If you fancy finding out more about what they do, check out their websites. Les Caves de Pyrène – www.lescaves.co.uk – Les Caves de Pyrène, a wine importer, distributor and agent, was founded in 1988. Initially it was four people, a battered van and a small handful of wines from South West France. Despite our subsequent growth, our philosophy remains the same as it did from the beginning: to source the best quality wines directly from the grower and the vineyard; that these wines should reflect where they come from (the expression of “terroir”); that these wines should be sustainable, with low intervention and preferably organic or biodynamic; that we not only sell these wines with energy and passion but provide the service that helps our customers to connect more effectively with their customers. Carte Blanche Wines - http://www.carteblanchewines.com/ Carte Blanche Wines was founded in 2009 to represent a group of producers who we knew and loved, and who produced their wines in accordance with a philosophy we felt to be sound and sustainable. We now represent over 30 growers from around the globe and have gained a reputation for importing wines with ‘tension’ (this was a word a Galician friend came up with; we know it’s a cliché!). But it’s true, (as all clichés are, in the words of Lloyd Cole) we like to drink our wines and as we grow ever further into the future, it is this style of wine that we constantly aim for (tension seekers… another friend came up with that one.) Portuguese Story - http://portuguesestory.com – We are traders and story tellers who want to give a Portuguese narrative to the world, to change people’s perceptions and to bring the diversity and uniqueness of Portugal out. One of the ways we want people to engage is through the local and unique and characteristic quality products. Wine can be a strong ambassador of native character and for Portugal this could not be truer. Our vision is that by bringing wine to other markets we will help and encourage people to discover and value Portugal, and help Portugal find its true respected place in the modern world. The Winemakers’ Club – http://thewinemakersclub.co.uk/ is an importer, shop and bar. They are passionate about high quality, organic and biodynamic wines from small, traditional wineries around the world “We partner with our winemakers, those producing regional wines that reflect local flavours. We welcome the unusual and the interesting”. After a decade of roaming to locate the finest vintners the company has made its home in the atmospheric vaults of Holborn viaduct. Under the Bonnet Wines was set up in January 2015 by two friends and fellow restaurateurs (Basile & Alex), to buy the kind of natural wines that they themselves like to drink in their favourite bars, restaurants and at home. These are wines from places close to their hearts; around Nantes, Angers and Saumur in the west of the Loire valley. The growers they work with operate simply, respecting their natural environment. To Basile and Alex, the people behind these bottles are just as important as the grapes themselves. The Catalogue The catalogue is divided by countries and France and Italy are sub-divided into regions. For further information about any aspect of the Wine Fair please either consult our web-site www.therealwinefair.com or contact any of the partners who will be present on both days. How the pricing works: The prices quoted denote trade prices exclusive of VAT POA means that the wines may be available for trade distribution but are not available in the shop – please ask the agent/distributor for price and availability. N/A means wine not currently represented in the UK. “The Real Wine Shop” The Real Wine Shop is located by the entrance of the Great Gallery. It will be selling a selection of wines by the bottle during fair days and will be able to process larger orders for later delivery. After the fair The Real Wine Shop will continue in online form. For further details please visit www.therealwinefair.com EVENTS & SEMINARS There will a series of talks given by wine growers during the two days of the fair, details of which are given below. Places can be reserved on arrival at the fair, at the main event reception. Sunday 17th April 1.00 pm – Q & A with Alice Feiring - Author, journalist and natural wine expert Alice Feiring will be interviewed by Christina Pickard on a variety of subjects including her new Georgian book, wine judging and the emergence of an alternative wine culture. 2.30 pm – “Wine Songlines” with John Wurdeman – Wine & Georgian Folk Culture. John will be talking about the greater cultural significance of wine in Georgia, how it has its own particular meaning and powerful symbolism, and why is it celebrated with toasts and polyphony 4.00 pm -“The Strange Appeal of Natural Wine” with Jamie Goode. Jamie will be giving a wide-ranging and fascinating talk about wine appreciation in terms of aesthetics as well as discussing the “interpretative” role of the vigneron in the winemaking process. Monday 18st April 12.00 pm – “Understanding, Enjoying and Using Pure Sake” Richard Stevens & Honami Matsumoto will be giving their definition of pure sake, highlighting the various styles of sake, as well as how best to appreciate it and serve it. 2.00 pm – The New Artisans – US Wine Masterclass Five growers talk about the history and wine culture of their respective regions, and what motivates to make the wines in the way they do. 3.30 pm – “The Jura Is In” – with Wink Lorch. Beloved of sommeliers & independent wine shops the artisan wines of Jura have been making a huge splash in the last few years. Wink Lorch will be exploring the reasons why with the help of some Jura vignerons. ITALY - PIEMONTE Tenuta Grillo & Il Tufiello, Guido & Igiea Zampaglione Region: Piemonte & Campania Agent/Distributor : Les Caves de Pyrène Table: 1 Owned by the Zampaglione clan Tenuta Grillo estate spreads over 32 hectares of which 17 are dedicated to the vineyard. The production is based on low yields, scrupulous selection of the grapes and respect for nature and traditions. The wines reflect the naturalness and the characteristics of the land, the vines and the year. 2009 Baccabianca £15.75 2004 Pecoranera £15.75 2013 Il Tufiello Sancho Panza £15.75 Further notes AA Trinchero, Renato & Ezio Trinchero, Agliano Terme Region: Piemonte Agent/Distributor: Les Caves de Pyrène Table: 2 The Trinchero cousins make one of the longest-lived and most profound examples of Barbera to be found in all of Italy. They believe that the underrated Barbera grape is a variety capable of producing wines of profound complexity and serious longevity, if cultivated from old vines in top sites and vinified to allow graceful evolution in bottle. With this in mind, the Trincheros farm all of their vines organically and are extremely meticulous with their viticulture. Ezio Trinchero is a close friend of Giampiero Bea of Paolo Bea in Montefalco and the wines of both estates share a similar style and rustic soulfulness. 2013 Grignolino d’Asti £16.30 2011 Barbera d’Asti “Terra del Noce” £12.70 2008 Barbera d’Asti Superiore “Vigna del Noce” £20.45 Further notes Vittoria Bera et Figli, Alessandra Bera, Asti Region: Piemonte Agent/Distributor: Les Caves de Pyrène Table:3 The Artesana hills are lean and mean hills but wonderfully suitable for the production of quality wines. According to ancient chronicles “the greatest fruit of these lands is its wine, dainty and perfect.” In 1758 forefather Giovanni Battista Bera acquired some vineyards in Canelli that belonged to the sovereign of Malta, who then transferred them into a family run estate. Since then they have continued to cultivate that same estate and to vinify the same grapes that have always been grown. This sense of continuity has led to the choice of becoming organic in 1964 and has become their true philosophy in life. Nowadays, the ten hectares of land are worked on by Vittorio Bera and family at the heart of the classic Moscato d’Asti producing area. The vines are cultivated with the most stringent organic methods and are certified by ICEA. The “naturalness” that is adopted in the vineyard is then pursued in the wine cellar as well. Wines are vinified according to traditional methods and any modern “interventionist” ideas such as the use of selected yeasts, enzymes, and various chemical treatments are rejected. 2015 Moscato d’Asti £10.55 2012 Barbera “Le Verrane” £10.40 2013 Barbera “Ronco Malo” £13.25 2013 Mai Dire Mai N/A Further notes Cavollotto Fratelli, Castiglione Falletto, Barolo Region: Piemonte Agent/Distributor: Les Caves de Pyène Table: 4 At the gates of Castiglione Falletto village, in the centre of the Barolo area, on Bricco Boschis hill, Tenuta Cavallotto is situated. Covering 25 hectares the Cavallotto Estate has been in the family for several generations and in 1928 became the first in the area to produce and trade wines exclusively from the grapes of its own vineyards. Since 1974 it has been the constant aim for the family to keep the oenological and agronomic techniques and methodologies natural and to keep to the traditional ways to vinificate and to age their classic Barolo. 2011 Barolo Bricco Boschis £32.50 2009 Barolo Riserva “Vigna San Giuseppe” £49.30 2009 Barolo Riserva Vignolo N/A 2012 Barbera d’Alba Superiore “Vigna Cuculo” N/A Further notes Ferdinando Principiano, Alta Langhe, Piemonte Region: Piemonte Agent/Distributor: Les Caves de Pyrène Table: 5 Located on the southern fringe of the Barolo zone, the Principiano estate benefits from the biodiversity of the Alta Langhe; the wilderness that lies beyond the dense planting of the Nebbiolo vineyards which helps maintain a biodiverse balance in the vineyard. Ferdinando firmly believes that wines from the Langhe should be a reflection of the place they come from, rather than taking on an international style and his wine making uses traditional methods such as no use of chemicals in the vineyards or the cellar. 2014 Langhe Bianco Timorasso £11.60 2015 Dosset Vino Rosso £8.30 2014 Langhe Nebbiolo “Coste” £10.95 2012 Barolo DOCG £18.25 2014 Barbera d’Alba “Laura” N/A 2010 Barolo “Boscareto” N/A Tasting notes Cantina Iuli, Cerrino Monferrato, Piemonte Region : Piemonte Agent/Distributor : Les Caves de Pyrène Table : 6 The Cantina Viticoltori del Monferrato is a small cooperative founded in 1998 with a clear aim: combining their individual experiences in viticulture, selecting grapes, managing the land and winemaking to produce Barbera del Monferrato of the very highest quality. The vineyards are situated in the south of the Lower Monferrato, around the villages of Cerrina Monferrato, Odalengo, Sala Monferrato and Quarti di Pontestura. Instead of the comfort of having a single area of vineyards around the cellar they prefer to have a variety of unique terroirs and to value the old Barbera vineyards in the region. 2012 Barbera del Monferrato “Rossore” £11.50 2010 Barbera del Monferrato “Barraba” £19.20 2013 Pinot Nero Nino £14.80 2010 Malidea Monferrato Rosso N/A Further notes Cascina degli Ulivi, Stefano Bellotti, Novi Ligure Region: Piemonte Agent/Distributor : Les Caves de Pyrène Table: 7 In addition to grape growing, the estate has a diversified production of fruits, vegetables and cereals, and keep a variety of farm animals. This biodiversity is an essential factor in biodynamic farming, which treats farms as self-contained, self-sufficient entities requiring little or no inputs from the outside. Stefano Bellotti began as an eighteen year old in 1977, reclaiming the family farm where there was less than 1 hectare of vineyard in existing use. He began working organically from the beginning, and introduced biodynamic methods in 1984. The wines of Degli Ulivi are pure and natural, made without manipulations. Their belief is that the art of winemaking is to accompany the wine through its natural transformation process 2015 Bellotti Bianco £9.80 2014 Gavi £10.85 2014 A Demua £16.45 2014 Bellotti Rosso £9.80 2008 Dolcetto Nibió N/A Further notes VENETO AA Filippi, Castelcerino, Veneto Region: Veneto Agent/Distributor: Les Caves de Pyrène Table: 8 The vineyards of Castelcerino are the highest in the Soave area reaching up to 400 metres above sea level. It is in this area that Filippo Filippi grows old Garganega and Trebbiano di Soave vines, almost all of which were planted in the 1950s. The 16ha of vineyards are subdivided into three different Soave crus: Castelcerino, Monteseroni and Vigne della Brà, each characterised by very different soils which affect the minerality of the wines. Organic farming is practised, respecting the natural cycles of the vines and the sustainability of the environment and vinification is undertaken with respect for the natural time each wine takes to mature. 2014 Soave Classico “Castelcerino” £8.75 2013 Soave Classico “Vigne della Bra” £12.40 2013 Turbiana £11.20 Further notes Casa Coste Piane di Loris Follador, Santa Stefano Region: Veneto Agent/Distributor : Les Caves de Pyrène Table : 9 Casa Coste Piane is a small estate in Santo Stefano in the heart of the Valdobbiadene area. For generations their wine had been sold in bulk but since 1983 they decided to bottle the production themselves. The vineyards lie on slopes close to the cellar. The vines are on average 60 years old (some are pre-phylloxera!!) and their roots can grow up to 30-40 metres long. This Prosecco is a gem, it is one of the few made in the ancestral method wherein the second fermentation takes place in the bottle. In April the wine is bottled without the addition of yeast and sugar, subsequently the indigenous yeast contained in the wine starts a second spontaneous fermentation that lasts for approximately four weeks. After this the wine spends a further four weeks sur lie. The process of “disgorgement” is not practised, therefore the yeasts are still present in the bottle… any haziness is entirely natural. NV Prosecco di Valdobbiadene Further notes £10.75 Casa Belfi, Albino Armani, San Polo di Piave Region: Veneto Agent/Distributor: Les Caves de Pyrène Table: 10 Casa Belfi features Glera grown in the vineyards of San Polo di Piave. The estate works organically with natural manures and green fertilisers to achieve the healthiest possible grapes. They use biodynamic practices as well and are now in full conversion. Vinification is also natural with the grapes crushed gently, and the must clarified by cold decantation. The juice is then fermented in stainless steel tanks with indigenous yeasts at a cool temperature. After fermentation, the wine remains in contact with the lees in tanks for approximately six months. When spring arrives the Prosecco is bottled according the Maria Thun biodynamic calendar, after which, the wine completes its secondary fermentation as the residual sugars are transformed by the yeasts into alcohol and carbon dioxide. There is no added sulphur or filtering or fining, of course. 2015 Prosecco Col Fondo Vini Biologico Further notes £9.50 Monte dall’ Ora, Carlo Venturini & Alesandra Zantedeschi Region: San Pietro in Cariano, Veneto Agent/Distributor: Les Caves de Pyrène Table: 11 When Alessandra and Carlo Venturini first discovered Monte dall’Ora it was love at first sight. As children of farmers, they were excited and challenged by the hard work it was going to take to restore these ancient vineyards. Located in Castellroto, in the hills outside of Verona, the vineyards of Monte dall’Ora are planted on a base of limestone soil and form a natural amphitheatre facing southeast towards the city. In fact, portions of their vineyards are planted on ancient dry stone terraces called marogna. The Venturinis are firm adherents to biodynamic principles. As such, they encourage the growth of biodiversity by planting herbs such as rosemary and lavender in the summer, whose fragrant blooms are attractive to bees; and sowing cereals in the winter, whose roots move and aerate the soil. 2015 Valpolicella Classico “Saseti” £9.55 2013 Valpolicella Classico Superiore “Camporenzo” £14.10 2012 Valpolicella Classico Ripasso “Sausto” £19.00 2007 Amarone della Valpolicella “Stropa” £55.75 2008 Amarone della Valpolicella “Stropa” £55.75 Further notes La Biancara, Angiolino & Alessandro Maule, Veneto Region: Veneto Agent/Distributor: Les Caves de Pyrène Table: 12 Angiolino Maule’s estate in the hamlet of Biancara covers about 9ha. For over 16 years he has ploughed his vines and eschewed any soil treatments. Using biodynamic viticultural practices he has created an organic, living soil and ecosystem befitting the health of the vines and their resistance to sicknesses. Vinification, ageing and bottling must be consistent with the work in the vines and involve no additives that compromise the natural fruit material. Vinifications are conducted without temperature control, the addition of sulphur, enzymes and yeast and without fining or filtration. 2015 Masieri Bianco £8.90 2013 Pico £15.85 2014 Masieri Rosso £10.30 2014 Garg ‘n’ Go Sparkling £10.50 2015 Sassaia £11.45 2013 Sosan N/A TRENTINO/ALTO ADIGE Elisabetta Foradori, Mezzalombardo Region: Trentino Agent/Distributor : Les Caves de Pyrène Table: 13 Elisabetta Foradori’s biodynamically tended vineyards lie under the awesome Dolomites. Since 1985 Elisabetta has made it her mission to recover the qualitative diversity of the Teroldego grape, indigenous to the region. In the winery too she is becoming more natural and has begun to experiments with giare (clay amphora) to ferment her wines. 2014 Fontanasanta Manzoni Bianco £14.95 2014 Fontanasanta Nosiola Vigneti Delle Dolomiti £22.30 2014 Fuoripista (Pinot Grigio Amphora) £22.30 2014 Sgarzon Vigneti Delle Dolomiti Rosso £21.80 2014 Teroldego Morei £21.80 2013 Teroldego Rotaliano £14.65 2014 Teroldego Rotaliano £14.65 2013 Granato, Vigneti delle Dolomiti Rosso £30.25 FRIULI Dario Princic, Gorizia, Friuli Region: Friuli Agent/Distributor: Les Caves de Pyrène Table: 14 Azienda Dario Princic is located in Oslavia in Friuli-Venezia Giulia, very close to the Slovenian border. Princic has farmed his 7ha of vines organically without any chemical products since 1988. Vines are fertilised with manure and sulfur and copper treatment in the vineyards. They never buy fruit and use the grapes exclusively from their land. Yields are extremely low. Vines grow on local ‘ponca’ soil (friable calcium/limestone marl) mixed with clay. The grapes see variable lengths of maceration on the skins in large open-top oak and chestnut fermenters, and the wines are aged for 18-24 months in botti, tonneaux, and used barriques. No fining, no filtering and the minimum of sulphur. 2011 Vino Bianco Trebez £23.75 2012 Ribolla Gialla £23.75 2013 Jakot £22.95 2013 Pinot Grigio £23.75 2002 Cabernet Sauvignon N/A Further notes AA Zidarich, Benjamin Zidarich, Duino Aurisina Region: Friuli Agent/Distributor: Les Caves de Pyrène Table: 15 The Azienda Zidarich is located in Prepotto, near Duino Aurisina, which is a small and characteristic village of the Carso area. The landscape is extremely varied and stimulating. The vegetation of the environment is very different and enhances the peculiarity of this territory dedicated to viticulture. Jagged chalky rock is the keynote of Carso viticulture, which is carried out on small terraces of red, iron-rich soil that have been reclaimed from the woodland. This lends the wines the characteristic acidity and mineral notes. Everything is done by hand in the vineyard; no chemicals are used and vinification is traditional and with indigenous yeasts. 2013 Vitovska £20.55 2012 Vitovska £20.55 2009 Vitovska Collezione Riserva N/A 2013 Terrano £18.55 2011 Rosso Roz N/A Further notes AA Vodopivec, Paolo Vodopivec, Karso Region: Friuli Agent/Distributor: Les Caves de Pyrène Table: 16 Paolo Vodopivec works solely with Vitovska, so he has been able to do a great amount of research with this variety; he believes high density planting is what is needed (his planting regime is at 10,000 vines per hectare, an extremely high amount) and as he believes the variety displays its finest aromatics and qualities when aged in anfora, he has settled upon this for the primary percentage of his production. His vineyards are organically farmed and he uses no chemicals. While this makes his work more difficult, Vodopivec believes this is the proper way to produce the most distinctive version of Vitovska. 2012 Carso Vitovska Anfore £29.55 2010 Carso Vitovska Anfore £27.90 2012 Vitovska Solo MM12 N/A 2012 Vitovska Amphora Origine N/A Further notes TOSCANA Montenidoli, Elisabetta Faguioli, San Gimignano Region: Toscana Agent/Distributor: Les Caves de Pyrène Table: 17 Montenidoli’s vineyards are organically grown. For fifty years no herbicides, insecticides or any other chemicals have been used. This is a microclimate brimming with life. The vineyards are aglow with fireflies by night and dancing with ladybugs by day. “We began to break up the clods of earth and make humus, raising earthworms and also rabbits, for their precious manure. Now, we leave the hoeing to the roots of plants we sow in the vineyards, and till under each spring”. Sulfur and copper are the only substances used to treat infection and only if absolutely necessary, because sunlight and clean air are perceived to be the best medicine to make the vines healthy, strong, and resistant to disease and bad weather. 2014 Vernaccia di San Gimignano “Tradizionale” £11.65 2014 Vernaccia di San Gimignano “Fiore” £14.40 2010 Vernaccia di San Gimignano “Carato” N/A 2010 Il Templare N/A 2014 Il Garrilo Chianti Colli Senesi N/A 2015 Canaiolo Rosato £12.95 Ampeleia, Maremma, Costa Toscana Region: Toscana Agent/Distributor: Les Caves de Pyrène Table: 18 Ampeleia is now, after years of hard work and observation, a winery that has reached a deep awareness of working in harmony with the land of Roccatederighi and the Colline Metallifere (Metalliferous Hills): the experience acquired, the intimate knowledge of their vineyards, learning how to stop and listen, and the constant exchange of ideas within the team, have all contributed to the blossoming of innovations complementing the original vision behind Ampeleia. They began converting their vineyards to biodynamic farming back in 2009 starting with Ampeleia di Sopra. The estate covers 58 hectares, 28 of which is woodland – oak, chestnut and locust-tree and 30 of which are vineyards, all merged together and dominated by a medieval tower. More than a hundred years ago, the previous owner, lawyer Ageno, planted French vines and produced wines from meaningful names which were a little peculiar because they were Italianised: Bordò, Bordò bianco e Pinò. In 1973, La Stoppa was purchased by the Pantaleoni family, who recently modernised and transformed the cellar. Today the estate is run by Elena Pantaleoni, who along with Julius Armani wanted major investments to be devoted to the vineyard, worked on organically and certified by ‘Suolo e Salute’. She believes this unique balance is represented in the rigour and harmony of the Nero d’Avola and in the freshness and elegance of the Frappato. The organically grown estate is spread over 10 hecatres of Nero d’Avola and Frappato vines and 1 hectare of Albanello and Muscato, two white varietals native to Sicily. Arianna Occhipinti believes it to be essential in Sicily to work with the particular climate – hot sunshine during the day and coolness at night, the red sands, the low yields per hectare, natural agriculture and careful attention in the cellars. To give is to receive; according to these winemakers this means maintaining what they have received, in terms of land and biodiversity. In 1991, Marc Penavayre took over and expanded the family vineyard that had been growing wines for generations, following in the footsteps of his father Louis. Like many others, the domain initially employed modern viticulture and vinification methods, but in the early 2000s Marc turned to a more environmentally friendly way of making wines. His recipe is simple: the vines are worked in harmony with the terroir, eschewing fertilisers or weedkillers in favour of natural products. Grapes are harvested ripe and healthy, then hand-sorted before vinification, which is geared to expressing the essence of grape and soil, using only native wild yeasts. Château Plaisance wines are neither fined nor filtered. They are fine ambassadors for the Négrette variety, which has captivated drinkers with its incomparable and original flavours for nearly 2,000 years. Today, more than ever before, Château Plaisance is dedicated to producing wines that are 100 percent grapes. 2015 Château Plaisance « Grain de Folie » £7.50 2014 Château Plaisance Classique £8.15 2014 Château Plaisance « Alabets » £10.15 2013 Château Plaisance « Tot So Que Cal » £15.70 2015 Château Plaisance Rosé £8.15 Maison Laurent Cazottes, Villeneuve-sur-Verre, Tarn Region: South West France Agent/Distributor: Les Caves de Pyrène Table:53 These are “haute de vies” from a distillerie artisanale. The estate had been farmed in the traditional and natural way for thousands of years before the Guibert family established the Grand Crus vineyard of the Gassac valley. Divided into 63 small vineyard plots amongst 3,000 hectares of protected forest cultivated without any chemical or pesticide, Mas de Daumas Gassac remains a virgin land farmed with total respect of Mother Nature to preserve its balance. With the specific soil of the Gassac valley, a very cool microclimate, more than forty different grape varieties and winemaking, ageing, 'savoir-faire' inspired by the great Emile Peynaud, the wines from Mas de Daumas Gassac are incomparable to any other and have established a style of their own. Clos du Gravillas is 8 hectares, home to 15 grape varieties on a 300 metre high plateau of crushed white gravel chips in the Parc Naturel de Haut Languedoc. Vines are worked organically (Ecocert). Pickers throw any grapes not good enough to eat on the ground. The 15ha of vines are set in an environment of Mediterranean garrigue and are exposed to the cool climate of the Cevennes foothills creating wines which can be cellared for a surprisingly long time. Mas Foulaquier is made up of two distinct terroirs: Foulaquier and les Tonillières, Foulaquiers is planted mainly to Syrah and Grenache with 2 ha of white varieties whilst les Tonillières consists of old Carignan and Grenache vines with some younger Syrah plants. Production is organic and biodynamic; vines are ploughed and harvest is manual. The wines are made with the greatest respect for the grapes and terroir, using only the natural yeasts present on the grapes and without the use of oenological products. 2014 Violetta St-Guilhem-Le-Désert £12.10 2014 Pic Saint-Loup « Tonillières » £11.30 2013 Pic Saint-Loup « Petit Duc » £16.80 Further notes ROUSSILLON Domaine Le Roc des Anges, Marjorie Gallet, Roussillon Region: Roussillon Agent/Distributor: Les Caves de Pyrène Table : 58 Roc des Anges was created in 2001 in the wild Northern region of Catalunya. The vineyard lies on a north exposed schist hill and is based on old vines, growing old grape varieties such as Grenache Gris, Macabeu, and Carignan. Natural farming is used to create wines rich in minerality and perfectly made for food. Terres de Fagayra was created in 2008 and is dedicated to fortified wines only, with its old vines planted on schist and calco-schist soils. It is a very special place for very unique wines where sugar and alcohol are the basis of terrific minerality. In these two projects, there is an important philosophy: to take pleasure in everyday farming, produce authentic wines perfectly reflecting their terroir, use natural farming techniques, and to find balance and energy in the wines. 2014 « Llum » Blanc vieilles vignes £14.40 2014 Iglesia Vella Blanc £25.20 2014 Côtes du Roussillon-Villages « Segna de Cor » £10.85 2014 Maury Blanc, Terres de Fagayra £22.70 2014 Maury Rouge, Terres de Fagayra £22.70 Further notes Domaine Matassa, Côtes Catalanes, Roussillon Region: Calce, Roussillon Agent/Distributor: Les Caves de Pyrène Table: 59 The Matassa estate comprises 12 ha of small plots of very old vines surrounded by scrubland in the Calce region of the Côtes du Languedoc. This altitude and the fact the exposed vineyards are subject to the Mistral helps to keep the wines fresh, giving them a lift that makes them both drinkable and excellent wines to serve with food. 2015 Les Arbousiers Blanc £11.30 2015 Les Chevrefeuilles Rosé £9.30 2015 Un Air de Réméjeanne Rouge £8.30 2014 Les Chevrefeuilles Rouge £9.55 2013 Les Arbousiers Rouge £11.30 2013 Les Genévriers Rouge £15.60 Further notes Châteauneuf-du-Pape, Domaine de la Graveirette Region : Châteauneuf-du-Pape, Rhône Agent/Distributor : Carte Blanche Wines Table : 62 Graveirette is located outside the village of Bédarrides, where a small plot of vines is situated, as well as a plot of old vines on la Crau plateau where conversion to biodynamic production is now complete. Things began to change in 1989 when Jean-François Nicq arrived to take over as winemaker. Rather than blend everything together, J-F decided to bottle the member estate's production separately, highlighting the individual terroir of the 10 domaines. By the end of the 1990s, everything was being made in a hands-off, natural way conscientious farming, no yeasts, no enzymes, no new oak and no sulphur before bottling. The results were fantastic and following Nicq’s departure to set up his own domaine (Les Foulards Rouge), his assistant Edouard Laffitte took over. When Edouard left to set up his own domaine (Bout du Monde) he was replaced by Denis Deschamps who has since overseen the continual improvement at this most innovative of co-ops. 2015 Les Galets Rouges £6.45 2015 Côtes du Rhône “Terre de Mistral” £6.45 Further notes Domaine Romaneaux-Destezet, Béatrice & Yves Souhaut, Saint-Joseph Region: Saint-Joseph, Rhône Agent/Distributor: Les Caves de Pyrène Table: 67 Domaine Romaneaux-Destezet was created in 1993 by Hervé Souhaut. His holdings on the acidic granite soils of the northern Rhône and the southern Ardèche are a mixture of new and ancient vines—from 50 to100 years old. Hervé Souhaut’s holdings are tiny, only five hectares and he employs only organic and biodynamic winemaking techniques. Many of the vineyards are situated on the slopes of the Côte du Py, an extinct volcano with a variety of soil types including crumbly schist soil which gives the Gamay a unique expression. Foillard uses a minimal intervention approach both in the vineyard and the cellar; synthetic pesticides are eschewed, wines are unfiltered and only a minimal amount of sulphur is used during vinification. 2014 Morgon Classique £11.95 2014 Morgon “Côte du Py” £17.55 2013 Morgon 3.14 £29.45 2013 Fleurie N/A Further notes Marie & Matthieu Lapierre, Morgon Region: Morgon & Beaujolais Agent/Distributor: Les Caves de Pyrène Table: 69 Domaine Lapierre’s vines have been cultivated organically since 1981 and are spread over 13ha in the Ville-Morgon area of Beaujolais. Work in the vineyards respects ancient methods to reveal the unique terroir of the area; chemical fertilisers and synthetic products are eschewed in favour of compost, ploughing the vines and non-aggressive treatments to preserve the natural yeast living on the skins of the grapes. In the cellar fermentation occurs spontaneously due to the presence of these natural yeasts and without the addition of sulphur. The wines are bottled unfiltered and with a small addition of sulphur to stabilise the wine. 2015 Vin de France Raisins Gaulois Further notes £9.10 Château Cambon, Beaujolais Region: Beaujolais Agent/Distributor: Les Caves de Pyrène Table: 70 The Cambon estate was planted originally in 1914 in three parcels in an area between Morgon and Brouilly on mixed clay-granite and calcareous sands. The plantings were expanded to make use of the diverse terroir and to create an harmonious definition of the entire plot of land. The vines are tended without chemicals or inorganic fertilisers, natural yeasts are used in the cellar and the wines are raised in 200 year old foudres. 2014 Château Cambon Beaujolais £10.25 2014 Cuvée de Chat £10.45 Further notes Domaine de Botheland, Rémi Dufaitre, Brouilly Region: Beaujolais Agent/Distributor: Les Caves de Pyrène Table: 71 Rémi and his wife Laurence started purchasing their first hectares of vineyards around Brouilly as early as 2006. Right from the start, Rémi would work the soils according to organic principles and sold his grapes to the local cooperative. At that time, he already resorted to ambient yeasts to start the fermentation process. In 2010, considering his wine was close enough to what he thought was a good wine, he decided to make and bottle his own wines. Thanks to Jean-Claude Lapalu, Jean Foillard and their likes who took him under their wing, Rémi Dufaitre was allowed into the Beaujolais Gang network. Rémi vinifies the traditional Beaujolais style using carbonic maceration. Maturation varies according to the cuvees. Before bottling and according to the vintage, Rémi adds no or only minimal doses of SO2 never exceeding 2mg per litre in order to stabilize the wines. 2015 Beaujolais-Villages Blanc £13.45 2015 Prémices Beaujolais-Villages Rouge £13.20 2014 Brouilly £14.80 Further notes Alice & Olivier de Moor, Chablis Region : Burgundy Agent/Distributor : Les Caves de Pyrène Table : 72 Alice and Olivier planted their first vines towards the end of the 80s near the village of Courgis, north-west of Dijon. Grapes are picked by hand and only natural yeasts are used, no sulphur is added during fermentation and there is no chaptalisation or filtering. The aim is to intervene as little as possible in the wine-making process thus allowing the wine more freedom to become unique and expressive. 2014 Bourgogne-Aligoté £11.10 2014 Chablis « Vendangeur Masque » £14.60 Further notes Domaine de la Cadette, Jean & Catherine Montanet, Vezelay Region : Burgundy Agent/Distributor : Les Caves de Pyrène Table : 73 Created by members of the Montanet family and their friends the estate is situated in the Vézelay appellation in the Yonne, 50km to the south of Chablis. The estate is certified organic and no additives are used in the winemaking process; grapes are fermented using only the naturally occurring yeasts. For them great wine begins in the vineyard: they practice organic and biodynamic agriculture; no fertilisers, insecticides or synthetic chemicals are used encouraging self-defence of the vineyard which ensures the best possible protection against problems caused by climate or disease and allowing them to grow high-quality, healthy grapes. Vinfication is traditional maintaining the utmost integrity towards the grapes so as not to change the structure and basis of the work done in the vineyard. 2014 Bourgogne-Aligoté £10.20 2014 Saint-Bris Exogyra Virgula £11.35 2013 Bourgogne Pinot Noir £12.95 Further notes Domaine Catherine & Dominique Derain, Saint-Aubin Region : Burgundy Agent/Distributor : Les Caves de Pyrène Table : 75 After 10 years of experience working at a variety of wineries the opportunity arose to purchase land in St Aubin which heralded the beginning of the current domain. They harvest by hand, limit the use of chemical products (no herbicides or pesticides), plough the soils, and earth up during winter. Yields are kept low (mainly by spring de-budding) to concentrate the expression of terroir in the grapes. The wines undergo long, traditional vinification with no artificial practices or products used to concentrate flavours. Only natural wild yeast and bacteria are used. Wines are matured for one year in French oak barrels on their lees. The two Absolu have zero sulphur added during the vinification. 2013 Saint-Romain Blanc « Absolu » £25.25 2014 Meursault « Marguerite » £30.95 2013 Saint-Romain Rouge « Absolu » £23.55 2014 Saint-Romain Rouge « Absolu » £23.55 Further notes Domaine des Vignes du Maynes, Julien Guillot Region : Macon, Burgundy Agent/Distributor : Les Caves de Pyrène Table : 77 Domaine des Vignes du Maynes comprises about 6.5 hectares. Facing due east, the vines benefit from the rising sun. They grow on a terroir of a clay and limestone mixture. Avoidance of weedkiller and modest yields characterise these authentic wines produced from Pinot Noir, Gamay and Chardonnay. From the time the grapes are picked by hand to the time the wines are bottled neither additives nor SO2 are used. The pressing operation is slow, carried out on wooden wine presses dating from 1895. Fermentation takes the form of carbonic maceration over a period of ten days (Jules-Chauvet method). All wines, regardless of creed or colour, are left on the lees in oak barrels for eleven months producing wines full of character. 2014 Macon-Cruzille Blanc « Aragonite » £23.15 2013 Beaujolais-Leynes « Haut Balmont » £15.50 2014 Beaujolais-Villages « Les Pierres Bleues » £17.75 2014 Macon Rouge £14.55 2014 Macon-Cruzille Rouge « Manganite » £24.80 2014 Bourgogne Rouge £19.95 2014 Bourgogne Rouge « Auguste » £25.65 Domaine des Gandines, Famille Dananchet, Viré-Clessé Region : Burgundy Agent/Distributor : Carte Blanche Table : 78 Domaine des Gandines is a family winery located in the south of Burgundy, in the area of Mâcon. He works organically, labouring the soil and opting for irabel, essential oils and copper treatments over synthetic products. In 1999 Jo converted the vineyards to 100% organic viticulture and in 2008 took the leap to full biodynamic viticulture achieving Biodyvin certification in 2011. The 46 ha of vineyards are planted mostly with Melon Blanc (90%) with the final 10% split between Folle Blanche, Chardonnay and Pinot Noir. Their philosophy can be summarised in a few words: minimal intervention in the cellar guides their choices in the vineyards to help to get the purest expression of the unique grape Melon Blanc. Organic work, use of plants and biodynamic preparations and hand harvesting tend to offer riper grapes ready for natural fermentation. He makes a Chenin from vines on clay-limestone soils that displays characteristics of minerality and ample fruit combined. The grapes are fermented in old barrels and aged for a further year without racking. The grapes for the Anjou Rouge Pompois are de-stemmed before fermentation which takes place in cement tanks, followed by maturation in oak barrels. No filtering, no fining, no sulphuring and twelve months in used oak barrels (used for two to five wines). The Layon is a small tributary to the Loire that lazily digs its way through well exposed and drained hills of schist and sandstone. Its micro-climate allows for a long hang-time, and when the mornings are foggy in the fall, with no rain, botrytis develops easily on the Chenin grapes. They adopted organic viticulture techniques from the start, ploughing between and under the rows, and use biodynamic preparations to treat the vines and soil. In their area of Anjou Noir (Black Anjou, so called because of the dark colour of the soils of slate and volcanic rocks), the soils are shallow, with subsoils of schist and sandstone, and varying amounts of clay on the surface. With all the efforts put into vineyard work, it is equally important to them to vinify in a natural fashion, and they are particularly attentive to minimizing manipulations and the use of sulphur. All the wines are barrel-fermented and aged, and usually the whites go through malolactic fermentation. The barrels are renewed as needed. 2015 Moussamoussettes Pet Nat Rosé POA 2014 Anjou Blanc £13.50 2013 Anjou Blanc « B.B. » £26.10 2014 Savennières « Arena » £19.75 2014 Anjou Rouge N/A Further notes Domaine des Roches-Neuves, Thierry Germain, Saumur Region : Saumur, Loire Agent/Distributor : Les Caves de Pyrène Table : 94 Roches Neuves covers 28ha in a superb viticultural location in the appellation of Saumur Champigny. The vineyards see ultra-intense organic care; no chemicals are used, yields are restricted and harvest is by hand. Once the grapes have arrived at the cellars they are fermented according to terroir, with those from gravelly soils going into stainless steel, whereas those from clay-limestone vineyards are fermented in old oak vats. Indigenous yeasts are used and their desire for “natural” winemaking comes through strong in their resistance to the use of sulphur, with as little used as possible, and the wines are bottled unfiltered. Carte Blanche first met Fred at a tasting in Angers where he was asked to join the strangely named ‘Contains Sulphur, mais pas trop!’ tasting group, which consists of a number of bio and natural winemakers who may or may not use sulphur. Although there are some who affectionately call them the ‘enochalados’ (‘crazy oenologists’), in reality, this 'online cooperative bodega' (as described by El Mundo Vino) is carrying out the very serious task of searching for old-vine vineyards planted with the Garnacha grape variety in the Sierra de Gredos, located between the provinces of Madrid and Ávila. And the truth is that their work represents an authentic breath of fresh air; extracting the personality from each individual plot. 2014 La Bruja de Rozas £11.60 2014 Las Roza 1er cru £19.10 Further notes Daniel Landi, Méntrida Region: Méntrida, Spain Agent/Distributor : Indigo Wine Table : 114 Daniel Landi grew up in Méntrida, born to a family of vineyard owners and farmers in this rugged, hilly area not far from Madrid. The name Loxarel is an inversion of the variety they seek, perfect Xarel-lo. The actual estate is called Masia Can Mayol. Now a new ethos has crept into the process, one that works on biodynamic lines and incorporates as much nature as possible in the winemaking process, down to using goats to de-leaf the vines. The estate has a strong line in Cava production, producing one cuvée that is laid sur latte for 10 years. The vines are planted at an altitude of 800 m. – 1000 m. and are surrounded by mountains that reach 2900 m. high. The grape varieties are mainly Pinot Noir, Riesling and Viognier, but there are also some small experimental plantations of other grapes. They work with complete respect for the environment, using only those products allowed in organic farming, but the wines, as a matter of philosophy, are not certificated. The harvest is done manually and the fermentation and aging of wines take place in stainless steel tanks with the minimum intervention and with (or occasionally without) extremely low levels of sulphur, to enable them to produce wines that represent the most of the area where they are conceived. 2013 Biu Riesling £11.75 2014 Bord Negre £9.35 2014 Biu Pinot Noir £11.95 2014 Nero Pinot Noir £15.20 Further notes Partida Creus, Massimo Marchiori & Antonella Gerosa Region : Tarragona Agent/Distributor : Les Caves de Pyrène Table : 121 Partida Creus is a small traditional winery located in Bonastre in the Baix Penedès region and is run by Antonella Gerosa and Massimo Marchiori; two Italian architects who moved to the region in 2007 in search of a slower lifestyle. Even his joven Albariño comes from vines with an average age of 40 years. Rodrigo is perhaps best known in Spanish wine circles for his stellar reds produced from the indigenous Galician varietals Caiño, Espadeiro and Loureiro, however his whites are also outstanding. The wines produced express the land and hold a great sense of terroir. 2015 Pipeno Pais N/A 2014 Cot Pipeno N/A 2015 Moscatel di Alejandria N/A Further notes Tinto de Rulo, Maurizio Gonzalez, Bio Bio Region: Bio Bio, Chile Agent/Distributor: N/A Table : 148 Tinto de Rulo was created when three agronomist friends – Mauricio, Jamie and Claudio – decided to make wine together using century-old Malbec and Pais vines. Their first crop was in 2013 from vineyards without irrigation which had been organically managed. Wine is made naturally using just grapes and are matured in old casks and stainless steel so that no external influences modify the characteristics of the wines. 2015 Malbec N/A 2015 Carignan, Maule N/A Further notes Roberto Henriquez, Bio Bio Region: Bio Bio, Chile Agent/Distributor : N/A Table : 149 Roberto’s focus when making wines is to perpetuate the traditional manner of winemaking in Chile which began over 400 years ago when Spaniards brought the first grapevine cuttings to the Americas. He works with Pais grapes which come from a 200 year-old, dry-farmed vineyard that is ploughed by horse and by hand. The grapes are de-stemmed and naturally fermented using only their own wild yeast creating wines which convey history, culture, tradition and express the ancient Chilean Terroir. 2015 Pipeno Santa Juama Further notes N/A Viña Tipaume, Yves Pouzet, Cachapoal Region: Cachapoal, Chile Agent/Distributor : N/A Table : 150 Viña Tipaume is a natural vineyard and winery run as a family venture since 1996 when the Pouzet-Grez family purchased 16 acres in the small village of Cerrillos, near Rancagua in Chile. The vineyard is situated in the Alto Cachapoal region at the foot of the Cordillera de los Andes at around 400 metres above sea level and has a very cool climate allowing a long period of maturation in the autumn. The vineyard is cultivated with organic and biodynamic principles achieving biodynamic certification in 2011. Six varietals are grown; Carmenere, Cabernet Sauvignon, Merlot, Malbec, Lacrima Cristi and Viognier which are co-fermented in the underground winery partly in barrels and also in small clay amphoras. The wine is vinified with very little intervention; no pumping, fining, filtration or any other brutal manipulation. 2014 Tipaume red (6 varieties – barrel-fermented) N/A 2014 Grez red (6 varieties – amphora) N/A Further notes Rogue Vine – A Los Viñiteros Bravos, Leo Erazo, Itata Region: Itata, Chile Agent/Distributor : N/A Table : 151 Rogue Vine is a very small project trying to recover the amazing heritage of the old vines found in the hills of Itata, Chile. A lot of time is spent walking these hills looking for small vineyards with the Terroir they want to work with. Vines age from 60 years to 150 years old, farming is organic and there is no irrigation. The winemaking is kept simple; only native yeasts are used, no corrections are made, the wines are aged in old barrels allowing the complexity of the each site to develop and only a very little amount of sulphur is added at bottling. 2014 Grand Itata Tinto N/A 2014 A Los Viñiteros Bravos N.A Further notes 4 Manos, Vincent Wallard, Tupungato Region: Tupungato, Argentina Agent/Distributor : Les Caves de Pyrène Table : 152 Since 2011, Vincent Wallard has been looking for the best soil and grapes in order to create a Malbec with no added sulphites, nor anything else than fruit. Cuatro Manos is the result of that quest: Vines from the Gualtallary area in Mendoza, 1400m above sea level, indigenous yeasts, very low SO2 level and no wood as it is made in concrete tanks. 2015 4 Manos Malbec POA 2014 4 Manos Malbec £13.15 2014 Tonton Rouge N/A Further notes USA La Garagista Farm and Winery, Deirdre Heekin Region: Vermont Agent/Distributor : Les Caves de Pyrène Table : 153 Located on Mount Hunger at the edge of the Chateauguay and in the Piedmont chain of hills in Barnard, Vermont La Garagista make natural wine and ciders. The land has been part of small homestead farming for over two hundred years and care and observation is paid to the native terroir, a whole-farm and diverse agriculture where not only vines are grown but also vegetables, fruits, flowers, and herbs for their restaurant kitchen. In 2014 the small farm grew to encompass two older parcels of vineyard in the Champlain Valley of Vermont allowing them to extend their farming efforts in a valley landscape. The work carried out at the farm and winery, both in the field and in the cellar, is guided by organic, permaculture, and biodynamic thought. The mission is to care for the land in creative and natural ways, makiing way for an honest narrative told by the wines that expresses the unique landscape and vintage, and to share in and support the spirited food and agriculture of the community. 2015 Grace and Favour Pet Nat £23.70 2014 Vinu Jancu £24.85 2014 Harlots and Ruffians £24.85 2014 Damejeanne Rouge £24.85 2014 Loups Garoux Rouge £24.85 Further notes Kelley Fox Wines, Dundee Hills & McMinnville Foothills Region: Oregon Agent/Distributor : Les Caves de Pyrène Table : 154 Kelley Fox Wines is a small winery producing Pinot Noir from self-rooted, dry-farmed, old vines of the historic Maresh Vineyard in the Dundee Hills, and the Demeter-certified biodynamic Momtazi Vineyard in the McMinnville foothills since 2007. Kelley Fox has been a full-time, on-the-floor winemaker for over sixteen years. Most of the canopy work in her blocks at Maresh she does personally and in solitude, including the biodynamic sprays. The wines are touched only by Kelley, but they are not a personal expression. No stylistic intentions are imposed. They are silent, living songs of these beautiful farms. 2013 Kelley Fox Mirabai Pinot Noir £23.80 2013 Kelley Fox Momtazi Pinot Noir £28.65 2013 Kelley Fox Maresh Pinot Noir £37.35 Further notes Golden Cluster, Jeff Vejr, North Willamette Region: Oregon Agent/Distributor : Les Caves de Pyrène Table : 155 What are we without our history? In Oregon the modern wine culture is only around 50 years old. Golden Cluster sources grapes from one of Oregon’s original heritage vineyards. Once known as the Charles Coury Vineyard, this land (now, David Hill Vineyard) was planted with an impressive selection of grape varieties in 1965. Their first release is Sémillon which were the first grapes planted on this historic site. Golden Cluster hope you enjoy their toil, their history, and their potential. 2013 Coury Old Vines Semillon £20.95 2014 Coury Old Viners Semillon £22.50 Further notes Bow & Arrow, Scott & Dana Frank, Portland Region: Oregon Agent/Distributor : Les Caves de Pyrène Table : 156 Despite Oregon’s constant comparisons to Burgundy, it’s the Loire Valley that inspires Scott and Dana’s wines. They only started bottling in 2010 but have quickly earned a reputation for bringing a bit of the Loire to the Pacific Northwest. They source fruit from vineyards planted by some of Oregon’s earliest ‘wine pioneers’ that were planted with grapes like old vine Pinot Noir, Gamay, Cabernet Franc, and Melon de Bourgogne – all typical Loire Valley grapes. These carefully sourced grapes are treated with the greatest care and minimal-intervention winemaking techniques. Their resulting wines are a breath of fresh (French) air from Oregon, lighter in style, lower in alcohol, and extremely food-friendly. 2014 Melon Blanc £14.45 2014 Air Guitar £16.75 2014 Rhinestones £15.90 2014 Hughes Hollow Pinot Noir N/A Further notes Ovum Wines, John House & Ksenija Kostic Region: Oregon Agent/Distributor : Les Caves de Pyrène Table : 157 Where a larger winery might ferment whites quickly in large, temperaturecontrolled steel tanks for a consistency of style from year to year, the goal at Ovum is to reflect the vintage, no matter what it brings. So the techniques are old-school: House and Kostic allow fermentation to happen spontaneously and linger for months, in neutral (old) oak barrels and Nomblot cement eggs. The resulting wines are richly textured and deeply layered. Rieslings are all from single vineyards and are pure expressions of terroir and vintage. The names reflect the emotion they engender, 2013 Do I Move You Gewurztraminer £19.10 2014 In the Dark Gewurztraminer £19.10 2014 Riesling Deep Water £19.10 2014 Riesling Off The Grid £19.10 2014 Riesling Memorista £19.10 Further notes Beckham Estate Vineyard, Andrew & Annedria Beckham, Chehalem Mountains Region: Oregon Agent/Distributor : Les Caves de Pyrène Table : 158 Inspired by their neighbours who had a plot of 20 year old vines and a desire to get their hands in the soil Andrew and Annedria purchased land in Oregon’s Chehalem Mountains in 2004. Their 28 acre farm has 6.5 acres dedicated to Pinot Noir, 1 acre to Riesling and further plantings of Gamay, Chardonnay and Trousseau all dry farmed organically. In 2013, drawing inspiration from Elizabetta Foradori Andrew, a ceramist, began to make terracotta amphora to produce wine in. The amphora wines are fermented with native yeasts, no commercial inoculation and are unfined and unfiltered. 2014 Pinot Gris £24.80 2014 Pinot Noir Creta £29.25 2014 Pinot Noir Amphora Lignum N/A Further notes Minimus Wines, Chad Stock, Carlton Region: Oregon Agent/Distributor : Les Caves de Pyrène Table : 159 Minimus started in 2011 with the creation of a series of wines exploring alternative production and farming methods applied to the terroir of Oregon named the Numerical Series. Since then they have expanded and now produce four distinctly different labels which allow them to focus on terroir driven and clonal isolate wines from select vineyards showing extraordinary character, The name Minimus represents their core philosophy and guiding principle to produce as natural and pure a product possible believing that at a minimum wine can be nothing more than fermented grape juice in a bottle, nothing added, nothing taken away. 2015 Muller Thurgau Vitae Springs Vineyard Pet Nat POA 2014 Gruner Veltliner “Johan” £17.35 2015 SM1 Amphorae Sauvignon Blanc POA 2012 #16 “Flower” Stella Maris White Wine POA Further notes Clos Saron, Gideon Beinstock & Saron Rice, Sierra Foothills Region: California Agent/Distributor : Les Caves de Pyrène Table : 160 Established in 1999, and located in the Sierra Foothills of California, Clos Saron is owned and farmed by Gideon Beinstock and Saron Rice. The approach in the vineyard is natural, with minimal processes carried out to promote life, set up an ecosystem as close to nature as possible and maintain a healthy environment. Similarly vinification is also done as naturally as possible; fermentations occur spontaneously and are allowed to complete in their own time, no chemicals are used and only a minimal amount of sulphur is added when bottling to ensure the wine is able to cope with travel and fluctuating temperatures. 2014 Jambalaia White £14.95 2014 Jambalaia Red £14.95 2013 Josephine+Mariposa Red £17.00 2013 Syrah “Sumu Kaw” £17.95 2014 Rosé £13.95 2014 Elvis N/A 2014 Priscilla N/A Forlorn Hope, Matthew Rorick, Napa Region: Oregon Agent/Distributor : Les Caves de Pyrène Table : 162 Born from a desire to connect both California’s viticultural potential and its diverse viticultural history the name Forlorn Hope is taken from the Dutch ‘verloren hoop’ meaning lost troop, a name given to the band of soldiers who volunteered to lead the charge into enemy defences, their chances of survival slim but the rewards and glory huge. These wines produced from unknown appellations and uncommon varieties are Forlorn Hope’s headlong rush into the breach. No additives are used in the production of the wines, no new oak is used and most only have small additions of sulphur. 2011 Nacre Semillon £19.00 2012 Faufreluches Gewurztraminer £19.00 2014 Suspiro del Moro Alvarelhao £16.90 2013 Kumu To Ame Rosé £13.85 Further notes Lo-Fi Wines, Mike Roth & Craig Winchester, Los Alamos Region: California Agent/Distributor: Les Caves de Pyrène Table: 163 Lo-Fi Wines is a partnership between two lifelong friends who believe in hand-crafted wines that are made for everyday drinking. The 20 acres of vines are dry-farmed and certified organic and biodynamic allowing the vineyards to express their true character though the grapes produced. Grapes are vinified without the aid of any additives, adjustments or enhancements, letting the wine make itself, before being aged in amphora and bottled unfiltered and unfined. Many factors influence a year’s crop and Phillip and Mary want these influences to be tasted in the wine. 2013 Grenache Blanc £29.60 2013 Priscus £29.60 2011 Mourvedre £29.60 2011 Venustas (Tempranillo/Sangiovese) £29.60 Further notes SPIRITS Sacred Microdistillery, Highgate, London Distributor: Les Caves de Pyrène Table: 165 Established in 2009 Sacred Microdistillery is located in a residential back street in Highgate.
