Peak of Summer: Enjoying Seasonal Produce Aaron Barnes, Corporate Chef August is the time of year to enjoy the wonderful colors, textures and flavors of seasonal produce. Tomatoes are at the peak of ripeness while melons are soaking in the sun. Zucchini and summer squash just appear overnight along with the beautiful deep purple eggplant. To complement all of these wonderful summer gifts are herbs. Herbs lend so much to a plate and are pleasant to smell and eat. They add color, flavor, texture and are a wonderful edible garnish. Maplevale Farms has a great fresh produce program, assuring freshness and quality as we take pride in handling our produce. Upon arrival in our HACCP controlled loading docks after being received they are held in temperature controlled produce coolers. We have four different coolers for proper storage so the produce will be held at the right temperature and will have a longer shelf life once received by our customers. As you receive fresh produce, please treat it like a fragile egg, do not drop the cases, kick or leave out in your kitchen for long periods of time. This will deteriorate the quality and cut the shelf life in half. When using fresh herbs you need to keep in mind the endless uses for them. You can use them for a garnish on plates, displays, soups and salads. They lend a great deal of flavor to food and will also bring out flavor that you may not have tasted before. Basil, mint, tarragon, cilantro, oregano and parsley are leafy herbs and are more delicate than others. Store them in loosely wrapped paper towels in boxes or storage containers, this will assure air circulation and keep them from getting crushed or bruised. When cutting leafy herbs, be careful not to pinch them too hard and use the sharpest knife you have. If you use a dull knife they will bruise and oxidize causing them to turn black. Another proper method is gently tearing them along the natural seems. Use herbs promptly so they do not become discolored. Rosemary, lavender and thyme are wonderful herbs to use fresh or to dry. They pair well with most foods and are wonderful in soups, salads and as a garnish. Tomatoes are at their peak in color, flavor and aroma this time of year. There are many different types of tomatoes out there that range in color, size and flavor. Choose the one for you and your cooking style. When they are seasonal and readily available I like to use them across my menu in salsa, hot or cold soups, salads, entrees and desserts. Let’s start from the beginning, Herb Cream Cheese Stuffed Roma Tomatoes, Basil Tuna Salad Stuffed Tomato or a nice chilled Gazpacho served with blackened shrimp. Matching up a fresh sliced tomato, mozzarella, basil, olive oil, balsamic reduction served with a garlic grilled toast is out of this world. As far as the dessert, deep fried green tomatoes tossed with cinnamon and sugar to garnish vanilla ice cream is good. Another one I have served is an apple and green tomato cobbler served with ice cream. Both unique but full of flavor and a way to use unripe tomatoes. Zucchini & summer squash are very plentiful and taste so good this time of year. grilling, roasting, sauteing, baking and marinating are among some of my favorite ways to cook them. Stuffed zucchini is a great way to create a meal all in one. It is very simple to make, just cut length wise, hollow out the seeds and use your favorite stuffing ingredients; crab, sausage, rice, orzo or buffalo chicken stuffing are just a few options. Once stuffed add a little water to bottom of pan and bake until tender. A trick to this is to use a cooked stuffing, have the sausage, chicken, crab already cooked. Also the sauce used to top the baked zucchini can be Alfredo, marinara or any of your favorite sauces. Another summer time favorite is to marinate zucchini and summer squash with garlic, herbs, lemon and olive oil. After marinating for an hour remove from marinade and place on char grill. Be careful for the oil not to flame up, this will give you an unwanted flavor and ugly smoke mark instead of beautiful grill marks. After grilling you can serve hot or chill down and use for a chilled pasta salad or on a vegetable tray with dip. Eggplant is another one of those vegetables that you can utilize all over the menu. You can peel them and make into lasagna, slice and bread to create egg plant fries, or slice thin and use as eggplant roll-ups. I love to slice them, bread and fry until golden brown, serve with sauce as parmesan over pasta or as a sandwich. Another wonderful dish is to peel and dice, saute with garlic, tomatoes, peppers and onions tossed with white balsamic vinegar and olive oil. This can be served as a hot side dish or chill and serve as a salad. Top with your favorite crumbled cheese on a bed of lettuce. I have mentioned peel the eggplant a few times now, this is a personal preference. I personally don’t like to chew on the peel, some people do, so this is up to you and your customers. Melons are in a category of fruit that umbrella a large number of different varieties with a wide range of shapes, sizes and flavors. Watermelon, cantaloupe and honeydew are the most common. Simply eat them as is or create fruit kabobs for a fun way to eat them. You can create many different dishes out of melons such as soup, salads, salsa and frozen desserts. You can peel the fruit, place in a food processor and pulse until you reach the desired consistency you want. I like to add yogurt to mine to create a smooth texture with better body. Adding honey will also add to the sweetness and body. You can highlight the fruit with spices or herbs. Fresh mint makes a great garnish. Enjoy the Summertime Harvest while it is in season! Tomatoes are at the peak of ripeness while melons are soaking in the sun. Zucchini and summer squash just appear overnight along with the beautiful deep purple eggplant. To complement all of these wonderful summer gifts are herbs. Herbs lend so much to a plate and are pleasant to smell and eat. They add color, flavor, texture and are a wonderful edible garnish. Maplevale Farms has a great fresh produce program, assuring freshness and quality as we take pride in handling our produce. Upon arrival in our HACCP controlled loading docks after being received they are held in temperature controlled produce coolers. We have four different coolers for proper storage so the produce will be held at the right temperature and will have a longer shelf life once received by our customers. As you receive fresh produce, please treat it like a fragile egg, do not drop the cases, kick or leave out in your kitchen for long periods of time. This will deteriorate the quality and cut the shelf life in half. When using fresh herbs you need to keep in mind the endless uses for them. Once stuffed add a little water to bottom of pan and bake until tender. A trick to this is to use a cooked stuffing, have the sausage, chicken, crab already cooked. Also the sauce used to top the baked zucchini can be Alfredo, marinara or any of your favorite sauces. Another summer time favorite is to marinate zucchini and summer squash with garlic, herbs, lemon and olive oil. After marinating for an hour remove from marinade and place on char grill. Be careful for the oil not to flame up, this will give you an unwanted flavor and ugly smoke mark instead of beautiful grill marks. After grilling you can serve hot or chill down and use for a chilled pasta salad or on a vegetable tray with dip. Eggplant is another one of those vegetables that you can utilize all over the menu. You can peel them and make into lasagna, slice and bread to create egg plant fries, or slice thin and use as eggplant roll-ups. I love to slice them, bread and fry until golden brown, serve with sauce as parmesan over pasta or as a sandwich. Another wonderful dish is to peel and dice, saute with garlic, tomatoes, peppers and onions tossed with white balsamic vinegar and olive oil. This can be served as a hot side dish or chill and serve as a salad. Top with your favorite crumbled cheese on a bed of lettuce.
