Almost 100
years ago, Nobel
Prize winner Elie
Metchnikoff detailed
his thoughts on
why lactic acid
producing bacteria
found in cultured dairy was
vital for living a long, healthy life. After
studying Bulgarian peasants that lived in the
Caucasus Mountains, he came to believe that
their longevity—they lived twice as long as their
European counterparts—was due in large part to
the raw, fermented dairy drink they consumed on
a daily basis.
Metchnikoff theorized that the good bacteria
in the “sour milk” consumed by these Bulgarians
were responsible for balancing the bad bacteria
found in the gut. Today, those familiar with
probiotics recognize that theory—and that is
why Metchnikoff is known as the “Father of
Probiotics”.
When you consider the “original source” of
probiotics, the “sour milk” of the mountaindwelling Bulgarians, and then look at probiotics
today, you are likely looking at two very different
entities. For starters, while Metchnikoff isolated
one species of probiotics (Lactobacillus
bulgaricus) from cultured dairy, there were
certainly others. Additionally, there were other
nutrients—vitamins, minerals, enzymes and
various probiotic-created cofactors inherent in
the “sour milk”.
Oh, and don’t forget, the original source of the
“sour milk” was unprocessed and unpasteurized
milk, a factor that is often overlooked.
Ever since I first studied the works of Elie
Metchnikoff years ago, an idea has always kicked
around my head. What if we could recreate the
“original source” of probiotics? Could we turn
back the clock, go back to the mountains of
Bulgaria and replicate their “sour milk”?

That’s a great starting point for a probiotic supplement. But, if we were going to make
an “original source” probiotic, it meant a lot of legwork for my team at Garden of Life®.
To start, we needed to take a virtual trip to Bulgaria.
The “sour milk” of the Bulgarians most closely resembles kefir and, to a lesser extent,
yogurt. We started by sourcing Bulgarian yogurt cultures and wild Eastern European
Kefir. These dairy cultures contain a wide diversity of probiotics, including Lactobacillus
bulgaricus, the very species discovered by Elie Metchnikoff. I was thrilled that we were
able to find these cultures. To me, they represent the true meaning of “Original Source”.
I also liked the fact that they were “culturally diverse”. Each RAW Probiotics™ formula

One of the reasons so many probiotic
supplements have such large CFU counts
(colony-forming units—a potency
measure) is due to the fact that there
is an expected die-off of some of the
probiotics between the time they are
manufactured and the time they are
consumed. When you see the words “50
billion CFU per serving,” that statement
is often followed by the phrase “at time of
manufacture.” It is very hard for the consumer to
know—and have confidence in—the number they see on
the bottle.

Cooking with coconut oil lends a unique

Diet Do’s and Don’ts
If your abdominal pain is correlated to eating fatty foods—usually
within the hour—and occurs in the upper right quadrant, up
under the right ribcage, sometimes with a sharp pain that radiates
through to the right shoulder blade, gallbladder congestion is likely.
Gallstones are easier to prevent than to reverse. Try to eat approximately the same amount of healthy fats on a daily basis. Never
eat fried food, and drink plenty of fresh water. It’s not a good idea
to commit to a completely low-fat diet. If you go for many days
without eating much fat, bile may stagnate, causing it to form a
kind of thick sludge, then “sand,” then “gravel,” and finally may
coalesce into one solid stone, which can be very painful.
The solubility of your bile is a major component of your
tendency to form sludge or stones. A diet high in processed foods,
particularly refined carbohydrates, is well established to reduce the
solubility of bile. Include ample soluble fiber in your diet, such as
apples, steel-cut oats, celery, and dark leafy greens.

As the liver produces the bile that gets stored in the gallbladder,
liver and gallbladder health are inextricably linked. Some top

ne of my clients was diagnosed
with gallstones and her primary
doctor suggested that she have
her gallbladder removed, adding that
the gallbladder “has no purpose.” This
is not entirely true. The purpose of the
gallbladder is to store a small repository
of bile, which serves many important
functions. The main purpose of bile is
to break down fat into tiny components,
namely essential fatty acids, that can be
absorbed through the microcapillaries in
the villi of the small intestine.
Bile is produced in the liver. It’s
produced slowly and deliberately by the
liver cells; production can’t be “dialed
up” on demand. When you eat a meal
containing a larger amount of fat, more bile
is needed. Therefore, the gallbladder, while not as
essential as the liver itself, is handy for storing extra bile
for when that big fat meal comes along. Gallbladder surgery
is common, and usually harmless, but it’s always a good idea to
try a nutritional approach to your healthcare problem before
committing to a definitive surgery.

What to Take
If you are in the throes of a gallbladder attack, you can try
placing a heat pack over the upper right abdomen as well as
ingesting several thousand mg of magnesium; both serve as
muscle relaxants. Dioscorea (wild yam) can also be an effective
antispasmodic if you take several teaspoons of a standardized
tincture every hour for up to six hours.
If you get upper right abdominal twinges after eating fatty
foods, consider using bile stimulants, and digestive enzymes such
as lipase, regularly in your diet.
Some of my favorite cholagogues (agents that promote bile

production and flow) are beets and artichokes. Artichokes are in
the thistle family, and many thistles, most notably milk thistle
(Silybum marianum) are very helpful for liver health. If you have
gallbladder problems you should eat artichoke hearts (preserved
in water, not oil) on a regular basis. Other cholagogues include
dandelion root (Taraxacum officinale), turmeric (Curcuma longa)
and boldo (Peumus boldo). Take 1-3 g of vitamin C daily.
Another nutrient, related to B vitamins, that promotes bile
solubility is lecithin (also known as phosphatidylcholine). Take
1 rounded tablespoon (500 mg) daily, in applesauce, yogurt, or
oatmeal.

t’s an essential nutrient, participating in numerous
biochemical reactions that protect against cardiovascular diseases, protect our genes, and enhance
mood and cognitive function. According to U.S.
Department of Agriculture data, about one in every
three Americans does not obtain adequate amounts
of vitamin B12, and this number may be far higher.
If you are age 65 or older, you have a high risk of
atrophic gastritis (low stomach acid), which interferes
with B12 absorption.
Several forms are available as supplements,
including cyanocobalamin, hydroxycobalamin, and
methylcobalamin. Many people consider hydroxycobalamin and methylcobalamin to be the more natural
forms of the vitamin.
Over the past several years, research has revealed
multifaceted benefits to vitamin B12:
1. Protects Against Cardiovascular Disease
Vitamin B12 plays an essential role with folic acid
and other B vitamins in a series of biochemical
reactions called methylation. Methylation is needed
to replicate genes and regulate their activity,
protect against cardiovascular diseases, and make
neurotransmitters and phospholipids. Low levels
of vitamin B12 lead to increases in blood levels
of methylmalonic acid, which may boost the risk
of heart disease, stroke, and Alzheimer’s disease.

Both young people and seniors with low levels of

WHAT TO TAKE
The official recommended amount of
vitamin B12 for adults is a scant 2.4 mcg.
Because aging and common over-thecounter and prescription drugs interfere
with B12, it is likely worthwhile to take
larger amounts, such as 500 to 1,000 mcg
daily. Vitamin B12 is exceptionally safe.
Many different drugs interfere with the
absorption or assimilation of vitamin B12,
setting the stage for often-unrecognized deficiencies. These drugs include
heartburn and acid-blocking medications, antibiotics, and oral contraceptives. Nitrous oxide, often used in anesthesia, destroys vitamin B12. A
three-year study described in the British Medical Journal found that the
longer people with diabetes took the drug metformin (Glucophage), the
more likely they were to experience vitamin B12 deficiency.
A study in the Archives of Internal Medicine found that relatively large
amounts of supplemental vitamin B12 are needed to correct a deficiency.
The vitamin depends on a molecule called “intrinsic factor” for absorption
through the gut. Sublingual (under the tongue) B12 supplements seem to
work as well as injections and bypass the need for intrinsic factor.
3. Enhances Cognitive Function
Low levels of vitamin B12 are considered
a type of “nutritional anemia” and may
result in fatigue, psychiatric disorders,
mental fuzziness, and symptoms of
senility. Every person with symptoms of
senility or Alzheimer’s disease should be
tested for vitamin B12 levels—or simply
be given sublingual tablets to see if they

ease symptoms. Low vitamin B12 levels
are common among people with early
forms of Alzheimer’s. Vitamin B12 may
also boost mood. If you’re experiencing
a “down day” or the “blues” (something
not serious enough to call depression),
some nutritionally oriented physicians

I’m a new parent. Any advice on
natural child care?
First, to strengthen your baby’s immune system for a healthier childhood
and adulthood, breast feed, exclusively if at all possible. Research shows
that exclusive breast feeding for the first six months protects a baby
against infections for at least 12 months. However, adding some formula
negates the protective effect, possibly because many formulas contain corn
syrup, unhealthy fats and highly processed milk proteins. For formulas, use recipes in my
Child Health Guide or at www.westonaprice.org. And, as long as your baby isn’t sensitive or
allergic to dairy products, add a half-teaspoon of powdered colostrum from cows that aren’t
fed pesticides or other toxic chemicals.
Second, give babies and children vitamin D, about 35 IUs per pound of body weight,
and let them get some sun. Natural sunscreen, with zinc oxide, is appropriate if kids are out
in the middle of the day at the pool or at camp all day, but I don’t think it’s a good idea to
use sunscreen daily because it prevents absorption of vitamin D.

Natural Treatments for Common Problems
Digestive problems, such as reflux or colic; allergies, such as eczema or asthma; and infections, such as colds or ear infections, are common. A baby’s digestive system is easily
stressed. Antibiotics, taken by the mother or baby, destroy healthy intestinal bacteria and
disrupt the immune system. And, vaccines contribute to allergies (see my book, The Vaccine
Guide). Taking vitamin D when pregnant decreases infections and allergies in babies.
Probiotics
Creating a healthy digestive system will reduce all the common problems. A mother can
take probiotics during pregnancy and you can add liquid or powdered probiotics, about
20 to 30 billion colony forming units (CFUs) per day, to formula or breast milk. Look for
broad-spectrum probiotics with lactobacillus and bifido bacteria.
Supplement with DHA
Babies need DHA for development of the brain and nervous system. If a baby is exclusively
breast fed, the mother can take 600 to 1,000 mg of DHA daily from fish oil or algae, or a
total of 200 to 300 mg of krill oil. Otherwise, you can give a baby 200 mg daily of DHA
from fish oil or algae, or 1 teaspoon of flax oil daily once they are eating solid food and stop
breast feeding.
General Advice
As solid food is introduced (see www.cure-guide.com), it should be fresh, whole food as it
comes from nature, not processed, and organic whenever possible. Avoid corn syrup and
artificial colors and flavoring.
Use natural baby soaps, shampoos, and lotions; anything put onto the skin is absorbed
into the blood stream. Avoid skin-care products with petrochemicals and synthetic
fragrance. And, use only non-toxic household products with plant-based ingredients.

bnoxious fungi are everywhere.
And so many varieties! Fungus
loves to live in the layer of skin
that is not-quite-inside and not-quiteoutside, where they are tough to kill with
external treatments and a big challenge for
the immune system from within. Look for
fungus to infect every square inch of
human skin, from ringworm to jock itch to
toenail problems.
There are more than 150 types of yeast (a
category of fungus) that live in the body, but
one gets all the attention. Candida albicans
creates a long list of problems, from minor
discomforts, such as vaginitis and skin
rashes, to serious digestive problems, allergies,
and depression.
Many remedies that help control yeast
and other types of fungus, including
athlete’s foot, work best taken internally.
One to consider is the Brazilian bark pau
d’arco, which contains constituents that
kill yeast in the test tube. This popular
remedy has been little studied in the lab, but
one recent study from Brazil found that the
herb was very active against fungus. A 2010
study confirmed this strong anti-yeast
activity. Pau d’arco is available in many
forms, but a simple tea often does the trick.
Start with one cup per day.
Oregano, a member of the mint family,
contains a potent oil that kills bugs as well
as it flavors a pizza. In 2011, researchers
again confirmed that oregano oil was active
against many types of nasty bugs. A recent
study from Phytomedicine concluded that
oregano essential oil was the most effective
oil tested, inhibiting all the Candida species
evaluated in this study. The dose of oregano
oil is about 4 drops, 3 times per day.
Turmeric is another effective remedy for
fungus, and Candida in particular. In a
2011 study, Brazilian researchers determined that curcumin, the flavonoid that
makes this spice yellow, is a potent weapon

DO YOU HAVE ADRENAL
EXHAUSTION?
If coffee consumption is any indication,
millions of people may be suffering from
some degree of adrenal exhaustion. And
if you can’t imagine living without at least
some coffee, you may be on the verge of
adrenal exhaustion. A Starbucks 20-ounce
Venti-size contains 500 mg of caffeine,
about the same amount found in about
15 cans of soda. That much coffee is a
potent drug, unmatched by any of the
controversial energy drinks.
Although fatigue may be a symptom
of many different health problems, certain
signs point toward adrenal exhaustion,
including:
• dizziness when standing up
• frequent bouts of low blood sugar
• mood and memory problems
• aches and pains in the muscles of the
upper back, arms, and legs
• needing more and more caffeine
• having salt and sugar cravings
• feeling cold
• having pollen allergies
• experiencing food and chemical
sensitivities
• feeling tired when waking up after eight
or more hours of sleep, but getting a
second wind in the evening.
Despite the apparent prevalence of
adrenal exhaustion, conventional physicians
rarely diagnose patients with this health
problem except in cases of Addison’s disease,
also known as primary adrenal insufficiency.
Addison’s is the most severe form of the
disorder, but nearly all of the symptoms of
Addison’s disease, and less severe types of
adrenal exhaustion, are similar except for
one: people with Addison’s disease have
hyperpigmentation of the skin, which may
be most evident in a darker color underneath the fingernails and in creases in the
palms of the hands.
Another problem: Even doctors who are
willing to consider a diagnosis of adrenal
exhaustion frequently order the wrong tests,
so they miss the diagnosis. The conventional medical approach is to assess adrenal
function with a single blood test for either
cortisol or ACTH (adrenocorticotropic
hormone) levels. However, these tests are
often inaccurate except in Addison’s disease.
Chances are that you’ll obtain a more
accurate diagnosis by going to a naturopathic or nutritionally oriented physician
who orders a cortisol saliva test. The test
involves providing four saliva samples over
the course of a day. Normally, cortisol levels
are highest in the early morning and decline
steadily during the day and evening, but
low morning cortisol levels are typical in
people with adrenal exhaustion.
OTHER FACTORS IN
ADRENAL EXHAUSTION
Some medications and health conditions
can set the stage for adrenal exhaustion.
For example, the regular use of oral, topical,
and intranasal cortisone-containing drugs
can suppress normal adrenal function. So
can antifungal drugs and some anticoagulants,
such as warfarin and heparin. Low sodium
levels (hyponatremia) and dehydration are
also potential causes of adrenal exhaustion.
In addition, type 2 diabetes, rheumatoid
arthritis, Crohn’s disease, allergies,
Candida (yeast) infection, and hepatitis

You may be surprised to learn that you need more salt in your diet if
you are suffering from adrenal fatigue. More ways to combat adrenal exhaustion:
EATING HABITS. Most people don’t eat healthy foods when they’re feeling stressed or fatigued. So it’s particularly important to
emphasize quality protein and high-fiber vegetables, while minimizing refined sugars, refined carbohydrates, and junk foods.
Eating style is just as important. Stress sets the stage for wolfing down foods, particularly fast foods. Instead, linger over a slower,
healthier meal.
SALT. The usual advice to limit salt intake is good—except in cases of adrenal exhaustion. You need the sodium in salt to maintain
blood pressure, so salt your food liberally. You can find various brands of natural salt at health food stores.
SLEEP. Getting sufficient sleep is crucial for recovering from adrenal exhaustion. This means absolutely no caffeine after the morning
and no soft drinks with aspartame. At night, start preparing for sleep by turning off the television and dimming the lights at least
one hour before going to bed. To promote sound sleep, remove most or all ambient light sources, such as nightlights, which can
interfere with sleep. Your bedtime should be whatever time gives you at least eight hours of sleep.
ADRENAL-CORTEX EXTRACT. Yet another option is to take a supplement containing adrenal-cortex extract. These supplements
contain minute amounts of adrenal hormones and are safe compared with prescription glucocorticoid drugs. Still, it is best to get a
confirmed diagnosis of adrenal exhaustion by a nutritionally oriented MD or ND before using an adrenal cortex supplement. Because
adrenal supplements vary, follow either label directions or your physician’s guidance.
IT’S ALSO IMPORTANT TO REDUCE YOUR CONSUMPTION OF CAFFEINE in coffee, black tea, soft drinks, and energy drinks.
People often feel captive to their caffeine addiction, but caffeine withdrawal might actually be easier than you think. As you recover
from adrenal exhaustion, you’ll find that you have less need for caffeine as a stimulant. You may not entirely stop drinking coffee, but
you will likely be able to reduce your consumption to just one or two cups of weak coffee in the morning and none in the afternoon
or evening.

Over the long run, adrenal exhaustion
will weaken your body’s responses to
bacterial, viral, fungal, and parasitical infections. It can also precipitate chronic fatigue
syndrome and fibromyalgia, and it may also
increase your long-term risk of cancer.
VITAMIN SUPPLEMENTS
FOR ADRENAL STRESS
AND EXHAUSTION
Three specific vitamin supplements can help
you cope with adrenal stress and overcome
adrenal exhaustion.
B-complex. The B-complex vitamins have
long been known as anti-stress nutrients.
Take a high-potency B-complex supplement
that contains at least 50 mg of vitamins B1,
B2, and B3. The dosages of other vitamins
in a B-complex supplement will fall into
place, though there will be minor differences between brands.
Pantothenic Acid. The body needs this
B vitamin to make adrenal hormones, and
people with adrenal exhaustion usually
need more than the amount in most highpotency B-complex supplements. Try 500
mg extra of pantothenic acid twice daily.
Vitamin C. You also need this vitamin to
make adrenal hormones. Take at least 1,000
mg three times daily. Too much vitamin C
will loosen your stools, so if that happens,
simply reduce the amount.
HERBAL SUPPLEMENTS FOR ADRENAL
EXHAUSTION
Several herbs can help you recover from
adrenal exhaustion.
Licorice root. Technically known as
Glycyrrhiza glabra, this herb is the most
important for correcting adrenal exhaustion.
However, you have to carefully choose

between two types of licorice root supplements.
Whole licorice extract contains glycyrrhizin,
which gets converted to glycyrrhetinic acid
in the intestine. Glycyrrhetinic acid inhibits
the body’s breakdown of cortisol, allowing
the body to restore normal cortisol levels.
Do not use deglycyrrhizinated licorice.
(Deglycyrrhized or DGL supplements are
preferred for other purposes, such as for
coughs, ulcers, and inflammation.)
Note: Large amounts of nondeglycyrrhizinated licorice may increase your blood
pressure, which is helpful in people with
adrenal exhaustion. As you start recovering
from adrenal exhaustion, you will likely
notice fewer episodes of dizziness. To avoid
developing high blood pressure, reduce the
amount of licorice as you recover.
Ashwagandha. Also known as Withania
somnifera, ashwagandha can help people
dealing with fatigue from chronic stress.
It has a mild relaxing effect, so it can be
especially beneficial to people with “type A”
personalities. Take 500 mg daily.
Rhodiola rosea. This adaptogenic herb
helps your body cope with stress and
fatigue. Take 200 to 300 mg daily.
Eleutherococus senticosus. Also known
as Eleuthero and Siberian ginseng, this herb
is an adaptogen and can help protect against
stress. Take 200 to 300 mg daily.

chronic sinusitis or spastic colon. Often, probiotics can be beneficial.
NUTRITION: Take a good multivitamin. Maca root and cordyceps mushroom
can enhance energy and stamina and benefit adrenal fatigue. Ribose powder
can dramatically increase energy. In a recent study of 257 people with
chronic fatigue syndrome, ribose increased energy an average of 61% after 3
weeks. Try adding a 5 gm scoop of ribose powder to water or juice daily.
EXERCISE: Preferably, do some kind of activity outdoors. The current advice to
avoid sunshine is contributing to widespread vitamin D deficiency. Avoid

Systemic enzymes are good for your whole body, not just digestion. Protease

A sunburn will ruin your summer fun, and set you up for wrinkles, premature aging, and skin
cancer. But what’s the best way to stay protected? Follow these seven safety measures:

Cover up.
According to the International Agency for Research on Cancer, sunscreens
aren’t the best way to prevent skin cancer; the agency recommends clothing, hats, and shade
as primary barriers against UV radiation. Wear a big brimmed hat, don a lightweight, longsleeved shirt and thin cotton pants, and lounge under a beach umbrella or shady tree. Skip outside
activities when the sun is directly overhead and UV radiation is at its strongest.
Slip on shades.

Sunglasses can provide protection to the skin around the eyes, as well as
protect the eyes themselves from UV damage, which can cause cataracts. Look for sunglasses
that block at least 99 percent of UVB rays and at least 95 percent of UVA rays, and choose
shades with side panels. Polarized and mirror-coated lenses don’t offer any UV protection, and
lenses that block blue light may not offer protection either.
Drink green tea
. It’s rich in polyphenols that prevent melanoma and non-melanoma
skin cancers, and reduce photoaging, the damage to skin caused by sun exposure. Other
sun-protective antioxidants in food have similar effects. Most protective: vitamins C, E, and A,
zinc and beta-carotene, curcumin (in turmeric), resveratrol (in grape skins and red wine) and quercetin
(in apples and onions). Lignans, in soy and flaxseed, help prevent the spread of melanoma.

Slather it on, 15 to 30 minutes before heading outside. Pay special attention to vulnerable
areas, like face, ears, hands and arms. Choose a waterproof brand, use it liberally and reapply
after swimming. And keep reapplying, even if you don’t hit the water: studies suggest that
if you apply too little sunscreen or reapply infrequently, the sunscreen itself can become harmful to
the skin, causing the body to create more damaging molecules.
Don’t rely on SPF alone.

SPF (sun protection factor) measures a sunscreen’s
ability to protect against UVB radiation and sunburns. It doesn’t measure protection from
UVA radiation, which penetrates deep into the skin, accelerates skin aging, and causes
skin cancer—so even a high-SPF product may leave you vulnerable. In fact, because they suppress
burns—a sign of skin damage—high-SPF products may tempt you to stay in the sun longer. The
best possible UVA protection from any sunscreen is only about 20.
Be a daily user.. A recent study found that using sunscreen daily reduced the risk of

melanoma, the most dangerous kind of skin cancer. Wear it if you’re gardening, hiking or
even sightseeing, and look for lip balm and makeup with added sun protection.
Use safe sunscreens. Some sunscreens may do more harm than good. For example,
Food and Drug Administration research suggests that retinyl palmitate, used in sunscreens,
may increase the rate of skin tumors. Other ingredients, such as oxybenzone or octyl
methoxycinnamate (OMC), may disrupt the endocrine system. And nanoparticles of titanium
dioxide (TiO2) and/or zinc oxide (ZnO) may be more harmful than larger forms; these minute
chemicals are able to reach different parts of the body, cross the placenta, or cause DNA damage
linked to cancer.

Dozens of recent studies have
linked vitamin D intake with increased
immunity and reduced risk of osteoporosis, cancer, heart disease, diabetes,
and high blood pressure. Meanwhile,
vitamin D levels in Americans have
been decreasing steadily over the
past two decades; a 2008 report in the
American Journal of Clinical Nutrition
found that as many as half of all adults
and children have less than optimum
levels, and as many as 10 percent
of children are highly deficient. The
body’s main source of vitamin D is
sunshine, but wearing sunscreen
inhibits the skin’s production of this
crucial compound.
WHAT’S THE SOLUTION? Even the
experts disagree. According to the
American Academy of Dermatology,
there’s no safe exposure to the sun,
and the risks of any sun exposure
outweigh the benefits. But the American
Medical Association recommends
10 minutes of direct sun exposure,
sans sunscreen, several times a week.
It’s hard to get adequate vitamin
D from diet alone, so supplements
are one answer, but there’s some
controversy about the proper amount.
Currently, the recommended dose of
vitamin D from food and supplements is
400 IUs a day, but most experts agree
that’s too low. The Institute of Medicine
has launched new research to reassess

EVERAL YEARS AGO,
I lost my entire colon—and almost lost my life. After six weeks
at the famous Mayo Clinic, I was left with an extremely compromised digestive system (to put it mildly). It changed the way I ate,
digested, and viewed food. I was no longer able to eat what I loved.
Sugar caused problems, and I couldn’t eat anything raw. I had no
appetite, let alone cravings. Eating became a tedious chore. My
weight at times went down to as low as 85 pounds, and for a time

I had no intention of eating the food served
at Kat’s program, figuring it would cause
me problems. She insisted I get my doctor’s
approval to try her diet anyway, and the first
night of the program I couldn’t resist the
“Low Impact” Turkey Fennel dish from her
book. It was high in fat and even had dairy
and some vegetables I had not been able to
eat. To my shock (and per Kat’s prediction),
my extremely touchy digestive system
responded flawlessly.
Kat explained that the absence of sugar

on. I did not make my usual shakes and

cereal. The one that compelled me through
three fast food drive-through places in one
night, or to use all my babysitting money to
buy candy. Sometimes I’d be so drugged after
my binges I’d get blurry vision; I almost got
in a wreck once. My abdomen would look
like I was six months pregnant. I obsessed
over calories and skipped meals only to binge
again, no matter how hard I tried not to.
And as soon as there was a little room in my
stomach, my mind would obsess over what I
could eat again.
The foods we were eating at Kat’s seemed
so “fattening” that I wondered how I could eat
so many calories and get through the program
without gaining weight. But by the third day,
I realized I had no more cravings and began
feeling calmer than I’d been in a long time.
I never craved once at her program because I
was never given the chance to feel deprived.
Unbelievably, willpower was suddenly a
non-issue. Kat definitely proved to me that you
can eat all you want as long as food does not
spike your blood sugar, and is nutrient-dense

BACK HOME
It was the morning after we arrived home that my sons, after spending the morning with
us, said, “She’s not insane anymore!”
Not only were Becca’s emotions in check, but her body started shrinking too. Kat called it
inflammation loss. After five months, over 35 pounds had been shed. Becca was down from
size 10 to a 4, but she never stepped on a scale or focused on being a certain size. She was more
concerned about her mood and her relationship with food.
As for me, it was beyond words how much more alive I began to feel. I’d actually
regained my appetite and could eat so many foods I couldn’t touch before, like cooked
onions and garlic, which used to destroy me. I now knew it was the rice or grain I used to
eat them with that caused the problems for me. Soon, I didn’t have to worry about keeping
my weight up like before. I still had times where my digestive tract acted up and I’d have
inflammation and struggle for a few days, but it seemed to be triggered by stress, not diet.
Thankfully, those times are now the exception, not the rule.
My energy is on an entirely different level than when I started. My good HDL cholesterol went up 12 points, and my LDL cholesterol and triglycerides all went down 10-12
points, even though I was eating more cholesterol than I had ever eaten.
What is really priceless for me, though, is being able to sit down with friends and family
and partake in the celebration of eating along with everyone else. After living as I had, I
realize what a gift that is and don’t take it for granted!
“Before Kat’s program, I couldn’t even sleep at night and would not be able to function
during the day from lack of sleep and my bingeing ‘hangovers.’ That dramatically changed after
the program. An added benefit was that my allergies, itchy eyes, sneezing, and wheezing during
exercise stopped.
I did hit a bump in the road after a while. After about six months of feeling really good, I
began to forget about my progress and take for granted the miracles that had happened. I began
to resent not being able to eat ‘regular food’ like pizza and other junk with my friends, so I
started indulging again. The taste of the junk wasn’t as great as I remembered, but I felt that
obsession starting to return.
When I found out about the opportunity to go to Costa Rica to do another program with

re your nails brittle? Do they split, peel, or break at the
slightest provocation? If you think healthy nails are out
of reach, these natural solutions can help.
Our nails are our fingertip’s protective armor, guarding them
against injury and infection. Made up of layers of a hard, fibrous
protein called keratin, the nail rests on a fleshy pad of skin known
as the nail bed. At the base of the nail bed is the matrix, from
which all new nail growth springs. The cuticle, a thin strip of
flexible skin, protects the matrix from dirt and bacteria which
could result in an infection.
Your nails are an excellent indicator of your inner health.
For example, hangnails can indicate a deficiency in protein,
folic acid, or vitamin C. White spots can point to a need for
more vitamin B6 or zinc. And peeling nails can mean low levels
of vitamins A, C, or calcium. Adopting a diet rich in high quality
protein, colorful fruits and vegetables, and whole grains may help
prevent future nail problems by giving them the nutrients they
need. Taking a multivitamin can help fill in any nutrients you
may be missing.
Certain nutrients can also strengthen your nails if they are thin
or break easily. Topping the list is biotin. This little-known B vitamin
is readily absorbed into the core of the nail, where it thickens nails
and encourages healthy growth. While the recommended dose is a
mere 30 mcg daily, most studies of biotin’s benefits use considerably
more. In one controlled trial, nails became 25 percent thicker in
the volunteers who took a daily dose of biotin—which translated
to stronger nails with less splitting. Another study by researchers at
Columbia University in New York found that, among people who took
biotin for brittle nails, 63 percent showed improvement after six months.
Although rich sources of dietary biotin include egg yolks, cauliflower, peanuts, and lentils, you’ll need to take a biotin supplement
boasting at least 1,000 mcg—the minimum amount used in most
studies—to see results. But be patient. It can take several months
before you notice improvement.
Silica is another nutrient that can boost nail strength and

Natural remedies for occasional athletes
W
hen Friday rolls around, freedom from the work week is so close you
can taste it. You were born to be outside, climbing those mountains,
hoisting those sails, the sun warm on your shoulders.
If you’ve been cooped up indoors, the urge to get outside and move can be
irresistible. Yet that’s the time to match enthusiasm with precaution. Do a good
warm-up, make sure your equipment fits, and if you’re fatigued from the week,
rest up before plunging in. A lack of preparedness can do real damage, from
sprains and sore muscles to heat exhaustion. If you’re sidelined, though, don’t
panic. Natural remedies can have you on your toes before the next workout or
outdoor adventure.
Overexertion and Sore Muscles
You know the sensation: you’re back at work after an active weekend and your
muscles are on fire. What happened? It’s Delayed Onset Muscle Soreness (DOMS),
a product of too much lactic acid. The substance builds up when you work your
muscles so hard that they can’t get enough oxygen to release the pyruvate, a
compound generated in the process of burning glucose to create energy.

1 tablespoon butter
1 tablespoon olive oil
2 medium shallots, sliced into thin rings
1 pound wild mushrooms (shiitake
caps, oyster mushrooms, lobster,
or others), thinly sliced
1/4 cup mirin (Japanese cooking
wine) or sweet white wine
20 medium to large sea scallops
(about 2 pounds)
6 cups packed baby arugula leaves
or coarsely chopped arugula

to coat with oil. Cook for 2 to 3

More than 8,000 human studies have been carried out on fish and omega-3s, showing
reduced chronic internal inflammation that underlies heart disease, reduced risk of stroke,
improvements in diabetes, and a host of other ills—from PMS to rheumatoid arthritis. To
maintain good health, the American Heart Association (AHA) recommends eating at least
two 3.5-ounce servings per week of fatty fish, but according to a study of 21,675 people
published in Neurology, fewer than one in four Americans over the age of 45 eats that much.
This is where supplements can help fill in the gaps.
FISH OIL SUPPLEMENTS
Fish oil supplements should provide the two key omega-3s: EPA (eicosapentaenoic acid)
and DHA (docosahexaenoic acid). Both are essential nutrients, meaning we must get them
from our diet.
On the label, look for the amount of EPA and DHA per serving, as some products
are formulated to contain higher percentages of these omega-3s, and choose toxin-free
products. According to a Scientific Statement by the AHA, 0.5 to 1.8 grams daily of an EPA/
DHA combination (approximately 1.6 to 6 g of most fish oils) significantly reduces risk of
death from heart disease and all other causes.
KRILL OIL SUPPLEMENTS
Krill are tiny shrimplike creatures eaten by whales and small fish that contain omega-3s. The
EPA/DHA content in krill is only about 14 percent, compared to approximately 30 percent
in fish oil. However, the structure of krill fat makes it more absorbable, so a smaller amount
may be required, according to a review of human studies in Alternative Medicine Review.
The EPA/DHA in krill is bound to phospholipids, fat-like substances that make up cell
membranes in both krill and humans, and this enhances delivery of the omega-3s to our
cells. And, krill oil naturally contains astaxanthin, a powerful antioxidant.
Therapeutic doses of krill oil, to improve health states, range from 1 to 3 g of the oil
daily, and a maintenance dose is 500 mg daily, according to a review of available research
in Alternative Medicine Review.
