Ir-070 Cooleeney (1x3Lb) Ir-071 Cooleeney Mini (6x7oz) Fully mature at 8-10 weeks, Cooleeney has a white mold rind, pale yellow paste, generally with some chalkiness at the center, when fully ripened the paste is soft and smooth. Creamy and buttery with discernable white mushroom notes coming through on the finish, pleasant bitterness. Ir-390 Gleann Óir (1x6.17Lb) Ir-075 Gleann Óir Mini (6x12.35oz) Fully mature at 9 months, Gleann Óir is made with pasteurized goat’s milk from their own herd. Natural rind, mottled with grey appearance. White, semi-firm cheese with irregular holes throughout the paste. Robust and earthy flavor. Ir-076 Gortnamona Goat cheese (4x3Lb) Ir-501 Gortnamona Goat Log (1x2.2Lb) Gortnamona is a mild soft bloomy rind goat cheese with hints of almond and a clean finish. When young, it is crumbly in texture and highly versatile in cooking. When mature, it is velvety in texture and makes a great addition to any artisan cheeseboard and is gluten free. Ir-242 Gubbeen (8x3Lb) Ir-078 Gubbeen Mini (16x12oz) Gubbeen is made from pasteurized milk for the Ferguson’s own herd of Jersey, Simmental Kerry and Friesian cows. Gubbeen is made from traditional rennet. The secret of Gubbeen’s flavor lies in the interaction of the cheese’s mushroom-scented rind and the semisoft, buttery body within. It has a taste and scent of mushrooms and forest, nuts and a real buttery milky taste when young. It is a washed rind cheese, pinkish in color with powdery bloom. Its paste is semi-soft with small air holes throughout. Ir-079 Gubbeen Smoked (8x3Lb) Ir-080 Gubbeen Smoked Mini (16x12oz) Gubbeen has been handmade on the Ferguson family farm since 1980, where Giana and her husband Tom make the cheese using their own milk from their mixed herd. Giana has a history of cheese making in her family, first making cheese in Alora, outside Malaga, in the south of Spain, when she was a child, and later in France. They began making cheese in West Cork as a means of adding value to the milk of their dairy herd. Ir-081 Corrleggy (1x2.5Lb) Ir-082 Corrleggy Mini (6x7oz) Corleggy is a hard goat’s cheese made from unpasteurized milk and vegetarian rennet. The brine-washed natural rind contains a smooth ivory-paste, which takes a slightly deeper shade as the cheese ages. Young Corleggy is mild, yet richly aromatic, while older cheeses become harder, stronger in flavor with more earthy notes and a discernable piquant finish. Corleggy goat’s cheese is available in 2.5lb wheels and mini wheels of 7oz. Ir-083 Drumlin (1x2.5Lb) Ir-084 Drumlin Mini (6x7oz) Drumlin is a cow’s milk cheese made from raw milk and vegetarian rennet. It has a natural brine-washed rind. Its paste is hard, with pale yellow color and smooth paste, becoming very hard and piquant with extended aging. Young Drumlin is relatively mild in flavor, becoming more piquant and saltier as the cheese ages. It is aged for a minimum of 6 weeks. Drumlin is available in 7oz minis and 2.5lb large wheels. Ir-087 Mossfield Organic Cheese Gouda Style (1x12lb) All of the milk used to make Mossfield Organic cheese comes from Ralph’s own herd of 80 Friesians which graze the clover-filled pasture of Ralph’s 300 acre farm on the foothills of the Sleeve Bloom Mountains. The cheese has won numerous awards during its short time on the market. Mossfield Organic cheese is handmade in a newly built state-of-the-art cheese making facility on Ralph’s farm by a team of dedicated and passionate cheese makers. Ir-077 Wicklow Blue Cheese (1x3Lb) Wicklow Blue is a blue brie style cheese made using pasteurized cow’s milk and vegetarian rennet. The bloomy white rind enrobes a butter scented, yellow paste with lined blue green mold. The bloomy rind gives an aroma of fresh white mushrooms and contrasts with the creamy, buttery flavors of the paste. The blue flavor is unpronounced and doesn’t interfere with the overall impression of creamy whipped butter and salad mushrooms on the palate. Ir-085 Creeney Mini Ewe’S Milk Cheese (6x7oz) Creeny is a ewe’s milk cheese made from raw milk and vegetarian rennet. It has a natural rind and the hard paste. Young Creeny is semi-hard, rich and yet delicately flavored. At over a year this is a good grating cheese and resembles an aged pecorino, with plenty of bite. It is aged from two months to over a year. Ir-252 Durrus (8x3.3Lb) Durrus is an Irish cheese of round shape with powdery pinkorange color rind. This semi-soft, washed rind cheese produced in Jeffa Gill’s dairy is very famous in West Cork as one of the finest artisanal farmhouse cheeses. Made with raw, unpasteurized milk, Durrus smells of hay and wet soil and tastes buttery, mild and slightly acidic. Only milk from Friesian herds of two local farmers is used to prepare this deep-flavored cheese. When mature, the rind of Durrus develops blue grey molds that do not affect the flavor the cheese.
