Les Caves de Pyrène – www.lescaves.co.uk – Les Caves de
Pyrène, a wine importer, distributor and agent, was founded in
1988. Initially it was four people, a battered van and a small
handful of wines from South West France. Despite our subsequent
growth, our philosophy remains the same as it did from the
beginning: to source the best quality wines directly from the grower
and the vineyard; that these wines should reflect where they come
from (the expression of “terroir”); that these wines should be
sustainable, with low intervention and preferably organic or
biodynamic; that we not only sell these wines with energy and
passion but provide the service that helps our customers to
connect more effectively with their customers.

Carte Blanche Wines was founded in 2009 to represent a group of
producers who we knew and loved, and who produced their
wines in accordance with a philosophy we felt to be sound and
sustainable. We now represent over 30 growers from around the
globe and have gained a reputation for importing wines with
‘tension’ (this was a word a Galician friend came up with; we know
it’s a cliché!). But it’s true, (as all clichés are, in the words of Lloyd
Cole) we like to drink our wines and as we grow ever further into
the future, it is this style of wine that we constantly aim for (tension
seekers… another friend came up with that one.)
Portuguese Story - http://portuguesestory.com – We are traders
and story tellers who want to give a Portuguese narrative to the
world, to change people’s perceptions and to bring the diversity
and uniqueness of Portugal out. One of the ways we want people
to engage is through the local and unique and characteristic
quality products. Wine can be a strong ambassador of native
character and for Portugal this could not be truer. Our vision is that
by bringing wine to other markets we will help and encourage
people to discover and value Portugal, and help Portugal find its
true respected place in the modern world.
The Winemakers’ Club – http://thewinemakersclub.co.uk/ is an
importer, shop and bar. They are passionate about high quality,
organic and biodynamic wines from small, traditional wineries
around the world “We partner with our winemakers, those
producing regional wines that reflect local flavours. We welcome
the unusual and the interesting”. After a decade of roaming to
locate the finest vintners the company has made its home in the
atmospheric vaults of Holborn viaduct.
Under the Bonnet Wines was set up in January 2015 by two
friends and fellow restaurateurs (Basile & Alex), to buy the kind of
natural wines that they themselves like to drink in their favourite
bars, restaurants and at home. These are wines from places close
to their hearts; around Nantes, Angers and Saumur in the west of
the Loire valley. The growers they work with operate simply,
respecting their natural environment. To Basile and Alex, the
people behind these bottles are just as important as the grapes
themselves.

EVENTS & SEMINARS
There will a series of talks given by wine growers during the two
days of the fair, details of which are given below. Places can be
reserved on arrival at the fair, at the main event reception.
Sunday 17th April
1.00 pm – Q & A with Alice Feiring - Author, journalist and
natural wine expert Alice Feiring will be interviewed by
Christina Pickard on a variety of subjects including her new
Georgian book, wine judging and the emergence of an
alternative wine culture.
2.30 pm – “Wine Songlines” with John Wurdeman – Wine &
Georgian Folk Culture. John will be talking about the greater
cultural significance of wine in Georgia, how it has its own
particular meaning and powerful symbolism, and why is it
celebrated with toasts and polyphony
4.00 pm -“The Strange Appeal of Natural Wine” with Jamie
Goode. Jamie will be giving a wide-ranging and fascinating
talk about wine appreciation in terms of aesthetics as well as
discussing the “interpretative” role of the vigneron in the
winemaking process.
Monday 18st April
12.00 pm – “Understanding, Enjoying and Using Pure Sake”
Richard Stevens & Honami Matsumoto will be giving their
definition of pure sake, highlighting the various styles of sake,
as well as how best to appreciate it and serve it.
2.00 pm – The New Artisans – US Wine Masterclass
Five growers talk about the history and wine culture of their
respective regions, and what motivates to make the wines in
the way they do.
3.30 pm – “The Jura Is In” – with Wink Lorch. Beloved of
sommeliers & independent wine shops the artisan wines of
Jura have been making a huge splash in the last few years.
Wink Lorch will be exploring the reasons why with the help of
some Jura vignerons.

Owned by the Zampaglione clan Tenuta Grillo estate spreads over 32
hectares of which 17 are dedicated to the vineyard. The production is
based on low yields, scrupulous selection of the grapes and respect for

The Trinchero cousins make one of the longest-lived and most profound
examples of Barbera to be found in all of Italy. They believe that the
underrated Barbera grape is a variety capable of producing wines of
profound complexity and serious longevity, if cultivated from old vines in
top sites and vinified to allow graceful evolution in bottle. With this in mind,
the Trincheros farm all of their vines organically and are extremely
meticulous with their viticulture. Ezio Trinchero is a close friend of Giampiero
Bea of Paolo Bea in Montefalco and the wines of both estates share a
similar style and rustic soulfulness.

The Artesana hills are lean and mean hills but wonderfully suitable for the
production of quality wines. According to ancient chronicles “the greatest
fruit of these lands is its wine, dainty and perfect.” In 1758 forefather
Giovanni Battista Bera acquired some vineyards in Canelli that belonged
to the sovereign of Malta, who then transferred them into a family run
estate. Since then they have continued to cultivate that same estate and
to vinify the same grapes that have always been grown. This sense of
continuity has led to the choice of becoming organic in 1964 and has
become their true philosophy in life. Nowadays, the ten hectares of land
are worked on by Vittorio Bera and family at the heart of the classic
Moscato d’Asti producing area. The vines are cultivated with the most
stringent organic methods and are certified by ICEA. The “naturalness”
that is adopted in the vineyard is then pursued in the wine cellar as well.
Wines are vinified according to traditional methods and any modern
“interventionist” ideas such as the use of selected yeasts, enzymes, and
various chemical treatments are rejected.

At the gates of Castiglione Falletto village, in the centre of the Barolo area,
on Bricco Boschis hill, Tenuta Cavallotto is situated. Covering 25 hectares
the Cavallotto Estate has been in the family for several generations and in
1928 became the first in the area to produce and trade wines exclusively
from the grapes of its own vineyards. Since 1974 it has been the constant
aim for the family to keep the oenological and agronomic techniques and
methodologies natural and to keep to the traditional ways to vinificate
and to age their classic Barolo.

Located on the southern fringe of the Barolo zone, the Principiano estate
benefits from the biodiversity of the Alta Langhe; the wilderness that lies
beyond the dense planting of the Nebbiolo vineyards which helps
maintain a biodiverse balance in the vineyard. Ferdinando firmly believes
that wines from the Langhe should be a reflection of the place they come
from, rather than taking on an international style and his wine making uses
traditional methods such as no use of chemicals in the vineyards or the
cellar.

The Cantina Viticoltori del Monferrato is a small cooperative founded in
1998 with a clear aim: combining their individual experiences in viticulture,
selecting grapes, managing the land and winemaking to produce
Barbera del Monferrato of the very highest quality. The vineyards are
situated in the south of the Lower Monferrato, around the villages of
Cerrina Monferrato, Odalengo, Sala Monferrato and Quarti di Pontestura.
Instead of the comfort of having a single area of vineyards around the
cellar they prefer to have a variety of unique terroirs and to value the old
Barbera vineyards in the region.

In addition to grape growing, the estate has a diversified production of
fruits, vegetables and cereals, and keep a variety of farm animals. This
biodiversity is an essential factor in biodynamic farming, which treats farms
as self-contained, self-sufficient entities requiring little or no inputs from the
outside. Stefano Bellotti began as an eighteen year old in 1977, reclaiming
the family farm where there was less than 1 hectare of vineyard in existing
use. He began working organically from the beginning, and introduced
biodynamic methods in 1984. The wines of Degli Ulivi are pure and natural,
made without manipulations. Their belief is that the art of winemaking is to
accompany the wine through its natural transformation process

The vineyards of Castelcerino are the highest in the Soave area reaching
up to 400 metres above sea level. It is in this area that Filippo Filippi grows
old Garganega and Trebbiano di Soave vines, almost all of which were
planted in the 1950s. The 16ha of vineyards are subdivided into three
different Soave crus: Castelcerino, Monteseroni and Vigne della Brà, each
characterised by very different soils which affect the minerality of the
wines. Organic farming is practised, respecting the natural cycles of the
vines and the sustainability of the environment and vinification is
undertaken with respect for the natural time each wine takes to mature.

Casa Coste Piane is a small estate in Santo Stefano in the heart of the
Valdobbiadene area. For generations their wine had been sold in bulk but
since 1983 they decided to bottle the production themselves.
The vineyards lie on slopes close to the cellar. The vines are on average 60
years old (some are pre-phylloxera!!) and their roots can grow up to 30-40
metres long. This Prosecco is a gem, it is one of the few made in the
ancestral method wherein the second fermentation takes place in the
bottle. In April the wine is bottled without the addition of yeast and sugar,
subsequently the indigenous yeast contained in the wine starts a second
spontaneous fermentation that lasts for approximately four weeks. After
this the wine spends a further four weeks sur lie. The process of
“disgorgement” is not practised, therefore the yeasts are still present in the
bottle… any haziness is entirely natural.

Casa Belfi features Glera grown in the vineyards of San Polo di Piave. The
estate works organically with natural manures and green fertilisers to
achieve the healthiest possible grapes. They use biodynamic practices as
well and are now in full conversion. Vinification is also natural with the
grapes crushed gently, and the must clarified by cold decantation. The
juice is then fermented in stainless steel tanks with indigenous yeasts at a
cool temperature. After fermentation, the wine remains in contact with the
lees in tanks for approximately six months. When spring arrives the
Prosecco is bottled according the Maria Thun biodynamic calendar, after
which, the wine completes its secondary fermentation as the residual
sugars are transformed by the yeasts into alcohol and carbon dioxide.
There is no added sulphur or filtering or fining, of course.

When Alessandra and Carlo Venturini first discovered Monte dall’Ora it was
love at first sight. As children of farmers, they were excited and challenged
by the hard work it was going to take to restore these ancient vineyards.
Located in Castellroto, in the hills outside of Verona, the vineyards of Monte
dall’Ora are planted on a base of limestone soil and form a natural
amphitheatre facing southeast towards the city. In fact, portions of their
vineyards are planted on ancient dry stone terraces called marogna.
The Venturinis are firm adherents to biodynamic principles. As such, they
encourage the growth of biodiversity by planting herbs such as rosemary
and lavender in the summer, whose fragrant blooms are attractive to bees;
and sowing cereals in the winter, whose roots move and aerate the soil.

Angiolino Maule’s estate in the hamlet of Biancara covers about 9ha. For
over 16 years he has ploughed his vines and eschewed any soil
treatments. Using biodynamic viticultural practices he has created an
organic, living soil and ecosystem befitting the health of the vines and their
resistance to sicknesses. Vinification, ageing and bottling must be
consistent with the work in the vines and involve no additives that
compromise the natural fruit material. Vinifications are conducted without
temperature control, the addition of sulphur, enzymes and yeast and
without fining or filtration.

Azienda Dario Princic is located in Oslavia in Friuli-Venezia Giulia, very
close to the Slovenian border. Princic has farmed his 7ha of vines
organically without any chemical products since 1988. Vines are fertilised
with manure and sulfur and copper treatment in the vineyards. They never
buy fruit and use the grapes exclusively from their land. Yields are
extremely low. Vines grow on local ‘ponca’ soil (friable calcium/limestone
marl) mixed with clay. The grapes see variable lengths of maceration on
the skins in large open-top oak and chestnut fermenters, and the wines
are aged for 18-24 months in botti, tonneaux, and used barriques. No
fining, no filtering and the minimum of sulphur.

The Azienda Zidarich is located in Prepotto, near Duino Aurisina, which is a
small and characteristic village of the Carso area. The landscape is
extremely varied and stimulating. The vegetation of the environment is
very different and enhances the peculiarity of this territory dedicated to
viticulture. Jagged chalky rock is the keynote of Carso viticulture, which is
carried out on small terraces of red, iron-rich soil that have been reclaimed
from the woodland. This lends the wines the characteristic acidity and
mineral notes. Everything is done by hand in the vineyard; no chemicals
are used and vinification is traditional and with indigenous yeasts.

great amount of research with this variety; he believes high density

settled upon this for the primary percentage of his production. His
vineyards are organically farmed and he uses no chemicals. While this
makes his work more difficult, Vodopivec believes this is the proper way to
produce the most distinctive version of Vitovska.

Montenidoli’s vineyards are organically grown. For fifty years no herbicides,
insecticides or any other chemicals have been used. This is a microclimate
brimming with life. The vineyards are aglow with fireflies by night and
dancing with ladybugs by day. “We began to break up the clods of earth
and make humus, raising earthworms and also rabbits, for their precious
manure. Now, we leave the hoeing to the roots of plants we sow in the
vineyards, and till under each spring”. Sulfur and copper are the only
substances used to treat infection and only if absolutely necessary,
because sunlight and clean air are perceived to be the best medicine to
make the vines healthy, strong, and resistant to disease and bad weather.

La Stoppa is an ancient estate with its vines climbing along the slopes of the
Val Trebbiola, not far from the River Trebbia, in the province of Piacenza.
The estate covers 58 hectares, 28 of which is woodland – oak, chestnut and
locust-tree and 30 of which are vineyards, all merged together and
dominated by a medieval tower. More than a hundred years ago, the
previous owner, lawyer Ageno, planted French vines and produced wines
from meaningful names which were a little peculiar because they were
Italianised: Bordò, Bordò bianco e Pinò. In 1973, La Stoppa was purchased
by the Pantaleoni family, who recently modernised and transformed the
cellar. Today the estate is run by Elena Pantaleoni, who along with Julius
Armani wanted major investments to be devoted to the vineyard, worked
on organically and certified by ‘Suolo e Salute’. The low yields and the
fundamental quality of the grapes mean that the wines are characterised
by the vineyard and not betrayed by excessive work in the cellar.

In 1435, the Maestranza de I Vigneri (Vine Grower Guild) was founded in
Catania. The aim of the guild was to create a professional status for Etna’s
vignerons and grape growers. Over 500 years later, Maestranza de I
Vigneri works towards the recovery of Etna’s time-honoured viticultural
techniques and expertise, many of which has been impeded by current
vineyard policies. For nearly fifteen years they have planted, reconstituted

Living at the foot of the Iblea hills in the centre of Fossa di Lupo in Vittoria.
Arianna Occhipinti’s biggest challenge is to understand what the terroirs’
needs without disturbing or modifying it, so that she is able to make the most
from it. She believes this unique balance is represented in the rigour and
harmony of the Nero d’Avola and in the freshness and elegance of the
Frappato. The organically grown estate is spread over 10 hecatres of Nero
d’Avola and Frappato vines and 1 hectare of Albanello and Muscato, two
white varietals native to Sicily. Arianna Occhipinti believes it to be essential in
Sicily to work with the particular climate – hot sunshine during the day and
coolness at night, the red sands, the low yields per hectare, natural
agriculture and careful attention in the cellars. To give is to receive;
according to these winemakers this means maintaining what they have
received, in terms of land and biodiversity. The wines must be the fruit of the
terroirs represented by the land’s characteristics and its own history.

important thing for them is that the natural wine processes are not

Since 2003 Christine and Franz Strohmeier have been working with great
determination to produce completely natural wines without any additives

The Muster wine estate lies in the southern Austrian province of Styria. The
estates history can be documented back to 1727 and is currently looked
after by Sepp and Maria Muster. The steep sloping stony vineyards
consisting of clay and silt sediment, called “Opok” in Southern Styria
predominate and are cultivated biodynamically to achieve the highest
level of vitality in the soil, the vine and the resulting wines. In the cellar
wines are sensitively nurtured and given the possibility to mature and

Jacques’ grandfather bought the domaine 50 kms southeast of Bordeaux
at the Garonne side of Entre-Deux-Mers in 1935. Surrounding the twocenturies-old residence and cellar, lies the south facing vineyard of 4.3
hectares of well drained sandy-clay soil. The vines, aged from 25 to over 70
+ years represent the three classic Bordeaux grape varieties – Cabernet
Sauvignon, Cabernet Franc and Merlot as well as the rarer Cot, or Malbec.
In 2006, Jacques gave up classical viticulture and vinification with
chemical products and fertilizers and reformed the whole domaine to
biodynamics.

Château du Cèdre has been run by the Verhaeghe brothers – Pascal and
Jean-Marc for fifteen years. The vineyards have been tended in
accordance with an organic approach since 2000 and the estate was
certified organic in 2012. The Malbec grape makes unique wines. Thriving
on the great Chateau du Cèdre terroir and pampered by the meticulous
approach of the Verhaeghe brothers, long ageing periods in oak barrels
and 57HL casks, it gives birth to wines with floral (violet) and black fruit
aromas, wines that are dense, long and particularly elegant. The
vineyards’ 3 parcels are made up of the 2 best types of soil in the Cahors
appellation: the larger one (13 hectares) is situated on colluvial limestone
soils which produce straightforward wines with fine tannins, particularly
long on the palate. Both other parcels (6 & 8 hectares) have pebbles
mixed with ferruginous sand on the surface and siliceous earth and clay
beneath. The wines they produce are rich and powerful.

In 1991, Marc Penavayre took over and expanded the family vineyard
that had been growing wines for generations, following in the footsteps of
his father Louis. Like many others, the domain initially employed modern
viticulture and vinification methods, but in the early 2000s Marc turned to a
more environmentally friendly way of making wines. His recipe is simple:
the vines are worked in harmony with the terroir, eschewing fertilisers or
weedkillers in favour of natural products. Grapes are harvested ripe and
healthy, then hand-sorted before vinification, which is geared to
expressing the essence of grape and soil, using only native wild yeasts.
Château Plaisance wines are neither fined nor filtered. They are fine
ambassadors for the Négrette variety, which has captivated drinkers with
its incomparable and original flavours for nearly 2,000 years. Today, more

Pierre Jequier was seduced by the wild, majestic landscape of the Pic St
Loup, a high limestone peak which provides the backdrop to an

Mediterranean garrigue and are exposed to the cool climate of the
Cevennes foothills creating wines which can be cellared for a surprisingly
long time. Mas Foulaquier is made up of two distinct terroirs: Foulaquier
and les Tonillières, Foulaquiers is planted mainly to Syrah and Grenache
with 2 ha of white varieties whilst les Tonillières consists of old Carignan and
Grenache vines with some younger Syrah plants. Production is organic
and biodynamic; vines are ploughed and harvest is manual. The wines are

The estate was found in 1968 by François Klein, and is now run by his son
Rémy and grandson Olivier. The aim of the estate has always been to
reflect the different terroirs existing on the land they own using local

predominantly south east. This altitude and the fact the exposed vineyards
are subject to the Mistral helps to keep the wines fresh, giving them a lift

Rhône valley the terraced vineyards of Ferme Saint-Martin lie in a
privileged south facing position between 200-600m high. The Jullien
family began making wine here in 1964 and since 1998 the vines have
been cultivated organically. Work in the vineyard is focused on
producing healthy grapes whilst maintaining the life in the soil and
balancing the nature around them. Each plot of land is harvested by
hand and the grapes ferment with their natural yeasts. No additional
chemicals are used in the vinification process allowing the wine to
express its true character, a real reflection of its terroir.

While many of France’s co-ops go out of business or struggle to sell
uninteresting plonk, the cave co-operative in Estezargues has an artisanal
approach to winemaking and is making some of the best value wines in
the Rhône Valley. Things began to change in 1989 when Jean-François
Nicq arrived to take over as winemaker. Rather than blend everything
together, J-F decided to bottle the member estate's production
separately, highlighting the individual terroir of the 10 domaines. By the
end of the 1990s, everything was being made in a hands-off, natural way conscientious farming, no yeasts, no enzymes, no new oak and no sulphur
before bottling. The results were fantastic and following Nicq’s departure
to set up his own domaine (Les Foulards Rouge), his assistant Edouard
Laffitte took over. When Edouard left to set up his own domaine (Bout du
Monde) he was replaced by Denis Deschamps who has since overseen
the continual improvement at this most innovative of co-ops.

Domaine Lapierre’s vines have been cultivated organically since 1981 and
are spread over 13ha in the Ville-Morgon area of Beaujolais. Work in the
vineyards respects ancient methods to reveal the unique terroir of the
area; chemical fertilisers and synthetic products are eschewed in favour of
compost, ploughing the vines and non-aggressive treatments to preserve
the natural yeast living on the skins of the grapes. In the cellar
fermentation occurs spontaneously due to the presence of these natural
yeasts and without the addition of sulphur. The wines are bottled unfiltered
and with a small addition of sulphur to stabilise the wine.

The Cambon estate was planted originally in 1914 in three parcels in an

Rémi and his wife Laurence started purchasing their first hectares of
vineyards around Brouilly as early as 2006. Right from the start, Rémi would
work the soils according to organic principles and sold his grapes to the
local cooperative. At that time, he already resorted to ambient yeasts to
start the fermentation process. In 2010, considering his wine was close
enough to what he thought was a good wine, he decided to make and
bottle his own wines. Thanks to Jean-Claude Lapalu, Jean Foillard and
their likes who took him under their wing, Rémi Dufaitre was allowed into
the Beaujolais Gang network. Rémi vinifies the traditional Beaujolais style
using carbonic maceration. Maturation varies according to the cuvees.
Before bottling and according to the vintage, Rémi adds no or only
minimal doses of SO2 never exceeding 2mg per litre in order to stabilize
the wines.

Domaine des Vignes du Maynes comprises about 6.5 hectares. Facing
due east, the vines benefit from the rising sun. They grow on a terroir of a
clay and limestone mixture. Avoidance of weedkiller and modest yields
characterise these authentic wines produced from Pinot Noir, Gamay and
Chardonnay. From the time the grapes are picked by hand to the time
the wines are bottled neither additives nor SO2 are used. The pressing
operation is slow, carried out on wooden wine presses dating from 1895.
Fermentation takes the form of carbonic maceration over a period of ten
days (Jules-Chauvet method). All wines, regardless of creed or colour, are
left on the lees in oak barrels for eleven months producing wines full of
character.

Former jazz and blues pianist Nicolas Reau one day decided to tickle the
vines rather than the ivories. He studied winemaking and viticulture at
Montreuil and supplemented these studies with time spent in Bordeaux.

grapes are fermented in old barrels and aged for a further year without
racking. The grapes for the Anjou Rouge Pompois are de-stemmed before
fermentation which takes place in cement tanks, followed by maturation
in oak barrels. No filtering, no fining, no sulphuring and twelve months in
used oak barrels (used for two to five wines). A lovely rumpus-pumpus red
with prominent black fruits on the nose and palate and, typical of the
vintage, easy on the gums.

Agnès and René Mosse live and work in the village of Saint-Lambert-duLattay, in the Coteaux-du-Layon area of Anjou. The Layon is a small tributary
to the Loire that lazily digs its way through well exposed and drained hills of
schist and sandstone. Its micro-climate allows for a long hang-time, and
when the mornings are foggy in the fall, with no rain, botrytis develops easily
on the Chenin grapes. They adopted organic viticulture techniques from the
start, ploughing between and under the rows, and use biodynamic
preparations to treat the vines and soil. In their area of Anjou Noir (Black
Anjou, so called because of the dark colour of the soils of slate and volcanic
rocks), the soils are shallow, with subsoils of schist and sandstone, and
varying amounts of clay on the surface. With all the efforts put into vineyard
work, it is equally important to them to vinify in a natural fashion, and they
are particularly attentive to minimizing manipulations and the use of sulphur.
All the wines are barrel-fermented and aged, and usually the whites go
through malolactic fermentation. The barrels are renewed as needed.

The Breton philosophy stems, in their own words, from a love of the land.
The vineyards see ultra-intense organic care; no chemicals are used, yields
are restricted and harvest is by hand. Once the grapes have arrived at the
cellars they are fermented according to terroir, with those from gravelly
soils going into stainless steel, whereas those from clay-limestone vineyards
are fermented in old oak vats. Indigenous yeasts are used and their desire

Normandy. Believing that cider and poire should be produced like wine, he

For more than four generations, the most important thing for the Mitjans
family, located in Vilobi del Penedès 50 kms west of Barcelona and some
600 metres above sea level, has been the care of their vineyards with the
aim of achieving the best quality for their wines and sparkling wines. The
name Loxarel is an inversion of the variety they seek, perfect Xarel-lo. The
actual estate is called Masia Can Mayol. Now a new ethos has crept into
the process, one that works on biodynamic lines and incorporates as
much nature as possible in the winemaking process, down to using goats
to de-leaf the vines. The estate has a strong line in Cava production,
producing one cuvée that is laid sur latte for 10 years. It is not even
disgorged, which makes for a fascinating wine, and one which everyone
should taste if possible.

Recaredo is currently managed by Josep and Antoni Mata Casanovas,
the sons of its founder who seek to ensure the natural balance of the vine,
aiming to achieve the best expression of every individual vintage.
Viticulture is based on dry farming with grapes harvested by hand. They
prioritise respect for biodiversity and the environment: cultivating vines
without using herbicides or insecticides and only employing natural
organic fertilisers. The sparkling wines stand comparison with any in the
world – all are gran reserva with the traditional fermentation in bottle and
aged on the lees for years (and years and years) before hand
disgorgement without dosage.

Celler Credo is the Recaredo’s family still white wine project primarily
based on the Mediterranean variety Xarel·lo. Aged on the lees and
macerated with the grape skin or stems, the wines are made using
techniques learnt from past generations. One of the core values is a
commitment to share the essence of their origins in Alt Penedès, of the
small, distinct vineyards, 8 hectares which are worked in a biodynamic
way. For them, biodynamic agriculture is simply a way to align land,
climate and people to reveal their deeper nature.

Celler Batlliu de Sort produces quality wines in the mountains in Sort, Pallars
Sobirà – Pyrenees. The winery is located in gently rolling meadows,
surrounded by forests of oak and maple trees, at the foot of the Parc
Nacional d’Aigüestortes Sant Maurici and the Parc Natural de l’Alt Pirineu,
and has a bird’s eye view of Sort and the Noguera Pallaresa river which
crosses the valley from north to south. The vines are planted at an altitude
of 800 m. – 1000 m. and are surrounded by mountains that reach 2900 m.
high. The grape varieties are mainly Pinot Noir, Riesling and Viognier, but
there are also some small experimental plantations of other grapes.
They work with complete respect for the environment, using only
those products allowed in organic farming, but the wines, as a matter
of philosophy, are not certificated. The harvest is done manually and
the fermentation and aging of wines take place in stainless steel
tanks with the minimum intervention and with (or occasionally
without) extremely low levels of sulphur, to enable them to produce
wines that represent the most of the area where they are conceived.

Partida Creus is a small traditional winery located in Bonastre in the Baix
Penedès region and is run by Antonella Gerosa and Massimo Marchiori;
two Italian architects who moved to the region in 2007 in search of a
slower lifestyle. Wines are made from ancient grape varieties typical of the
area, most of them from abandoned vineyards they have found. Vines are
farmed organically and the wines are made naturally, fermented with their
own indigenous yeasts, nothing added and neither fined nor filtered,
allowing the wines to express the terroirs with real varietal typicity.

merchant, with each of the 8 floors providing a resting place for barrels,

are among the highest in altitude, and Carlos and his brother take each

Rodrigo’s vineyards are just a stone’s throw from the ocean. The soil in his
vineyards is granitic sand, covered with a layer of humus, over granite
bedrock. It is very poor, fast draining soil that vines struggle in and phylloxera
cannot live in, hence many of the vineyards are deceptively old, up to 200
years! Even his joven Albariño comes from vines with an average age of 40
years. Rodrigo is perhaps best known in Spanish wine circles for his stellar
reds produced from the indigenous Galician varietals Caiño, Espadeiro and
Loureiro, however his whites are also outstanding. They are fermented with
natural yeasts and then matured on lees for months to give complex, fullbodied wines with a fresh acid backbone and a briny tang on the finish.

Nacho Gonzalez is a biologist with some knowledge of microbiology and
soil science. He has used this knowledge to aid the soil recovery of the 3ha
of vines he works to produce La Perdida wines. Originally the soil had been
subjected to herbicides, chemical fertilisers and other products, Nacho
has used straw mulch, green manure and organic compost to enable to
ground to once again become a living element and not a single substrate
with no identity. All the vines are over 35 years of age and in some plots
this may even be double that figure. In the winery the rule is that only
grapes are used; there are no commercial yeasts, temperature control
during fermentation, filtration or clarification and no sulphur is added.
Ultimately it is nature that decides what is to happen, so far the results
have always been positive.

The Guimaro family own 9 ha and lease a further 14ha in the
Amandi area of the Ribeira Sacra region. Prior to the
establishment of the adega in 1991 Pedro’s family produced
small quantities of wine for their own consumption and sold
their wine in garrafones (20L glass containers) to local
cantinas. Luis Buitrón, an oenologist from León was
instrumental in the creation of the Riberia Sacra D.O and
helped the Rodriguez family begin estate–bottling their wines.
Guimaro was one of the first adegas to join the appellation in
1996. The vineyards are farmed organically and vinification
uses wild yeast fermentations, foot-treading and low sulphur
usage, in general handling of the grapes and production is
deliberately and meaningfully ‘old-fashioned’.

Aphros winery is the brainchild of Lisbon architect Vasco Croft who
decided to explore his passion for wine in the Vinho Verde Region.
Interested in Steiner’s philosophy since childhood he follows the path of
biodynamics; introducing mountain horses, sheep, bees and special water
cascades as part of the farm life and treating the vines with plant extracts.
The wines are based on local varieties Loureiro and Vinhão and have
achieved worldwide recognition. In 2015 Vasco opened two new cellars;
one contemporary cellar dedicated to the classical range of wines and a
medieval cellar for the production of artisanal wines in amphorae without
the use of electricity.

Situated in the Chardakhi village in the Mtskheta Region Iago’s vineyard is
over 50 years old. The 2ha of vines are farmed organically and planted
with Chinuri, a traditional Georgian species. Grapes are harvested when
not only the grapes are ripe, but the stems are ripe as well, and both are
put in the qvevri’s without pressing. This approach allows Iago to make
wine without filtration or sulphur as the stems naturally filter the wine as
they settle. All wines are produced in qvevri, some of which are over 300
years old. Currently Iago produces around 5000 bottles of Iago’s Wine.

Giorgi’s vineyard is situated in the Ateni Valley, 750m above sea level. The

Iberieli is a family winery run by Zurab Topuridze with 10 ha of vineyards in
the Guria Region of West Georgia and 5 ha in the Kakheti Region of East
Georgia. The name Iberieli – which was chosen by Zurab’s children – refers
to the ancient people in Caucasus who made wine over several
thousands of years ago, these people later became Georgians and are
believed to be the inventers of Qvevri winemaking. The family’s aim is to
reinstate and maintain the authentic tradition of Qvevri making in
Georgia, producing unique wines from native grapes and to set standards
and true examples for their counterparts and friends.

De Martino winery was founded in 1934 by Pietro De Martino, who arrived
in Chile from Italy in search of a place to satisfy his passion for winemaking.

The Villalobos family estate is located close to the village of Ranguili and is
entitled to Colchagua Valley appellation of origin. Colchagua is a region
close to the coast, recognized for its dry summer days and refreshing cool
nights. The vineyard is essentially Carignan as far as anyone can ascertain,
and was originally planted during the 1940’s and 50’s. Villalobos vines
have never been treated; indeed, the vines have always grown wild and
free from any chemical processes for sixty years amongst native Chilean
flora such as maitenes, rosehip, Culenes, pine trees, blackberry bushes etc.
Given this context the winegrowers wish to distance themselves from the
traditional industrial monoculture. Their main goal is to produce wines
which reflect the seasonal conditions and qualities of the terroir, taking
advantage of the organic and wild characteristic of the aged vines. This
unique terroir allows them to harvest grapes which give the wine an
aroma that is perfectly harmonized with the Chilean countryside.

vines are up to 150 years old and are a combination of Carignan, Malbec

ageing in neutral vessels, allowing them to preserve the heritage of

Viña Tipaume is a natural vineyard and winery run as a family venture
since 1996 when the Pouzet-Grez family purchased 16 acres in the small
village of Cerrillos, near Rancagua in Chile. The vineyard is situated in the
Alto Cachapoal region at the foot of the Cordillera de los Andes at
around 400 metres above sea level and has a very cool climate allowing a
long period of maturation in the autumn. The vineyard is cultivated with
organic and biodynamic principles achieving biodynamic certification in
2011. Six varietals are grown; Carmenere, Cabernet Sauvignon, Merlot,
Malbec, Lacrima Cristi and Viognier which are co-fermented in the
underground winery partly in barrels and also in small clay amphoras. The

any other brutal manipulation.

of the old vines found in the hills of Itata, Chile. A lot of time is spent

Established in 2009 Sacred Microdistillery is located in a residential
back street in Highgate. It is unusual in that it distils its spirits under a
vacuum in glassware, and thus at a lower temperature than
traditional pot stills, which operate at atmospheric pressure.
Launched by Ian Hart and Hilary Whitney initially as a pure Gin
distillery, Sacred has now branched out into flavoured vodkas,
produced using the same process. The gin is 40% ABV and uses 12
botanicals including juniper, angelica root, fresh orange peel, fresh
lemon peel and fresh lime peel, cardamom and frankincense,
whilst the vodka is a wholly redistilled flavoured vodka using 7
botanicals including cubeb, angelica root, nutmeg and
frankincense. Sacred Gin came first in its category in the
Ginmasters 2009 competition, a blind tasting competition
organised by The Spirits Business magazine.
