Winter Crew: Captain Colin and Chef Penny Moors
Your winter crew aboard Saboré is a delightful British twosome, whose friendly dispositions and professional attitude will make you feel totally at home while on board. Together since 1987, they achieved their dream to pursue
sailing full time in 1995. Equipping their own 35 foot sailboat, they left England to start an adventure that took
them to Spain, Portugal and the Canaries, before crossing the Atlantic to the azure waters of the Caribbean. Since
1997, they have successfully completed over 280 charters in this cruising paradise. Their guest book says it all! Colin
and Penny know what it takes to tailor a charter to your particular needs.
Colin, Royal Yachting Association Yacht Master, has the sea in his blood. From his first turn at the helm at the age
of 5, whilst sitting on his father’s knee, he proudly continues the family tradition established by his great grandfather who sailed the world on the Tea Clipper ships.
Well qualified, with over 100,000 miles of sailing experience and an intimate knowledge of Caribbean waters, Colin
will enhance your sailing vacation and make your safety of paramount importance. Enormously practical, with a
background in the electrical field, Colin is great fun and has an affinity with people of all ages.
Penny, a Qualified English Nanny who worked internationally, has a fun-loving approach to life and is gifted in
attending to people’s needs. An excellent chef, she discovered her creativity and gourmet skills at an early age.
Dining aboard Saboré is special, as each colorful and varied dish delights the eye and tantalizes the taste buds,
reflecting the influences of her extensive travels. A Royal Yachting Association Day Skipper, who is as at home on
the water as she is in the galley, Penny complements her husband, Colin.
Caribbean waters are amongst the finest in the world for water sports of all types. As a PADI Instructor and Dive
Master respectively, they will ensure that you get the very best fun and excitement above and below the water.
Knowing the secret to success aboard any charter yacht is teamwork; Colin and Penny work closely together,

Summer Crew: Captain/Chef Richard Cassarino and First Mate Lisa Pratt
Captain/Chef Richard Cassarino and First Mate Lisa Pratt, have more than 40 years’ combined
sailing experience. They spent years trying to make room for sailing in their busy professional
lives in Providence, Rhode Island. One New England winter too many convinced them to
make their passion for sailing their priority.
Rich, a graduate of Johnson & Wales University, owned and operated Cassarino’s Ristorante in
Providence’s “Little Italy” for 20 years. The restaurant was consistently rated the “Best Italian
Restaurant in Providence”. He now brings his superior cooking and entertaining skills to the
high seas. Each meal served aboard Sabore will be tailored to your tastes, from breakfast to
scrumptious multi-course dinners.
Lisa, an accomplished florist and art/design degree holder, owned and operated a successful,
high-volume flower shop in Providence, “Floral Designs By LiRog”. She has 20 years’ experience
with event and party planning.
They are thrilled to join their passion for sailing with their business experience and move into
a more personalized sector of the service industry. They are a relaxed, humorous couple who
like to enjoy themselves as much as their guests do.
They enthusiastically welcome you aboard and invite you to share in their love of great food,
great wine and of course, the Caribbean Sea.
