He is considered to be one of the fathers of gastronomy and one of the most influential gourmets in the 17th and 18th centuries. Brillat-Savarin is quoted quite often when it comes to food and hospitality; however, my favourite saying of him is this one: “The discovery of a new dish confers more happiness on humanity than the discovery of a new star.” That might be my favourite because when I think of gastronomy, the first thing that comes to my mind is ‘astronomy’, and it is not because of the rhyme! Weird, isn’t it?! Well, let me put it this way. I like to think of food as a galaxy of its own. The dishes are the stars. I once said that food is one of my best friends because it is universal. In fact, if you are a real gourmet, food will take you places out of this universe! Nevertheless, one normally cannot enjoy food properly in the absence of good company and comfortable ambiance. I unfortunately cannot help you when it comes to company, but I will definitely be of assistance in terms of ambiance. We have prepared for you in this issue a collection of ‘gourmet odysseys’ that encompass some absolutely amazing gourmet experiences. After a tour of the Saatchi Gallery in the Duke of York’s square, a wintery walk down Sloane Street and a whirlwind shop at Harrods we were more than ready for our afternoon tea at the Mandarin Oriental opposite Harvey Nichols! Entering up a Narnia land Snow Queen’s staircase we were ushered into the warmth of the elegant fireside of the Rosebery lounge where tea was to be taken. The feeling inside couldn’t be more different to the crisp, wintery weather that was gathering force outside! We were instantly enveloped in the oranges and reds of fresh amaryllis flowers, gentle fires and even more genteel folk exchanging animated Christmas anecdotes. Welcome to a magical world. Thankfully our table was set up as I would have struggled to decide which vantage point to sit at. Right by the fire, or at the window seat looking straight out onto the Christmas Glam rock windows compete with psychedelic gangsters in hoodies and sunglasses. The Rosebery’s Harrods Teddy Bear Afternoon Tea comprised of the highest quality sandwiches, hand made pastries and fresh from the oven scones. While these are all traditional high tea items, each had a contemporary twist that elevated them way above the ordinary. I loved the rose petal jelly, and homemade lemon curd. The lemon curd was really lemony, fresh and creamy but not sweet at all and made a perfect accom- Suspended Sandwiches DoinDubai Crystal Apple stand DoinDubai paniment to the cranberry, raisin scones. And Christmas wouldn’t be Christmas without turkey but how refreshing to have slow roasted Turkey with sage and cranberry in delicately rolled, finger sandwiches! The meat had a rich, deep taste to it that reminded us of succulent duck more than dry turkey! Smoked Salmon tartare with crème fraiche and dill was another favourite at our table, as was the goat’s cheese with roasted pumpkin and red onion confit. And if you were feeling particularly partial to anything, you could just order it again for no extra charge! The figgy pudding bauble was a very novel and well thought out idea but all our party loved the little pumpkin and pecan iced cakes too. But the Mandarin seems to be all about maintaining traditions with modern accents! A case in point were the beautiful but very functional stands that held our tea plates on one side and in so doing Jams Lemon Curd Doindubai didn’t obstruct any of the diners’ views of each other! Well done MO! The amberish, crystal balls on top added to the elegance of the stands and somehow blended in perfectly with the rest of the bone china table settings. And to drink? As if seven categories of fine teas were not enough to choose from, you could always select a blend from the rare or limited tea for an extra three to four pounds. Drink some whole rose bud tea to complement your rose petal jam and don’t worry there isn’t any caffeine in this concoction! But if coffee is more your thing, then choose from any of the ten types of coffee; thanks for making the distinction between French Press and Drip Filter for us. And then try and drip filter your memories of this special place in London for as long as you can. Let it snow, let it snow, let it snow! We can’t help but feel the family friendliness of the place. The grassy area sports a sprinkler playground, which causes bursts of laughter and joy among the children. Across our field of vision, the F1 circuit snakes around the Marina reminding us that we are just one week away from the race. I envision the sounds from the revving engines resounding over the island and the crowds pouring in to enjoy the F1 weekend. I quickly dismiss the vision along with the adrenaline palpitating in my heart, and, as I inhale the freshness of the salty air, I remember Hemingway’s words: “Everything, far from the sea, is province!” Because there is something incredibly enticing about sitting close to the water, feeling the breeze in your hair, hearing the cries of seagulls- it is a universal desire to be part of this picture perfect, regardless of where it had been taken. And so they comethe families with children on bicycles and scooters, the elderly couples elbow to elbow, taking a stroll by the berths, the elegantly dressed customers of the evening crowd, ready to enjoy their cocktails at sunset. The humidity and scorching heat of the previous months, which made the idea of outdoor seating unfathomable, are all forgotten now. So the multicultural visitors carry about them the air of any other seaside lover in Nice, Monte Carlo or Santorini. As the sun casts its orange-purple blazes over the horizon, we join them and walk into Iris for an evening filled with pleasant discoveries for the senses. Before we indulge in the menu offerings, we are immersed in the unobtrusive elegance of Iris’ overall design. The musical ambience of the place is subdued yet recognizable with remixes of late 90’s hits playing in the early evening and gradually shifting to house lounge as the night progresses. Since both of us are architecture and design aficionados, we marvel at the blend of masterfully combined colors, textures, and materials that betray its creator’s passionate sophistication. We learn from our hosts that the design of all Iris lounges in Beirut, Dubai and Abu Dhabi is the work of Suzy Nasr. Suzy, a Lebanese designer, has created the atmosphere at Iris Yas Island as a unique experience by keeping her signature style, yet giving it very specific features to match its maritime location. The minimalistic geometry of the lines composed by chairs, tables, bar stools, solid-color sofas and overhead lamps creates a general mid-century feel, which is gracefully interrupted by the organic shape of what is Iris’s beloved resident- the mini olive tree that unites all of these elements with its free form and delicate Mediterranean silhouette. From Suzy Nasr’s profile I learn that, to her, “Design is about creating an environment that is as much about well-being as it is defining a personal and collective space of beauty.” And beautiful it is with its generous simplicity and subtle intelligence that seduce the visitor to return. For starters, a member of the staff recommended the truffle burgers, saying that they were “something else, you should try them.” As we do, we realize that the claim had been a complete un- derstatement: the truffle burgers are fabulous and a great way to prelude a slew of delectable items that would leave even the most refined of palates wanting more. After the goat cheese salad and the octopus ceviche- both balanced and prepared to perfection- we try the sushi, the grilled Angus beef and the yellow tail filets, not in this order necessarily. The ingredients at Iris are sourced mainly from Spain, Italy, Greece and Japan. The yellow tail filets recipe, for instance, derived from Spain with a slight alteration from the chef- a splash of soy sauce and a tad of yuzu vinaigrette mixed with three kinds of mushrooms that garnish the fish slices. Although all of the appetitewhetting dishes we tried are not only flavorful but also adorned with the finishing magic of Iris’ chefs, the yellow tail unanimously wins the night. After the overwhelmingly delicious yet light on the stomach repasts, we wrap up the evening with Iris Crab Salad a piece of chocolate lava cake, on the recommendation of our server. The luscious last course gives us an energy boost as we say our goodbyes and set off back to Dubai, certain that we will be back before long. Winner of Tourism Malaysia’s Most Innovative Tourist Attraction Award, MERC is a research and conservation facility which is concerned with cultivating coral, giant clams and endangered fish species from the waters around Borneo. The centre is 100% privately funded and educates both guests and school children on the importance of protecting our environment. The Rainforest – a Delicate Balance A visit to the rainforest is a truly extraordinary and humbling experience. The Borneo rainforest is 140 million years old, making it one of the oldest rainforests in the world. There are about 15,000 species of flowering plants with 3,000 species of trees, 221 species of terrestrial mammals and 420 species of resident birds in Borneo. The Borneo rainforest is one of the few remaining natural habitats for the endangered Bornean orangutang and an important refuge for many endemic forest animals such as the pygmy elephant, the Sumatran rhinoceros and the Bornean clouded leopard. On average, three new species are discovered each month in the heart of Borneo. Unlike so many other types of cuisines, Emirati food has a very ‘home cooked’ feel about it. It is unique, hearty and richly flavoured with colourful spices. Typically, the Emirati food reflects the culture’s traditions and history. For example, fish is usually consumed at lunch, not dinner as it would be caught that morning by fisherman, prepared and eaten while fresh. Sheep, goat and chicken are meats most often eaten for evening meal, with camel meat typically served as part of an Eid or wedding celebration – something very special. Traditional Emirati dishes, such as Machboos or Fouga, contain Arabian bezar spices such as turmeric, cinnamon and cardamom, as well as Loomy – a distinctive dried lemon, that is added with either fish, chicken or red meat during cook- ing. Basmati rice is then added to the top of the pot to cook amongst the aromatic aromas from beneath it. Lamb or chicken Thareed is also a Bedouin dish that you must try. Served as a hearty stew with meaty pieces, marrow, potatoes and tomatoes, layered with Emirati bread, it contains a lot of nutrition, which is why it is very popular during Ramadan. For big events such as weddings, our Emirati clients request Harees and Ouzi, because they are perfect when catering for many people. Made from ground wheat and meat, Harees is a simple festival dish with only a few ingredients, which cooks for hours to form a smooth texture. Lamb Ouzi, is also designed for large gatherings, and the rice stuffing takes on the flavor from the mari- nated lamb. It really is a very satisfying dish, which can be modified to suit personal preferences. In fact, recently I prepared individual Ouzi for a VIP wedding in Al Ain and not only was it delicious, but visually, it was very creative. These are my favourites because I love the process of preparing them and producing such tasty, wonderful creations.
