Never did we imagine we would be celebrating the grand opening of our second bakery and water station, or opening our irst café. We have much to be thankful for. We are thankful for the support of the island community. Many of our customers are familiar faces we see everyday in our bakeshops and it’s been a pleasure getting to know our customers over the years and seeing their children grow up and expand their families. New Fresh Bread Bake Shop opened its first location in the village of Dededo in 1999 serving Filipino breads and pastries. New Fresh Bread Bake Shop and accompanying stores have experienced steady growth over the last 15 years and now have expanded their services to meet the growing needs of our community. The successful growth of these businesses can be attributed to the determination and hard work of Mr. Arthur and Mrs. Zenaida Zantua. Today, the Zantua family celebrates the grand opening of a second bakery and their first coffee shop. The Zantuas worked diligently from very humble beginnings as contract workers to become business owners and provide quality products and service to every customer. Rodriguez, Jr. 5 New Fresh Bread Bakeshop Grand Opening, April 2016 A t the age of 10, Arthur Zantua got an early start in the bakery business by selling pandesal on the streets of Manila. Every morning on his way to school, Zantua would pick up a box of pandesal from a neighborhood bakeshop, divvy up the rolls and deliver them to the doors of his customers. “I’d put the bread into plastic bags and I would hang the bags on the front door or on the gate and just leave it there,” Zantua recalls. “Then, at the end of the week, I would collect payment.” a master baker and pastry chef, securing positions with high-proile clients in the Philippines, Singapore and Brunei. In 2003, Zantua accepted an offer to work for American Bakery in Guam. A year later, he met the woman who would become his wife and business partner. I thought I was just going to be a baker. I just worked and helped my parents, and that was my life. Even though I had a dream, I never imagined all of this would be possible.” Zantua also peddled sweet rice cakes and other items and earned additional money by shining shoes for Japanese tourists. “Japanese tourists would take off their shoes at the restaurant, so I would ask if anyone would like me to clean and shine their shoes while they were eating,” Zantua says. “Back then, I just did whatever I could to earn money to help support my parents.” Years later, Zantua’s father would secure a job for him at a bakery, which led to a position in the bakery’s creative department where Zantua irst honed his skill as a pasty chef. When it was time to attend college, Zantua applied for a job as a part-time baker and asked that, instead of receiving a salary, the bakery pay the cost of his school tuition. The bakery agreed to his terms. “Basically, I bargained for my education,” Zantua laughs. Zantua went on to become By 2003, Zenaida Zantua was already an established business owner in Guam. She had purchased a bakery in Yigo in 1997 and two years later relocated it to Dededo under the name New Fresh Bread Bakeshop. “I came to Guam as a contract worker,” Zenaida says. “But I had a dream of owning my own business one day. When I received my green card, I was given the chance to achieve that goal.” Over the past decade, the Zantuas grew their bakery business by baking breads and specialty items for local restaurants and hotels. Today, the Zantuas are celebrating the grand opening of their second New Fresh Bread Bakeshop and Nature’s Fresh Water Station locations, as well as the grand opening of their irst coffee shop, Café Panadero. All three businesses are housed under one roof in Yigo. The new location offers hot breakfast and lunch plates, a dining area, and a mini mart that stocks a variety of dry and frozen Filipino goods. The Yigo water station also features a drive-thru service. From their humble beginnings to becoming business owners, the Zantuas hope their story might inspire other Filipino contract workers to pursue their dreams. “I thought I was just going to be a baker,” says Arthur. “I just worked and helped my parents, and that was my life. Even though I had a dream, I never imagined all of this would be possible.” Zenaida nods in agreement. “We are an example that there is hope for contract workers. You don’t have to be a contract worker for the rest of your life,” she says. “But you must have a goal and you must have a plan. Photo by Rudy Capistrano New Fresh Bread Bakeshop I n 1999, New Fresh Bread Bakeshop opened its doors in Dededo and gained the attention of the local Filipino community with its Filipino breads and pastries. “The most popular items at our Dededo bakery are the Filipino breads: pandesal, pan de coco, pan de ube,” says Zenaida Zantua, owner of New Fresh Bread Bakeshop. Zantua says the bakery produces 3,000 pieces of pandesal every day. Together with husband and business partner Arthur Zantua, a master baker and pastry chef, the Zantuas grew their business by creating and baking exclusive recipes for hotels and restaurants around the island. If you’ve ever eaten a dinner roll on a United or Philippine Air light, you’ve tasted bread from New Fresh Bread Bakeshop. The bakery also bakes bread for Sea Grill, Meskla, Applebee’s, IHOP, Westin and others. “We create a recipe based on what our customer’s wants and needs are,” says Zenaida. “Once we have created a bread recipe for a restaurant, we don’t share that recipe with anyone. That’s theirs exclusively.” New Fresh Bread Bakeshop is celebrating the grand opening of its second location in Yigo, which is quite different from its original location. In Yigo, Zantua says, it’s a mix. “I can’t sell croissants or fancy macarons in the Dededo bakery, but here in Yigo those items sell because our customers are not just Filipino,” says Zantua. “We see a lot of military and other members of the community. We’re starting to see a lot of regular customers, which is nice.” The new location in Yigo features Café Panadero, a coffee shop where patrons can sit down to drink and dine on items purchased from the bakery and café. For irst time visitors to the New Fresh Bread Bakeshop, Arthur recommends trying the cream cheese rolls, French macaroons, young coconut and taro-lavored cake rolls, and Sans Rival. In French, its name literally means “without rival.” The New Fresh Bread Bakeshop bakeries employ 52 workers, with the majority of them working at the Dededo bakery. Of the 52 employees, 21 have been with the Zantuas since the business opened in 1999. Arthur says some of the children of those original workers are now working in the bakery. Zenaida believes the employees have remained with the bakery throughout the years because she and Arthur treat them like family. “Dealing with them personally, we consider them a part of our family. We don’t consider them as employees,” says Zenaida. “We eat together, we shop together, we go to the movies and the beach together – you name it. Located in Yigo, Café Panadero is owned by Arthur and Zenaida Zantua, a husband and wife team who designed and built the combination café and bakery with a vision to create a family-friendly space where people could eat, relax and socialize. “We have a lot of regular groups that come to the café throughout the day,” says Zenaida. “In the mornings, we have our senior citizens and retirees and later on we’ll see the military wives. Café Panadero pulls espresso from 100% Arabica coffee produced in Italy and serves lattes, mochas, and other espresso-based drinks. Zenaida plans to add tablea to Café Panadero’s drink menu, a special Filipino hot chocolate that is usually served at Christmastime. Also specializing in ready-made Filipino breakfast and lunch, Café Panadero attracts a steady low of customers throughout the day with hot, savory dishes such as fried rice, beef tapa, tocino, crispy pata, dinuguan, adobo, lumpia, pancit and more. “It’s a little surprising to see military customers in uniform lined up to buy our Filipino breakfast or Above: A taste of Pinoy pastries and brewed coffee at Café Panadero. Photo by Josie Moyer lunch,” says Zenaida. “A lot of them come for the coffee at irst and then they see that we serve hot breakfast and lunch. They’re curious about the food, so they try it, they like it and come back again.” The lunch and breakfast menus change daily and an a la carte menu featuring a variety of pasta dishes is always available. The café also serves pandesal sandwiches, soups, and Filipino desserts. Tables and chairs are arranged in the center of the café/bakery where customers eat, chat, linger and use the free Wi-Fi. “I love it here. B ottling your own drinking water is more cost effective than buying pre-bottled water and using reillable containers is a greener alternative for the environment. But, for some, hauling 5-gallon water jugs to and from a water station isn’t the easiest thing to do. A motion-activated camera at the back entrance alerts water station attendees when a customer has arrived outside for service. Zantua says the drive thru service is especially convenient for parents who have kids in the car, and people with disabilities. “We’ll even take your payment inside for you so you don’t have to leave your car,” Zantua adds. The seamless setup offers a place for customers to hang out while they get their water containers reilled. “When you come to Nature’s Fresh Water Station, you can wait in the car or you can go next door to our café and bakery and enjoy a coffee or something to eat while we rinse and reill your water bottles for you,” says Zantua. “Whichever is more convenient for the customer.” Nature’s Fresh Water Station and Mini Mari is open from 5:00am to 9:00pm Monday through Saturday, and 5:00am to 8:00pm on Sunday.
