Many of us may have not heard of a French man named Brillat-Savarin. He is considered to be one of the
fathers of gastronomy and one of the most influential gourmets in the 17th and 18th centuries.
Brillat-Savarin is quoted quite often when it comes to food and hospitality; however, my favourite saying
of him is this one: “The discovery of a new dish confers more happiness on humanity than the discovery
of a new star.”
That might be my favourite because when I think of gastronomy, the first thing that comes to my mind
is ‘astronomy’, and it is not because of the rhyme! Weird, isn’t it?!
Well, let me put it this way. I like to think of food as a galaxy of its own. The dishes are the stars. I once
said that food is one of my best friends because it is universal. In fact, if you are a real gourmet, food will
take you places out of this universe!
Nevertheless, one normally cannot enjoy food properly in the absence of good company and comfortable
ambiance. I unfortunately cannot help you when it comes to company, but I will definitely be of
assistance in terms of ambiance. We have prepared for you in this issue a collection of ‘gourmet odysseys’
that encompass some absolutely amazing gourmet experiences.

Edinburgh’s picturesque architecture provides
the perfect festive backdrop for Christmas
shopping, and winter events taking place in the

Borrowed lyrics from the classic Dean Martin
song I know but despite being written 70 years
ago, the sentiment was very applicable on a cold,
December afternoon in London’s Knightsbridge!
After a tour of the Saatchi Gallery in the Duke of
York’s square, a wintery walk down Sloane Street
and a whirlwind shop at Harrods we were more
than ready for our afternoon tea at the Mandarin
Oriental opposite Harvey Nichols!
Entering up a Narnia land Snow Queen’s
staircase we were ushered into the warmth of the
elegant fireside of the Rosebery lounge where tea
was to be taken. The feeling inside couldn’t be
more different to the crisp, wintery weather that
was gathering force outside! We were instantly
enveloped in the oranges and reds of fresh amaryllis flowers, gentle fires and even more genteel
folk exchanging animated Christmas anecdotes.
Welcome to a magical world. Thankfully our table was set up as I would have struggled to decide
which vantage point to sit at. Right by the fire,
or at the window seat looking straight out onto
the Christmas Glam rock windows compete with
psychedelic gangsters in hoodies and sunglasses.
The Rosebery’s Harrods Teddy Bear Afternoon Tea comprised of the highest quality sandwiches, hand made pastries and fresh from the
oven scones. While these are all traditional high
tea items, each had a contemporary twist that elevated them way above the ordinary. I loved the
rose petal jelly, and homemade lemon curd. The
lemon curd was really lemony, fresh and creamy
but not sweet at all and made a perfect accom-

paniment to the cranberry, raisin scones. And
Christmas wouldn’t be Christmas without turkey
but how refreshing to have slow roasted Turkey
with sage and cranberry in delicately rolled, finger sandwiches! The meat had a rich, deep taste to
it that reminded us of succulent duck more than
dry turkey! Smoked Salmon tartare with crème
fraiche and dill was another favourite at our table,
as was the goat’s cheese with roasted pumpkin and
red onion confit. And if you were feeling particularly partial to anything, you could just order it
again for no extra charge!
The figgy pudding bauble was a very novel
and well thought out idea but all our party loved
the little pumpkin and pecan iced cakes too. But
the Mandarin seems to be all about maintaining
traditions with modern accents! A case in point
were the beautiful but very functional stands that
held our tea plates on one side and in so doing

didn’t obstruct any of the diners’ views of each
other! Well done MO! The amberish, crystal balls
on top added to the elegance of the stands and
somehow blended in perfectly with the rest of the
bone china table settings.
And to drink? As if seven categories of fine
teas were not enough to choose from, you could
always select a blend from the rare or limited tea
for an extra three to four pounds. Drink some
whole rose bud tea to complement your rose petal
jam and don’t worry there isn’t any caffeine in this
concoction! But if coffee is more your thing, then
choose from any of the ten types of coffee; thanks
for making the distinction between French Press
and Drip Filter for us. And then try and drip filter
your memories of this special place in London for
as long as you can. Let it snow, let it snow, let it
snow!

We are first met by the unmistakable scent
of warm chocolate as the crepe cart attendant
spreads Nutella on an oversized crepe. We can’t
help but feel the family friendliness of the place.
The grassy area sports a sprinkler playground,
which causes bursts of laughter and joy among
the children. Across our field of vision, the F1
circuit snakes around the Marina reminding us
that we are just one week away from the race.
I envision the sounds from the revving engines
resounding over the island and the crowds pouring in to enjoy the F1 weekend. I quickly dismiss
the vision along with the adrenaline palpitating
in my heart, and, as I inhale the freshness of the
salty air, I remember Hemingway’s words: “Everything, far from the sea, is province!” Because
there is something incredibly enticing about sitting close to the water, feeling the breeze in your
hair, hearing the cries of seagulls- it is a universal
desire to be part of this picture perfect, regardless
of where it had been taken. And so they comethe families with children on bicycles and scooters, the elderly couples elbow to elbow, taking a
stroll by the berths, the elegantly dressed customers of the evening crowd, ready to enjoy their
cocktails at sunset. The humidity and scorching
heat of the previous months, which made the idea
of outdoor seating unfathomable, are all forgotten now. So the multicultural visitors carry about
them the air of any other seaside lover in Nice,
Monte Carlo or Santorini. As the sun casts its
orange-purple blazes over the horizon, we join
them and walk into Iris for an evening filled with
pleasant discoveries for the senses.
Before we indulge in the menu offerings,
we are immersed in the unobtrusive elegance of
Iris’ overall design. The musical ambience of the
place is subdued yet recognizable with remixes
of late 90’s hits playing in the early evening and
gradually shifting to house lounge as the night
progresses. Since both of us are architecture and
design aficionados, we marvel at the blend of
masterfully combined colors, textures, and materials that betray its creator’s passionate sophistication. We learn from our hosts that the design of
all Iris lounges in Beirut, Dubai and Abu Dhabi is
the work of Suzy Nasr. Suzy, a Lebanese designer,
has created the atmosphere at Iris Yas Island as
a unique experience by keeping her signature
style, yet giving it very specific features to match
its maritime location. The minimalistic geometry of the lines composed by chairs, tables, bar
stools, solid-color sofas and overhead lamps creates a general mid-century feel, which is gracefully
interrupted by the organic shape of what is Iris’s
beloved resident- the mini olive tree that unites all
of these elements with its free form and delicate
Mediterranean silhouette. From Suzy Nasr’s profile I learn that, to her, “Design is about creating
an environment that is as much about well-being
as it is defining a personal and collective space
of beauty.” And beautiful it is with its generous
simplicity and subtle intelligence that seduce the
visitor to return.
For starters, a member of the staff recommended the truffle burgers, saying that they were
“something else, you should try them.” As we do,
we realize that the claim had been a complete un-
derstatement: the truffle burgers are fabulous and
a great way to prelude a slew of delectable items
that would leave even the most refined of palates
wanting more. After the goat cheese salad and the
octopus ceviche- both balanced and prepared to
perfection- we try the sushi, the grilled Angus
beef and the yellow tail filets, not in this order
necessarily. The ingredients at Iris are sourced
mainly from Spain, Italy, Greece and Japan. The
yellow tail filets recipe, for instance, derived from
Spain with a slight alteration from the chef- a
splash of soy sauce and a tad of yuzu vinaigrette
mixed with three kinds of mushrooms that garnish the fish slices. Although all of the appetitewhetting dishes we tried are not only flavorful
but also adorned with the finishing magic of Iris’
chefs, the yellow tail unanimously wins the night.
After the overwhelmingly delicious yet light on
the stomach repasts, we wrap up the evening with
Iris Crab Salad
a piece of chocolate lava cake, on the recommendation of our server. The luscious last course gives
us an energy boost as we say our goodbyes and set
off back to Dubai, certain that we will be back
before long.

Borneo, a giant, lush island in Southeast
Asia’s Malay Archipelago, is shared by the
Malaysian states Sabah and Sarawak, Indonesian
Kalimantan and the tiny Sultanate of Brunei.
It’s famous for its beautiful beaches and ancient
rainforest, home to astounding wildlife such as
orangutans and clouded leopards.

so expect some amount of rain. It is, after all,
called a rainforest. Tourism season is all year
round with the wetter season running from

evenings, so it will in no way jeopardize your
holiday. On the contrary, rain livens up the
jungle as it energizes the forest critters and makes

Quite a bonus! From Kota Kinabalu airport it is
a 15 minute drive to Jesselton Point from where

The Marine Ecology Research Centre Gayana
Eco Resort is an eco resort with a conscience
and is considered to be a pioneer in the field of
environmental protection. Winner of Tourism
Malaysia’s Most Innovative Tourist Attraction
Award, MERC is a research and conservation
facility which is concerned with cultivating coral,
giant clams and endangered fish species from

is 140 million years old, making it one of

mammals and 420 species of resident birds in
Borneo. The Borneo rainforest is one of the few
remaining natural habitats for the endangered
Bornean orangutang and an important refuge

The long haired man and his companion
were desperately searching for an inch of space
along the railings which were covered with
thousands of locks of different sizes and colors.
As they scoured the long bridge searching for an
inch of space, they grew more impatient. At last,
they found about a millimeter of space along a
broken railing. Quickly they padlocked their love
on to that, said a prayer and threw the key into
the Seine with the setting sun as a witness to their
love. Yes, Paris, the City of Love and Romance
bears witness to countless such scenes enacted
daily, this one on the iconic Pont des Arts, aka
the Bridge of Love. There is something about
Paris that makes even the so called normal folk
go weak in the knees. Welcome to the City of
Lights and discover the romantic in you.
What is there about Paris that has not been
written before? We all know about the big bang
highlights – the Louvre, the Eiffel, Champs
Elysee and the list goes on. But there is another
Paris which is more real and less touristic and
perhaps captures the soul of this romantic city
more authentically. Here , I give my top off the
beaten path list for Paris
Walk the Seine Bridges
If you want an overview of what Paris stands
for, walk the bridges from Pont Bercy to Pont
Mirabeau, a distance of about 4 kilometres and
27 bridges along the route. The Seine has borne
silent witness to the bloody history of France
and this walk will take you from the early days
of Charlemagne to the heady days of Louis IV
to the chaos of the French revolution and then
on to the heroic days of Napoleon and the Third
Empire and finally to Charles de Gaulle and the
new Republic. There are heavy weight sights
along the way – the Notre Dame Cathedral on
the Isle St. Louis, the Louvre on the Pont des
Arts, the National Assembly, the Place de la
Concorde where Louis and Marie Antoinette lost
their heads and of course , the Eiffel. Pont Neuf
, ironically called the new bridge is in fact one of
the oldest bridges across the Seine, inaugurated
in 1607 and one of the landmarks in Paris. The
Pont des Arts is a pedestrian bridge linking the
Louvre with the Institut de France on the left
bank and has acquired a cult status among lovers
worldwide. Its railings on both sides are covered
with “love locks” and this beautiful Napoleon era
bridge is a romantics dream come true. Pont
Alexandre III with its gold encrusted art nouveau
lamps and gold encrusted winged horses is one of
the most beautiful bridges in the world.
Epicurean Paris
Paris is undisputedly the capital of Pastry,
and while there are the maestros such as
Pierre Herme, Eric Kayser, Laduree, it is the
neighborhood boulangeries that are beloved
to ordinary Parisians. Every street in Paris has
at least one boulangerie where you get freshly
baked baguette, pain au chocolat and croissants
of every variety imaginable.. Likewise, each
neighborhood boulangerie specializes in one
or other product as these “secret” recipes
are passed on over generations and in the
annual best baguette competition, it is these
small neighborhood boulangerie that emerge
winners over the big name ones. A visit to the
neighborhood boulangerie is an integral part of
daily Parisian life. Among the big names, while
Laduree is the undisputed king of macaroons,
Pierre Herme reigns supreme in other pastries
such as Eclairs, which are a Parisian specialty. A
visit to both should be on your must do list if
you want to taste the best pastry products in the

world. Another Parisian institution, Angelina’s
Café reputedly serves the best hot chocolate in
the world, the Les Africain and is also a must visit.
La Defense District
Did you know that there exists a Manhattan in
Paris ? Barely three metro stops from the Arc De
Triumph is a district that can give a complex to
both Dubai as well as Manhattan with its rows
of gleaming, glass and steel skyscrapers and the
Grand Arch. The La Defense district is where
corporate France is head quartered and giants
such as TOTAL, EDF have their headquarters
there. The Grand Arch which is a modern version
of the Arch de Triumph lies symmetrically along
the same line and is the main attraction in the La
Defense district. A visit to this modern version of
Paris is a welcome break when you are tired of the
cobblestone streets and the medieval buildings
which can become a bit tiresome after a few days.
La Defense has a very different vibe and energy
as compared to the rest of Paris and a few hours
spent in the Grand Arch quadrangle and the
massive Les Quatre Temps mall can reenergize
you.
A walk along the Left Bank
The Left Bank of the Seine is synonymous with
intellectuals, writers and philosophers and great
ideas such as existentialism and feminism were
born in the hallowed precincts of the cafes along
the Boulevard St. Germain. Café de Flore was
the favorite haunt of philosophers such as Jean
Paul Sartre, the father of existentialism, Simone
de Beauvoir, who introduced the concept of
feminism, Ernest Hemingway, Pablo Picasso and
other intellectual elite. A part of the “Communist
Manifesto” was penned by Karl Marx in this café
during his exile years in Paris. However, sadly,

nowadays, it is the favorite haunt of pin striped
business men and French politicians striking
deals and very little intellectual activity goes on.
Even so,it is worth having a look in for the sheer
contribution that this café has made to strides
in human philosophy and literature. Sartre and
Beauvoir reputedly used to spend hours debating
concepts, challenging and being challenged by
fellow philosophers in these premises. For fans of
philosophy and literature, a veritable pilgrimage.
A little further ahead is one of the oldest and
most prestigious universities in the world, La
Sorbonne, the fountainhead of French literature
and learning. The beautiful campus, in the Latin
Quarter, with its charming square is worth a peek.
For those not so intellectually inclined, I would
recommend a walk along Rue de Napoleon and
Rue de Seine, which are packed with pastry and
specialty food shops of every type imaginable.
The historic Boulevard St.Germain is also a very
pleasant tree lined street, ideal for a romantic
evening stroll. You should round off your trip to
the Left Bank with a visit to one of the unknown
gems of Paris, the Jardin du Luxembourg, one of
the most charming urban parks in the world and
where the French Senate is located.
Walk along the Right Bank
While the Left Bank of Paris has been
synonymous with intellectuals, the Right Bank
has been the centre of Power and prestige. The
Louvre and Elysee Palaces, the Bastille, the Opera
Garnier, and other imperial relics indicate the
power and prestige that this area commanded.
Also, the main shopping streets of Paris such as
Rue de Rivoli and Rue St. Honore are located
here. A walk along Rue de Rivoli from the Louvre
to the Bastille is very interesting and will take you
through the shopping heart of Paris to landmarks
such as the Hotel de Ville, the medieval Town
Hall of Paris and an architectural marvel and
then on to the Place des Vosges, one of the most
charming urban squares in the world and finally
the Place de Bastille, where history was rewritten
and the French revolution began. The Marais
district and Village St. Paul will take you back
several centuries.
Market Streets of Paris
One of the charms of Paris is the presence of
many “market streets” which date back several
centuries. Two of the most charming are the
Rue de Montorguel and the Rue de Mouffetard
, the latter dating back to Roman times. The
Rue de Montorguel is lined with one of a kind
boutiques and cafes, the most prestigious being
the Patisserie Stroher, reputedly the oldest
pastry shop in the world, with Queen Elizabeth

being a regular visitor whenever she is in Paris.
Surprisingly for such an elitist institution, the
prices are very affordable and the taste , especially
the chocolat eclairs being out of the world. Rue
Mouffetard, on the Left Bank is really old with
its Roman origins being apparent in the zig zag
nature of the road which was along the main
cattle route in ancient times.
Romantic Montmarte
Romance and Montmartre go together. The
winding cobbled streets, the steep steps and the
incredible views at every turn, the Place du Terte
where artists congregate and the Sacre Coeur
Basilica from where you get the best view in Paris,
all contribute to its well deserved reputation. We
went on a drizzly, misty morning which added

Patissier Strohrer – The oldest and most reputed pastry shop in Paris
Rue Montorgruel, One of the major markest streets in Paris
artistic elite, from Picasso, Salvador Dali, Claude
Monet, Vincent Van Gogh all drew inspiration
from this haven for their work. It is perhaps this
reputation that continues to draw artists from
all over the world to Montmartre, resulting in
a confounding cacophony if you happen to go
in the peak hours. To really get to the soul of
Montmartre, time your visit for early morning on
a Sunday, when you are guaranteed to have the
place for yourself. On a drizzly Sunday morning,
sitting in a bus shelter near the Place du Terte,
where Picasso and Van Gogh once painted, we
got our portraits done by a struggling artist (so
he said !) from Albania. At Euros 75, it was not
cheap, but then that is part of the Montmartre
experience !
The Rodin and the Army Museums
While the tourists jostle for leg room in front of
the Mona Lisa at the Louvre, beat a retreat to
the Army Museum across the Seine. This is in
fact a shrine to that hero of France, the le petit
caporal, Napoleon Bonaparte, who has his tomb
here in all imperial splendor. The tomb and the
chapel are on a very grand scale befitting the
stature of Napoleon and the regard the French
have for their greatest hero. For those interested
in military history, the army museum has one of
the best collections of weaponry from the twelfth
century to the Second World War, all arranged in
chronological order and most interesting.
Very interesting that while the Duke of

Across the road, the Rodin Museum is a very
charming tribute to the master sculptor, with his
masterpieces displayed both indoors and outdoors
in the beautiful, landscaped gardens surrounding
the museum, which was in fact, the sculptor’s
residence. Unlike many stuffy museums, here
you get to admire art in the relaxing surroundings
of the master sculptor’s gardens. In fact, most of
his masterpieces, including the Kiss are displayed

The Palais Garnier
One of most spectacular buildings in Paris,
which can give Versailles a run for its money,
the Palais or Opera Garnier is the epitome of
the excesses of the Second Empire and the most
famous Opera House in the world. The setting
for Gaston Leroux’s 1910 novel, the Phantom
of the Opera and the later film adaptations, the
building was the most expensive built in Paris
in the 19th century and set the bench mark for
luxury and style. There are guided tours offered
daily and you can gawk at the stunning painted
ceiling, a work by the celebrated painter Marc
Chagal and the amazing acoustics in the most
beautiful Opera house in the world.
Haute Couture Paris
Think Paris and haute couture comes to mind!
Where else to sample this but on the iconic Rue
St. Honore on the Right Bank, just off the Rue
de Rivoli. The Rue St. Honore houses ALL the

Pont Alexandre iii, one of the most beautiful bridges across the Seine
prestigious fashion design houses in the world of
haute couture – Giorgio Armani, Gucci, Chanel,
Louis Vutton, Ralph Lauren and also many

the big time. Nearer to the Elysee Palace, Rue
st. Honore becomes elegant Fauborg St. Honore,
a more rarified extension, read more expensive
and exclusive boutiques. Especially charming
is the area around the Rue Royale and Place de
la Madaleine which are the epitome of French

all these iconic brands. You can easily spend a

modeled church built by Napoleon to celebrate
his victories.
National Assembly
Liberty, Equality, Fraternity – these slogans
which changed the world rang out from this
historic building over three centuries ago. Fans
of history should not miss an opportunity
to tour this historic building which houses
the French Parliament. It will give you goose
bumps to enter the Parliament chamber, where
the revolutionaries met and decided Louis
XVI and Marie Antoinette’s fate and later
Napoleon Bonaparte held court. The interior of
the Debating Chamber is spectacular, since the
new Republic wanted to showcase the power of
the people. For a brief period, when Napoleon
crowned himself Emperor of France, he used
the debating chamber as his court. The free self
guided tour of the Parliament building is highly
recommended for history and architecture buffs.

Where do you draw your inspiration from when
you’re planning menus or working on new recipes?
I truly enjoy creating traditional cuisine with an
innovative twist. My ultimate goal is to bring out
memories when I create a dish. I draw inspiration
by visiting the market and trying different produce
and food items, and also visiting different restaurants. Then I use what I’ve found to add to the traditional dishes I grew up with from Spain. What is your favourite aspect of the cooking
process?
I certainly enjoy being in the kitchen, and I definitely enjoy seeing our guests delighted with our
final product – that’s the best part – to see the reaction of our guests. This is why we do what we do.
What is your chosen dish to cook?
Red tuna – a big, full tuna, grilled on an open fire
with almond, soy sauce, lemon juice, ginger, and
the chef’s secret!
What cuisine do you love eating?
I love eating, and I’m open to all kinds of cuisines.
In a way, they are all connected. What advice would you give to aspiring chefs?
I always encourage my team to cook as if they are
cooking for their mother, or somebody they love.
The best food is cooked with love, and I push my
team to always cook with their heart. In your opinion, what is one piece of equipment
or ingredient that is a ‘must have’ in every home
kitchen?
Olive oil, passion and patience – real food takes the
time it needs. For example, my grandmother loves
to cook a Spanish omelette. And although she only
uses onions and potatoes, it takes her 3 hours to
cook! “My ultimate goal

Growing up, I knew food was an important part of family life. In my family, I’d watch
my parents prepare meals for our guests, and I
remember being amazed to see buffets and banquets take shape.
Back then, I never imagined that one day I’d
be preparing banquets and buffets for birthday
parties, wedding celebrations and other occasions
– sometimes catering for more than 2000 people
for one single event!
Being a Chef brings me so much joy because
I can see that my passion brings other people happiness. It is always very pleasing for me to see my
clients impressed with the food that has been prepared, and share the positive feedback of guests
afterwards.
My favourite food to prepare is Emirati
cuisine. It is so different to other Arabic dishes
in terms of the preparation, textures and taste.
Unlike so many other types of cuisines, Emirati
food has a very ‘home cooked’ feel about it. It is
unique, hearty and richly flavoured with colourful spices.
Typically, the Emirati food reflects the culture’s traditions and history.
For example, fish is usually consumed at
lunch, not dinner as it would be caught that
morning by fisherman, prepared and eaten while
fresh. Sheep, goat and chicken are meats most
often eaten for evening meal, with camel meat
typically served as part of an Eid or wedding celebration – something very special.
Traditional Emirati dishes, such as Machboos
or Fouga, contain Arabian bezar spices such as
turmeric, cinnamon and cardamom, as well as
Loomy – a distinctive dried lemon, that is added
with either fish, chicken or red meat during cook-
ing. Basmati rice is then added to the top of the
pot to cook amongst the aromatic aromas from
beneath it.
Lamb or chicken Thareed is also a Bedouin
dish that you must try. Served as a hearty stew
with meaty pieces, marrow, potatoes and tomatoes, layered with Emirati bread, it contains a lot
of nutrition, which is why it is very popular during Ramadan.
For big events such as weddings, our Emirati
clients request Harees and Ouzi, because they are
perfect when catering for many people. Made
from ground wheat and meat, Harees is a simple
festival dish with only a few ingredients, which
cooks for hours to form a smooth texture. Lamb
Ouzi, is also designed for large gatherings, and
the rice stuffing takes on the flavor from the mari-
nated lamb.
It really is a very satisfying dish, which can
be modified to suit personal preferences. In fact,
recently I prepared individual Ouzi for a VIP
wedding in Al Ain and not only was it delicious,
but visually, it was very creative. It was an Emirati-Continental fusion, and the client and guests
loved the result.
With all this talk of the main dishes, nothing
is as good as the appetizers and desserts. These are
my favourites because I love the process of preparing them and producing such tasty, wonderful
creations.
I never imagined that this would be my specialty, but I am so happy that it is my culinary
passion.
