Ingredients: 12 servings
•
12 oz. mozzarella string cheese
(fat-free)
•
1/2 cup bread crumbs
•
1/2 cup marinara sauce (prepared,
warmed)
•
1/2 cup milk (1% low fat)
•
1/2 tsp. oregano (dried)
•
1/2 tsp. basil (dried)
•
cooking spray (non-stick)
Directions: preheat oven to 350˚F
1. Line a baking sheet with foil and spray lightly with cooking spray.
2. Remove cheese from package and cut into bite size pieces.
3. In a small non-stick skillet, mix oregano and basil with bread crumbs.
4. Cook over medium heat, stirring occasionally until crumbs are lightly browned, about 5 minutes.
5. Dip each piece of cheese in milk and then into toasted bread crumbs, coating completely.
6. Place on baking sheet about 1 ½ inches apart.
7. Spray string cheese lightly with non-stick cooking spray.
8. Bake 5-6 minutes or until heated through. Cheese may melt slightly and lose shape. Simply press it back into place.
9. Dip in warmed marinara sauce.

SELECTION:

Select those with smooth, firm, satin-like, glossy, skin. An eggplant should feel
heavy for its size. Avoid ones that have brown or soft spots and dull skin.
STORAGE:

Eggplant becomes bitter with age and should be used as soon as possible after purchase. The maximum shelf life is about 3-5 days from point of purchase.
The optimal temperature to store an eggplant is right around 50 degrees. It is best to
wrap them in a paper towel and store in the coolest place of the house.

Eggplant is low in calories, with approximately 35 per cup and is 95% water. It contains no fat and its high fiber content
can help you feel full.
Eggplant that is baked using healthy fats, like olive oil, and with little or no breading, may lower ‘bad’ cholesterol.
Eggplants are high in bioflavonoids, which are known to control high blood pressure and relieve stress.

“Sweating” an eggplant before cooking cuts down on bitterness and prevents excessive oil from being soaked up
during frying. To do so, wash the eggplant and cut off the top and bottom (peel if desired). Then, cut the eggplant in the
desired shape and size; place the eggplant in a colander in the sink and lightly salt the eggplant. After 30 minutes, rinse
the eggplant and use as desired.
Eggplants are actually berries and not vegetables.
The Italians once referred to eggplants as “crazy apples” because it was believed that consuming a large amount of eggplant lead to madness.
The eggplant was introduced to the U.S. by Thomas Jefferson after receiving an eggplant from a French friend.

Yummy Eggplant Lasagna

Ingredients: 6 servings
•
6 whole-grain lasagna sheets
•
1 small onion, diced
•
1/4 cup water
•
2 small eggplants, peeled and diced
•
2 small carrots, diced
•
1/4 tsp. salt
•
18 black olives, pitted and finely
chopped
•
1 tbsp. finely chopped fresh
cilantro leaves
•
1 cup shredded low-fat
mozzarella cheese
•
1 red bell pepper, seeded and diced
•
1/4 cup olive oil
•
2 cloves garlic, finely chopped
•
3/4 cup tomato sauce
Directions: preheat oven to 350˚F
1. In a large pot of boiling water, cook the lasagna until tender, about 7 minutes. Drain the lasagna and let it cool on a flat surface.
2. While the lasagna is boiling, in a large sauté pan over moderate heat, warm the olive oil. Add the onion, garlic, water, eggplants, carrots, bell pepper, olives, cilantro, and salt;
cook, stirring occasionally, until the veggies are tender, about 8 minutes.
3. On a work surface, spread about 2 tablespoons of the eggplant filling over each lasagna noodle. Using about half of the total amount, divide the cheese among the lasagna noodles. Starting with the edge closest to you, roll each lasagna noodle tightly then secure with a toothpick.
4. Place the lasagna rolls in a large baking dish and cover each one with some tomato sauce and the reserved cheese.
5. Bake until the cheese is golden, 15 to 20 minutes.

Chicken Cheeseball Kabobs on Veggie Spaghetti
Ingredients for Chicken Cheeseball Kabobs:
• 1 lb. ground chicken
• 1 tbsp. olive oil
• ½ tsp. salt
• ¼ lb. skim-milk mozzarella, cut into cubes
• 2 garlic cloves, peeled and minced
• 1/8 tsp. ground black pepper
• 1/3 cup grated Parmesan cheese
• 1 egg
• ¼ cup parsley, chopped
• 1 cup whole-wheat breadcrumbs
• 2 tbsp. Italian seasoning, dried
• 6 wooden skewers
• Optional - 1 ½ cups of marinara sauce for dipping
Ingredients for Veggie Spaghetti:

• 6 zucchini
• 2 tbsp. olive oil
• 2 tbsp. basil, finely chopped
• 3 yellow squash
• 2 garlic cloves, peeled and minced
• 1 ½ cups shredded carrots
Directions: (PREHEAT OVEN TO 375˚F)
1.Using a spiral veggie slicer, mandolin or box grater, shred zucchini and yellow squash into thin strips so it looks like spaghetti and place on a plate lined
with paper towels. (set to aside)
2. Cover a large baking sheet with aluminum foil and grease with olive oil.
3. In a large mixing bowl, combine chicken, breadcrumbs, cheese, parsley, seasoning, and garlic.
4. In a small bowl, beat the egg with salt and pepper until well blended.
5.Pour the egg into the chicken mixture and mix with a large spoon until blended. Using a soup spoon or tablespoon as a guide, scoop out the chicken
mixture and form balls, about 1½ inches wide. Push two mozzarella cubes into the center of each ball and re-form the chicken over the cheese so they
are covered and in a meatball shape.
6.Bake for 15 minutes, or until golden on bottom; then, turn over and cook 10 more minutes. When cooked, stick three chicken cheese balls per skewer to
serve over the Veggie Spaghetti.
7. While the meatballs are baking, in a large nonstick skillet, warm oil on medium heat.
8.Pat the zucchini and squash “noodles” dry and add them along with the, garlic, and carrots to the heated skillet. Cook until tender but not mushy, about
5 minutes.
9.Divide the vegetables onto 6 plates and sprinkle with chopped basil. Place the Chicken Cheeseball Kabobs on top. Optional - Serve marinara sauce on
the side, for dipping.
10. Enjoy :-)
NOTE: If there are no skewers on hand, then just place the meatballs on the lined pan (not touching) and then bake according to directions.

Chicken Kabobs and Barley Pilaf
Assuring the consumption of adequate fiber is an important behavior to promote optimal health. Fiber reduces the risk for some cancers
and also helps to keep blood sugar and the bad cholesterol in your blood in balance to reduce the risk of heart disease. Eating foods that
are good sources of fiber also assist with your weight management goals because
these types of food usually have less calories and are more filling and take longer

The two types of fiber are insoluble and soluble fiber. It is important to include both
types of fiber in your diet. Insoluble fiber promotes regular bowel movements, prevents constipation, removes toxic waste, and helps
to prevent colon cancer. Soluble fiber binds with fats and helps to lower the bad cholesterol in blood (Low Density Lipoproteins-LDLs),
regulates blood sugar to help lower the risk of heart disease, and assists with the management of diabetes.
Because each type of fiber plays an important role in your overall health, it is important to choose foods that will supply your body with
what it needs. However, when making food choice decisions, it is not necessary be overly focused about the amount and which type of
fiber you are consuming. The key is to focus on building a healthy eating pattern. By aiming to make most of your choices whole grain,
eating a variety of fruits and vegetables, while consuming at least 7 servings per day, and limiting consumption of processed, empty
calorie foods, you will likely meet your fiber needs! A good start is to be sure to fill half your plate with fruits and vegetables during meal
time.
Food Sources of Insoluble Fiber: Vegetables, such as green beans and dark green leafy vegetables; fruit skins and root vegetable skins;
whole-wheat products; wheat and corn bran; seeds and nuts.
Food Sources of Soluble Fiber: Oat/oat bran; dried beans and peas; nuts; barley; flax seed; oranges and apples; carrots.
This meal features a unique way to serve fiber and antioxidant-rich barley and promotes the consumption of a variety of vegetables. This
meal also proves that barley shouldn’t only be used in soup!
Directions: Preheat oven to 350˚f
1) Begin by cutting 12-15 oz. of boneless, skinless chicken (breast
or thighs) into 2 inch cubes and then add the cubed chicken to
a large bowl. Mix in 2 Tbsp. olive oil, 2 Tbsp. balsamic vinegar,
1/4th tsp. garlic salt and a couple of dashes of black pepper. Set
aside to marinate.
2) On a sanitized surface and with clean hands, wash and
prepare the vegetables and begin soaking the wooden skewers.
3) Remove the core and seeds from one green pepper and one
red pepper, and then cut into chunks. Cut 1 yellow squash and 1
zucchini into ½ inch slices. Dice 1 medium onion and set aside for
use in the pilaf.
4) Place the cut peppers and zucchini in a bowl, add 8 cherry
tomatoes and then lightly season with a little salt and 1 Tbsp. olive
oil. Toss gently.
Serves: 4
in the oven. Bake until the chicken is cooked through and the
vegetables are tender (about 20 minutes—turn ½ way through).
7) While the kabobs are baking, melt 1 Tbsp. butter in a medium
sauce pan over medium heat; add the onion, and sprinkle with
salt and pepper. Sauté the onion for about 5 minutes, or until
they begin to soften.
8) Add ¾ cup quick barley to the onions, cook and stir
constantly for about 2 minutes and then add 2 cups of low sodium
chicken or vegetable broth and 1 bay leaf. Reduce the heat to
low, cover and cook until the barley is almost tender (about 20-25
minutes). Salt and pepper to taste; top with a little freshly grated
parmesan cheese and fresh parsley, if desired.
9) Serve each plate with 1/4th of the pilaf, 2 kabobs, and a side
dish of your favorite fruit.
5) Build 8 kabobs by placing the vegetables and chicken on the
skewers, paying attention that the vegetables and chicken are
equally distributed across the 8 skewers. Discard the chicken
marinade.
Notes:
6) Place the skewers on a foil lined baking pan and place the pan
Consider adding a little curry to the pilaf.
The marinate works well for any type of meat. Consider using
minced garlic, adding a little more, if you are a garlic lover.
