Fidelinka - European standard
Fidelinka Company AD represents a unique example in its branch in Vojvodina and Serbia.
Namely, it is a vertically integrated system combined of multiple complementary production
units (agriculture, milling, starch manufacture, pasta manufacture, bakery and confectionery
factory), whose common denominator is wheat. Tradition, richness of range and long-term
commitment to maintain quality have created a loyal base of consumers who, by buying
Fidelinka brand, obtain an absolute guarantee of quality.

Fidelinka's enthusiasm is directed towards top quality products on the consumers' menu. Being
aware of the relation between food and health of the modern man, the greatest attention was
paid to a responsibly planned production. In line with contemporary global trends in quality
food, our goal is to provide consumers with a product that has preserved its nutritional value.

History
Fidelinka - a pioneer in Serbia's food industry
Milling industry has a long tradition in Subotica. Back in1868, the first two steam-powered
mills began working. Fertile land of Bačka territory and active energy of the people here have
enabled industrial milling to experience a sudden rise in this field.
At the end of 1947, 22 mills from Subotica area joined the newly created milling company
"Subotica". Those were utility mills. A new industrial mill with silos was built in 1960, and a
year after that the pasta factory in Subotica, as well as the new mill in Čantavir. In 1965 the
company was joined by the baking industry, and in 1974 by a drive for the production of wheat
starch, gluten, dextrin and starch modifications. It was then when Fidelinka company was
founded - and today represents the leading manufacturer of wheat flour and pasta in the country
and the only manufacturer of wheat starch in the Balkans.
In the late eighties, Fidelinka begins to direct a mayor part of its production towards higher
stages of processing. Today, almost 70% of the flour produced in our mills is processed in
several stages, until the final food products, within their own drives.
In its long history, Fidelinka company has become a synonym for top quality flour, pasta, as
well as starch and agricultural products.

The beginning of intensive changes in Fidelinka company is related to the year 2000.
Modernization and contemporary business spirit conquered all business areas. A great system,
adapted to the economic trends of the time in which it was created, was transformed, quite
dynamically and briskly, into modern European food industry concern. While retaining the
most valuable legacy of decades of development that generations of predecessors have
achieved- primarily high-quality products and a well-respected name - Fidelinka performs.
Empowered by a new organization and standards in production, with a proactive approach,
Fidelinka responds with that extra care to the needs of modern consumers. In all of this, we
apply enhanced European and global experience. Without commotion, spontaneously,
involving all of our potentials and conquering new technologies and knowledge, we
established a goal - to become a modern European company.

Internationally recognized certificates of quality and safety of products
Since 1998 Fidelinka Company AD has a certified quality system management ISO 9001, and
from 2006 a HACCP certificate. This is how Fidelinka received an official recognition of
integration into the international framework of quality control and food safety, or, in other
words, international standards of consumer protection, placing itself on the market of healthsafe and flawless quality products, for the entire production programme.
The certificates were awarded to Fidelinka Company AD by a leading Austrian certification
company ÖQS, and since 2010, the German certification company TUV, which performs
evaluations and awards certificates for quality systems according to the most renowned
international standards.
Fidelinka's laboratory is equipped for 66 types of analysis, that are performed daily or when
needed, with the goal of absolute accuracy.
The verification of the proper functioning percentage and quality of this laboratory is annually
done by an authorized institution in Serbia - Institute for Technology of Grain and Flour,,
headquartered in Novi Sad. Testing has been done since 1998. The data on the extremely high
percentage of accuracy in measurement (95%), which arrives each year from the authorized
control institution, speaks of laboratory's high quality, i.e. - of standardized accuracy of the
obtained data.
This laboratory performs testings and monitoring of the quality of raw materials in the
manufacturing process, as well as the final products of Fidelinka Company AD. Grains, flour
mill, pasta, bakery and starch products are subject to the testings. Around 60, 000 laboratory
analysis per year are being done here.

According to research conducted by GFK agency, spontaneous awareness of the brand
Fidelinka amounts to 92%, while 58% of Fidelinka's consumers are completely loyal to the
brand. Fidelinka's pasta (with 62.5%) and Fidelinka's flour (with 53.1%) are the leading brands
in their categories among consumers in Serbia, and Fidelinka's pasta is, among all brands in
Serbia from all categories, brand number 10. These exceptional results are a consequence of the
reputation that has been building for several decades. Regardless of this fact, we continue to
insist upon building and developing the potential that our brand provides.
Taking care of a strong brand implies consistency - and continuous development, innovation,
conquering new target groups and new markets, as well as updating the existing product
range.
Today, our communication towards the customer is based on a refreshed concept. It consists

Fidelinka handles more than 3 800ha of arable land. It sows wheat, oilseed rape, sugar beet,
barley, rye, sunflower, seed wheat and corn.
To perform the job, it hires about 200 subcontractors (agricultural cooperatives, registered
farms) and about 850 cooperators.
Thanks to agrarian raw materials, Fidelinka achieves close to 45% of total company revenue.
Fidelinka continually invests in all segments of the manufacturing process and storage. This
ensures high-quality raw material, which has an effect on the final product.
Fidelinka Company provides material for the production to cooperators through exchanges of
grain for seed commodities, fertilizers and protective means, while 1helping agricultural
producers, providing large quantities of raw materials for processing and trade.

The classification of these types of flour is done according to the standards whose base is made
of ash content (i.e. mineral substances) in flour. Flour type T-400 is one which possesses up to
0.45% of ash, while the ash content in flour type T-500 can be up to 0.55%. The ash content
affects the color of the flour, and the manner of sieving in the technological process affects the
granularity or fineness of the flour.
Flour T-400 rough is considered to be the finest flour because it is produced from the very
center of the grain. It is distinguished by a mild yellowish color and sharp granulation, which is
how it got its name. It is recommended for preparation of biscuit dough, cakes and pies, more
precisely, for those delicacies which need baking powder to make the dough rise.
Wheat flour T-400 soft is extremely white and of fine granulation. It is intended for preparation
of finely fermented dough pastry such as donuts, pancerotti etc., where yeast is a means for
making the dough rise.
Type T-500 contains the highest amount of ash and thus is a little darker, that is - slightly gray
in colour. It is characterized by fine granulation and is recommended for preparing delicacies of
fermented dough (pizza, rolls, strudels, etc.), in which the means for dough rise is also yeast.
These types of pastries, unlike the previous ones, are characterized by a slightly coarser
structure of the dough.

Available milling capacity of 108,000 tons per year, turned out to be insufficient for further
production growth. Therefore Fidelinka attempts to revive and put into operation every existing
mill in the region. This is an important factor for the development of a large company, whose
success is based on the maximum mobilization of resources. In order to respond to market
demands, maintain a competitive position in the country and create the conditions for a
competitive flour-product market placement in the region and abroad, Fidelinka is constantly
working on increasing its production capacities.

The annual production of over 8 200 tons of various types of pasta (short, long and draped pasta
with or without the addition of eggs) turned Fidelinka Pasta factory into the largest one in Serbia,
and one of the largest in the region. According to research conducted by a reputable agency MBI
TGI in 2005, 62.5% of respondents said that they used Fidelinka's pasta most frequently, while,
according to GFK agency's comparative research on the subject of major brands of pasta on
Serbian market, 53.1% of respondents cited Fidelinka as the leading brand.
A modern, dynamic way of life increasingly imposes the need for simplifying and shortening the
preparation of healthy meals. Fidelinka's pasta is the ideal solution. It easily finds its place on
every dining table - even when it comes to the most demanding consumers, such as vegetarians,
as well as gourmands and gourmets.
The expected results are being achieved, among other, due to the fact that company's own raw
materials are exclusively being used in manufacture. That way, Fidelinka controls the quality of
the pasta from the very beginning to the final product.

Baking industry within the Fidelinka Company AD complex was built in 1963. According to the
size of its capacity it is among the largest industrial bakeries in Vojvodina. Its annual production
accounts for more than 29,000 tons. Production processes are carried out in accordance with the
strict regulations of ISO 9001 standard. As basic raw materials for manufacture, semi-finished
products from Fidelinka's own manufacture are used (flour, gluten).
Fidelinka offers more than 70 types of bread: white flour bread, such as Bačka white bread, from
a mixture of grains, such as jasak, watermill, oat, bio bread, corn flour bread, with addition of
ciabatta olives, fitberry raisins...
Baking programme has more than 100 kinds of pastries, such as the Bavarian and butter rolls,
pretzels, croissants and puff pastry with various fillings, but also a wide assortment of pastries
from mixed grains. In its range Fidelinka bakery also has 50 types of cakes.

Starch factory drives place a wide range of products. These are:
• food and technical quality wheat starch
• food and feed quality wheat gluten ,
• Modifications made of starch (yellow, white and blue dextrin, oxidized starches, extruded
starches)
• liquid adhesives and adhesive powder.
Starch factory's drive, as well as other drives within Fidelinka Company, pay exceptional
attention to product quality. Raw material from both Fidelinka's as well as other biggest mills
from Serbia are being used for manufacturing, which controls the quality from the very beginning
of manufacture. Technology is exclusively based on flour and water, without adding chemical
agents.
With its products from the Starch factory's drive, Fidelinka has been participating for many years
at International Agricultural Fair in Novi Sad. The exceptional quality of its products has been
confirmed by satisfied customers, as well as by numerous medals, diplomas and prizes from the
above mentioned Fair.

The only wheat starch factory on Balkan operates within the Fidelinka Company AD. It is
engaged in the processing of wheat flour, that is - in wheat starch and vital wheat gluten
manufacture. Approximately 13 000 tons of wheat is being processed every year for the purposes
of the starch factory.

Food industry:
Ready to use flours, mixtures for bakeries, cakes and cookies. Glucose and confectionary industry. Sausages,
canned meat and other meat products as binding agent for water and fat. In soups, sauces and salad dressings
as a binding agent and to obtain a smooth, creamy structure of the end product. Infant food, spread, preserves,
dry spice mixes and snacks as a binding agent. Dairy products (e.g. pudding, custard). Beer, as a source of
carbohydrate for fermentation. Fermentation, as a medium. In meat industry it is used as a texturizer, absorbent
of water (1:2), meat replacer. It is added up to 4% of mass in the recipes. The starch is added at the end of
cuttering at 10°C.

Description
Starch is a carbohydrate cosisting of a large number of glucose units joined together by glucosidic bonds. This
polysaccharide is produced by all green plants as an energy store. The basic chemical formule of the starch is
(C6H10O5)n, it consist of two types of molecules: the linear and helical amylose (contains 1,4 - alpha
glucosidic bonds) and the branched amylopectin (contains1,4 – alpha glucosidic bonds as well as 1,6 – alpha
glucosidic bonds). Wheat starch is insoluble in cold water or alcohol and contains 30% amylose and 70%
amylopectin. Wheat starch is composed of three classes of granule fractions with diameter varying from small
(< 1 μm) to medium (4-7 μm) till large (> 15 μm).

Description
Wheat gluten is extracted from flour by washing out the starch. Wheat gluten is a plant protein
composed of two components gliadin and glutenin. Protein content is at least 77%. Gluten is
insoluble in whater has ability to apsorb water and viscoelastic properties.

Food application:
Yellow dextrin is used for meat products because it has excellent adhesion and better coloring of
battered and fried product. It can be used in confectionery as thickening agents and do not interfere

pharmaceuticals and act as binding agent.
Technical application:
Yellow dextrin is used for making molds, glass fibers, and in the briquetting process. Application is
in the adhesives industry, paper industry for the production of adhesive tapes, paper bags and card
board boxes. It is used for the flotation of copper, in a process without NaOH. It is used for
flocculation in the process of manufacture aluminum and the oil wells as an additive in the sludge.

Yellow dextrin is a group of low molecular weight carbohydrates produced by acid-thermal
decomposition of starch. Yellow dextrin is soluble in water which makes it very easy to transform it
into liquid solution again and it also have sticky properties.
