What a wonderful
world !
I
n previous editions, I said "Life is Beautiful!" and also "Be Positive".
Today I feel like telling you: "What a wonderful world!" An optimism
that will no doubt surprise you, given the sluggish state of the
economy, the Ebola virus which is making progress daily, and the
daily horror of wars taking place around the world. But despite all of
this disturbing news, in many ways, we are indeed in luck.
Yes, that’s right, luck, because we live in a world that still leaves room
for what is beautiful and well done, for what surprises us and makes
us dream. For their 2014-2015 collections, our maisons have surpassed
themselves, while always staying true to their eternal foundations. As true
guardians of the temple, they assure the transmission of expertise and
they deliver sublime quality. "Belgium" and more than ever, "Brussels"
is a coverted signature.
The Brussels Exclusive Labels houses are partners, consisting of
enthusiasts sharing the same values. Their passion pushes them to
create original co-branded projects, in which they combine their talents
to offer customers amazing products, exceptional craftsmanship and
often, Belgian humour. I think, for instance, of Delvaux and Dandoy
celebrating their 185 years together: a bag turning into a cookie jar
and a cookie turning into the classic Delvaux Le Brillant handbag.
Or I am reminded of Antoine Pinto who in his magnificent interiors
incorporates Rubbrecht lace. Or, closer to home, the Baobab candles
which sublimely accompany my designer bathtubs.

Max Paul kept a diary in which he chronicled daily life in Brussels.

The history
Started in 1937 by Armand Dachbeck
and the founders of several great
houses (De Geest, Delvaux, Leysen,
Maison du Porte Plume, Vanderborght
& Wolfers) the Chambre Syndicale
du Haut Commerce des Industries
d’Art et de Luxe was intended to
consolidate and promote companies
advocating a certain idea of luxury,
craftsmanship and excellence. Brussels
Exclusive Labels (BEL), as it is now
called continues this legacy. The great
maisons that together make up BEL are
what can only be called the nec plus
ultra – the very best. Some are new,
others are elegant old brands; some
are famous beyond our borders, others
are less known. But they are all united
by one purpose: their dedication to a
particular idea of luxury and a certain
lifestyle.

BEL: why and for whom?
Jean-Pol Piron (Aquamass), acting president since 2009,
follows in the footsteps of his illustrious predecessors.
Alongside vice-presidents Sophie Helsmoortel (Cachemire
Coton Soie) and Pierre Degand (Maison Degand) he
continues BEL’s ambitious and noble labour. With a
particularly dynamic action plan, BEL has continued to
evolve and is now in an even stronger position as a quality
label recognised by the wider public. The goal of BEL is
to strengthen the synergies amongst members, to create
bridges between them and to raise their awareness of the
ever-changing luxury market. To this end, BEL organises
media and special events, such as "Les 3 heures de barque
du Chalet Robinson": boat trips which are completely
sponsored by BEL members. The BEL rally is another
highlight of the social calendar, which takes its participants

Farewell dear friend...
The Brussels gastronomic family mourns the loss of an exceptional Maître Volailler
(Poultry Master). André Slabbinck, of the famous poultry house of the same name,
died in a tragic accident in the early summer. We pay tribute to a great craftsman of
Brussels culinary culture.

T
he tragedy occurred on
6 July 2014. As they were
preparing to mount their
motorbike, André Slabbinck
and his partner Nadège were hit by a
reckless driver, struck by bad luck and
caught by death. Tragedies are always
unbearable, especially because they
are always deeply unfair. Fate is cruel
and the path of André and Nadège
stopped short in full happiness. They
were a close couple. Always together
and always smiling in their beautiful
boutique on Chaussée de Waterloo.
Together they exuded an unmistakable
joie de vivre and represented genuine
friendliness. Chosen in 2012 as one
of the four best craftsmen in Brussels
in the field of gastronomy, as the
only Poultry Master in the city, André
Slabbinck always honoured his roots
and worked hard to elevate the famous
family business created by his uncle in
1928 to the rank of a true institution.
An exceptional craftsman, an epicurean
at heart, he was loved and respected
by all. A true neighbourhood
shopkeeper in the best sense of
the word, he was a regular in the
commune of Uccle which he knew
well and was well-known in. From
Fort Jaco to Place Saint-Job, where he
liked to have his coffee at the counter
surrounded by his friends, he will leave
the image of a loving and kind man.
A professional down to the minutest
details, he incarnated true expertise
and passion for his craft. It was these
values that made him a friend to all
the members of the Brussels Exclusive
Labels which he joined in 2013. He was
already perfectly at home in it, always
participating in its events with good
humour, and sharing his knowledge
and taste for the finer things in life. But
unfortunately his life was cut short,
despite his belief in the longevity of
excellence. And now Maison Slabbinck
will continue its business, aiming to
preserve the soul and the quality that
he always stood for. The best way, no
doubt, to keep alive the memory of
André and Nadège. Goodbye to a true
craftsman – and friend. ■

Comic strips bouncing off
the walls
In the Brussels "pentagon", the "9th art" is everywhere. It comes out into the streets
and flaunts itself, XXL-size, to passersby. We take an unusual walk in the company of
Tintin, Spirou, Le Chat and the rest.

T
he comic strip is to
Belgium what red wine
is to the French: a source
of national pride. Why?
Because it was here that the comic
strip was first considered to be a fullyfledged art. And it was in Belgium,
in 1929, Georges Prosper Remi (aka
Hergé) invented the "clear line". Tintin
and his famous quiff were born in
Brussels, and it shows. On walls, in
railway stations, in the subway and
on rooftops, the hero appears all
over the city. He even went to the
moon way before Neil Armstrong and
Buzz Aldrin! From Tintin to Le Chat
(the most surreal of the Belgians),
without forgetting Ric Hochet,
Gaston Lagaffe or Quick & Flupke
(two Marolles urchins): Brussels is
without a doubt the capital of the
comic strip. So much so that it flaunts
its heroes for all to see. As of today,
there are 47 XXL-sized drawings

gracing downtown’s stepped gables.
They provide a great opportunity for
a walk off the beaten track, which
feels like turning the pages of a
book. It’s also a way to get closer to
the true temperament of Brusseleers
through the personalities of artists and
writers, and the atmosphere of their
frescoes. The Wall "BD Broussaille",
at the crossing of the rue du Marché
au Charbon and the Plattesteen,
was the first painting on the comic
strip-trail. It was inaugurated in July
1991 by the city authorities, and is
based on an original draft by Frank
Pé. Like most mural paintings in
Brussels, the association "Art Mural"
was responsible for the execution of
the fresco. From then on, every year
saw new paintings have appeared. In
2012, for example, rue Terre-Neuve
welcomed Yoko Tsuno, the friendly
Japanese electronics engineer by
comic artist/writer Roger Leloup.
And in late 2013, Thorgal, the fantasy
hero created by Rosinski and Van
Hamme, made his appearance. But
my favourite mural painting is Blake
and Mortimer by Edgar P. Jacobs, at
the corner of the rue du Houblon and
rue du Petit-Rempart, near the Porte
d'Anderlecht. Two legendary Belgian
comic strip heroes under the threat of
a sinister symbol: the Yellow Mark. I
am also very fond of Gaston Lagaffe
by André Franquin, (Boulevard
Pacheco). The most famous of antiheroes is in the company of his
(morose) black-headed gull and his
(hyperactive) cat, this time in 3D.
At the bottom of the stairs, in the
Belgian Comic Strip Center (rue des
Sables) you can find out more about
all these heroes. ■
World Record
Last September, a new mural painting of "Le Chat" was inaugurated in
the Etterbeek La Chasse neighbourhood. An area that Philippe Geluck,
the father of Le Chat, knows quite well, as he was born there. This fresco
– the largest mural painting in the world of comic strips, they say –
extends over a length of 140 metres. It was executed in 24 panels of
about three metres in height and six metres in length along the walls of
the Géruzet barracks (home to the Federal Police School). The drawings
had never before been published and the accompanying "balloons"
can be read in French, Dutch and English. A great way to revitalise the
neighbourhood and its shops.

New lease of life
New team, new chef, new brunches & after work events...
the new season of Odette en Ville in Brussels starts off busy.

With new management in place,
there are changes in team and
service. That goes first of all for
the kitchen, with the arrival of new
chef Christophe Goeseels. And one
change leads to another: the menu
will now be revised each season.

fresh market products. Second: the
welcoming strives to be more warm,

focus is on service and quality, both
in the hotel and in the restaurant.
Third: the brunch now revisits the
classics in a convivial atmosphere. It
is more fun and cosmopolitan, and
will soon be the trendy rendezvous
of the Sunday morning. Add to that
after-work lounges, original cocktails
and afternoon tea to keep the
place going from morning to night.
Remember also that restaurant,
breakfast and brunch are open to
all, not only hotel guests. With these
innovative and fresh ideas, the new
team has managed to bring a wind
of change, while remaining true to
the spirit of Odette en Ville. ■

wherever they go. After
bringing a breath of fresh
air to the countryside
(Williers right across the French
border), Odette packed its bags
for the city and set up a second
restaurant in Brussels, in the
Châtelain neighbourhood. That
was 2009. Now five years into its
Brussels adventure, the characterful
boutique hotel deems the time right
for renewal. But not in a brutal
way. Expect no radical changes,
rather some touches of freshness
and a few new things, just to stay in
touch with the times. The modern

a new story, for us to interpret with

ust a few steps away from Place
du Jeu de Balle, Eric de Ville
welcomes us to his Art22 Gallery,
which he runs with business
partner Didier Brouwers. On
display is the work of a dozen young
artists, in an exhibition inaugurated
last June. Among the amazing
paintings and sculptures, our attention
is immediately drawn towards a Tower
of Babel, which is both imposing
and fascinating. As you approach
to scrutinise the myriad of details
in this photomontage, you see that
it bears the signature of the Ixelles
artist himself. "I like to recreate reality
with my own emotions," he explains.
In forty years of photography, the
man has done it all, starting with
motorsports, the photography of
which he revolutionised in the mid1970s. Next, he turned his attention
to capturing perfumes, cosmetics,
jewellery and watches, working with
leading international and Belgian
brands such as Leysen and De Greef.
The arrival of digital photography
upset his career but the Belgian patron
of the arts Stephy Langui reawoke his
passion at Art Basel. Back in Ixelles,
the place of his heart, he decided to
turn his photography studio into an
art gallery, Art22, which he opened
in 2006 with Didier Brouwers. This
was certainly a change of direction,
but not an entirely different world.
De Ville began tracking newcomers
on the scene of contemporary art,
but hardly a year passed before
he returned behind the lens to
create poetic, critical and humorous
images that shatter the codes of
photography. Like a painter, the
self-taught photographer first thinks
about the theme before capturing
reality. His goal is to isolate details
and then reassemble them, creating
a recomposition, a virtual reality,
a reflection of his personality and
sensitivity. Each work takes several
months to complete, in which you
can sense the influence of Flemish
painters. His impressive Towers of
Babel in Bruges, Brussels and Paris
consist of scraps and bits of everyday
reality, but form a complete whole.
De Ville has enjoyed great success. As
well as receiving the Audience Award
at Collection RTBF in 2010, he has
been exhibited at the Ixelles Museum,
the Lille Palais des Beaux Arts and at
the Antwerp MAS (Museum aan de
Stroom). In september 2014, he had a
"Babel, la nuit", ("Babel at night") 2014.

This is not a leap backwards, but a modern trend. Every first Sunday of the month,
the Brussels Vintage Market takes over Halles Saint-Gery, proving that retro is
always in vogue.

" Vintage": an adjective describing
all objects – clothing, accessories,
furniture – more than twenty years
old. This is the definition given by
Morgan Laloux, who, with Charlotte
Brabant, co-founded the Brussels
Vintage Market. For the last four
years, they have been organising this
Brussels event entirely dedicated to
products from another time. The idea
came to them when visiting London's
Brick Lane area, where vintage shops
sprawl over several streets. "We could
hardly create an entire neighbourhood
in Brussels, so we decided to start
with a market," laughs Laloux. The
adventure began in 2010 at the
Brussels bar Madame Moustache with
ten private vendors. The public loved
discovering finds of another era and
the first market was a hit. As a result,
our recessionistas decided to turn the
event into a regular one. Six months
later they moved to K-Nal near Tour &
Taxis, a larger place that allowed them
to have many more stands and open

up their space to other professional
vendors, young designers and artisans.
The vintage trend was soaring, and
success smiled upon them, so they
decided to invest in a more accessible,
more centrally located place: the
sublime Halles Saint-Gery, right in the
heart of Brussels. Every first Sunday
of the month, from 12h00 to 19h00,
nearly 1,000 visitors come in search
of something exceptional. Forty
exhibitors of vintage and secondhand and twenty designers take us
back in time with rare & cult pieces,
sometimes even pièces uniques. We
can rummage with ease, but also have
a drink and share delicious cupcakes
and rainbow cakes in a retro musical
atmosphere. Be sure not to miss the

Elst’s first pictures were
already clear proof of him
having a "good eye". We are talking
now about his younger years, with
his good old "Kodak Box". He made
his mind up very soon. Van der Elst
was to be a advertising photographer.
After studying in London, he worked
for major national and international
labels. Reportages, portraits of
public figures (including King Albert
II), still lives, food photos.the man
has carved out a fine reputation.
Today he’s decided to concentrate
more on portraits. By setting up
his own studio, Van der Elst shows
his desire to place the human side
of photography at the centre of
his work. At a time when digital
photography is within everyone’s
reach, when "selfies" of varied quality
are popping up on social networks,
photography of distinction takes on a
greater weight than ever.
Like in the cinema
is a "beauty treatment" whereyou will
be treated like a star. The makeup
artist will pay special attention to
your wellbeing, adapting the makeup
to the light that the photographer
creates especially for you. Then it’s
time to step into the light: the cinema
projectors will create a chiaroscuro on
a dark grey background. No dazzling
flash lights; Van der Elst works with
continuous light for the nuanced

After the posing session, Van der Elst
"reworks" his pictures into black and
white. It is this treatment which make
them so special, so elegant. However,

Ô Le Snap ?
Everyone spoke to me about it but I had never dared
to open the door. Yet this is another fine example of
Belgian surrealism, "karaoke for society people", as host
Khalid puts it. With Virginie Effira as my chaperone, we
bump into everyone who is someone in Brussels. The
atmosphere is that of an exclusive bar in New York,
enriched with that little Belgian touch that makes the
difference and enhances your evenings. Here, everyone
knows everyone else, there are embraces, bonds are
formed, the boss sings like a god, and karaoke is just an
excuse to hide a really generous spirit. A special mention
for the "Snapero" created in collaboration with sommelier
Eric Boschman who offers a daily appetiser-tasting session
starting at 17h. In this Châtelain neighbourhood (my
favourite in Brussels), the Snap is a real golden find. I'm
not quite sure I understood everything that was going on,
but that must be my Parisian side!

just the virtual face of the most Parisian of Brussels

Management. The initiative of a man of fashion, Olivier Zeegers is providing
professional management training to (young) designers. A course in the image of its
founder: buoyant, plural, modern and forward-thinking. Keep an eye on it.

adore the coquettishness of women. It fuels so many
industries," said Gabrielle "Coco" Chanel. On her way to the
top, the great mademoiselle needed much more than talent,
technique and creativity. She also had a solid foundation
in management and marketing, mostly learned on the job. Today
in Brussels, at a time when Belgian fashion is a royal road to
catwalks all over the world, this type of training is sadly lacking.
Let's face it: our management schools have little interest in fashion.
In Belgium, what we need is good management training in the
areas of fashion and design, and even luxury products. Which is
why Olivier Zeegers (42), a consultant at MAD (Mode And Design
Centre) and professor at the Journalism & Communication school
IHECS (where he teaches "luxury marketing"), had the foresight to
develop a private course to enable young talent to stack as many
odds in their favour by developing a solid career plan, within
which their passion can flourish. The idea is to train managers
who can deal with the interface between design and the industrial
process, who can meet with the challenges of creativity, who can
offer new services and use emerging technologies to increase
their market competitiveness either directly or within companies
in the field of fashion and design. The program includes "master
classes" and participatory "workshops", but also sessions ("evening
classes for starters") in brand management for creative young
entrepreneurs, but also for graduates in management, law, political
science and languages who would like to get a better view of the
fashion industry. The teachers are active professionals in their
field, and students will work on the project of launching a "popup brand." The materials to be sold will be manufactured through
3D printing and reworked by artisans. The course also addresses
the topic of luxury and eco-design. The goods will be sold in
pop-up stores. BEL, MAD, WBDM (Wallonie-Bruxelles Design
Mode), Creamoda, Fedustria and Job'In Design are just some of the
partners involved. ■

is idea of design, simple and timeless without
being minimalist, has proven to be triumphant.
While many of his colleagues have over time
disappeared, over the last 40 years Dominique
Rigohas survived many societal changes. With his sleek
lines and well-designed furniture using the finest materials,
Rigo has a nose for designers, especially those from Italy,
Belgium and Scandinavia. And he has a taste for interiors
that never go out of fashion. His passion is also a family
affair: today, daughters Charlotte and Melanie guarantee the
continuity of his work.
>> Do you have an idea of what makes you successful?
What makes our brand different, and strong, is what we
offer. It’s impossible not to find something here that fits
perfectly into your home. I’ve always gone for modernity,
but only when it’s synonymous with comfort, functionality
and durability.
>> What fascinates you about modernity? What’s ironic is
that I like classicism, but a classicism which is reinvented and
therefore very modern. Some "auteur" furniture has never left
my showroom, like the Charles Eames "Lounge Chair" (1956)
reissued by Vitra or the "Togo" sofa by Ligne Roset (1971).
>> Describe to us the spirit of your business? Diversity,
quality and creativity. I remain convinced that sparseness
and timelessness are better than unchecked opulence.
>> Why did you opt for "design"? Why didn’t you
become an antiquarian, for example?

By chance. I grew up in a very BCBG environment ("Beau
Cadre, Bon Goût": the French concept of good class, good
taste, editor’s note). Then I studied architecture at Saint-Luc
and, in one of my first projects, I met with the leaders of
Knoll... and it was love at first sight! You know, there are
similarities between really great contemporary design and a
Louis XVI bergère chair.
>> In 40 years, what has changed the most in design?
Quality. Many brands make compromises on quality. This
was not the case before.
>> Can you give us an example of a modern design
object-for-life? The "LC2" by Le Corbusier at Cassina, the
perfect combination of steel and leather; the "Tizio" lamp by
Richard Sapper; the "Pipistrello"-lamp by Gae Aulenti...
>> Who, in your view, is the greatest designer? More
than the designer himself, the collaboration between
manufacturer and designer is essential. As such, Philippe
Starck is remarkable – although my personal tastes rather
go to Le Corbusier. I also like the "madness" of Borek Sipek
and the luminous poetry of Ingo Maurer.
>> And what’s the latest news at Dominique Rigo?
The development of a space-office in collaboration with
architect Marc Corbiau, plus the opening of a pop-up store
in the Sablon, which will stay open until the end of January
2015, with reissues of furniture from before 1974. To
celebrate our 40 years in business! ■

rench, Dutch, Germans, Brits,
Americans, Chinese, Belgians,
Brusseleers – divers from
around the world have all
made the pilgrimage to Nemo33.
Rumour has it that a woman even
came all the way from Easter Island
in the southeast Pacific Ocean to
experience the famous Brussels diving
school. You’ll understand why once
you’ll have gone for a dive yourself in
this unique, multicultural environment
fully dedicated to diving. Its founder,
John Beernaerts, wanted to create a
diving environment different from any
other Belgian diving school – which is
something he has achieved with great
success...
of private investors and purchased
a former football pitch in Uccle.
He then drew the plans himself
with the help of an architect. In
2000, construction began and after
four years (and a host of technical
problems that had to be overcome)
his dream came true.
Ethics, safety, comfort
Brussels can thus claim to be a
pioneer in the world of diving. In
ten years, Nemo33 has grown into a
diving club of global renown. A place
where you can learn to scuba dive,
in, for all practical reasons, the same
conditions as in the wild. Five levels

As a young diver John Beernaerts
dreamed of imitating the diving
conditions of Bora Bora in Brussels.
Because in Belgium, you had no
other choice but to dive in nature,
in cold water with low visibility
and sometimes unpredictable
obstacles. One night in a Brussels
bar, he drew plans for a pool
more than 30 metres deep on a
beermat. This rough sketch would
become a reality, and the deepest
diving pool in the world. The fact

that no one had ever built such a
pool did not scare Beernaerts, an
engineering geologist by training.
He set his mind on it and began
by mapping out the expectations
of divers. His next step was to
conduct market research from A to
Z – all by himself. All that remained
was for him to convince investors
of the value of the project. A
complicated task given the risks and
technical difficulties involved. But
undeterred, he won the confidence
maximum level, with spring water
heated to 33°C. For 365 days a year,
you can attend diving courses for all
levels but also snorkelling, aqua bike,
aqua aerobics, baby-swimming. Or
you can also simply learn to swim
or swim freely. Another original
feature: you can have your diving
baptism safely in view of the bar or
whilst having a glass of champagne
in one of the caves in the middle
of the water. Scientific researchers
into diving are also making use of
the place, as well as film producers.
Nemo33 is enchanting, cosmopolitan
and unique: a swimming pool like

Dive, eat and (soon) sleep!
Diving is certainly a great way to relax, far away from all the hustle and
bustle of above-ground. The same goes for the Thai restaurant at Nemo33.
Headed by Kenny Rooms, it is heavily-biased towards Asian flavours and
welcomes divers, swimmers and other diners. Here you can savour exotic,
healthy dishes, while watching divers through a viewing window or from
the beautiful terrace surrounded by bamboos -- a veritable haven. The
thirst for innovation is never satisfied here, so soon a hotel will complete
the available offerings at Nemo33. Underwater, at the table or in bed, the
atmosphere is always calm and relaxed, like the act of diving itself.
LE SAINT-AULAYE
Gourmet pleasure

Patisserie Le Saint-Aulaye: in Brussels since 1986
I
n 2008 Jean-Louis Barré and
Fabien Grégoire, who have been
part of Patisserie Le Saint-Aulaye
since it first began, combined
forces to give the establishment a
new boost. Success instantly followed
and a year later a bakery opened at
Rue Américaine. "Producing bread
was an important goal that we set
for ourselves when we took over Le
Saint Aulaye. Really great bread is
so rare in Brussels," says Jean-Louis
Barré. In 2010, what was at first a
production unit only also became
a point of sale. Today it is the
reference point for bread in Brussels,
which continues to serve customers
in parallel with the bakery/patisserie
on rue Vanderkindere (which
opened in 2012).
In early 2014, Frédéric Dupont, who
is also a member of the elite artisan
society Les Compagnons BoulangersPatissiers, joined the Saint-Aulaye
team to further develop the bread
department.
The Spirit of Le Saint-Aulaye
In an interview with BEL, Barré
emphasises the chain’s core values:
"You can summarise our philosophy
in three points. Respect for the staff,
respect for the product and, of course,
respect for the customer. Our sole
aim is to give the person coming to
our shop the simple and authentic
pleasure of tasting a natural cake,
an artisanal bread or a traditional
‘couque’."
All products on display are
"homemade": traditional recipes or
modern pastry creations that have
texture, body and soul. Le SaintAulaye represents real craftsmanship:
every single product is an ode to
authenticity, of the type you can
find in a small village in a truly great
terroir.
Today, to better serve you, Le SaintAulaye expands further, this time
into the Uccle neighbourhood of
Fort Jaco. After Rue Vanderkindere
and Rue Américaine, there is now a
third store (selling both bread and
pastry) at Chaussée de Waterloo
1477. Be sure to visit it! Architectural
bureau Hosmose was responsible
for immersing the spirit of SaintAulaye into the new boutique: "The
development of this new store, which
we designed, reflects the character
of Le Saint-Aulaye bakery: a taste for
simple and natural materials, warm
tones and colours which give life to
a welcoming and fun place in which
the passion for the craft is physically
palpable."
The goal of Le Saint-Aulaye is clear:
to keep on perfecting its high-end
artisanal patisserie for an epicurean
clientele that will find in this new
space quintessential products to
delight the senses. With this third
store, Le Saint-Aulaye is a step closer
to perfection. ■

“Saveurs du Monde”
GODIVA asked its international team of
chefs chocolatiers to create a new series
of limited edition chocolates. Here are the
results: six completely original delicacies
that take us on a tour of the world. Let’s
dive into the GODIVA box.
INSPIRATION: BELGIUM & THE UNITED
STATES
THE CHEF: THIERRY MURET, first ever chef
chocolatier, worldwide.
Thierry Muret was inspired by his home
country, Belgium, to create "Sirop de Liege
and biscuit", two Belgian classics coated with
dark Belgian GODIVA chocolate. For
"Caramel with honey", he brought together
caramel, that great American classic, with
the sweetness of honey, a touch of almond and brown sugar.
In both cases gastronomy evergreens reworked in a simple but
tasty fashion.
INSPIRATION: CHINA & AFRICA
THE CHEF: PHILIPPE DAUE
Daue takes us to China with "black tea
mousse and Sichuan pepper”, the perfect
marriage between Sichuan pepper, black tea
and pure dark Belgian GODIVA chocolate.
After which he heads for Africa with "banana
and caramelised coconut ganache" which
combines coconut milk and banana essence
with the roundness of caramelised
coconut flakes. All the flavours of Africa wrapped in GODIVA
milk chocolate and topped with crunchy cocoa nibs.
INSPIRATION: JAPAN
THE CHEF : YANNICK CHEVOLLEAU
Yannick Chevolleau mixes French
and Japanese flavours with his
"Ganache with Japanese black
sugar”. It was a sweet and fresh Japanese dessert, Kuro
Mitsu, which inspired the chef. He alternates layers
of dark chocolate with Kuro Mitsu, dark brown sugar,
black treacle and a smooth praline with Valencia
almonds. The whole combined with toasted hazelnuts
and sea salt. Sugoi! ("Sensational" in Japanese).
INSPIRATION: BRAZIL
THE CHIEF: ILSE WILMOTS
Behind the "praline of Brazilian
coffee and nuts”, there is a woman.
Chef chocolatier Ilse Wilmots has a
passion for Brazil and Belgium, and
created a praline which marries the
richness of Brazilian coffee with roasted hazelnuts.
Hidden under a coat of the finest white GODIVA
chocolate, and garnished with a confetti of rice and
black and white milk chocolate. Chew! ■

Merveilleux cakes:

Le Merveilleux: "The Marvellous One". We are not talking about magic or a
supernatural being, but about an equally fairylike cake that wears it name well.
Simply... marvellous!

France. Its origins go back to the time of the French Directory
(1795-1799). High society life was in full swing and there
was entertainment everywhere in an attempt to shake off
the dark period that has just ended. Famous women such
as Madame Recamier or Madame Tallien opened elegant
salons dedicated to pleasure. The stars of the era were
the "Incroyables" (Incredibles): dandies in wide trousers
and ties, and the "Merveilleuses" (the Marvellous),
coquette women with wigs and transparent cleavages.
These alluring and extravagant goddesses, who
defiantly waved their fans, are supposed to have been
at the origin of the Merveilleux. This is, at least, the
story told by Frederic Vaucamps, the French pastry
chef whose name is associated with this delicate
delight. He was the king of the Merveilleux in Lille
(France), and his adapted version of the recipe was
quickly exported to Paris, London, Knokke, and more
recently to the Belgian capital. Since opening his
shop downtown, queues of people line up to sample
his six equally wonderful variations, among which
you’ll find the "Incroyable" with whipped cream and
speculoos, coated with white chocolate. Of course,
other Brussels pâtissiers do their own version of this
fluffy marvel of meringue and whipped cream. Will you
succumb to the temptation? ■
The Best Merveilleux in Brussels:
S
ome flavours are impossible to forget. One
bite into a Merveilleux and we’re back to our
childhoods. At the time, it felt like biting into
a cloud. This legendary pastry, composed of
two shells of meringue, whipped cream and chocolate
shavings, is light, fluffy and totally delicious – not to
mention incredibly moreish. But it’s good to remember
that this is a traditional pastry of Flanders and northern

takes you on a journey from one delicious discovery to another in the company of true specialists.

e have seen him
(almost) naked
on the cover of a
celebrity magazine.
He was stretched out in a bath of
red wine in a two-page spread for
Paris Match magazine. "Usually what
we get are titillating nymphs in clear
water smoothing their hair. And here,
in his full glory, comes our Bacchus
of the lowlands, lounging in a bath
not filled with milk (like the famous
photo of Whoopi Goldberg taken by
Annie Leibovitz), but brimming with
delightful and generous red wine,
like a fountain of youth," says David
Ghysels (Hakuna Matata Agency),
who set up the memorable shoot.
It came at the request of Châteaux
& Domaines Castel to celebrate Eric
Boschman’s 50th birthday. Strewn over
the floor, the viewer can discern a few
bottles of the famous maison Château
Barreyres and Château Tour Prignac.
Behind the lens is photographer and
portraitist Serge Anton who never
avoids a photographic "challenge".
The idea was to demystify the world
of wine and reach a wider, and
younger, audience. For practical
reasons, the shoot didn’t take place, as
first foreseen, on the stage of Théâtre

generously lent one of its bathtubs.
In a "Dip" filled with red wine and
tepid water (to avoid hypothermia)
our iconoclast oenophile was wearing
black swimming trunks, he points
out. Probably to warm himself (and
because he likes ‘em), Eric Boschman
was smoking a vintage cigar, a Cohiba
Behike 1952, one of the best cigars
in the world. Remember that Eric
is the type of person to talk to you
about wine with great emphasis and
enthusiasm, who will explain what is
really on your plate, seduce you with
his amazing culture, and tell you a
(dirty) joke while referring to the last
book he wrote. Which at the moment
is "Parfaites," a collection of short
stories and columns for La Brasserie
du Bocq which will be published
towards the end of the year. ■

daughter Emily, with the refinement and excellence
that characterises all his work. The result, Emily
Ristorante, is a haute couture showcase dedicated to
Italian haute cuisine.

I
f we use the term architecture
loosely, then architects are
fashion designers and fashion
designers are architects.
They share a passion for jewellery,
precision and excellence. When
drawing facades, in stone or in
fabric, they profess a discrete love
for interiors and lining. Pierre
Degand understands this better than
anyone else. With the interior of
Emily Ristorante which he designed
for his daughter Emily, he beautifully
illustrates his definition of elegance
and fulfils his childhood dreams.
Emily, a student in Hospitality
Management at the École Vatel,
now has a restaurant which lives
up to her perfectionist vision of
gastronomy. A bespoke place with
a singular charm that came to life
in a house on the Rue de l'Abbaye
in Ixelles. Perfect right down to
the minutest details, the Brussels
tailor has "retouched" the building,
not with scissors, but with large
renovation works. Emily Ristorante
came to life with the help of
architectural firm A3 Development,
with an interior that is unpretentious
yet luxurious. Since mid-July, passion
and excellence – two values inherent
in the spirit of Degand House –
are on display on three floors. On
the ground floor, a sumptuous
chandelier shines as brightly as
the gold leaf ceiling painted by the
Institut Supérieur de Peinture Van
der Kelen. Guests are seated on
high chairs originally from the Hotel
Crillon in Paris at the Saint Laurent
marble counter, from where they
can watch the spectacle of the open
kitchen. Chef Vincenzo Regine, who
made his name in the Hotel Amigo
restaurant Bocconi, orchestrates
his team with a deft hand. The
ballet of elegantly parading plates
offers the best in Italian cuisine.
And we could have stopped there,
as our pupils and tastebuds were
quite satisfied, but the experience
continues on the first floor between
mahogany-covered walls. Then on
to the second floor, where a private
room for fifteen forms the setting
for prestigious events. The pinnacle
is reached on the third floor with a
romantic, confidential guesthouse
nestled under the roof. Needless to
say that appropriate dress is desired,
although not necessarily required. ■

When Emile van Landuyt bought this large downtown building,
at the corner of Rue de Flandre and Marché aux Porcs, he knew
exactly what he wanted to do. A child of the neighbourhood,
he wanted to revive the atmosphere of old Brussels, when
restaurants would serve generous portions made with quality
products. This place used to be Bistrot Le Royal. Today it is

The boss here, French chef Nicolas Scheidt, is also the man behind
Café des Spores, which is right across the street and famous for doing
a thousand different things with mushrooms. La Buvette, installed in
a former Saint Gilles art deco butcher’s, has become a favourite for
tourists and Brusseleers alike. This probably due to its various menu
formulas, including the unmissable 11-course meal (!) and an incredible
selection of beers and wines to delight the senses. The food is simple
but really tasty and not at all expensive. Which makes booking a must.

Sablon des Marolles de Vincent. It is also a gourmet bistro, where you
can sip delicious wines accompanied by goose rillettes or 36 months

Corner right near the Bourse.

ntoine Pinto arrived in
Belgium as a political
refugee at the age of
seventeen. An interior
designer and restaurateur, he has piled
up culinary awards and designed
the interiors of many establishments,
mostly restaurants. But the highlight of
his adventures in interior design and
gastronomy remains Brussels’ Belga
Queen. His origins and many travels
may have marked his cuisine, but its
DNA is undeniably Belgian. That is
to say, he has a perfect knowledge
of the products of the Belgian soil
which he ceaselessly reinvents. Pinto
enjoys enhancing our region’s natural
bounty by focusing on Belgian
classics through products of his own
creation. An explorer of taste, he
experiments with local expertise and
tirelessly searches for the surprise of
new products. In Ponti Corner, he
recreates the black liquid energy of
Ponti Coffee. Originally created for
Belga Queen, Pinto had the idea of
creating a "Belgian coffee’ – one that
was in sync with typical Belgian
brasseries. Pinto himself selects the
finest "pure arabica" coffee beans
from Latin America, Asia and Africa
which are then roasted by Belgian
master roaster Jan Janssen. It didn’t
take long for success to arrive. This
100% Arabica coffee is now available
in over 250 outlets in Brussels. From
this success story, Ponti Corner was
born, in a building listed as UNESCO
heritage site, not too far from Belga
Queen. This loungy, cozy café
changes "mood" several times a day.
The day begins with breakfast before
moving onto lunch and tea time – you
can even have a pre-dinner aperitif
with friends. There are sweets on
the menu: iced teas, fruit smoothies
and pastries. There are also more
hearty snacks, such as small barquette
sandwiches served with Belgian
classics such as grey shrimps, Sûre
ham and Herve cheese, as well as
meat & bread (don’t miss the lightly
seared filet pur with Ghent mustard
cream). Anything else? Well, there are
salads, daily specials, a wide variety
of beers, wines and champagnes, and
not to mention a take-away service.

an attractive market for the Californian brand, particularly in view of its strong
corporate leasing market. In this segment the Tesla Model S, a 100% electric
premium sedan, is a true hit.

how quiet it is, and the
resulting sense of wellbeing. Very
comfortable for the driver and his
passengers, but also easy on the
environment. "Every time I test the
Tesla Model S," says Yannick De
Macq, store manager of Tesla Motors
Brussels, "I tend to drive in a much
more zen-like fashion, due, I think,
to the silence, to being less stressed
by noise and vibrations. It's pretty
hard to describe, but those who have
tested an electric car know what I’m
talking about,."
Electric Mobility
The Tesla Model S is the second
electric car manufactured by the
Californian brand, which was co-
founded back in 2003 in Silicon
Valley by CEO Elon Musk. The
company name was inspired by
scientist Nikola Tesla (1856-1943),
one of the twentieth century’s most
creative engineers, mainly in the field
of electricity, but little known to the
general public, since many of his
inventions were (wrongly) attributed
to Thomas Edison.
This premium, seven-seater sedan is

far ahead of its time and sets new
standards in high-end performance
cars. It also marks a further step
toward accessibility: compared to
its predecessor, the famous Tesla
Roadster, the Model S is more
accomplished and less expensive.
It is being sold directly through
the company website and its stores
around the world. When it was first
shown in Europe, in Monaco, Tesla
roused the interest of celebrities such
as Prince Albert of Monaco, former
Formula 1 World Champion Damon
Hill and U2 frontman Bono.

In the wake of the Model S launch,
Tesla has over the last year intensified
its efforts on the European market.
The American manufacturer of
luxury electric cars established a
subsidiary in Belgium and opened a
showroom in Brussels (at 49 Avenue
de la Toison d’Or), accompanied by
two service centres, in Woluwe and
Antwerp. To date, says De Macq,
more than 500 cars have already been
sold and delivered in Belgium with
price tags starting at €72,600 (a price
eased by tax advantages). A true
success, Tesla is committed to revving
up its presence in Europe with the

to improve customer experience and
by growing its network of "super
chargers" that recharge the engine

The Tesla Model S is delivered in Belgium with three lithium-ion batteries
of different capacities, allowing the driver to choose the one best suited to
the required use of the car... and/or budget. Battery range is up to 500 km
(depending on vehicle use), which is considerable. As for the engine, the
Model S manages a pretty impressive performance. It can from 0 to 100 km/h
in 5.6 seconds. Maximum speed is 212 km/h and the handling is excellent,
partly due to the possibility of lowering the centre of gravity with the batteries.

t was a true consecration. Last
May, the leading French weekly
Le Point published a three
page article on the tremendous
success of Filigranes, a bookshop
which occupies 2600 m² in the heart of
Brussels. It has 180,000 books in stock
and 65 employees, not to mention
between 10,000 and 15,000 visitors each
weekend. Marc Filipson has all it takes
to make a bookseller happy! And then
there’s the steady stream of literary stars
dropping by. "Except Paul Auster whom
I admire so much," the boss regrets.
Jean d’Ormesson is a regular, Frédéric
Beigbeder sang an a cappella song by
Nirvana, James Ellroy spoke of JeanMarie Le Pen to a stunned reader who
happened to be called Jean-Marie as well
("I really didn’t know where to hide,"

More ( fresh) vegetables for dinner, more colour, lighter sauces, cuisine not so
steeped in tradition: welcome to fooding! It is better for your health, great for
your figure, and better for the planet. There’s no better way to enjoy a good

of Culinaria confirms its preference
for the "beautiful ordinary" and its
war on "boredom at the table." This
very trendy (and very chic) gourmet
phenomenon is called "fooding" a
contraction of "food" and "feeling".
Fooding is post-bourgeois cuisine
within reach of all those who want
to cook and eat in a less predictable
fashion. For example: a simple
sandwich becomes art. And some
artists are very imaginative in this
game. For example, they reproduce,
on a slice of bread, the iconic works
that have marked contemporary
art... then eat them. On the menu:

The toque and the spade
Fooding is also synonymous with
health. And when talking about health
we must talk about the vegetable
kitchen of Claude Pohlig. In a
former life he was a chef (Les Deux
Singes, Grand Corroy, Agastache &
Tonka), but now Pohlig is a gardener,
lecturer, private chef and caterer.
He aims to illustrate the richness of
biodiversity through dishes which
highlight vegetable flavours and
make us experience a wide variety
of tastes: edible flowers, wild herbs,
heirloom vegetables.You will also
find the subtle scent of a Jerusalem
artichoke or rutabaga: vegetables
with a history (they remind us of
times of dietary restrictions) but also
with a long life before them. When
grated and fried in olive oil, rutabaga
is a veritable treat. And are you familiar
with the taste of the yellow beet, the
purple carrot, mustard greens, lovage
or lambezza strawberries? In his garden

"More Than a House is not just an
empty slogan!" say Isabelle and JeanCharles Mazet. One year ago, the two
Parisians by birth were seduced by
Brussels and settled in an Art Deco
house near Place Brugmann, after
having lived in Marrakech for twenty
years. Isabelle loves art history; JeanCharles was a dealer at the Paris SaintOuen flea market and a landscape
gardener of renown in Morocco. He
is responsible for some of the most
beautiful gardens in Marrakech,
including the renovation of the Arsat
Moulay Abdeslam Cyber Park." I was
immediately seduced by the cozy
atmosphere that dominates Brussels,"
says Isabelle. "Here, I found a way
of life that we also had in Morocco:
welcoming, friendly, cosmopolitan.
In Brussels, there isn’t that distance
between people you often have in
Paris." More Than a House is the
name they gave to their home. A place
to live, discover, enjoy and share.
For More Than a House is first and
foremost a concept. "Both family home,
showroom, art gallery and consulting
firm, the house and its garden are a
synthesis of what we have been doing
over the last 20 years; it’s a showcase
for our expertise and our projects."

>> Where do you go shopping? Cachemire

>> Who is your favourite Belgian designer?
I have discovered the works of Jules Wabbes,
designer Fabiaan Van Severen and the antiques
dealer Jean-Claude Jaquemart.
>> What’s your favourite art gallery? The
Ampersand House (not far from Place Louise),
a gallery in constant flux which mixes art with
design of yesterday and today.
>> Where do you go to relax? Outdoor
swimming and Nordic walking at David Lloyd
in Uccle ... even during the winter.
>> Where do you go to satisfy your sweet
tooth? I like raspberry pie at Gaudron (Place
Brugmann). I also like the tearoom La Mercerie
(2 Rue de Vergnies ,Ixelles); it’s an exquisite
little boudoir.
>> Do you have a favourite chocolatier?
Pierre Marcolini: I am addicted to his
chocolates!
>> What’s your favourite restaurant? Plasch
(Place Brugmann): that’s my "canteen"! I have
also discovered a Brussels institution at the
Sablon, Le Vieux Saint-Martin, which has the
best steak tartare with fries in the world!
>> And for fine dining? La Villa Lorraine.
I did not know it during the time when it had
three Michelin stars, but to me, it’s perfect.
>> Your favourite scent? I created my own
fragrance (called "More Than a House") with
Anne-Pascale Mathy-Devalck of L’Antichambre
(Place Brugmann). She made me a perfume
that is both floral (white flowers) and spicy
(pink peppercorn) against a background of
patchouli, saffron and citrus.
>> What book would you recommend?
"La saga Maeght" by Yoyo Maeght (published
by Robert Laffon); "Gardens of Marrakesh" by
Angelica Gray (published by Frances Lincoln)
in which you can find the designs of my
husband, Jean-Charles Mazet
>> My husband loves… references to Tintin
and the "ligne claire". You can find them all
through the house.
>> What do you miss most in Brussels?
The sun!
not restricted to any particular period, specific school, or well-defined
region of the world. The upshot of it all? An unexpected canvass where
art and design respond to the greatest subjectivity of all: the one that
comes from the heart. That’s good news for fans of design from the
1940s through to the 1970s, designer lighting, hand-tufted Moroccan
rugs and beautiful objects. "Our passion for gardens, homes, decorating
and furniture is intuitive and nourished by our travels and our life
experiences," Isabelle concludes. From floor to ceiling, indoor to
outdoor, Isabelle and Jean-Charles Mazet take care of all projects. This
goes from decorative consulting to a complete renovation, but it can
also be the choice of a work of art, the integration of an existing piece
of furniture and the realisation of a garden. ■

Don’t tell a soul…
French pop legend Michel Polnareff, a.k.a. "L’Amiral" (the
Admiral), who celebrated his 70th birthday on July 3, has
been recording in the ICP Studios in Ixelles. Good news: he
will return with a new album in late 2014. While in Brussels
he was seen everywhere: lunch at Rouge Tomate, dinner at
Toucan-sur-Mer, brunch at La Quincaillerie, tea at the Amigo...
and we’ve heard he was also seen buying glasses at Hoet.
As he is wont to do, the King of (French) pop works in total
secrecy –no leaks. But there is one certainty, says Eric Lelièvre,
Polydor France label manager: fans are in for a real treat!
It’s a scientific fact: reading the gossip pages helps boost our serotonin levels as
well our morale. That’s why we’re sharing the latest BEL celebrity news. Why deny
ourselves the pleasure?

Twenty years of La Quincaillerie is certainly worth celebrating! At
the head of this Brussels institution is a woman with great kindness
who has never forgotten her true passion – oenology. Needless to say,
it is thanks to Madeleine Deryhon that La Quincaillerie has surfed
the wave of fashions, always remaining on top. She has seen it all:
gourmets, gluttons and lovers, newlyweds (famous or otherwise)
and stars of all stripes: Alain Delon, Catherine Deneuve, Gérard
Depardieu, Richard Branson, the Chinese prime minister, Pierre
Richard, Bruno Solo, Eros Ramazzotti, princes and princesses. But
everyone received the same welcome: one that came straight from
the heart. Madeleine could have gone on for another 20 years... but
she’d rather not: "I’ve worked hard enough as it is", she says happily.

Marceau and Patrick Bruel were in the Amigo
as colleagues to promote "Tu veux ou tu veux
pas," the latest film by Tonie Marshall about a
sex addict in remission who tries to resist an
unbridled maneater. Ay, ay, ay caliente! Too
bad it’s just a movie…
Champagne and petits fours
Our President was the recipient of a great honour! At a fête
in the upscale Salons Hoche in Paris, Jean-Pol Piron, his eyes
moist with emotion, received from the hands of Jacques Séguéla
the "Excellence Award" presented by CMH Paris (Centre for
International Hotel Management). It was an opportunity for
Monsieur BEL to speak enthusiastically to the students present:
"Don’t let yourselves be dragged down by this very European
gloom [...] We have crafts, we have brands, we will transmit them
to you through our passion. You have everything, don’t be afraid
of anything, the future is yours!"

Delvaux bags on the Buren columns? The
oldest leather goods manufacturer in the
world (re)starts its conquest of Paris. Already
present in Galeries Lafayette Haussmann
and the Bon Marché Rive Gauche, Delvaux
now opens a chic flagship under the arcades
of the Jardins du Palais-Royal (Galerie de
Valois). Parisians already are all over it.

are already working alongside daddy in the family business:

Maxime Leysen (Maison Leysen), Alexandre Helson (Dandoy)
and Maxime Denis (Maison Roger), amongst others. They will
meet twice a year with President Piron and the "old guard" to
inject some new life and fresh ideas into the board meetings.

Après l’ère du papier peint minutieusement posé sur un
seul pan de mur, voici celui du mix and match ! Le
célèbre studio basé à Anvers Studio Job (Job Smeets) et
Nynke Tynagel lancent la tendance avec une collection
de motifs muraux complètement barrée : géométrie rétro,
tatouage mexicain, feuillage...
l'expo. “Illuminated” est le nom à la fois de l’exposition d’une trentaine de tirages
photographiques, moyen et grand format, couleur et noir et blanc, du photographe anversois
dirk lambrechts, et le titre de son nouveau livre de 192 pages présenté à cette occasion.
Pour qui ? les collectionneurs et amateurs de photographies branchés mode. Pour ceux qui

L’idée ? Jouer le mélange et repartir avec plusieurs

des campagnes artistiques qui nous mettent tout

L’intitulé de la dernière édition limitée de la maison Baobab
collection, “Rose & Juliet”, sonne comme le titre d’un film
dont le réalisateur serait Peter lippmann. les clichés du
photographe américain semblent d’ailleurs extraits d’un
court métrage fantastique où la nature prend vie. Arbres
enneigés, rochers marins et parterres de fleurs pastel
seraient les toiles de fond de scènes extraordinaires,
poétiques et énigmatiques. la nature et la créativité, tel
sont les points communs entre Baobab collection et
Peter lippmann. l’un et l’autre n’ont pas leur pareil pour
s’inspirer des richesses de l’univers. Que ce soit au travers
de photographies uniques ou dans la création de bougies
parfumées de luxe, tous deux sortent de l’ordinaire et
créent la surprise. la collaboration s’est donc imposée
tout naturellement. le casting réunit trois collections,
les deux éditions limitées “Magical Forest” et “Rose &
Juliet”, ainsi que la sensationnelle collection “Pearls” qui
compte désormais trois nouvelles couleurs pour l’été. on a
l’impression que les bougies, mises en scène d’une manière
aussi artistique qu’originale, font partie d’un tableau qui
évoque leur essence même… Un objet de décoration
à part entière. n

Avis aux récessionistas : Retrorama, le premier festival international vintage,
envahit Brussels Expo du 30 mai au 1er juin. De l’ancien, de l’authentique,
du rétro… Un voyage dans le temps comme on les aime !

d’organiser un festival international
vintage baptisé “Retrorama” nous
vient de Brussels expo et du Brussels
Vintage Market. Pendant un weekend, des spécialistes du design et
de la mode présentent, dans le
Palais 10 de Brussels Expo, des
objets cultes et de la vie courante
qui ont marqué le siècle dernier. Plus
de 3 000 m2 sont mis à la disposition
du public pour un shopping mode,
accessoires, déco et collectors. Petits
et grands de 7 à 77 ans se baladent
dans ce marché éphémère géant et
chinent pour trouver la réédition, le
trésor rare, la pièce “coup de cœur”.
Tout ce qui touche au style de vie
qu’est le vintage y est représenté via
des espaces thématiques dédiés aux
jeux anciens, aux vieilles publicités,
aux pièces de collection inédites,
aux voitures, motos et vélos, au
cinéma grand écran, aux vinyles,
aux juke-boxes… les objets qui
traversent les époques sans prendre
une ride sont bien plus nombreux
que l’on imagine. Au programme
également : concerts, ateliers dIY,
luna-park, kids playground, resto
rétro, tea time authentique et soirée
pour la nocturne du vendredi soir.
