use only the best ingredients, made in house
when possible, and strive to strike the perfect
balance on the palette.
Chapter

~ Glossary of Terms ~
Absinthe - A distilled, highly alcoholic, anise-flavoured spirit derived
from botanicals, including the flowers and leaves of Artemisia absinthium
(a.k.a. "grand wormwood"), together with green anise, sweet fennel, and
other medicinal and culinary herbs. No, you will not hallucinate if you
drink it.
Amaro - A general term for Italian herbal liqueur that is produced by
macerating herbs, roots, flowers, bark, and/or citrus peels in alcohol,
either neutral spirits or wine, mixing the filtrate with sugar syrup, and
allowing the mixture to age in casks or bottles. It is commonly drunk as an
after-dinner digestif and is usually bitter-sweet. Similar liqueurs have
traditionally been produced throughout Europe, but the term Amaro is
applied only to Italian products of this kind.
Ancho Reyes - An Ancho Chile liqueur based on a 1927 recipe made
from dried Poblano peppers macerated in a sugar cane spirit. It's complex
flavor contains notes of cocoa, smoke, and caramel with a lingering
sweetness and warming spice.
Aperol - Italian aperitif produced by the Campari company. While it was
created in 1919, it did not become popular until after World War II. Its
ingredients are, among others, bitter orange, rhubarb and cinchona.
Becherovka - An herbal bitter liqueur from the Czech Republic. Known
for being drunk as a digestive aid, it is often described as having a
gingery or cinnamon like flavor.
Branca Menta - A milder version of Fernet Branca made by the addition of
a mint cordial syrup. Branca began bottling this expression in the 60's due
to the popularity of the combo within Milan's youthful cafe culture.
~ Glossary cont’d ~
Campari - Italian drink developed by Gaspare Campari in 1860. It is
made by steeping a secret mixture of herbs in alcoholic spirits. It was
originally colored with dye derived from crushed cochineal insects which
gave the drink its distinctive red color.
Carpano Punt e Mes - Red vermouth. It is dark brown in color and has a
bitter flavor. Punt e Mes literally means "point and a half". It has been said
that it owes its name to a sudden raise of the stock market (naturally, of a
point and a half) which greatly benefitted the Carpano distilleries, who
then created the vermouth brand to commemorate the occasion. Alternatively it may refer to the flavor being characterized as one ”point” of
sweetness and half a point of bitterness.
Carpano Antica - A red vermouth made from an original recipe by
Antonio Benedetto Carpano, the man credited with creating modern
vermouth in Turin in 1786. Carpano originally developed vermouth by
mixing herbs with a base wine and then sweetening it by adding spirit.
Chartreuse - Cordial flavored with over 130 herbs, fruit and spices that
are infused, macerated and distilled. Produced in green and yellow
versions. The recipe for green chartreuse is a closely guarded secret that
is known by only 3 monks at any time.
Crème de Violette - A liqueur with natural and/or artificial violet flower
flavoring and coloring with either a brandy base, a neutral spirit base, or a
combination of the two. The taste profile and aroma are distinctly floral
and sweet, reminiscent of the violet candies popular in the early to mid
20th century. Its known production dates back to the early 19th century.
Curaçao - A liqueur flavored with the dried peel of the laraha citrus fruit,
grown on the island of Curaçao. The laraha developed from the sweet
Valencia orange transplanted by Spanish explorers. The nutrient-poor soil
and arid climate of Curaçao resulteed in small, bitter fruit which is all but
inedible, yet the peels are aromatic and flavorful, maintaining much of the
essence of the Valencia orange.
Cynar - An Italian bitter liqueur made from 13 herbs and plants. Predominant amongst these is the artichoke (Cynara scolymus) from which the
drink derives its name.
Dolin Blanc - Produced in the Chambrey region of France since 1821
using wines and herbs from the alpine meadows above. Neither a sweet
or dry vermouth, it is a category all it's own and invented by Dolin. This
vermouth is elegant, light, and aromatic using a white wine as it's base.
~ Glossary cont’d ~
Domaine de Canton - A ginger-flavored liqueur. It contains syrup made
from crystallized Chinese baby ginger, Grand Champagne VSOP cognac,
neutral spirit, orange blossom honey, and vanilla.
Eau de Vie - French for "water of life", these are un-aged brandies made
by distilling a fermented mash of fruit. Generally colorless with no added
sugar, these spirits capture the essence and aromas of their ingredients
by time tested and exacting methods.
Fernet Branca - The exact recipe of Fernet-Branca is a secret but the
producers, Fratelli Branca Distillerie, do say that it contains 27 different
herbs and spices taken from four continents. The distillery claim that the
recipe remains unchanged since its invention in 1845. The name "Fernet"
belonged to a Doctor Fernet, a fictional Swede with whom Branca
originally shared the credit for Fernet, presumably to add authority to
claims of the drink's health benefits.
Lillet - French Aperitif made from a blend of wine, liqueurs, fruits and
herbs. It originated in the French village of Podensac and has been made
since the late 1800s, though the current formula dates from 1986. There
are three iterations: Blanc, Rose, and Rouge.
Maraschino - A liqueur from the city of Zadar in Dalmatia, Croatia,
obtained from the distillation of Marasca cherries. The small, slightly sour
fruit of the marasca cherry tree, which grows wild along parts of the
Dalmatian coast, lends the liqueur its unique aroma.
Matcha - A finely ground powder of specially grown and processed
green tea.
St. Germain - A French liqueur flavored with elderflowers.
Zucca - A bittersweet Italian amaro. Although ‘Zucca’ is the Italian word
for squash / pumpkin, its base ingredient is rhubarb - hence the name
Zucca Rabarbaro.
