Water co olers provide a supply of co oled wat er wh ich, appropriately m etered, can be u sed to obta in mixtures at constant te mperature i ndependently of th e ambie nt tempe rature. I t i s therefo re an e ssential w ork
tool in modern bread-making, since adequate temperature control of the mixture contributes to the quality of
the end product.

 Heating elements made of plated stainless steel serpent
coils (only for coolers/heaters).
CONFIGURATIONS
 Vertical c oolers suitable to be placed on a stand
(optional) or hung to the wall at the Customer’s care and
charge. Water can be taken by gravity feed or by water
pump (option).
 Suspended h orizontal coolers with brackets for wall
hanging (at the Customer’s care and charge), 15 lt/min
water pump and electronic litre counter.
 Normal coolers, for an hourly maximum water withdrawal
equal to the tank capacity.
 Rapid coolers, equipped with a special refrigerating unit
enabling to withdraw the tank capacity up to 4 times/
hour.
 Normal and rapid coolers with heater: in addition to the
above mentioned features, they also are apt to heat water. An electronic thermoregulator starts automatically
either the refrigerating unit or the heating unit according
to the selected and current water temperatures. Running
temperatures: +1°C + 35°C.
Accessories for vertical coolers

and coupling to electronic mixers and litre counters).

GL MINI-25 is a device to generate and conserve liquid yeast that, mixed in the final
dough in variable quantities from 15 to 30%, gives fragrance, lightness and flavor to
the baked product. Thanks to its characteristics and dimensions, the machine is particularly suitable for use in bakeries and pastries, for qualified small to medium productions.

The FERMENTOLEVAINTM PAVAILLER are machines for the making and the conservation of liquid leaven, to be
mixed into different dough preparations.
The range consists of 2 models:
FL 80 with global leaven capacity of Kg 75 (useful leaven capacity 60 Kg).
FL 140 with global leaven capacity of Kg 125 (useful leaven capacity 100 Kg).
The FERMENTOLEVAINTM machines are designed for professional bakeries particularly attentive to the quality
and p leasantness of the final p roduct: the use o f liquid leaven in br ead ma king, in deed, sh ortens the dough
mixing t ime, imp roves t he b read crumb structu re an d th e dough bette r ac cepts th e m echanisation
(suppleness, moulding). In function of the amount used, the aroma and flavor of the final product will vary.
Construction and standard features
cleaning operations
 The tank, the cold unit and the control panel are
included in an electro galvanized steel frame, built on 4
turning wheels (the 2 front ones have breaks) and
equipped with two lateral stainless steel handles to move
it.
 Jackets of thermoformed plastic protecting against
shocks, stainless steel lateral housing.
 The general switch is placed on the side of the machine.
 Stainless steel tank and pair of tools for an efficient and
homogeneous mixing. Each tool is driven by a motorreducer, in order to calibrate the working cycle of the
liquid leaven, and to avoid excessive oxidation.
 The main tool has a scraper to improve the mixing
efficiency and to avoid the leaven remains on the tank
walls. The tools are quickly and easily removable.
 The flour loading is easier thanks to a large opening on
the top of the machine protected by a grid. A
transparent lid assures good visibility.
 An integrated water connection device allows a
connection to the water supply, or can be linked to a
water mixer.

- the upper outlet has a “guillotine” flood-gate, precise
and perfectly tight

Our new SPI range of spiral mixers is the outcome of our long-term culture and experience in quaiIty processing of all kinds of
kneading for the bakery, pizzeria and the confectionery industries and our meticulous research in product technology. Structural
strength, extreme versatility of use, reliability, high standard safety features, accurateness in the manufacturing process, ergonomics and attractive design: these are the highlights of our established success in dough making, and which will project our
tradition into the future.
SPI comes in 8 models with a capacity ranging from 30 kg to 200 kg of dough. This is our cutting-edge range of spiral mixers, its look is
simple and contemporary. The spiral mixers are available in both the electro-mechanic and electronic versions.
Esmach has an attentive focus on the research and monitoring of all aspects regarding the process and the growth of the dough, the latest
products, the rheological properties of the blends, their timings and their final temperature, which has proved successful. In addition, we
have put great effort into studying the versatility of use, best results when processing both minimum and maximum capacity of dough can
be achieved..
Standard features
 Steel structure extended and strengthened to ensure machine

Outer casings painted with dual-cycle anti-corrosion treatment,
using epoxy powders (food contact).
Thermoformed ABS head cover with original new design.
Machine mounted on 3 wheels, with non-slip feet for stabilisation
and floor levelling, raised from the ground to facilitate cleaning of
the surface below.
Stainless steel bowl with welded upper reinforced edge; the dividing blade and the spiral arm arealso in stainless steel.
New stainless steel grid with the design complying with the most
restrictive safety regulation.
Innovative flat cover top in scratch-resistant ABS, divided in two
sections.
Electrical power board contained in box protected to IP 55 for protection against flour dust and water spray.
The direct power transmission is generated by the rotation of
both the spiral arm and the bowl and is delivered by trapezoi-
dal drive belts on multi-groove pulleys.
 Independent motors for bowl and spiral for models from 60 to 200 kg,
single motor for 30 and 45 kg.
 Two working speeds for bowl and spiral.
 Inversion of bowl rotation direction in first speed (except models 30
and 45 kg).
 Command console, functional and innovative, which rotates to the left
and to the right, with an operative range of 120°, providing bwst comfort and ergonomy, also when space is an issue.
 With the keyboard panel in the membrane electronic version, you will
select and monitor the working cycle in manual mode or automatically. You will be able to save up to 9 recipes.
 Electrical power supply: V. 400/3/50 Hz (different voltages on request).

Plus
 Optimum balance between the bowl rotation and the spiral arm enables an
ideal flow of the kneading and is perfect for a soft and gentle handling of
the dough.
 A perfectly shaped arm rotates along the sides of the bowl and the
accurate proportions among bowl, spiral arm and dividing blade, work
together seamlessly towards the creation of even, soft and distinguished
dough, also when only small amounts are used.
 Accurate speed of the bowl and spiral arm for working the kneading and its
processing pattern through controlled stretches and strains, intended for a
continuous and consistent handling, lead to a significant reduction of the
processing time and the temperature of the dough.

The SPI 250-300A A is developed from the well-known hystorical mixer ISE NA which is a real reference point for the mixing technology and reliability; in this new project these basic requirements have been further improved and developed as consequence
to a modern and functional construction, to new automatic workings and to original technical solutions.

The TILTI bowl lifter enables the contents of a removable ISE N A – ISE A (**) – FBLA (**) mixer bowl to
be tipped automatically onto a table or into a SP – DVP divider hopper. The vertical lift of the bowl, the
choice of front and lateral coupling, both with discharging to the right or to the left, allow the ideal flexibility
of use and containment of operational dimensions. On request, for the typical needs of the industrial lines,
the TILTI elevator can be built with pairing heights till mm 3100, with safety cage and automatic discharge.

TNSE B Tilting automatic spiral mixer
The TNSE B is a com pact self-tilting m ixer, cons isting of an NSE spira l m ixer perman ently coup led to a hydraulic
elevator, designed to vertically raise the whole structure and, with a rotation movement, tip the dough contained in
the bowl on the bench beneath. Unloading is performed on the right or left side depending on the model.
The TNSE B therefore combines the functionality, modernity, ergonomic design and quality performance of the NSE
mixers with the efficiency of a dependable safe hydraulic elevator-tipper which, in very limited spaces, transfers the
dough on the bench without requiring any operator intervention.

The TNSE H is a com pact self-tilt ing m ixer, consisting of an NSE spiral m ixer permanent ly coupled to a hydrauli c
elevator, designed to vertically raise the whole structure and, with a ro tation movement, tip the m ixture contained
in the bowl inside the appropriate hopper of the volumetric divider. Unloading is performed on the right or left side
depending on the model.
The TNSE H therefore combines the functionality, modernity, ergonomic design and quality performance of the NSE
mixers w ith the efficiency of a d ependable safe h ydraulic elevator-tipper whi ch, i n ve ry l imited spaces, feeds the
volumetric divider without requiring any operator intervention.

The MON O-TWIN mix er consists of an ISE/F sp iral mix er permanently in stalled on a hy draulic cy linder el evator,
designed to ve rtically raise the e ntire structure and tip the do ugh contained in the bowl on the right or left side as
required by the user. According to the model chosen, the opposed unloading heights allow the machine to be combined with volumetric dividers and/or deposit the dough on a work bench, feeding one or two production lines, according to requirements.
Versatile as r egards us e a nd h ighly compact, the M ONO-TWIN h as b een designed and p roduced t o re duce o verall
working dimensions to a minimum, at the same time guaranteeing all requirements in terms of dependability, quality performance, mechanical solidity and safety, hallmarks of the Esmach mixers.

 Stainless steel safety grid with chute for introduction of
ingredients.
 Sturdy, accurate and silent mechanical parts due to
adoption of mixed conveying system with belts and gears
in special steel with sealed lubrication.
 Motorised up-down bowl movements, with hands-on button controls.
 Control panel with digital keypad for setting work in automatic or manual mode, selecting and displaying the mixing speeds and programming the cycle duration.
 Tool rotation stop brake automatically engages when grid
is opened.
 Low voltage electric control panel.
 Electrical power supply: V.400/3/50 Hz (different volt-
ages on request).
