Hoity-Toity Beginnings Dapper Don's Salads Bahamian Style Conch Fritters – 8.95 Sarasota Slim’s Chicken & Mango Salad – 9.95 "Mama Iguana" Sandwiches and Wraps We won this award winning recipe from a grifter named Sarasota Slim in an all night poker game He had 3 jacks…Mama had 3 ladies and a pearl handle derringer! Triple-decker sandwich with turkey, ham, Swiss cheese, bacon, lettuce, tomato and mayonnaise Screwy Louie’s Chef Salad – 9.95 Raul Vasquez’s wife Florence would whip up these nifty sandwiches whenever we stopped by his Duval Street gin mill. Spicy conch fritters deep fried until golden brown with Creole tartar sauce A friend of mine, Shipwreck Sally, is from the Bahamas and she gave me this recipe. This is a traditional Bahamian recipe that is made with conch. That wonderful shellfish that is delicious, but not so easy to find outside of the Bahamas. Whenever we would make a run through the Conch Republic, we were sure to pick up enough to get us by for a while. Tampa Charlie’s Coconut Shrimp – 11.50 Deep fried coconut-encrusted shrimp served with sweet & sour dipping sauce Tampa Charlie and I came up with this dish while rigging a Bolita Lottery in Ybor City. Cabbage Key Smoked Fish Dip – 8.95 Fresh Gulf fish smoked to perfection and blended with our bayou seasoning Served with our tri-colored tortilla chips and jalapeños Our “Cracker” friends down Cabbage Key way are known for their great smoked fish. We stole this recipe several years back and have been using it ever since. Rum Runners Famous Chicken Wings – 12.95 Fresh mango topped with chicken, apple and pecan salad with baby greens, vine ripened tomatoes, cucumbers, carrots and olives with mango dressing Smoked ham, turkey, Swiss and cheddar cheeses garnished with eggs, cucumbers, carrots, olives and vine ripened tomatoes This fella Screwy Louie is full of hooey…but he makes a great salad! “Putting on the Ritz” Caesar Salad – 9.95 Crisp Romaine lettuce tossed with our homemade parmesan dressing and garlic croutons Add grilled chicken – 12.95 Add grilled shrimp – 14.95 Frenchy Casberian, a well-known restaurant owner, showed us this recipe while we were dining at his swanky joint in the French Quarter. 10 large chicken wings tossed in your choice of sauce: Spicy buffalo Garlic-parmesan Caribbean jerk sauce Served with creamy bleu cheese dressing and celery sticks John “The Swamp Bandit” Ashley’s Spicy Fried Shrimp – 9.99 9 large Gulf shrimp fried to perfection and tossed in John’s homemade hot sauce Served with creamy bleu cheese dressing and celery sticks When the G-men came around asking questions, we all would take a powder and head down to John’s family’s camp in the Glades. John’s wife, Laura, would make up her famous Spicy Bayou Shrimp. Spanish Marie’s Quesadillas Shrimp, roasted corn, black beans, smoked cheddar cheese and tomatoes 11.95 10.95 9.95 Marie taught us how to make these tasty treats just like her Mama did back in Mexico. We would always stop in and see Gator Johnson down in Everglade City and have a few at the Rock Bottom Bar. People tell me Gator got out of the rum business and spends his time fishing for square grouper. Open-faced Pizza Sandwich – 8.99 Fresh tomato sauce, fresh basil, mozzarella cheese, Genoa salami, capicola and sliced pepperoni on fresh Italian garlic bread and baked until crispy “Sleep with the Fishes” – 10.99 A boneless fillet of tilapia blackened, fried or grilled with Creole tartar sauce After the boys and I would take the competition out for a “farewell boat ride” we were always in the mood for this great sandwich. He would say, “Give it to me straight, just like my booze.” Jack “Legs” Diamond Cheeseburger – 11.75 I got this recipe from Johnny and Bobby K.’s father, the “Baptist Bootlegger.” Jack was known for leading a rather flamboyant lifestyle. He was a very energetic individual ; some say his nickname "Legs" derived either from him being a good dancer or from how fast he could escape his enemies. Baked ham, Genoa salami, capicola, mortadella, pepperoni, mozzarella cheese, lettuce, tomatoes, and onions drizzled with olive oil and red vinegar in a sun-dried tomato wrap Dutch Schultz Burger – 11.95 Thick and juicy half-pound burger topped with spiced pork, Swiss cheese, dill pickle slices, mustard-mayo dressing and served with lettuce, tomato and onions on an onion roll Dutch’s crew would run barrels of beer down to us from time to time. He liked his burgers like his temper… hot and spicy. Captain Bill “Real McCoy” Burger – 11.95 Thick and juicy half -pound burger topped with Swiss cheese and sautéed mushrooms served with lettuce, tomato, onions and pickles on an onion roll When the feds started prohibition, old Captain Billy McCoy began running rum from Bimini and the rest of the Bahamas into South Florida through Government Cut. We would pick up the goods down in Miami and head our separate ways. Old Billy never watered down his booze… he was the “Real McCoy.” Another one of my favorites from Marie’s family. Mama’s Favorite Wrap – 9.99 When our “friends” would come down from up north for a “visit,” this was always a favorite way to wrap up a deal. This sandwich gained popularity as a staple served in Havana night clubs right around or after midnight. The difference between a Cuban on crusty Cuban bread and a medianoche is the soft, sweet egg dough bread similar to challah. The Elena Ruz is served on authentic medianoche bread baked in Tampa and sent to us daily. Consuming raw or undercooked poultry, seafood, shellfish or eggs may increase the consumer’s risk of food borne illness. Small Order (6) – 7.95 Portabella mushroom, spinach, white and yellow cheddar Sierra Bella de Sirata Elena and friends would go to a swanky little joint to dance the night away in Havana.
