Money was taken out of their paychecks for Social Security taxes to ensure that they would receive disability benefits if they could no longer work full-time. Sadly, the government denies approximately 60% of those who apply for disability benefits. Attorneys Jennifer Alfonsi and J.B. Bieske have 42 years combined experience representing only Social Security disability clients. And they personally meet with all clients and appear themself at all court hearings. Attorneys Alfonsi and Bieske have vast experience before local Michigan judges. Attorneys Alfonsi and Bieske can often make a winning difference at the application stage. And, if an appeal is necessary they have won several hundred cases before a court date is even set. Attorneys Alfonsi and Bieske offer free phone or office consultation. If they represent you, there will be no fee charged until after the case is won. The fee is a percentage of retroactive benefits. Alfonsi and Bieske represent clients from all over the state of Michigan. They have appeared numerous times before virtually all of the judges in the state. Their main office is in Sterling Heights at 38850 Van Dyke. APRIL 2012 Bill’s Corner Italian American Cultural Society Sorry I missed you last month but we have a deadline and that applies to everyone – even me… Yes, Spring has officially begun but Mother Nature has been very good to us throughout this “winter season”- it has almost been a non-winter (for Detroit) winter – if that is possible. Bill Morelli I am happy to report that the Banquet Center has been very busy – even in these “slow months” of January and February and March. For the first time since I have been here we are turning away business because several of our events were SOLD OUT! Ladies Night was a huge success as was our first Feast of St. Joseph. In both cases we had more people than we expected and they all enjoyed themselves thoroughly. At the Feast of St. Joseph, it was an honor to have Fr. Pino from Holy Family Church and our IACS Chaplain - Fr. Gattari as the Celebrants. Thanks to both of you for all your blessings. Our Lenten Fish Event has also had larger than expected turn outs. Our first week was close to one hundred guests and the numbers have grown PAGE 11 from there. If this continues to grow, we are going to need to expand our dining area to make enough room for everyone. for An Evening with the Masters – on April 26th. Come that evening and learn all about the legendary artists from Italy and the rest of Europe. Don’t forget to make your reservations for our fantastic Easter Brunch on April 8th complete with a big variety of foodstuffs and the Easter Bunny. Bring your family and forget the mess – enjoy our food without the prep or the clean-up. Our standard events – Members Night, Over 50’s Dance, the IACS Seniors’ Club and many of the other special events continue to show strong support and we are pleased to say that YOUR Cultural Center is healthy and growing more and more each day. We are expecting a possible sellout for our combined effort with the Detroit Institute of Arts as we co- host with them Remember, it is YOUR Cultural Center – Use it and be proud of your heritage. My answer, truth to be told, the fritatta most likely preceded the omelet. What could be easier than mixing vegetables or leftover cooked meats into eggs, scrambled into a breakfast, lunch or dinner. Rather like a savory custard pie, it just made sense to make use of the protein in eggs as a meat substitute to add depth and substance to vegetables. The word omelet comes from the Roman epicure Apicius, who called his dish “overmele”, which was made from eggs with honey and pepper. The French are most noted for their omelettes. Frittatas are a great meal-ina-dish; this recipe is loaded with mushrooms, potatoes, asparagus, and tomatoes, plenty of vegetables along with bacon and parmesan cheese. APRIL 2012 Another question I am asked, “How do you cook a hard-boiled egg properly,” Believe it Or not, there is an art to cooking eggs in a shell. I will share my secrets for a perfect Hard boiled egg or soft boiled. Hard or Soft Boiled Eggs * Never boil eggs it makes them rubbery * Use older eggs, fresh one will not peel properly. 1. 2. 3. 4. 5. 6. 7. 8. Place eggs in a single layer saucepan. Cover with at least one inch of cold water over tops of shells. Cover pot with lid and bring to a boil over medium heat. As soon as the water comes to a full boil, remove from heat and let stand. Large soft-cooked eggs: let stand in hot water for 1 to 4 minutes, depending on your tastes. Large hard-cooked eggs; let stand in hot water 15 to 17 minutes. Drain off hot water and cover them in cold water until cool enough to handle for Soft Boiled Eggs. Hard cooked eggs; let stand in cold water until completely cooled. Asparagus, Mushroom, and Tomato Fritatta Recipe Ingredients: 6 eggs Prep Time: 10 minutes 6 egg whites Cook Time: 30 minutes ½ cup Parmesan cheese shredded Yeild: 6 servings ½ teaspoon Black Pepper ground ½ cup sliced basil leaves 2 Tablespoons oil 1 small diced onion 6 sliced turkey bacon diced 2 cups sliced mushrooms 1 cup cooked potato, sliced ½ pound asparagus trimmed cut into 1 ½ inch pieces 1 cup cherry or grape tomatoes Directions: Preheat oven to 400 degrees. Whisk together, egg whites, parmesan, pepper and basil; Heat 1-tablespoon olive oil in a 10” cast iron skillet or in an oven safe pan that can cook in the oven over medium high heat. Add the onions and cook, stirring until soft and slightly golden brown. 7 to 9 minutes. Add the turkey bacon, cook until crisp 4 to 5 minutes. Add mushrooms and cook until softened. Add the asparagus, potatoes and tomatoes; cook another 2 minutes until the asparagus soften. Add the egg mixture to the pan. Cook until the egg just begins to set 3 to 4 minutes. Transfer the pan to the oven and baked until the top is lightly brown and the eggs are fully set. Approx. 11 to 12 minutes. Remove from oven and let cool slightly. Cut into wedges.
