Al Copeland was born and raised in New Orleans, coming from poverty and living in the St. Thomas projects as a child. Al Copeland tested himself early, striving to be more than just another kid on his block. With
visions of grandeur entering the young man’s thoughts, he quickly established himself among co-workers as
the guy who could do everything faster and better than the other employees. Al’s ambition, drive, and
desire to be ‘the best’ became his single, motivational factor that would in time vault him to the top. Through
hard work & dedication at age 16, he worked two jobs and saved enough money to open his first business at
age 18. A 12 X 24 donut shop called Al's Tastee Donuts that he expanded to three donut shops.
Al became interested in the fried chicken business and he started to develop recipes at home, which he
continually tried on his kids and family. From that came spicy fried chicken, which lead to the founding of
Popeye's Famous Fried Chicken on June 13, 1972. Al founded Popeye's from one single restaurant, which
grew to 2100 restaurants worldwide in twenty years, securing the number two spot for the largest fried
chicken operation in the world and achieving the highest average volume in the fried chicken industry.
From the beginning, Al's goal was to keep his recipes a secret with a formula only he knew. He mixed the
ingredients himself for all stores until he developed a system that other people could use and still maintain
the recipe secret, which still they are today. Popeye's Fried Chicken is a certified true secret recipe. That
was the beginning of Al's largest company today, Diversified Foods and Seasonings. That company now
has in effect an in perpetuity contract to supply Popeye's its recipes, batter, breading, seasonings, cooked

In 1983, Al formally introduced a new chain of full service restaurants called Copeland's of New Orleans.
His heritage helped give him the critical palette used in developing all the unique dishes found in each of
his restaurant concepts, leading the chain to be the number one Cajun concept in the New Orleans area
for the past 25 years. Al named the restaurant concept with his family name out of respect, pride, and
confidence – owing it all to the people that work with him, the city that he loves and calls home, and to
the many paths and streets he’s taken along the way that always seem to have been named for his
personal “desire.”
The Copeland brands have grown to be one of the premium names in the hospitality industry. Not only
did Al start an evolution with his award-winning restaurants, but he also commanded the top spot in the
highly competitive and dangerous sport of world class offshore speedboat racing, with more wins than any
other team in racing history. Al has also been named Restaurateur of the Year while maintaining his hometown roots as one of New Orleans’ favorite sons.

Copeland’s of New Orleans has taken on a spectacular
new prototype, “The Home Town” Copeland’s. The
6,100 square-foot restaurant will reflect the spirit of
New Orleans through its design, comfortable, casual
ambiance, hospitable service and high energy lounge.
The menu will feature full-flavored dishes that reflect the
concept’s commitment to the culinary traditions and
heritage of New Orleans.
This New Orleans flare will continue through the
restaurant’s comfortable design with “fleur de lis”
wrought-iron designs, gas lanterns on the exteriors
and interiors of the building, embossed tin ceilings
and brick walls accented with dark wood tones.
From the moment the guest enters the front door,
the aromas from the bakery will begin the sensory
experience. The guest then has the option to enter
the New Orleans designed dining room or the
high energy bar. A state-of-the-art sound system
creates the mood.
