Thus it can save large labor working. The machine has proved to gently handle a wide variety of dough and produce a high quality product. It does this while maintaining the highest standards of safety. Owners and operators should carefully read and familiarize themselves with this entire manual before attempting to operate or service this machine. Complying with this manual will ensure years of safe and trouble-free operation. All of the information, illustration and specification contained in this manual are based on the latest product information available at the time of printing. It can divide the dough evenly. 2). It can round the dough greatly. 3). The machine can keep in a good status with lubricating oil. 4). It can turn over the machine to let the knife seat cleaned easily by turning both sides round screw of the machine head. 5). It can adjust easily to fit for varies weight of dough. 6). It can save large working time and finish rounding 30 pieces just in about 8 seconds, and can round about 6000 pcs per hour. 2 INTRODUCTION Specification 3 INSTALLATION AND COMMISSIONING Installation 1. After uncrating the machine, inspect it carefully whether there is any damage that might have occurred during shipment. Report any damage to the forwarding company before proceeding to operate the machine. The damage can then be assessed to determine liability. Non-obvious damage can be claimed within seven days, including the day of arrival. We do not grant the right of replacement for damages claimed after this period. 2. The machine is supplied factory lubricated and ready to run. Select a location for your Divider with sufficient room for operating, cleaning and servicing. In order to achieve an optimal performance of this machine, we advice you to choose a location with the following properties: − Ventilated and dry; − With good lighting; − Protected from direct sunrays and rain; − Far from heat source and water; − On a robust, plane, horizontal surface without any vibrations. Electric Connection Before making any electric connection, be sure that your electric mains is compatible with the electric specifications of your divider. This data is shown on the machine nameplate. To ensure safety, the machine has to be connected by an authorized electrician, and the ground protection is necessary. Commissioning After electric connection, release the emergency stop button, turn the shift knob at 1 pisition, press the both “on” button at the same time to see if the 4 INSTALLATION AND COMMISSIONING rounding palte is rotating in the direction of the arrow as indicated on the front side of the machine. If not, change any two phase of the three cables of your machine and restart it. 5 OPERATION Set-up See Picture 1, there are five switchs on the machine, and each function is shown as follows: Picture 1 1. Power Switch: Turn the switch “on” to connect the machine with the power supply. Turn to “off” to isolate the machine from the power supply. 2. Shift Switch: This switch is used for different operation model. 1). 0 position: the machine will stop. 2). 1 position: Semi-Automatic--Keep pressing “ON” button, the machine starts, press down, divide & round, move back continuously. But once your fingers move, the machine will stop immediately. 3). 2 position: Fully-Automatic--Keep pressing “ON ” until the flour plate drops, then the machine can operate the above movement automatically. 4). 3 position: Reverse rotate--Service only for maintenance. 3. Start Switch: Keep pressing the both two button to operate the machine. 4. Emergency Stop Switch: When there is something emergent happen, press this button to stop the machine. If you want to restart the machine, release the button by rotate it in the direction of the arrow. 6 OPERATION There is an adjustable screw at the rear top side of the machine. See Picture 2, there are many scale on it. You can choose a proper one to fit your dividing. Rotate it anticlockwise to increase the value, while clockwise to decrease. Picture 2 Picture 3 See Picture 3, there is a shift pole at the left side of the machine. There are five rounding mode of this machine, you can choose them by pulling out the handle according to your need. Shift handle: 0—0 rounds; 1—5 rounds in 2-3 seconds; 2—9 rounds in 4 seconds; 3—13 rounds in 5 seconds; 4—17 rounds in 5-6 seconds; Note that don’t shift the pole when it is in operation. Operation Steps 1. When doing the automatical dividing, first doing the primary dividing for the dough from the mixer. 2. Release the emergency stop button, turn on the power switch. 7 OPERATION 3. Turn the shift knob to the proper position according to your need. 4. Adjust the above screw as per the weight of the dough piece. 5. Pull out the shift pole to the right position to get the best effection for rounding the dough. 6. Put the dough on the plastic tray, flatten it manually with your hand, then put the tray on the rounding plate of the machine. 7. Keep pressing the both “on” button to go on dividing and rounding. 8. When all process completed, the machine will stop automatically, then pull out the tray. Attention: 1. Note that the hole on the tray should aim at the pin on the rounding plate. 2. The moulding plate should be clear and clean. 3. Keep your fingers and other irrelative things away from the dividing knives, especially when it press down. How to use the shift pole 1. When dough elasticity is equal to the standard of fermentation, you can adjust the adjusting pole on base of the unit weight. 2. When dough is over-proofed, the volume of dough will turn larger, so you should change the scale of weight to get approach to the volume of dough. 3. When dough is less-proofed, wait for the proper proofing or turn the scale of weight lower to fit for the dough condition. 4. When the surface of dough is broken, means too long time spent on rounding, please reduce the rounding time. 8 OPERATION 5. When the phenomenon of periphery dough which is smaller appeared, means flatten the dough is not enough when dough is placed onto the plastic plate. How to deal with the following situation 1. When divide the dough unevenly M1: Flatten enough the dough. M2: The scale of weight should be adjusted accurately. 2. When drape, flattened dough appeared after rounding M1: Turn the scale of weight to larger. M2: Shorten the rounding time. 3. When round unevenly M1: Prolong the rounding time. M2: Adjust the scale of weight to lower position. 4. When surface of dough is not smoothly M1: Place oil or flour on the dough. M2: Clear and clean the knife seat thoroughly from residue of dough. M3: Pay attention to the content of water due to mucosity of dough. 9 CLEANING AND MAINTENANCE Cleaning after operation After daily use, the machine has always to be cleaned thoroughly. 1). Please isolate the machine from the power supply first. 2). Do not wash the machine directly to prevent danger from electric shock. 3). The head must be opened and the knife has to be cleaned from residue of dough. 4). Do not use salad oil or vegetable oil to lubricate the knife. The residue of dough will become hard and may damage the knife or corrode the machine gradually. 5). Do not wash the plastic plate with hot water to pretect it from distortion. How to clean the knives and knives seat: 1). Loosen the screw for the cover, then remove the front and back cover. See Picture 4. Picture 4 Picture 5 2). Rotate the flour frame in the direction of the arrow as show in the Picture 5 to remove it. 3). Use a T-shape handle to loosen the both round nut. See picture 6. 4). Turn the knives seat as shown in Picture 7. 5). Aim adjusting handle hole at the pin on the knives seat. See Picture 8. 10 CLEANING AND MAINTENANCE 6). Press the handle in the direction of the arrow as shown in the Picture 9 to push out the knives. Note that for fully cleaning, please press the handle in and reverse the direction for sometimes. Picture 6 Picture 7 Picture 8 Picture 9 7). After cleaning, get back the knives to the same level of the knives seat. Then remove the adjusting handle. 8). Turn back the knives seat, tighten the round nut and mount the cover. Maintenance 1). Keep the electric box clean and dry. 2). Keep the out surface of the machine clean. 3). Keep the knives, knife seat and plastic plate clean. 11 CLEANING AND MAINTENANCE 4). Check the lubrication oil in the oil bath under the moulding plate every 3 months. Refill when oil is not enough. See Picture 10,11,12.
