Stir in the cranberries and cook until cranberries start to pop (about 10 minutes). Remove from heat and place sauce in a bowl. Cranberry sauce will thicken as it cools. Fresh produce cooking conversions Apples: 1 1/2 lb = 4 cups, sliced Mushrooms: 1/4 lb = 2.5 cups, sliced Onions: 1 medium = 1 cup, diced Celery: 2 1/2 medium ribs = 1 cup, diced Carrots: 1 1/2 medium carrots, chopped = 1 cup Garlic: 3 cloves = 1 Tablespoon Parsley: 3/4 bunch = 1 cup Green Beans with Crispy Shallots Serves 4 1-1/2 lbs green beans 1 Tablespoon olive oil 1 Tablespoon butter 2 medium shallots, thinly sliced Salt and black pepper 1/4 cup sliced almonds, optional Boil green beans until al dente, approximately 3-5 minutes. Drain beans and plunge in ice water. Cool thoroughly and drain. Cook shallots over medium heat in a large skillet with oil and butter until golden brown and crispy. Transfer to a plate lined with paper towels. Add green beans to the skillet, sprinkle with salt and pepper and cook, stirring occasionally until beans are crisp-tender, 3-5 minutes. Serve hot and top with crispy shallots and almonds if desired. Sweet Potato Pie Serves 8 1-1 lb garnet or jewel sweet potato 1/2 cup butter, softened 1 cup cane sugar 1/2 cup milk 2 eggs 1/2 teaspoon ground nutmeg 1/2 teaspoon ground cinnamon 1 teaspoon vanilla extract 1 9-inch New Leaf’s Own pie crust Boil sweet potato whole in skin for 40-50 minutes, or until done. Run cold water over the sweet potato, and remove the skin. Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat until mixture is smooth. Pour filling into unbaked pie crust. Bake at 350°F for 55-60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools. Fennel: 3 /4 of a medium bulb = 1 cup Pumpkin and Squash: 1 lb = 1 cup Serving Suggestions Potatoes: 1/3 lb per person Fluffy Mashed Potatoes: Russets Creamy Mashed Potatoes: Gold or Red Roasted Potatoes: Fingerlings or German Butterball Sweet Potato Casserole: Garnet Squash: Winter squash absorbs water readily, so steam or roast rather than boil. For hard-to-peel squash and pie pumpkins, cut in half, scoop out insides, and roast cut-side-down on baking sheet. Best Pie Apples: Pippin, Granny Smith, Braeburn, Jonagold, Pink Lady, Esopus Spitzenburg or a combination.
