Lent, an opportunity for healing, experiencing God’s forgiveness
Greetings in Christ Jesus. Lent affords us an especially graced opportunity to draw closer
in communication and
relationship with God. How fortunate we are as
Catholics to celebrate the
various liturgical seasons
reflecting the majesty of
God and the history of
our salvation.
The Light is ON for
You, Year 6. Again this
year, the Diocese of Baton
Rouge will celebrate
the Light is ON for You.
This initiative enables us
extra times to receive the
sacrament of reconciliation, often on designated
Wednesday evenings in
Lent from 6:00 – 7:30 at certain parish
churches. Teaching and Example of
Pope Francis
On March 28, 2014, Pope Francis assisted in hearing confessions at St. Peter’s
Basilica. Before taking his station, he
himself went to face-to-face confession
as a penitent to another confessor. Pope
Francis modeled for us all his openness to
receive God’s mercy and forgiveness in this
powerful sacrament of healing and mercy.
Recognizing our
human nature and its
inclinations to sin As humans we are
prone to imperfection
and weakness. St. Paul
himself, a great apostle of
Jesus, wrote: “I do not do
the good I want, but I do
the evil I do not want…
Miserable one that I am.”
(Rom 7:19, 24). Our own personal
history of response to
God’s call to ongoing
conversion of heart
Let us reflect on our
reception of the sacrament of reconciliation:
our first time, our last time, times in-between. Perhaps for some reason we have
never received the sacrament. Possibly
we received it many times as a youth,
but not so often since. Maybe we receive
it regularly. I understand the natural
human inclination not to reveal ourselves,
especially our most serious failures. In so
doing, however, we can have a cathartic
experience of cleansing. Whether it is a

Lenten regulations for the Diocese of Baton Rouge
As per the Pagella Policies of
the Diocese of Baton Rouge, as
in the rest of the church in the
United States, Catholics aged 18
through 59 are bound by a grave
obligation to observe a solemn
fast on both Ash Wednesday and
Good Friday. Catholics aged 14
and up are to abstain from meat
on Ash Wednesday, all Fridays
of Lent and Good Friday as well.
These norms have been established by the U.S. Conference of
Catholic Bishops in accord with
the norms of canons 1249-1253 in
the revised Code of Canon Law of
1983.
To fast means to consume
only one full meal a day at most,
although taking of other smaller
quantities of food at the other customary mealtimes is permitted.
Food and drink “between meals”
(excepting only water and medi-
cine) is not permitted on fast days.
To abstain from meat means
refraining from eating beef, veal,
pork or poultry at least, although
not necessarily eggs, milk products or meat broths, or condiments made from animal fat. The
consumption of fish, shellfish and
reptiles is permitted if desired.
Beyond the mandatory days
listed above, abstinence from
meat on every Friday throughout
the year which is not a solemnity
and fasting on all Lenten weekdays (especially Wednesdays and
Fridays), and on Holy Saturday, is
strongly recommended to all the
faithful. There always remains,
of course, the grave obligation to
participate at Holy Mass on all
Sundays and days of obligation.
Each in his or her own way,
every Christian is bound to do
penance by virtue of divine law.
Only ill health or some similar situation of urgency excuses. During
the Lenten season, Christ Jesus’
own challenges to prayer, fasting
and almsgiving are paramount.
Clergy (priests and deacons)
who have legitimate residence
and active ministry within the
Diocese of Baton Rouge have
been delegated the power to dispense the faithful of the diocese,
in individual cases and for a just
reason, from the obligation to
observe a particular day of penance, or to commute some or all
of its obligations to other pious
works. Included in this is the faculty to dispense from the Lenten
obligations to fast and abstain
from meat. Yet the obligation
to do some kind of penance remains a serious one, and will not
be taken lightly by a good Catholic.

Broccoli-Shrimp Casserole

4 – 7-9 oz. redfish filets
½ c. butter, melted
Bistro Blackening Seasoning to taste
Dredge redfish fillets in melted butter and sprinkle each side with blackening seasoning.
In a cast iron pan skillet, cook each
side until blackened and cooked, about
3-4 minutes each.
Laffite Sauce
3 oz. white wine
3 oz. fresh lemon juice
1 tsp. garlic, chopped
½ tsp. salt
½ tsp. black pepper
1 c. heavy cream
½ lb. jumbo lump crabmeat
2 Tbsp. butter
In a sauce pan, add the white wine,
lemon juice and garlic.
On medium heat, let the sauce reduce by half.
Add salt, black pepper, and heavy
cream. Let sauce come to a boil. Add
jumbo lump crabmeat and butter and
stir until sauce has thickened.
Pour equally over fillets and serve.

Fried Crab Claws
Don’s Seafood, Baton Rouge
1 lb. fresh Louisiana crab claws
1 tsp. Don’s All Purpose Seasoning
2 c. all-purpose flour
2 c. plain bread crumbs
Egg wash
1 c. milk whisked with 1 egg
Lightly season fresh crab claws
with Don’s All Purpose Seasoning.
Batter seasoned crab claws in flour.
Dip in egg wash and dip in bread
crumbs. Deep fry in oil at 350 degrees
for 4-5 minutes or until crab claws
turn golden brown and begin to float.

1 lb. shrimp, peeled
1 lb. broccoli pieces, chopped
1 can mushroom buttons
1 can cream of mushroom soup
1 small jar Cheez Whiz
3 c. cooked rice
Breadcrumbs
Sauté onions, celery, bell pepper and
shrimp in butter. Add soup and drained
mushrooms; simmer. Boil broccoli until tender and drain. Add this mixture to rice and
Cheez Whiz. Combine all ingredients, then
sprinkle with breadcrumbs. Bake at 375 degrees for 30 minutes.

1/2 c. mayonnaise
3/4 c. ketchup
1/3 c. Tiger sauce (hot sauce)
1 tsp. Creole Seasoning
Mix all ingredients. Stir until sauce is
completely blended. Can be used as a dipping
sauce for chicken tenders, fries, fish, shrimp,
even vegetables.
Crawfish Spaghetti

1 lb. spaghetti
2 to 3 lbs. crawfish tails, cleaned
1 (No. 2) can whole tomatoes
1 small can tomato sauce
4 garlic buds
2 lg. onions, chopped
1/4 c. bell pepper, chopped
1 tsp. Worcestershire sauce
Salt and pepper, to taste
1/2 c. sherry (wine)
Grated cheese (American, sharp cheddar,
or Italian)
1/4 c. oil or fat
1 1/2 c. water
1/2 c. parsley, chopped
Cook onion, celery and bell pepper in fat
until golden brown and transparent. Add tomatoes, tomato sauce, water and seasonings.
Simmer for 3 hours.
Add cleaned raw crawfish tails and wine;
simmer for about one-half hour. Cook spaghetti; drain, but do not wash. Add to sauce;
mix well.
Pour out on a platter and sprinkle generously with grated cheese. Serve with toasted
French bread and a tossed green salad.
