Michelin-Starred Four Seasons Chef Vito Mollica Moonlights at Culina, Modern Italian for Celebration of Restaurant's Five-Year Anniversary This March Internationally acclaimed chef from Four Seasons Hotel Firenze joins forces with Culina Executive Chef Mette Williams at Four Seasons Hotel Los Angeles at Beverly Hills to curate special commemorative menu February 11, 2015, Los Angeles at Beverly Hills, U.S.A. In honour of Culina, Modern Italian's fifth-year-anniversary in the prestigious Four Seasons Hotel Los Angeles at Beverly Hills, Executive Chef Vito Mollica of Il Palagio Ristorante at Four Seasons Hotel Firenze in Florence will be joining the talented culinary team at the Cal-Italian hot spot for a five-day celebration. Starting on Saturday, February 28, 2015, the restaurant, known for its beautiful crudo dishes and pristine housemade pastas, will spotlight à la carte specials from Chef Mollica, as well as a five-course collaborative dinner menu that features offerings from Chef Mollica and Culina Executive Chef Mette 1 Williams. The menu, priced at USD 65 per person, will be available through the evening of Wednesday, March 4. "We are honoured to have Chef Mollica join our team for this special occasion to share his Michelin awardwinning cuisine with our guests," says Mehdi Eftekari, General Manager of Four Seasons Hotel Los Angeles at Beverly Hills. "The menu that Chef Mollica has created with Chef Mette showcases the best of the Italian culinary tradition with both a classic and California-inspired perspective." The five-course dinner menu, offering alternating courses from Chefs Mollica and Williams, will start with an antipasti of sea bass and beef fillet carpaccio with bone marrow, sea urchin and citrus dressing from Chef Mollica; followed by a primi piatti from Chef Williams featuring a ravioli carbonara, prosciutto wrapped egg yolk, mascarpone and pancetta. Chef Mollica will take on the secondi piatti with a seared sea bass in an olive and tomato crust with white wine scented artichokes, with Chef Williams concluding the savory courses with the terzi piatti of beef “tongue and cheeks” with cannellini bean ragu, eggplant caponata and roasted pepper coulis. To conclude the meal, Chef Mollica will offer the dolci finale - a mascarpone ingot with caramelized nuts and coffee ice cream. In addition to the evening tasting menu, Chef Mollica's à la carte specials will be offered alongside the everyday lunch and dinner menus at Culina. Dishes will include antipasti such as seared scallops with broccoli rabe coulis, primi piatti, fresh pea risotto with burrata cheese and black truffle, and secondi piatti, dry fig-stuffed quail with creamed celeriac and seared foie gras. Dessert will include items such as millefoglie, a crispy puff pastry with strawberries. Mollica's famed cavatelli pasta with cacio e pepe sauce, baby calamari and marinated prawns, named dish of the year by I Ristoranti d’Italia de l’Espresso (Italian Restaurants Guide) in 2013, will also be making an appearance as an à la carte special at dinner. During the day, power lunchers will have the opportunity to savour Chef Mollica's spin on a "Quartetto," Culina's daily lunch special that features four small courses all on one plate. "I'm excited for the opportunity to share a taste of Florence with the diners at Culina, prepared in the tradition of the cuisine we offer at Il Palagio," says Mollica, a veteran Four Seasons chef who has been with the Four Seasons family since 1996.
