CEO Letter
The Utah Food Bank strengthened our commitment to serving those in need throughout
Utah this year in a variety of successful endeavors. Our management team has been enhanced
with the addition of a new chief executive officer and our new chief financial officer. The
acquisition of our Southern Distribution Center has increased our delivery process to
the seven southern counties more efficiently than ever before. With the expansion of our
transportation fleet, warehouse enhancements to our refrigerator and freezer, and significant
growth to our Grocery Rescue Program, we are delivering more fresh produce, meat and
dairy products to those we serve.

As an organization, we have increased the poundage of food distributed in Utah to ensure
that each county has received the needed product to meet the escalating demands. We have
distributed almost 45,000 food boxes to seniors, children, and individuals with disabilities
through the Food Box Program, served more than 180,000 after-school meals and provided
another 43,000 weekend backpacks of kid-friendly food to help hungry kids through their
weekend. Other important projects completed this year included the dedication and
implementation of our new mobile pantry truck that has allowed increased outreach to
underserved areas across the state. We also completed the installation of a new Cummins
350W generator. This project, three years in the making, will ensure uninterrupted power
supply for refrigerated and frozen products. In addition to maintaining warehouse operation
in the event of a major power outage, the new generator will allow continued service to
clients and prevent the significant loss of product in an emergency situation.
From the collective effort of our supporters, employees, volunteers, and partner agencies, the
Utah Food Bank provided more meals than ever this year — 28,644,294 to be exact! Thank
you for the role you played in that success.

Fighting Hunger Statewide
Utah Food Bank is an organization focused
on securing and distributing food to Utah’s
hungry. This task is challenging in ordinary
times, but it has become even more daunting
with the ongoing financial instability seen
here in Utah and across the nation. Even
as fuel and food prices spiral upward,
unemployment or underemployment
continue to be a hazard of the times. In fact,
the average family in Utah is finding it more
difficult to put food on their table than at any
time since the Great Depression.
As this need for community services
expands, so does the need for Utah Food
Bank staff to recruit, identify, solicit and
secure funding for its programs through
increased efforts. The formula for success is
diversification — corporations, government
entities, foundations, religious affiliates, civic
groups, and individual supporters are all part
of our outreach and development strategy,
a strategy that is propelling us to increase
direct services across the state.
In September 2011, Utah Food Bank
announced the arrival of new Chief Executive
Officer Karen Sendelback who brings

more than 25 years of national nonprofit
experience to the position. Sendelback has
held leadership roles at several organizations
across the country, including Friends of the
World Food Program, the American Kidney
Fund, the American Lung Association
and the American Red Cross. “Utah Food
Bank plays an incredibly crucial role in
our communities and affects the lives of
thousands of Utahns each year, both those
who give and those who receive donations,”
said Sendelback. “I am grateful for the
opportunity to serve as an advocate for
alleviating hunger through my role as CEO.”
Looking to future capacity, a critical
component of Utah Food Bank growth
is to evaluate need and then implement
warehouse operations accordingly in
northern, central and southern Utah. In
order to be fiscally responsive to the present
economic climate, the priority initiative of
Utah Food Bank’s long-term strategic plan is
the Southern Utah Distribution Center. As
of February 2011, the center in St. George
has been serving Utah’s seven southernmost
counties — Beaver, Garfield, Iron, Kane,
Millard, San Juan and Washington.
The Southern Utah Distribution Center also
serves sites in Arizona (Caliente Mobile
Pantry, Navajo Mountain Mobile Pantry, and
Desert Rose Charities) — small communities
on the southern border that do not otherwise
have access to emergency food services.
In San Juan County, where 24 percent of the
population lives with food insecurity (not
knowing where one’s next meal will come
from), 11 food pantries are now receiving
products more directly and more frequently.
By acting as a community change agent, Utah
Food Bank’s Southern Utah Distribution
Center seeks to bolster often-isolated partner
agencies by meeting food distribution needs
in areas with deepening economic recession,
growing client need, vast geographic
distances and limited internal resources.
As Utah Food Bank responds to the needs
of the community by expanding service and
reach, a methodology for evaluating program
success has been designed and implemented.
Striving to become a model for food banks
nationally, Utah Food Bank uses various
computer-based methods of data collection
to measure program impact and outcomes.
For example, all Kids Cafe sites have a barcode counting system. This barcode system
allows site coordinators to simply click a
button as a child exits the meal serving
area to record each meal served. The “click”
instantly records the meal served to a data
link on Utah Food Bank’s server. Created by
Utah Food Bank’s IT director, this system
eliminates counting inaccuracies while
quantifying the number of children served
through the program.
As we continue to face the challenges of
change that many economic forecasters are
calling the “new normal,” we must continue
to raise the bar on hunger awareness and
apply the highest levels of efficiency with
limited food resources. Here in Utah, where
giving back to the community is part of
our culture, Utah Food Bank continues
to receive support for its direct service
initiatives to fulfill its mission of “Fighting
Hunger Statewide.” With new leadership,
the developing Southern Utah Distribution
Center, and a methodology for evaluation,
Utah Food Bank is well-braced for the
“new normal.”

Southern Distribution Center
Dedication
Utah Food Bank’s Southern Distribution
Center has been operating in St. George,
Utah, since February 2011. With the purchase
of the warehouse building, the branch was
officially dedicated on March 14, 2012.
During the dedication, many in the sevencounty communities served by this branch
were able to tour the warehouse and learn
how Utah Food Bank is “Strengthening
Southern Utah.”
At the event, a dedicatory prayer was given
by Elder Randy W. Wilkinson, a member
of the First Quorum of the seventy of The
Church of Jesus Christ of Latter-day Saints,
and was followed by a ribbon-cutting
ceremony. We were excited to have members
of the St. George Area Chamber along with
Utah Food Bank’s CEO and Branch Manager,
Karen Sendelback and Linda Trujillo, who
cut the ribbon together.

small rural communities such as Red Mesa,
Utah, located in San Juan County, which is
served twice a month through the Mobile
Pantry Program.
The people served live on an average of $18,000
a year and are in desperate need of help to
get through each week. Before the Southern
Distribution Center was opened, this area was
served once every other month. They are now
served twice a month and will start benefiting
from our Childhood Hunger Programs, Kids
Cafe and BackPack Program weekly.
As Utah Food Bank strives to meet our
mission of “Fighting Hunger Statewide,” the
Southern Distribution Center exemplifies
the need and success of creating an efficient
distribution system throughout the state.
Over the two years that this branch has
been in operation, we have distributed more
than 10 million pounds of emergency food
into the seven southernmost counties. This
intense concentration on these counties has

Drives (8%)
Annually 8 percent of Utah Food Bank
inventory is provided through community
and statewide food drives. Five statewide
drives assist in helping to maintain an
adequate inventory for local pantries from
their communities. The Scouting for Food
Drive, National Association of Letter Carriers
Food Drive, the Summer Business Food
and Funds Drive, Hunger Action Month
Food Drive, and the annual Holiday Food
Drive provide a year-round opportunity
for community participation made easy by
the planning, implementation, and logistics
hosted by Utah Food Bank.
Local Commercial (34%)
Utah Food Bank actively solicits food donations
from each segment of the food industry
supply chain, including: growers, processors,
packagers, wholesalers and retailers. Because of
availability and nutrition, increased focus has
been placed on the procurement of fresh fruits
and vegetables. Donations from local growers
have enabled Utah Food Bank to augment these
healthful distributions.

National Commercial (8%)
Utah Food Bank receives many opportunities
for food donations from outside of Utah
through our relationship with Feeding
America. Feeding America is a network of
more than 200 food banks that serve nearly
every county in the United States. Donations
received via Feeding America are low or no
cost and provide Utah Food Bank access to
food from across the country.
Grocery Rescue (34%)
The Grocery Rescue Program is a strategic
business alliance between Utah Food Bank
and Utah retailers that provides a safe and
efficient donation outlet for food that is
nearing its expiration date, but is still safe,
healthy and wholesome to eat.
Refrigerated trucks, owned and operated
by Utah Food Bank and partner agencies,
operate six days a week throughout the entire
state collecting unsalable donations that
would otherwise be thrown away. Instead,
donations are collected and distributed,
within 24 hours, to those most in need within
our state.
Donations primarily consist of nutritious,
perishable consumables including fresh
produce, dairy and meats that are vital
to healthy living and well-being in our
communities. The Grocery Rescue Program
has become a successful means of addressing
poverty, hunger and food waste in Utah.
It continues to fill the growing need of the
emergency food distribution network in Utah.
Offered in 39 states, the District of Columbia,
and two Indian Tribal Organizations, CSFP
provides commodity food packages for
low-income pregnant and breast-feeding
women, other new mothers up to one
year postpartum, infants, children up to
their sixth birthday, and seniors at least 60
years of age who meet income eligibility
requirements.
In addition to the 9.7 million meals
donated in 2012, more than $240,000 in
waste disposal fees were saved by diverting
wholesome product away from our landfills.
The Grocery Rescue Program is a strong
partnership that supports Utah businesses
and strengthens our communities.
Purchased Food (3%)
Government Commodities (13%)
The Emergency Food Assistance Program
(TEFAP) and the Commodity Supplemental
Food Program (CSFP) are federal food
assistance programs that provide food
commodities at no cost to low-income
Americans. Offered nationwide, TEFAP
helps supplement the diets of low-income
needy persons, including seniors, by
providing them with emergency food and
nutrition assistance.
Historically, Utah Food Bank has purchased
very little of its total annual inventory.
Emergency food distribution needs have
largely been met through the generous
contributions from farmers, producers,
manufacturers, retailers and community food
drives. The growing need for specialty food
items, however, has made it necessary for
Utah Food Bank to strengthen its purchasing
program.
During 2012, 2 percent, or 800,000 pounds
of food, was purchased for programs such
as Kids Cafe, BackPack, Meals for Minds,
Holiday Meats and Virtual Food Drive to
meet prescribed content requirements.

Mobile Food Pantries
As of June 2012, Utah Food Bank had 51
Mobile Pantry sites across the state. These
deliveries are made by the Utah Food Bank
Mobile Truck, semi trailers and box trucks,
depending on the site. Approximately 17,000
individuals are served each month through
these Mobile Pantry distributions.

Utah Food Bank Programs
BackPack Program
Utah Food Bank works with 33 BackPack
sites. Each child receives a bag of kid-friendly,
nutritious, easy-to-open food to last through
the weekend. Last year, Utah Food Bank
delivered 43,033 backpacks.
Food Box Program
Utah Food Bank provides free, monthly
food assistance to low-income seniors and
persons with disabilities. Each food box
contains anywhere from 25 to 30 pounds of
nonperishable food, plus milk, bread, dairy and
fresh produce when it is available. Last fiscal
year, Utah Food Bank delivered 17,646 boxes to
our clients throughout Salt Lake County.
Commodity Supplemental Food
Program (CSFP)
Kids Cafe
This program provides up to 1,700 hot,
nutritious meals each school day, which are
transported to after-school sites for lowincome children. Utah Food Bank works
with 31 Kids Cafe sites, which include Boys
& Girls Clubs, community centers, and
elementary schools. Kids’ favorite meals
include tacos, chicken wraps and chicken
dumplings.

CSFP is a federally funded program that,
in collaboration with the state and Utah
Food Bank, works to improve the health of
thousands of low-income children ages one
to six, and seniors at least 60 years of age. The
CSFP supplements their diets with nutritious
USDA food commodities. The USDA ships
items directly to Utah Food Bank; items
include canned fruits, vegetables, cereal,
cheese, etc. Last fiscal year, Utah Food Bank
distributed 29,036 CSFP boxes throughout
the state of Utah.

volunteer projects has increased by more
than 18 percent in two years. This reflects
success at bringing in more volunteers for
shorter, more efficient periods of time.
We have emphasized strong customer service
and making sure each volunteer is given a
meaningful and productive experience. The
results of 323 volunteer surveys indicate:
§§ 89 percent of volunteers reported being
greeted by friendly, smiling and/or
gracious staff.
§§ 96 percent of respondents stated they
would return to Utah Food Bank to
volunteer again.
Volunteer Support
Utah has led the nation in volunteerism for
seven straight years,* and Utah Food Bank
continues to be a major beneficiary of the
strong service ethic in our state. In 2012 we
engaged 57,822 volunteers, more than any
previous year, who collectively dedicated
96,219 hours of service (the equivalent of
more than 46 full-time employees).

Events
Hunger Conference
The fourth annual Hunger Conference was
held at the Salt Lake Downtown Marriott at
City Creek on Oct. 18–19, 2012. The Hunger
Conference is an annual training conference
and networking opportunity for Utah Food
Bank partner agencies. One hundred forty-five
participants from partner agencies statewide
attended the Hunger Conference. Keynote
speakers included Ginette Bott, chief marketing
officer of Utah Food Bank, Mark Biewald,
director of network capacity development
for Feeding America, and Matt Minkevitch,
executive director of The Road Home.
Utah Human Race
The second annual Agency Awards luncheon
was held as part of the conference. The
winners included:

The Hunger Conference featured many
breakout sessions that provided timely
information pertinent to partner agency
operations, management and development.
The Hunger Conference is an invaluable
venue for training partner agencies and
strengthening Utah Food Bank’s network in
the fight against hunger.
While turkey dinner preparations were
underway this past Thanksgiving, Utahns
were on the move. Utah Food Bank’s sixth
annual Utah Human Race, held Nov. 24,
2011, had more than 4,500 participants in
5K and 10K races to raise more than $64,000
and 2,500 pounds of food for Utah families
in need.
The event actually began the week before the
race. Onsite, at Utah Food Bank in Salt Lake
City, runners picked up their race packets
and were able to see firsthand how their
donations were making a difference.
In addition to the quick steps of the
runners, the 2011 Utah Human Race made
significant strides to end hunger in Utah.
Net fundraising amount nearly tripled that
of previous years, with 50 percent more
attendees and the implementation of timing
chips for all runners. For the first time,
participants were also able to donate during
the registration process, which resulted in
more than $3,000 to support Utah Food
Bank’s efforts.

Since the event’s founding in 2006, Phil and
Heather Goold have been instrumental in
increasing participation and fundraising
to support Utah Food Bank’s mission to
fight hunger statewide. This year’s sponsors
included Siegfried & Jensen, EMC, Security
Service Federal Credit Union, Southtowne
Auto Mall, eBay, SelectHealth, 101.9 The End,
Planet Play and Smith’s Food & Drug Stores.

Night at the Warehouse Gala
Utah Food Bank hosted their third annual
signature event with a “Fiesta for Food.” On
Saturday, May 5, 2012, 450 Utahns joined
together with Utah Food Bank in a Cinco de
Mayo celebration to raise awareness about
hunger in Utah.

The Night at the Warehouse had many other
enjoyable events. The evening concluded
with another energetic live auction from our
auctioneer, Richard O’Keef.
The “Tire Iron Chef ” competition was one
