ontrary to the popular perception it’s not Salvador Dali but
Giorgio de Chirico, Max Ernest, Man Ray and Jean Arp who
are considered masters of surreal art. If you’ve seen Max Ernst’s Two

elf-taught designer Antonio Marras made
his debut in the world of haute couture in
July 1996, the first among a whirl of the
journeys taken by the Italian designer deep into the
world of traditions. These influences followed him
into his initial ready-to-wear collection, which
debuted in Milan in 1999. Marras joined Kenzo in
2003 where he’s still holding his artistic director
status. Marras’ passion for embellishment and
flamboyant decoration takes influence from his
roots in Sardinia, where he still lives commuting to
Milan and Paris. Each journey became a truly
personal interpretation of the past centuries’
imagery—emigrant women from Argentina, women
in coal mines, women of the Middle Age. His entire
collections transfer deeply-rooted message,
experiments with style is mingled with play on
symbols. Called “poet of dressing” and “storyteller
of fashion”, Marras responds thus: “I am fascinated
by all things carrying a trace of life with them, things
that are encrusted with sediments of previous
experiences.” Craftsmanship, tradition, richness and
stylistic variety are weaved together in his aesthetics
filled with “accidental ruin”. Mistreatments,
dimming of colours, salt encrustations are remnants
of his childhood spent in his father’s fabric shop
transformed into clothes. His fashion shows happen
with wonderful settings, where a synthesis of
different kinds of art takes place, they are worlds

Good eats come from good chefs. So what makes a
good chef ‘the best chef?’ It definitely requires more
much than spending several hours in the kitchen,
sweating over the hot stove and commandeering an
army of obedient staff. More than cooking skills, it’s
about a mix of creativity and talent. Let’s meet
India’s most renowned chefs who are pushing
boundaries in and out of the kitchen…
W
ith her creative outlook and robust personality, Ritu Dalmia has emerged as
a standout female celebrity chef in an industry largely dominated by men.
But she had to work her way to success. Born to a family of marble merchants in
Kolkata, Dalmia earned her father’s ire when she ditched the family business to
become a chef. Interestingly, she has no catering college background and is largely
self-taught. After a failed attempt with her first restaurant MezzaLuna, Dalmia went
to London to open Vama, an Indian restaurant. But it wasn’t until 2000 when she
opened her now famous Italian restaurant Diva in Greater Kailash that she
catapulted into the mainstream. Her popular television shows Italian Khana and
Travelling Diva on NDTV Good Times furthered her celebrity status, particularly
because she shares a story from her fascinating life about each of her dishes. Dalmia
now owns five restaurants each unique and interesting in its own way, as well as her
own catering business. An expert Italian chef, Dalmia is known for her biting wit and
unadulterated honesty concerning all things food- and chef-related.
This charming chef ’s prowess doesn’t end with television and restaurants,
though. She’s written a couple of cookbooks too. And guess where did Dalmia have
the most flavourful Italian food in the world? At the Sandoway Resort on Ngapali
Beach in Burma. “I tried very hard to steal their chefs - who, by the way, were all
local Burmese - but like good Buddhists they were content with what they had,”
laughs the critically acclaimed chef.

1 stalk lemon grass, only the soft part.

For the dressing
1 tbsp red chilli paste,
2 tbsp, extra virgin olive oil,
handful of shredded basil,
2 tbsp jaggery water,
2 tbsp roasted peanut/hazelnut,
salt, 1 tbsp lemon juice
Method
In a dry mixing bowl,
whisk the oil, jaggery
water, lemon juice and
chilli paste. Add the
shredded basil and
season with salt in
another bowl mix all
the ingredients for the
salad. Add the
dressing and give it a
good massage. Serve
with a sprinkling of
roasted peanut and
hazelnut.

Manu Chandra’s Recipe for Quick Murg Hen
Ingredients
3 (cut into 7pcs) chicken breast,
20ml bacardi white rum,
1tsp synthetic vinegar,
2tsp caramel, 1/2tsp white pepper powder,
1tsp chopped ginger, onion powder and garlic powder,
1/2tsp coriander powder and black pepper ,
1/4tsp turmeric, 1/2 tsp galangal,
1tsp green curry paste, 1/2tsp broth powder, 1/2tsp
chili paste, 1/2tsp mustard oil and coconut vinegar,
1tsp barbeque sauce, 2 sticks wooden skewers
(soaked overnight), basil mayo-accompaniment
Method
• Cut the chicken breasts into 7 pieces.
• In bowl, mix all the ingredients to prepare the
marinade
• Add the chicken pieces, coating each piece
thoroughly with the marinade.
• Put the pieces onto wooden skewers.
• Allow the chicken to marinate for minimum 3-4
hours. Recommended to be kept overnight
• Heat oil in a heavy bottom pan, and sear the
chicken for 3 minutes on each side.
• In between lightly baste it with barbeque sauce.

f good food is the hottest lifestyle trend, then Manu
Chandra is the coolest kid on the block. Chandra started
wielding the ladle ever since he turned 12, thanks largely to a
foodie family. So it was hardly a surprise when he opted for it
professionally. After a degree from the Culinary Institute of
America (CIA) New York he travelled to Norway to work with
the Michelin starred Chef Eyvind Hellstrom at Bagatelle.
At Chandra’s immensely popular Bengaluru restaurantsMonkey Bar, Likethatonly and Olive Beach, he is not just
known for his innovative western food which focuses on
freshness but also the use of local ingredients. A lover of slow
cooking, he leans towards painstakingly controlled and cooked
things, a process that enables one to extract flavours and
textures.
A minimalist, Chandra believes that removing an ingredient
rather than adding one usually improves the flavour of a dish.
Always seasonal, always simple, Chandra tries to get every
ingredient to speak, even scream, volumes. This recipient of
many awards and accolades has an irreverent take on
food-Pork Sorpotel wind up in little jam pots, the traditional
Coorg delicacy Pandi Curry is paired with warm grilled Pita
Bread, brain fry and offal are moved out of their traditional
Jama Masjid bastion to be presented in a whole new avatar.
Taking the most ubiquitous of things and giving them a spin,
a nudge towards being cool and so very relevant seems to be
Chandra’s mantra.
Ingredients
90g crab meat, 2g lemon zest fresh, 5g ginger very finely
chopped, 5g banana shallot fine chop,5g celery fine chop, 4g
coriander fresh, 1/4 egg for binding, 2ml Worchester sauce, 5g
dijon mustard, 13g mayonnaise, 1g mild red chilly fresh, 5ml
lemon juice. For crab cake and sauce, 2g garlic fine chop for
sauce, 10ml rapeseed oil, mix baby greens 10g clean and
refreshed, 1/2 Lemon for plate, 15g yoghurt, 1 dates sliced for
side salad, 3 pecan nuts toasted for side salad,
Method
• Sauté celery, shallots and chilly in rapeseed oil. Let it cool.
• Make a mixture of mayonnaise, using 1/4 of the Dijon
mustard, egg and Worchester sauce.
• Gently fold the above mixture with crabmeat, mayo mixture,
lemon zest, coriander herb and ginger juice. Make cakes of
this mixture by packing it lightly using fingers and palms
and ensuring not to make.
• Sear the crab cake till golden brown color on both the sides
or for a minute each and finish in the oven for 4 minutes at
180oC.
• Serve with greens- rocket, beetroot leaves and pea soot,
dates, pecan nuts, seasoning.
• Also serve with half a lemon and the Dijon mustard yogurt
sauce (For the sauce; sauté the garlic, let it cool and mix
with whisked yogurt, remaining 1/2 of the Dijon mustard, co
riander leaf, mayonnaise and lemon juice, check for
seasoning).

unior MasterChef fame Chef Jolly has
done it all—travelled and cooked with
Arvind Singh Mewar of Udaipur royalty,
Nawab Mehboob Alam Khan, the giant of
Hyderabadi cuisine, cooked in the bylanes of
Lucknow, perfected the Kulchas in Amritsar
dhabas and farmed in Pampore on the
outskirts of Kashmir during the saffron
harvest. Jolly’s approach to cooking combines
a touch of the poetic with a dash of simplicity and a spoonful of wistfulness for dishes
that appear as straight from the heart. He’s not
about delivering fancy, overly complex meals
and tastes. Instead, Jolly prefers to take dishes
down to their basic, most simple elements and
to recombine them in a way that produces
wonderful meals.
The warm, fuzzy, playful and friendly Jolly
has also cooked for Paris Hilton when she
visited India. “We cooked 69 dishes for her! I
remember making Barbary Duck Biryani
cooked in the Awadhi way with young garlic
shoots, skimmed milk yogurt in an earthen pot
sourced from Jaipur,” says the chef. Despite
having travelled the world on his culinary
quest, he still finds comfort in his mother’s
Bhindi, saag and churi (a traditional Punjabi
dish). Shortcuts and casual attitude towards
cooking are not welcome in this maestro’s
kitchen.

resham Fernandes didn’t always harbour ambitions to
be an award-winning chef. He wanted to be a
musician instead. But growing up in a Christian joint family
in Bandra with his father’s four brothers and innumerable
cousins, and a matriarch with legendary culinary skills led
him to a career that has become a way of life for him. From
the frying pan of Rizwi College of Hotel Management to
the fire of The Leela’s five-star kitchen under the Executive
Chef Frank Mueller provided Gresham with the finishing
touches.
A three-month stint at Noma in Copenhagen, one of
the world’s finest restaurants helped hone his skills. The culinary virtuoso has developed a fresh and imaginative technique that incorporates, among other things, his Bandra
roots and his quest for innovation. A magician with flavours,
Fernandes uses progressive techniques to meld flavours you
wouldn’t even dream of combining. Favourite ingredient to
cook with? Any kind of meat. Visit Smoke House Room
and you will know. Almost anything served here is a triumph
of precision; you feel as if he was cooking just for you, and
you a powerful restaurant critic. His 16 course Grand Degustation is disarmingly, sexily delicious. Fernandes’s
favourite dish remains his mom’s chicken Khuddi (chicken
cooked with roasted coconut and onions), pork Sorpotel
and hand breads.

Recipe for Flourless chocolate fudge
Ingredients
500g dark chocolate,
250g castor sugar,
250g butter,
8 eggs,
15g coffee powder
Method
• Melt the chocolate, castor sugar and
butter on double boiler together.
• Once done leave it aside to cool down.
• Separate the egg yolk and whisk the
egg whites to soft peaks.
• Once the chocolate mixture is cooled
down mix the egg yolks and coffee
powder in it, fold the egg whites later in
the chocolate mix.
• Butter a cake tin and place aluminium
foil in it, pour the chocolate mix in it
bake in the oven at 170 degrees for
40 min.
• Once done cool down and flip to take
out the foil carefully.

you, thanks to its idyll

n the year 1722, when a canal was
constructed as a shortcut to bypass
a bend in the Om Kret branch of
the Chao Phraya River a section was cut
off eventually becoming a separate
island. And Koh Kret was born.
Known for its beautiful clay pottery
and considered one of Bangkok’s
hidden treasures it can be reached from
Sathorn pier in approximately 90
minutes by a long-tailed boat. Here,
lives a community of craftsmen famous
for their distinctive style of pottery
which dates back to several centuries!
Descendants of the Mon people of
Koh Kret have managed to retain the
skills of their forefathers. The island, a
centre for “kwan arman” style of Mon
pottery is fundamentally just baked
unglazed red clay carved with intricate
patterns. Prices for the simplest and
smallest pots start from as low as 5 baht
a piece, but can go up to hundreds or
even thousands of baht for large ornate
pieces. Particularly popular among
visitors are candle and incense holders
with ornate patterns of holes to let the
smoke or light out, averaging around
200 baht. There are some 20 pottery
workshops on the island and one can
see many kilns as one walk’s around.
Mon potters also make pottery which
can be used in daily life, like soup bowls,
night lamps and aromatherapy lamps.
The other attraction at Koh Kret is
the Wat Poramaiyikawat temple,
constructed in Mon style and which
was built about 200 years ago. In 1873,
King Rama V visited the temple and
ordered the renovation and later on
reconstruction of the main temple.

How to get there?
Bangkok is connected by direct
flights from New Delhi, Mumbai,
Kolkata, Chennai and
Bengaluru. The easiest way to
reach Koh Kret is to take the
once-weekly Chao Phraya
Express Koh Kret tour, which
leaves the Central Pier (BTS
Saphan Taksin) every Sunday at
09am and visits a number of
attractions before returning at
3:30pm. The cost of the cruise
and guided tour is 300 baht
(no lunch).
Where to stay?
Siam City Hotel, located
adjacent to the Phaya Thai BTS
sky-train station, is a convenient
location to stay, as almost all
tourist attractions including
Grand Palace, Wat Arun and
Sathorn pier are easy to reach.
Also the hotel is itself located
which is a tourist attraction in
itself owing to the treasures
of art housed in this palace.
There are no hotels or
guesthouses on Koh Kret.
Most visitors visit Koh Kret
as a day trip from Bangkok.
Sathorn pier which is adjacent to
Saphan Takshin BTS Station and
makes one’s way to Nonthaburi pier,
an hour-long ride on the fast flowing
waters of the Chao Praya river taking
you through the rural outskirts of
Bangkok. Alight at Nonthaburi pier to
hire a long tailed boat which will take
you to Koh Kret and return after an
hour’s halt. Here both sides of the
streets are filled with shops selling
pottery of various kinds. Aroma
therapy candle holders, night lamps
and large pots in a distinctive style are
arranged one on top of the other in
endless rows. Street vendors selling
everything from fried potatoes to
papaya salads are found along the way.
As you walk about 2km you come
across several Buddhist temples whose
spires can be seen from a distance.
The entrance to the temple is small
but one can sight a golden coloured
statue of Quan Yin from the opening.
Behind the temple is a pottery
museum, which details the history of
Koh Kret village and the Mon
tribesmen who came settled here and
continue to make pots like their
forefathers. Several attractive pots and
vases from this village are displayed
and look gorgeous with dim lighting illuminating the exhibits in the museum.
Fresh tropical fruits including
durians, mangosteens, pineapples,
tender coconuts and jack-fruits are
available plenty at the local market
here. Do savour the island specialty
rice preparation, called “Khao Cher”
which is similar to Orissa’s “pakhalo”
in Kerala’s “kanji”. A Mon specialty
and favourite during the summer
months, this rice dish is served with
chilled fragrant water and needs to be
is eaten with green papaya salad and
roasted peanuts.
Before you head back to your boat
do check out the souvenirs at roadside
stalls like Thai herbal compress
bags for steam massage, Thai herbs
and of course, pieces of pottery
which can endure the journey back
home lasting the airport conveyor belts

Barack Obama, seated in the White
House and surrounded by his aides,
signed the health care bill he used not one

Shui adorned in 18ct gold-plated leaves.

market for concierge services is fairly young and yet immature in
India. There is tremendous scope for growth. People will slowly
but surely understand this term and its utilities,” concludes Sinh.

You began by seeking the story of Kumaris and ended
up doing an exhaustive book on Nepal’s past and its
present taking 13 years to complete it.
It’s actually been far longer than that! I first came across the
Kumari when I was 18, travelling in my gap year in 1983 after
finishing school, with three friends (one of whom later
became my husband). We ended up in Kathmandu renting a
couple of rooms at the top of Freak Street overlooking the
old royal palace of Hanuman Dhoka. So we found ourselves,
scattered body parts to interviewing her boss’s niece, the
couture-cupcake designer. In between dicing with death and
absurdity, Ayesha despairs over ever meeting a nice guy,
someone like her old friend Saad, whose shoulder she cries on
after every romantic misadventure. Her choices seem limited
to narcissistic, adrenaline-chasing reporters who’ll do anything
to get their next story—to the spoilt offspring of the Karachi
elite who’ll do anything to cure their boredom. Her more
pressing problem, however, is how to straighten her hair
during the chronic power outages. Sharp and scathing Saba

As a manifestation of the Supreme Goddess, the Kumari is
a powerful protectress. Pulling her around the city in a
golden temple chariot was believed to reinvigorate the forcefield of energy – of shakti - protecting the city. Even today,
the jatra is believed to have this protective purpose – not just
on a physical level, but on a metaphysical level too. The
Kumari bestows blessings as she passes, instilling the citizens
of Kathmandu, and by extension the country, with
compassion and right mindedness. In times of political
turmoil, such as Nepal has experienced over the past decade

The traditional guardians of Kumari worship, namely the
Kumari caretakers, tantric priests, royal astrologers or

them. Careful never to ask specifically about esoteric
practices, I learnt only enough to know that many of the
esoteric rituals of Kumari worship involve secret mantras
and powerful visualisations. To Hindus, Kumari embodies
the esoteric goddess Taleju, protectress of the Malla kings,
whose gigantic five-roofed pagoda temple towers over the
old royal palace in the centre of Kathmandu. To Buddhists
she is Vajravarahi, consort of Chakrasamvara, the deity at
the heart of a mandala that represents, at one and the same
time, the chakras of the body, and the landscape of the
Kathmandu Valley itself. To both Hindus and Buddhists the
Kumari, a living child, is the one form of the Goddess that
most of us, in this age of Kali, are able to see. That’s why she
and exercising regularly to work-related behaviors such as
learning effectively and influencing customers’ purchases. He
proposes effective tools to help individuals change behaviour
and to help people influence the habits of the people around
them. Here are six things you can do to you change your
habits: learn about yourself; focus on positive goals; manage
your environment; find happy people; be active; and be kind

Understandable we all have stories in us
but just proficiency in the language
doesn’t make us a raconteur of a tale.
Though a genuine and an exemplary attempt at bringing
diverse voices together, the collection also fails due to
grammatical, syntactical and factual errors. Seeking the

story quickly—but in a way that the reader feels like he or

With the abolishing of monarchy and the establishment
of democracy do you see the Kumari jatra coming to
an end soon?
If anything I would say Kumari jatra is more popular than
ever. In 2007, shortly after the overthrow of the monarchy,
the jatra celebrated its 250th anniversary. For the first time
the event was attended not by the King but by the Prime
Minister. It was an incredible occasion, attended by
thousands, with special events preceding it, including a
Kanya Kumari Puja involving 350 little girls from the locality
of central Kathmandu being invoked with the Goddess and
worshipped by passersby. Kanya Puja is a reminder to
everyone that every little girl is a Kumari. In the last couple
of years pujas like this have become very popular. So now, in
a sense, Kumari worship is going back to its deepest roots,
recalling a time when it was a tradition for everyone, before
it was adopted by the Malla kings and the Shah dynasty.
