Dear Guests,
We are so thrilled that you have joined us this evening
for this our first gala in support of BIAN.
BIAN is an organization primarily run by volunteers
who do what they do because they have seen, often
first-hand, the value of the services BIAN offers to
the Niagara community. As is so often the case with
not-for-profit organizations these days, BIAN experiences difficult financial challenges. It is only through
the generous support of individuals and organizations
that BIAN can continue to provide programming and
support to brain injury survivors in the Niagara Region.

running events. Six or seven months ago, Food for
Thought was simply a dream and so we’d like to give

Music Direction: Ross Inglis
Ross Inglis is the Director of Music at Knox United Church
in Agincourt, runs a private studio of fifty students and is
the conductor of the professional choir for the High Holy
Days at Temple Sinai in Toronto. Ross has been involved
in countless collaborations with musical organizations
throughout Ontario. He was Musical Director of Mountain- view United Church in St. Catharines for fifteen years and
taught music for the Niagara District School Board. Ross has been Musical Director for the Carousel Players, Oh Canada, Eh? and Garden City Productions.
For many years, Ross was involved with the Toronto Mendelssohn Choir, as
Assistant Conductor, Assistant Accompanist and a tenor in the Elora Festival
Singers. Ross is please that the following artists will accompany him tonight:

Tomatoes and oregano make it Italian.
Wine and tarragon make it French.
Sour cream makes it Russian. Lemon
and cinnamon make it Greek. Soy sauce
makes it Chinese. Garlic makes it good.

Erik Peacock | Wellington Court
Erik continues his love for food at Wellington Court Restaurant and
The Coach House at Henry of Pelham Family Estate Winery. Erik
has found the perfect contrast between a formal, intricate, stylized
cuisine in the city to smart-casual, approachable fare in the country. His intensity for passing along his knowledge of food has developed into teaching roles at Niagara College as well as other specialty
venues and events. A firm believer in keeping much of his focus in Niagara, Erik has
developed deep-rooted relationships with local farmers, wineries, the culinary arts and
education. “Relationships are our strong suit. We are fortunate to work so closely with
friends in all industries, whether it’s education, the growers, or the wineries. I think we
benefit from seeing the beginning and controlling the end result.”

Joe Marchese | La Scala Ristorante
Joe Marchese, chef at Lascala Ristorante in St. Catharines, believes
that food is life and life is food. Joe’s philosophy is that food is grown
to be enjoyed by friends and family with good wine and conversation.
As the old Italian saying goes ... you never age at the dinner table.

Tony Oresta | Coppolla’s
Born in Camposano, Italy (a small town near Naples), Tony came to
Canada in 1990. Tony’s culinary expertise is Italian cuisine. He started
working at The Gate House Hotel and then joined Queen’s Landing
Hotel in 1995. Tony made his debut as Chef at Coppola’s Restaurant
in 1999. Tony has since worked at Carpaccio’s Restaurant and the
Pillar and Post. Currently, he is back as Chef at Coppola’s Restaurant
in St. Catharines creating some of the best Italian fare in the Niagara Region.

Jan Campbell Luxton | de la terre bakery
Chef Jan Campbell-Luxton has worked in professional kitchens in
Canada and internationally since 1996. He trained at the Stratford
Chefs School, then stayed on for several years there as a teacher.
Chef Campbell-Luxton lives in St. Catharines with his partner Kate
and their sons, Joshua and Simon. de la terre is deeply committed
to supporting locally produced foods and their producers, as well as
encouraging consumer support of organic and sustainable agricultural practices. The
bakery uses biodegradable and compostable take-out containers, cutlery and napkins
and purchases its flour and produce from small independent farmers wherever possible.

Shawn Lane | Lane Catering
Shawn Lane has been in the culinary field for 26 years ranging from
roadhouse to fine dining. Expressing a passion for food Shawn enrolled in The Liason college Culinary Arts & Chef Training Program
where he graduated with honors. Shawn took root at Pow Wow New
World Grill in Downtown St. Catharines in 2001 and in 2011 graduated to independent catering and restaurant consultations. Shawn
has been a strong supporter of the downtown core and has been an active participant
in many fundraisers such as mayors dinner, cooking demonstrations at the downtown
market and a sponsor of Brock centre for the arts. Shawns theory in life is good food
combined with good people makes for a great evening. And remember to live, love and
laugh often.
