedures be
shared with
the Members
annually. A
summary of the
procedures is
included here.
The document listing the full procedures list is posted
on the bulletin board behind the Pro Shop. If you are
a golfer and you maintain a handicap index through St
Ives, please take the time to review the material. When
requested, the Pro Shop will provide you with a copy.

Junior News From Stuart
The 2013 Junior Fall ALTA season has come to an end.
Many of the St Ives junior teams battled up to the last
week, but came up a few points shy from the play-offs.
Our St Ives juniors put up some strong numbers against
some very stiff competition this Fall ALTA season. This
was a great ALTA season for all juniors and to those new
juniors who played their first matches ever. Great job!!!
Hope you had fun! I would like to send out a special
appreciation to all the Team Moms and the Team CoMoms for all their hard work this past season. Now it
is time to gear up for the Winter 2014 USTA season.
Please register early for the junior winter clinics, as there
are only a limited number of spaces available. This
month we are also having our 8th Annual St Ives Junior
Open Singles Championships. If you are interested in
your child fine-tuning their skills through private lessons,
lock in your lesson time early with the St Ives Tennis
Staff to ensure an available time slot.
If you have any junior questions please contact the
Tennis Shop at 770.418.2443.
