WHAT’S COOKING 2016 / Issue 9 s r a e Y 35 of Ser y r t s u d n ving the I FEATURE 35 Years of Serving the Industry RAS turned 35 in 2015! We began humbly in 1980 with only about 20 members, mainly businesses running Chinese restaurants. As with any new associations, attracting members were tough as many were wary of competitors and skeptical about the benefits of joining an F&B association. With the effort of the committee members, the activities, programmes and initiatives implemented brought about benefits to many restauranteurs. Soon many more came forward to be a part of the association. By our third anniversary in 1983, membership increased by three-folds to almost 60 and The Restaurant Association of Singapore Training Centre (RASTC) was formally established in December that year. From then on, many milestones were achieved under the helm of various Presidents and strong relationships were formed with not only local government agencies and private organisations, but also international counterparts and associations. Today, as Singapore evolved into one of the most vibrant dining destinations and food capitals of the world, we are proud to have more than 300 members who comprise a good mix of various cuisines and other business models such as caterers, fast foods and food courts, representing one-third of the local F&B industry. We are thankful that more and more in the industry see the value of joining us and coming together as one body, providing different views and opinions with the common goal to propel the industry forward. RAS will continue striving to help the industry to grow and keep up the 35 years of success that its founding members worked so hard for. FEATURE Looking back at the past year HIGHLIGHT A Night of Celebration The 10th edition of the RAS Epicurean Star Award Gala Dinner was extra special as RAS celebrates its 35th anniversary. Held at Raffles City Convention Centre on 18 November 2015, we had the privilege of having Mr Chan Chun Sing, Secretary-General of National Trades Union Congress (NTUC) as our Guest-of-Honour, who joined in the anniversary celebration on stage with the current Management Committee members and two past presidents - Mr Wong Bun Huge and Mr Wong Yeh Yuh. The joyous occasion saw a total of 21 outstanding restaurant brands being recognised, including three non-nomination restaurant awards; Best of the Best (Fine Dining / Casual Dining / Chain Restaurant), won by Waku Ghin, Nara Thai Cuisine and Eighteen Chefs respectively. The 1,100 F&B industry players who were in attendance that evening also witnessed five outstanding service staff, two outlets with the highest 5S audit scores and winners of the Star Chef Competition being honoured on stage. Forty teams from the F&B industry played against each other in this friendly tournament, each looking to claim the championship of this maiden game. During the round-robin, all eight courts at Kovan Sports Hall were filled with gusto as teams looked to emerge as the court champions to proceed to the quarter-finals. After five rounds of seven minutes games, the following teams emerged as the court champions for the round-robin: • Court 1: 1-Altitude (from Synergyinthesky) • Court 2: FC Les Amis • Court 3: Flying Salmons (from Manhattan Fish Market) • Court 4: SnapJobs United • Court 5: Chicken Up (from Redz Group) • Court 6: APB (from Asia Pacific Breweries) • Court 7: SDH Institute • Court 8: Commonwealth Capital Team 3 With only one game to determine who will be the semifinalists, the quarter-finals saw the battle continues. In the end, the semi-finalists were: With 1-Altitude and SDH Institute beating SnapJobs United and Chicken Up respectively during the semifinals, they moved on to the highlight of the tournament to vie for the ultimate championship. A fierce game between 1-Altitude and SDH Institute went on in Court 5 as each team played their best for the final seven minutes of the championship match. At about 8:30pm, the inaugural RAS Futsal Tournament saw SDH Institute emerging as its champion. Congratulations to: SDH Institute – Champion 1-Altitude – First Runner Up Chicken Up – Second Runner Up These top three teams were awarded with attractive prizes of medals, the Asian Football Confederation (AFC) tickets and Adidas soccer balls, with the Champion walking away with an additional trophy and $700 CapitaLand vouchers. A members-only event, RAS had the pleasure to host 168 members at Tim Palace Restaurant. The gathering this year was extra special as not only were guests treated to an auspicious lion dance performance and lucky draws, they also had the opportunity to savour special dishes created by Chef Pung Lu Tin featuring ingredients from our partners - barramundi from Kuhlbarra, Iberico pork from Eurasia Global Food Pte Ltd and Ton Paitan soup base from Ebara Foods Hong Kong Limited. For complete Brand Identity and Design Standards, visit www.coca-coladesignmachine.com. 9 LEARNING Designing a Service Experience For the first workshop in 2016, RAS is pleased to work with Singapore Management University Institute of Service Excellence (SMU ISE) to bring to the industry ‘Designing a service experience in a digital age”. Facilitated by Dr Macus Lee, Academic Director and Ms Neeta Lachmandas, Executive Director, both from SMU ISE, the workshop held on 23 March 2016 saw a total of 31 participants from 18 F&B companies. After a day of learning and discussion, participants walked away with more in-depth understanding of the key dimensions of customer experience, establishing critical service processes and standards to support new service models and delivery and how to apply the three steps of service design; explore, create & reflect and implementation. Delegates from China RAS is pleased to have hosted over 50 F&B delegates from China who were on a learning trip to Singapore. The group, who were here from 11 to 15 April, had the chance to visit well-known local restaurant brands such as JUMBO Seafood Restaurant and PUTIEN and also food manufacturing companies such as Foodnogstic, to learn about the operations of our local F&B businesses and exchange best practices. 10 Shortage of manpower and high turnover are chronic problems that most, if not all, in our industry face. What can companies do to create a stronger employer brand to attract talent and keep turnover to a minimum? What can be done to better engage employees and build and cultivate this culture to its best? LEARNING Engaging Your Employees, Improving Your Productivity These burning questions were explored and answered by Thomas Wai and Deon Senturk, facilitators from Talent Plus, and 27 participants from 20 F&B companies at the one-day workshop organised by RAS on 18 May. Participants spent a fruitful day learning and cross sharing about human resource best practices and how to create an engaged workforce in a volatile F&B industry. D?
