Guide to Good Food
by Velda L. Largen and Deborah L. Bence, ©2010, 11th Edition
Guide to Good Food is the text you need to guide your students in selecting,
storing, preparing, and serving foods while preserving their nutrients, flavors,
textures, and colors. This latest edition includes information about the MyPyramid
Tracker tool, celiac disease, concern for the environment, sustainability, and
supermarket trends. Information on grilling vegetables has been added, as well
as information on making wise choices when dining in restaurants. Changes also
reflect the latest information from the USDA on safe food handling practices to
prevent foodborne illness. The chart illustrating the effects of temperature on
foodborne bacteria has been updated. Question-and-answer sidelights address
common food myths and concerns, and technology activities are suggested. Career
descriptions and case studies highlight workplace skills students gain through
classroom learning. Health, consumer, safety, business etiquette, and environmental
tips encourage students to apply information in their daily lives. Recipes include
step-by-step directions and nutritional analyses. An extensive Foods of the World
section introduces students to the culture and cuisine of over 30 countries and
features tabbed pages to make the pages easy to locate.
Guide to Good Food shows your students that food is more than
just something to eat. It is at the heart of scientific research. It
provides a source of income for millions of people as well as a part
of people’s cultural identity.

to any life skills, personal finance, or consumer

rent and furnish an apartment, buy a car, and pay
taxes. Students learn about preparing for major
purchases, moving out on their own, and handling
unexpected expenses. The simulation can be
used for a semester-long course, requiring about
one day of class time every one or two weeks.
