Cranberry Orange Sauce
Serves 8-12
12 oz fresh cranberries
1 cup sugar
1 cup orange juice
Optional: 2 Tablespoons chopped
candied ginger, 1 teaspoon
orange zest, cinnamon stick
In a medium sized saucepan over medium heat, dissolve sugar in
the orange juice. Stir in the cranberries and cook until cranberries
start to pop (about 10 minutes). Remove from heat and place
sauce in a bowl. Cranberry sauce will thicken as it cools.

Apples: 1 1/2 lb = 4 cups, sliced
Mushrooms: 1/4 lb = 2.5 cups, sliced
Onions: 1 medium = 1 cup, diced
Celery: 2 1/2 medium ribs =
1 cup, diced
Carrots: 1 1/2 medium carrots,
chopped = 1 cup
Garlic: 3 cloves = 1 Tablespoon
Parsley: 3/4 bunch = 1 cup
Green Beans with Crispy Shallots
Serves 4
1-1/2 lbs green beans
1 Tablespoon olive oil
1 Tablespoon butter
2 medium shallots, thinly sliced
Salt and black pepper
1/4 cup sliced almonds, optional
Boil green beans until al dente,
approximately 3-5 minutes. Drain
beans and plunge in ice water.
Cool thoroughly and drain. Cook shallots over medium heat in
a large skillet with oil and butter until golden brown and crispy.
Transfer to a plate lined with paper towels. Add green beans
to the skillet, sprinkle with salt and pepper and cook, stirring
occasionally until beans are crisp-tender, 3-5 minutes. Serve
hot and top with crispy shallots and almonds if desired.
Sweet Potato Pie
Serves 8
1-1 lb garnet or jewel sweet potato
1/2 cup butter, softened
1 cup cane sugar
1/2 cup milk
2 eggs
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 9-inch New Leaf’s Own pie crust
Boil sweet potato whole in skin for 40-50 minutes, or until
done. Run cold water over the sweet potato, and remove the
skin. Break apart sweet potato in a bowl. Add butter, and mix
well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and
vanilla. Beat until mixture is smooth. Pour filling into unbaked pie
crust. Bake at 350°F for 55-60 minutes, or until knife inserted in
center comes out clean. Pie will puff up like a souffle, and then
will sink down as it cools.

Squash: Winter squash absorbs
water readily, so steam or roast
rather than boil. For hard-to-peel
squash and pie pumpkins, cut in
half, scoop out insides, and roast
cut-side-down on baking sheet.

a combination.
