President’s Welcome
It is a pleasure to welcome you to the ASEV’s 58th Annual Meeting. As always, Reno provides a convenient
and affordable venue to enjoy everything the Annual Meeting has to offer, whether it is the groundbreaking
information, the networking opportunities or a way to
include business with family fun. The ASEV team of
program volunteers and staff has pulled out all the stops
to make sure there is no risk of you missing out on the
landmark information, science and research shaping our industry.
Continuing with our theme of “Science, a Platform for Progress,” the ASEV has
listened to members’ requests and needs in an effort to build a program that disseminates and explains current research, information and technology. The result is a diverse
program folio of symposia, a seminar and a unique spirits tasting that are sure to peak
interest, thanks to the remarkable work of the Program Committee Chair and First Vice
President Craig Rous of Bear Creek Winery and his committee members. We have continued to modify the scheduling format to make sure you can attend as many presentations as possible within the fields of viticulture and enology.
Starting the week off is the Managing Wild Bacterial Flora Symposium organized by
Linda Bisson and David Mills, both from University of California, Davis. Not only will
you receive the latest information on bacteria’s contribution to wine quality, but this
symposium launches ASEV’s newest service to our members: an on-demand Web video.
By taping and providing the symposium presentations on the Web, we can offer members and others the opportunity to view each speaker’s presentation with PowerPoint
at their convenience. All of this is part of the ASEV’s ongoing effort to make program
information more accessible, valuable and relevant to our entire membership.
Wednesday, the first full day of events, offers a wide range of presentations. Dr. Stan
Howell will provide the Merit Award presentation. His revolutionary work on changing the grape variety landscape in Michigan by focusing on grapevine cold hardiness has helped shaped the Eastern wine industry and provided vital data and science for all viticulturists. His presentation will be followed by the Viticultural
Practices Session. Roger Boulton will be presenting the James F. Guymon Lecture in the
afternoon, and appropriately, will also facilitate the Introduction to Distilled Spirits and
Seminar & Tasting.
Building on the success of last year’s Supplier Showcase Seminars on the exhibit floor, this year will have three interactive seminars focused on microbiology, filtration
fundamentals and vine health. These seminars provide an ideal opportunity for industry speakers and our suppliers to combine technical expertise with their practical experiences.

On Thursday morning, the Chemistry & Measurement of O2 Review Seminar will
highlight what is currently known about wine oxidative chemistry. The seminar was
organized by John Thorngate of Beam Wine Estates in California and is a benefit with
either the 2-day or Thursday only registration.
One of the highlights this year also takes place on Thursday when Dr. Riccardo Velasco
of Italy presents the much-anticipated Honorary Research Lecture on the revolutionary
grape genome sequence. Dr. Velasco led his collaborative research team in sequencing
the grape genome for Pinot noir grapes.
In addition, you can choose from the Vine Pest Management Session or the Phenolic
Session as some of the many program options that will enable you to continue your
professional education through current research updates.
The conference ends with the Clonal Aspects of Winegrowing Symposium, organized by
co-chairs Deborah Golino of Foundation Plant Services at the University of California,
Davis, and James Wolpert of the University of California, Davis. The panel represents
experts from throughout the world, and wine from California and Australia will greatly
enhance this program.
Recognizing the ever-growing scope of information needs, the Program Committee has
actively built a program with a commitment to diversity. There is a full choice of enology and viticulture oral and poster sessions with research overviews and gatherings such
as the research forum, which encourage networking among peers. The Student-Industry
Mixer on Thursday features our students who are a vital part of our industry as they bring new ideas that move us forward. I extend thanks to Lallemand and
Sunridge Nurseries for their continuing commitment in sponsoring the Best Student
Presentation Awards and providing such support of these students and our industry’s
future. Join us in congratulating these student presenters and our newest scholarship
recipients at the mixer.
It is well known that the many networking opportunities including the ASEV Golf
Classic on Tuesday made possible by Scholle’s tremendous support, as well as many
other occasions to share a glass of wine and relax with friends and new acquaintances,
are established benefits of the ASEV annual meeting.
I want to acknowledge our committed volunteers, our dedicated staff and especially our
Board, who have worked tirelessly to make ASEV the vital organization it is regarded as
by our industry. It has been a pleasure to serve as your president and to work with such
a distinguished and devoted Board of Directors.

offers free downtown transportation in the heart of Reno every 10 minutes. These Sierra
Spirit bright yellow buses take you from the University in the north, to the Nevada
Museum of Art on the south end of downtown and many points of interest in between.
The 14 or 14a bus will take you from the Grand Sierra Resort to downtown Reno for
$1.70. This bus departs from the Grand Sierra resort every 15 to 30 minutes.

Hotel Information
Guests of the Grand Sierra Resort may use the complimentary hotel shuttle that runs to
and from the Reno/Tahoe airport daily. The shuttle departs from the front of the Grand
Sierra Resort on each hour and half hour and arrives at the airport approximately six
minutes later. The shuttle bus departs for the hotel at 15 and 45 minutes after the hour
as scheduled. The Grand Sierra Resort bell desk can provide additional information at
extension 2135.

Developing a Research Program Near the Climatic Limits of Commercial Vine Culture
PROGRAM
Dr. G. Stanley Howell, Emeritus, Michigan State University
We are pleased to honor Dr. Howell with the Merit Award based on his many accomplishments and contributions to the industry and ASEV.
Howell has been instrumental in changing the grape variety landscape in Michigan, focusing on grapevine cold hardiness, particularly
given Michigan’s difficult climate; how vineyard cultural practices could minimize the
impacts of these cold events; and how grapevine physiology in cool climates could be
used with practices to maximize yield and quality.
Howell also developed a methodology to assess the impacts of freeze damage and of
other abiotic stresses which helped Michigan Concord and Niagara producers manage
their crops damaged by these forces. His leadership at a state-wide level was significant
in the creation of the Michigan Grape and Wine Council, the major research and marketing body for Michigan grape and wine products.
Howell is author or coauthor of 103 original research papers and 185 articles in trade
journals, handouts and reports. He was the 1999 ASEV Honorary Research Lecturer
and was awarded the 2003 Integrity Award by the Lodi-Woodbridge Wine Grape Commission. He has served the ASEV Eastern Section in several leadership capacities.

Quantifying the Chemistry of Distilled Spirits
Dr. Roger B. Boulton, University of California, Davis
Dr. Boulton received his Bachelor of Engineering in 1971 and PhD in Chemical
Engineering in 1976, from University of Melbourne, Australia. He holds the Stephen
Sinclair Scott Chair in Enology at UC Davis.
He researches the chemical and biochemical engineering aspects of winemaking and
distilled spirits production. His work involves fermentation and reaction kinetics; physical and chemical stability of wines; the mathematical modeling, computer simulation and control of enological operations; winery design; and the economics of investment and operation.
Boulton was the Eminent Speaker in Chemical Engineering chosen by the Australian
Institute of Engineers in 1995. In 1998, he and his coauthors received the Office International de la Vigne et du Vin (OIV) Prize in Oenology for their text, “The Principles
and Practices of Winemaking.” He has been awarded the Best Enology Paper Award for
articles in the American Journal of Enology and Viticulture on four occasions.

Dr. Riccardo Velasco, Istituto Agrario San Michele all’Adige (IASMA), Italy
Dr. Riccardo Velasco, Head of the Department of Genetics and
Molecular Biology at the Istituto Agrario San Michele all’Adige
(IASMA), Italy, will present an overview based on his research team’s
recent accomplishment in completing the grape genome sequencing in Pinot noir grapes. This research will allow the development of
vines better adapted to difficult climatic conditions and more resistant to plant diseases and pests and a corresponding reduction in the use of pesticides.
Velasco has a PhD in plant molecular biology from the University of Florence and is a
senior scientist at IASMA. Many of his main research projects have been in collaboration with other universities and include both grape and apple genome work. He has
served as a reviewer for many refereed publications, including the American Journal of
Enology and Viticulture.
The University of California, Davis, Department of Viticulture and
Enology has selected Dr. Roger B. Boulton as the recipient of the
James F. Guymon Award for 2007.

This unique seminar will offer descriptions of the range of major spirits from tequila
and pear brandy to American whisky, Scotch whiskey, aged rum and Cognac. The
origin of each spirit class will be presented. The production and aging practices that
contribute to their distinctiveness will be described briefly for each tasting. The seminar
will be led by Roger Boulton, this year’s J. F. Guymon Lecturer. Boulton teaches the
only university course offered on the production of distilled spirits from fermented
beverages.
The tasting will include one example for each product offered and may include spirits
such as St. George Pear Brandy, Laphroaig Scotch Whisky, Remy Martin Cognac,
Anchor Junipero Gin, Patron Silver Tequila and Pyrat Rum. The distilled beverages
offered in the tasting were chosen based on Professor James Guymon’s legacy at the
University of California, Davis. Professor Emeritus Guymon was an enologist who
devoted 38 years to teaching, research and service in the area of brandy production and
wine biochemistry.

The importance of oxygen to winemaking is well established, from the deleterious
effects of rapid oxidation to the meritorious effects of slow dissolution. However, a definitive understanding of the mechanisms underlying the reactions of oxygen with wine
components continues to evolve.
The purpose of this seminar is to highlight what is currently known about wine oxidative chemistry. The general role of oxygen in winemaking, from microoxidation in
young wines to oxygen transfer in bottled wines, will be discussed. Presentations will
address the role of phenolics in wine oxidation and hydrogen peroxide formation, the
importance of metal ion catalysis and the Fenton reactions, and the ability to monitor
free radical reactions through electron paramagnetic resonance, a technique that has
been successfully applied in the brewing industry.

When selections of the same grapevine variety from different sources are compared,
subtle performance differences between selections of the same winegrape variety become
apparent. These differences are caused by mutations in genes that control characters
such as leaf lobing, berry color, disease resistance, and ripening date. Over time, mutations accumulate and lead to greater diversity in older varieties. Selections that differ in
these ways and have been evaluated are known as “clones” of a variety. Planting superior
clones can improve a variety’s production and winemaking characteristics.
