One of Liz’s relatives had arranged a special VIP tour of the micro-brewery at the Church inn, in the shadow of Saddleworth Parish Church. Rico, 54, a car mechanic, heads up a team of dedicated brewers in his home town of Almere. They brew a wide selection of beers at a facility in a local restaurant. Liz, a notary in Holland, is daughter of Peter Stott. She said:’ Julian made us very welcome. “My husband and I have had a lifelong love interest in good beers. We even brew ales in the attic of our house”. “We make a selection of blond and other beers – but nothing like Julian’s”. In the main, Dutch people drink beers that normally stronger than their English counterparts. They are expensive to buy. “However, Shaftbender is something else,” she added. “It really suited Rico’s palate and we are sure it will be a big hit with our friends back home.” Said Rico: “I knew once I’d tasted Shaftbender it that it was a winner. It has a strong clean flavour and I am sure it will be a big hit with my Dutch brewing friends.” A powerful Saddleworth ale is to be brewed by a bunch of Dutch beermakers. The secret recipe for Shaftbender, dark ale from Julian Taylor’s century-old brew house in Uppermill, has been presented to a Dutch couple on a whistle stop family tour. Saddleworth-born Liz Waterhout and her husband Rico, married for 34 Julian and father Michael, describe themselves ‘as brewers of mental distortion’. Said Julian: “Rico and Liz are a lovely couple. In the autumn of 2005, Hartshead Meats had outgrown it’s start-up premises and so the decision was taken to construct a new purpose built, building containing cold rooms, preparation rooms, hanging rooms etc. A grant was applied for and approved by Defra’s Rural Enterprise Scheme and work commenced in November 2005 and was completed early in 2006. The new farm butchery was also developed in consultation with the Meat Hygiene Service who regulate all fresh meat premises, this ensured that all the new equipment installed complied with current and any pending European legislation. All the beef is hung on the bone in their hanging room for at least 21 days, this traditional method enables the meat to mature, giving full flavour and tenderness for all cuts. The beef is also guaranteed to come from cattle that are under 30 months of age, which again ensures the highest quality meat, giving unrivalled texture and taste. The meat is vacuum packed and labelled so that it can be directly traced back to source. Whilst meat supplied is predominantly beef, Hartshead Meats also supply high quality lamb and pork. With so many historic sites to choose from, you are spoilt for choice when it comes to taking a short break back in British history. Alan Titchmarsh is currently narrowing down the choice for a new programme, Britain’s Best, appearing on UKTV History. The series will feature some of the best-loved historical sites in Britain along with personal favourites from a public vote. Voting began in the spring and will continue until late summer. “You don’t have to go far to see some of the great buildings or gardens from our past,” says Titchmarsh. “We want you to tell us about the ones dear to you so others can enjoy them too.” From the voting so far, the following historic sights are revealed as current favourites. If you disagree, cast your own vote. V Top castle: Dover Castle, Kent A castle has existed on the site ever since William the Conqueror marched to Dover after the Battle Hastings. The castle, perched above the white cliffs, has played a long and crucial role in defending Britain from attack and tells the story of two key battles in British history during the 13th and 20th centuries. Today, visitors can stroll around this impenetrable 25m-high fortress and relive its 900 years of history. You can even explore the secret wartime tunnels used by Churchill, some of which date back the 13th century. Top palace: Linlithgow Palace, Lothian The now ruined palace was the birthplace of Mary, Queen of Scots, and was home to many other notable royal residents. The ruins sit atop a hill overlooking the loch, the Royal Burgh of Linlithgow and the ancient church of St Michael. Building on the site began in the 12th century, but construction of the present-day palace was begun in 1425 by James I. It was home to kings and queens from James I to James V, father of Mary, Queen of Scots. Other notable residents include Oliver Cromwell (1650–51) and Prince Charles (1745). It is famously home to the tallest spire in England, the largest cloister in England, possibly the oldest working clock mechanism in the world and one of only four original copies of Magna Carta. Top historic house: Skara Brae, Orkneys Older than Stonehenge and the Egyptian pyramids, the remarkable Neolithic remains at Skara Brae are northern Europe’s best-preserved prehistoric village. The Stone Age ruins were only uncovered during the great storm of 1850 and were dated back to around 3000BC. The eight houses are believed to have belonged to a community of farmers and hunters. Not only can you see the walls and alleyways of the structures they built, but also their beds, dressers and fireplaces. And that doesn’t mean a couple of bottles of cheap plonk and a lump of mousetrap. It’s so easy to collect the ingredients for a cheese and wine gathering and make a good impression on your guests without running yourself ragged. A little imagination and a productive trip to the supermarket or friendly deli is all you need. And there’s no cooking. That way, when your guests arrive, you won’t be stuck in the kitchen but will be able to join in and relax, which is what a party is all about. Take your pick from the wide variety of cheeses available. Include everyone’s favourite, Cheddar, a blue cheese, a soft cheese such as Brie or Camembert, a garlicky cheese and at least one specialist cheese for the connoisseurs. Provide a variety of breads, such as crusty white and wholemeal, focaccia, trusty garlic bread and at least one of the speciality loaves that are now so trendy, such as olive or sundried tomato. Provide a dish of cream crackers or savoury biscuits and a selection of tasty relishes and pickles, silverskin onions, baby cocktail gherkins, pickled baby beetroot or caramelised onion. You should also provide butter and lowfat spread for those watching their figures. To add some colour slice or dice red and green peppers, cucumber, carrot, button mushrooms and celery and add a dish of cherry tomatoes to the table. Use these crudités with a vegetarian or cheese-based dip. A couple of cheese flans or basic margarita pizzas picked up from the chilled counter of the supermarket, served hot or cold, will take no time to get ready. Fruit, especially grapes, always works well with cheese, so serve a dish of both red and white grapes for your guests. Crunchy apple and pear slices are a great idea too. You might decide to opt for a theme, with all your cheeses from, perhaps, France or Italy. If you decide on a national theme, you could select that country’s wines too. Britain is more of a beer and cheese country, but an Italian or French wine and cheese combination works well. around SADDLEWORTH 12 How much alcohol you buy depends on how many people you invite and how long your party should last. Generally allow for one glass of wine per hour, five glasses of wine per bottle. A basic party for 18 would require about 11 or 12 bottles of wine, with at least one rose, four red and five white. There’s no business like show business, but it is certainly the most difficult to succeed in. Just ask any number of ex-soap stars or out-of-favour pop stars. Becoming famous and staying in the public eye is a full-time career, but only the children of the already rich and famous are born with a degree in stardom. The rest of them have to work at it, like anyone. Before they hit the big time, all celebrities need to make a living. He finished his degree and moved to San Francisco attending the American Conservatory Theater for one year before pursuing acting work and later earning multiple awards. Will Ferrell as a sportscaster: After comedian Will Ferrell graduated from the University of Southern California with a degree in sports information, he took a job as a sportscaster on a weekly cable show. When his stand-up shows and acting career took off, he coincidentally revisited his former career playing a newscaster for a cable network in Anchorman: The Legend of Ron Burgundy. Lucy Liu as linguist: Before finding fame and admiration in Charlie’s Angels, Liu attended New York University before transferring to the University of Michigan where she graduated in Asian languages. During her last year of college, she took the lead role in her college’s production of Alice in Wonderland and becoming a linguist was history. Enjoy! Failing to get things right and in keeping with the period can devalue a property. The first thing to remember is that there were many different period styles within the Victorian era itself. The décor at the accession of Queen Victoria to the throne in 1837 was very different following her death, over 60 years later, in 1901. If you know the date when your home was built, use that as a guideline for interior styling. It is possible to add styles that post-date your home, but you should avoid any styles that pre-date it. Here are just some of the important styling features of a period Victorian home. I Bathrooms: If you are planning to use reproductions, you can find some fantastic Victorian-styled roll-top baths with ornate lion’s paw, claw or ball feet, toilet pans and cisterns at very reasonable prices. One thing to remember is that Victorian bathrooms were viewed as functional around SADDLEWORTH 16 rooms, so were simplistic when compared with other rooms in the house. Decorating with ornaments, pictures and accessories should be avoided. Bathroom flooring was functional and usually made up of cheap, six-inch quarry tiles in plain, unglazed red clay or alternating colours like blue and black. They usually featured a tiled dado rail with a moulded ceramic rail. Kitchens: This is the most difficult room to pull off in keeping with the period, thanks to the necessary modern appliances. Like bathrooms, kitchens were viewed as functional rooms and so were reasonably sparse. They often featured built-in dressers, although you will be lucky to find an original. The best tip is to avoid an entirely fitted kitchen, instead adding a functional dresser in Victorian style. Never add a modern kitchen to a Victorian home – future buyers will not look favourably at a modern kitchen in an otherwise period home. Look for simple wooden kitchen tables with equally functional plain chairs. The tiled floor should be similar to the one in the bathroom. Flooring: Most Victorian houses featured at least one room with a carpet, which normally had a wooden border around it. Carpets were heavily patterned with flower, animal or geometric designs, usually in dark green, red or pink. Parquet flooring only featured in the early period, usually as a two-foot deep carpet border. The finest Victorian houses used unglazed encaustic tiles, which involved stamping a design into soft clay tiles and filling the indentation with liquid clay of a contrasting colour before being fired. The Victorians used to mix encaustic tiles with quarry tiles and geometric tiles. Scour architectural salvage sights for an expensive but powerfully emotive feel of the times. Walls: Dado rails became a popular addition to hallways and dining rooms. No Victorian home would feel right without wallpaper. Elaborate designs included hand-printed papers and intricately embossed designs in geometric or floral shapes. The recent popularity of wallpaper has resulted in a huge range of reproduction wall coverings and reasonable prices. If you are serious about recreating a true period house, research what styles were in vogue when your house was built. The Victorian Society Book of the Victorian House is an essential buy for any Victorian homeowner. It contains excellent explanations of the styles and materials used throughout the period, with sensible adaptations of the modern needs of kitchens and bathrooms. www.aroundsaddleworth.co.uk Out & About Drive & Dine Indulgence at The Victoria A short journey from Saddleworth brought us ”The Saddleworth Taste Team” an evening of culinary delights and entertainment. Nestled in the heart of Dukinfield on Victoria Road, The Victoria soon appeared and we hoped that it would live up to its increasing reputation as one of Cheshire's up and coming dining experiences. On our arrival we were greeted with a welcoming smile from our hosts for the evening Mark & Angela Flynn, a couple whose backgrounds stem from cooking to managing at some of the regions most sought after eateries and gastro establishments, including the infamous Gary Rhodes Watersreach Restaurant, near the Old Trafford football stadium. Once seated we were instantly impressed with the stylish decor and cosy atmosphere. The layout of the interior provides both an intimate dining area as well as a lively lounge bar area, ideal for pre meal aperitifs and after dinner refreshments. When Angela presented us with the menu, we instantly knew that our taste buds maybe in for a treat, as it presented a wide range of dishes for any appetite or taste without being overwhelming. For starters there were traditional dishes, sharing platters, vegetarian options (for either course) as well as the everchanging Specials, ranging from £2.75 to a reasonable £5.25 for fresh scallops. My decision was made in moments as appealing choices seemed to jump out at me. I opted for Roasted Flat Mushrooms, French Brie and Mixed Leaves to start whilst my girlfriend chose French Mussels from the Specials. The service was prompt and the food immaculately presented, my dish a tasty combination of complimentary flavours and the mussels faultlessly prepared in a rich creamy sauce. These perfect portions were ideal for beginning our evening. For the main course we had a choice of everything from Lamb Shank at £8.95, beer battered catch of the day at £7.25 and char-grilled Lakes n Dale Sirloin steak at £8.95. After slight hesitation we went for Fresh Tuna Steak with Buttery Veg and Duck with Spicy Plums. On tasting these mouth-watering dishes we soon discovered why they were a favourite with regulars! The tuna was cooked to perfection and served on a bed of green veg including fresh asparagus and selection of beans, whilst the succulent duck breast bonded with the plum and vegetable combination superbly. The meals were beautifully presented as we had come to expect by now, certainly ideal for a special occasion. For those just after a snack a choice of Hot 'Deli' Sandwiches and Warm Tortilla Wraps were on offer as well as side orders of the legendary Fat Chips. Needless to say delicious seasonal desserts were available, starting at £3.50, but being more than satisfied with our two courses we enjoyed a pot of filtered coffee and fresh cream. Following our meal, the atmosphere comfortably grew as we were entertained by the voice of Rick Moorehouse, just one of many talented acts to use this popular venue. His repertoire of old and modem classics capped off the perfect end to an enjoyable evening as we sat and enjoyed a final drink with Mark and Angela. A special mention has to be made to Jim and Bev McRae as well as there staff who were busy serving the growing band of friendly locals in the bar lounge area as well as successfully making us both feel very welcome. As we left to the song words of American Pie, we knew that this was not “So bye bye” but ciao for now as “we drove our chevy to the levy” This restaurant offers the customers exactly what they want. They are more than willing to cater for any dietary requirements or special requests and you are encouraged to make your wishes known to ensure that everyone has an enjoyable eating experience. Wilhelmina Nesbitt. Gemma is the daughter of Mr. Robert and Mrs. Penelope Ridley of Little Moss, whilst Mark is the son of Mr. Nicholas Mullin and Mrs. Diane Walker of Springhead, Saddleworth. T The reception was at the Hey Green Hotel, Marsden where the bride and groom and their 80 guests were greeted by the Master of Ceremonies, Mr. Alan Calow and a welcome glass of Pimms. The excellent wedding breakfast was accompanied by a String Quartet, whilst the evening and further guests, rocked away with Graham and Christian Wheeler (ex regulars of the Mill Experience will remember them as ‘WKD’) who reformed on the night by special request. (And what a good night they provided!) The bride and bridesmaid’s dresses were from Bride and Grooms of Shaw, the groom and his team were fitted out by Pronuptia, Manchester. The Cars from Vintage Wedding Cars of Salford, rings from Harrington and Hallworth of Ashton whilst the flowers came from Hadfields of Stalybridge and designed and produced by a close friend, Hazel (a member of Rochdale Riding Club). The beautiful hair and headdress arrangements were styled by Gemma’s work colleagues from Premier Hair Design of Lees where Gemma is a senior stylist. The official photographer for the day was Mr. Mark Gibbins of MG photography, Grasscroft. (Unfortunately, as this magazine went to print, his photos were not available, so the photos printed are from the private collection of Nicola Ridley, the bride’s sister, who also acted as her chief bridesmaid.) Luck was on the couple’s side when they won their wedding cake from Slatteries of Whitefield. The top of the cake consisted of an icing model of Gemma in her wedding dress sat on Chrissie, her horse, with Mark stood next to her carrying a hay net and being a ‘real’ groom! Gemma and Mark are both extremely involved with horses. They owned their own ponies and became members of the Saddleworth branch of the Pony Club whilst at a very early age. Both were very active members, partaking in show jumping and dressage and regularly represented the Club on Area around SADDLEWORTH 18 Teams. Their friendship blossomed but they became closer after attending Pony Club Associates Camp in July 2000. On Gemma’s 21st birthday, Mark gave her his event horse, Chrissie. Since then she has competed around the country at Novice Events with spectacular results! They both still support Saddleworth Pony Club by teaching and judging at the monthly shows and also are active members and teach and judge at Rochdale Riding Club. Their honeymoon has been spent partly at the famous Rolex 3 Day Event in Kentucky, U.S.A., staying at a 5 star hotel and also camping at Britain’s very own Badminton 3 day Event. Last of the big wedding spenders The romance of getting married is quite often marred by the worrying costs involved. The consensus is that the average outlay is spiralling ever upwards, but new research now suggests that couples may be becoming more restrained in their attitude to spending on their big day. The average cost of a wedding is now about £16,000. A survey carried out by Halifax Personal Loans reveals that only nine per cent of people think this is a reasonable amount to pay. Over half of those questioned thought this was too much to fork out on their nuptials, believing that £10,000 or less was a more appropriate figure. One quarter of people in the survey would hope to cut costs even further by spending between £1,000 and £5,000. Singletons are the most likely to be dreaming of an extravagant wedding, with a quarter of this group prepared to consider spending more than £15,000 when they get hitched. Interestingly, people who are already married or who had been married before were far less likely to see the need to splash out over the odds. Only 13 per cent and 15 per cent respectively believed it was reasonable to spend £15,000 or more. Young love knows no financial bounds it seems, with one in five of the 18–25 age group considering £15,000 and over a reasonable amount to pay. This compares with one in 10 of the 25–34 age group and eight per cent of the 35–44 age group. Northerners are most inclined to splash out on weddings. Four per cent said spending over £50,000 on their big day would be acceptable. Couples in the southwest are the least likely to pay over the odds, with 17 per cent considering less than £1,000 a reasonable amount. When it comes to the honeymoon, more people appear to be comfortable with the typical costs involved. The average cost of a honeymoon trip is estimated at £2,475. Nearly half of those questioned agreed that between £2,000 and £4,999 was a reasonable sum to pay. One in five considered over £5,000 a more suitable figure. Only three per cent thought it would be more reasonable to spend under £1,000. Ian Corfield, head of Halifax Unsecured Personal Loans, says, “Weddings seem to have come back in fashion in recent years and we have seen average costs increase dramatically. “However, our survey suggests that there may be a change in opinion as to how much couples should spend. Usually a person who is suffering from osteoarthritis only has problems in the weight-bearing joints of their hip, knee and spine. Inflammation flare-ups are usually best treated with rest, but osteoarthritis sufferers must alternate rest with activity to improve the function of their joints, not to mention keeping health in optimum condition. If you have been diagnosed with osteoarthritis or suffer from generally weak, troublesome joints but love to run, do high impact aerobics or play football, you will need to make some changes. The good news is that you can, and must, stay physically active without worsening your condition. There are excellent forms of gentle exercise that can strengthen joints and allimportant connective tissues, such as cartilage, ligaments and tendons. As with anyone, arthritis sufferers need to consider the health of their heart and lungs, physical endurance and muscle strength, as well as maintaining a healthy weight. What good are healthy joints if your cardio-fitness can’t keep up with you? Cycling (cardiovascular): Unlike walking, running, aerobics and other weightbearing activities, cycling is gentle on your joints but still provides a good cardiovascular workout and will help mobilise stiff joints. Either head to your gym, buy a cycling machine for your home or, better still, buy a bike and get some fresh air. Stretching (range of motion): This helps to increases joint motion, muscle strength and flexibility. Fitness experts recommend doing at least a half an hour of stretching two or three times a week. If you are doing any other exercise, make sure you always stretch before and after to avoid sports injuries. Strengthening: Gentle, regular weight-training will help you strengthen the muscles that help support vulnerable joints. This is one of the best ways you can help your joints function to their best capability. Swimming (all-rounder): Swimming is an excellent choice as the water supports the weight of your body so your joints won’t have to. The water also provides your muscles with resistance, which is excellent for improving their strength. Parkinson’s disease is a condition which belongs to a group of neurological conditions known as the motor system disorders. Parkinson’s disease results from a loss of a particular neuro-chemical agent called dopamine in an area of the brain called the substantia nigra. This area of the brain deals with movement. People with Parkinson’s disease therefore develop abnormality of movement such as a fine resting tremor, rigidity, bradykinesia (slowness of movement) and postural instability resulting in poor balance and co-ordination. As the disease progresses patients with this condition develop more pronounced physical disability and have difficulty walking, talking and generally carrying out their activities of daily living becomes an ultimate task. Parkinson’s disease usually starts to take its affect in those people aged 50 years and above. The symptoms early on in the disease are generally unnoticed and can take a number of years to become pronounced. There are no fancy medical tests to diagnose Parkinson’s disease and the diagnosis is reliant upon a thorough clinical history and neurological examination, Parkinson’s disease therefore becomes a difficult disease to diagnose. Who gets Parkinson’s disease? Parkinson’ disease affects thousands of people each year. The majority of people who get Parkinson’s are over fifty years, but there are reports of people in their teens developing the disease. Men and women appear to be equally affected. There are several associated risk factors for developing the disease and include; pesticide / herbicide exposure, head injury, personality disorders and those with excessive emotional and traumatic stress. There are a small group of patient’s with Parkinson’s disease who disease is of a genetic nature. These patients usually develop signs and symptoms of the disease before the fifth decade of life. Research into the disease has revealed two genes linked to the causation of the disease in these people. It is thought that there are many other genes and inherited factors involved in the disease which await discovery. Research into the genetic aspect of Parkinson’s disease is very new and thus genetic testing is not a routine part of diagnosis. Muhamed Ali - A long time sufferer with Parkinson’s Disease Surgery has its place in treating Parkinson’s disease. Surgeries on the deep structures in the brain have been shown to improve symptoms in some patients. Each neurosurgical procedure has its own risks and can be very expensive. Neurotransplantation is currently being researched in treating Parkinson’s disease. Improving quality of life How is it diagnosed? A doctor will make the diagnosis of Parkinson’s disease based upon a clinical history and examination. There are no specific tests to diagnose the disease, but special scans like a PET scan can support the diagnosis. These special scan can identify areas of neurochemical (dopamine) deficiency. Parkinson’s disease can also be a differential diagnosis of other neurological disorders such as multiple systems atrophy, vascular brain disease or progressive supranuclear palsy. It is beneficial for patients to educate themselves about Parkinson’s disease and a referral to a specialist centre can always help. There are many support groups and lots of information available from various health care professionals including physiotherapists. It is of paramount importance that people with Parkinson’s disease maintain a good diet which is high in fibre as constipation can become a common problem. General mobility can be improved dramatically with gentle exercise and regular physiotherapy can never go amiss. What is the treatment? Long term outcomes There are many doctor’s who have a special interest in treating patients with Parkinson’s disease, they are usually neurologists or geriatricians. Currently Parkinson’s disease is said to be an incurable condition. There are many drugs available which can be taken to control symptoms. The treatment is used to principally replace the dopamine which is required to initiate movement. Dopamine enhancing drugs such as levodopa can be life changing for people with severe disease. Levodopa is a commonly used drug to treat Parkinson’s disease; however it has many unwanted side effects. These include nausea, hallucinations, tiredness and development of abnormal excessive involuntary movements known as dyskinesias. Other drugs in addition to levodopa are available and are classed as dopamine agonists. These drugs appear to be less affective than levodopa in controlling symptoms. Medical treatment for Parkinson’s disease is best discussed with your doctor. Many people who are treated with drugs for their Parkinson’s find that there treatment wears off after a number of years. Some people experience involuntary movements as a result of the side effects of their medication. I am in Delph, that magical, cheeky, bustling little fold of a Saddleworth village linking the M62 from Junction 22 to the main A62 Oldham Road. For starters, as a rural idyll, it ticks all the boxes: it is sensibly laid out with lovely, mullioned windowed cottages sitting snugly alongside thriving businesses giving it a cosy, almost intimate feel, of a complete North Country village. Here, I discover that its its colourful, sometimes violent past (there used to be the odd scrap or three with the feisty locals in the 1800’s) the inn was once touched by Royalty. I will be looking to rent this out after April for £400 per month. Can I apply the rent-a-room scheme on the income I receive from this extension? A: The rent-a-room scheme only applies to ordinary lettings of living accommodation in the taxpayer’s own home. Unfortunately you cannot claim this if the rooms are let as an office or for another business purpose. If a property has been divided up, HM Revenue and Customs will want to satisfy that the part of the house being let, such as your new flat, is part of your main residence or is a separate residence entirely. They will generally allow a claim where the division of the property is only temporary. To determine this, they consider whether structural alterations are necessary to undo the division, and how long has the residence been divided up. They will also use other factors such as if the property has it own postal address and entry, and is metered for mains services. If you are uncertain as to whether rent a room is available on your property best to seek advice from your local TaxAssist Accountant. Signing Company Accounts & Tax Returns Q: My company accounts and corporation tax return needs to be filed soon, but I am actually going to be away on business for both deadlines. Is there anyone else who can sign the documents on my behalf as I am the only director? A: Unfortunately, if you are filing full accounts or abbreviated accounts at Companies House then there are two sections that need to be signed. In the absence of a director, the company secretary can sign the directors report. However, only the company director can sign the company balance sheet, so if you do not sign this your company accounts will be rejected. Amending My Income Tax Return Q: I rushed the submission of my tax return in January, and have now realised that I left off the interest I received from my bank accounts and dividends paid from some of my shareholdings during the 2005/06 tax year. Can I revise my tax return and will I incur any fines for doing this? A: Just as the Revenue has the right to repair an obvious error or mistake on a return the taxpayer has the right to amend it, within 12 months of the filing date for the tax return, which in the majority of cases is the following 31 January. The amendment to your tax return may be in the form of a letter detailing the omissions, an amended return, an extra supplementary page that shows the relevant source of income, or an amended supplementary page of one originally submitted with the return. The Revenue will normally accept an amendment to a return or self assessment under Section 9(4)(b) of the Taxes Management Act, whether it is notified by the taxpayer or by their agent. However, you must ensure the amendment is supplied in writing as it cannot be made over the phone. No penalties for late filing will be applicable, but you need to be aware that if the amendment results in additional tax to pay you will be charged interest from the due date of payment, which in your case was 31 January, and you will also be liable to a 5% surcharge if this was not paid by the end of February. Tax Free Incentive for Filing Payroll online Q: I remember last year employers were offered a £250 tax free payment to file their end of year PAYE returns online. Is this still available for the 2006/07 tax year, and how do I register? A: Yes, HM Revenue & Customs require small firms, by this it means those with less than 50 employees, to start using online filing for their end of year forms P35 by the 2009-10 tax year. With modern home brewing kits widely available, now is the time to start concocting your home brew in time for BBQ season. You can literally make hundreds of styles of beer that will taste great and impress your mates. Getting started making beer will only cost you a small amount of money, depending on your level of interest. Beginner kits start around £15 with advanced systems costing over £80. Making beer is just like cooking. Each recipe requires different ingredients and techniques but all beers include four basic ingredients: filtered water, malt (malted barley), hops and yeast. Malted barley is barley grain that has been carefully soaked in water until it sprouts and is then dried. This malting process develops the necessary sugars and soluble starches needed for fermentation. The malt is then taken through a process called mashing which extracts the sugars and starches from the grain. Although advanced home brewing kits can accomplish this step at home, most beginners buy the malted barley already mashed in a product called malt extract. Hops are green flowers that grow on a vine and they perform several roles in the beer making process. Since not all of the sugars will ferment, the malt will cause the beer to be really sweet. Hops will balance out the sweetness by adding a degree of bitterness. Hops will also add a distinctive aroma to the finished brew. Yeast is the catalyst that makes it all happen. In short, yeast is a living organism that feeds off the sugars in the malt. The yeast will convert the sugars to alcohol and carbon dioxide in a process called fermentation. The yeast will also add taste and qualities to the beer. In order to get the results needed for making beer, specially cultured beer yeast is required. When making beer, the malt, hops and water are boiled for a period of time. This mixture is called wort (pronounced wert). Then the wort is poured into a fermenter and allowed to cool. The only extra equipment required is a large boiler (around 5 gallons) for boiling the ingredients. The most advanced is the full mash kit. The raw ingredients of malted barley and hops produce a pint that should rival any served in the real ale pubs of Britain. Further equipment is required here including a mash tun. Its where Builders Buy Better www.aroundsaddleworth.co.uk House & Home Saddleworth Rushcart he Rushcart is firmly established in a Saddleworth Calendar that includes the Whit Friday Band Contests, Beer walk and Saddleworth Folk Festival. It attracts Morris sides from all over the UK and abroad and is the largest annual Morris dance festival in the North of England. As a result Saddleworth’s name, its beautiful countryside and its traditions have become well known and loved by thousands of visitors over the last 30 years. This year the Rushcart falls on the Bank Holiday weekend Saturday 25th & Sunday 26th August. The origins of the Rushcart are unknown but it is thought to be pre-Christian. In the Christian era it became the practice for each village and hamlet to build a cart of rushes and take them to the local church where the rushes would be spread on the floor, often mixed with fragrant herbs, as insulation against the cold of winter. The Rushcart grew into a festival held on the annual wakes or mill holidays, where there would be music, dancing and other entertainment. Each village in Saddleworth would try to outdo each other by building a bigger or more elaborate Rushcart with the front covered by a sheet decorated with tinsel and artificial flowers and hung with polished copper, brass and silver household items. The coming of the railways led to a decline in interest in Rushcarts as the local population were able to travel further field for their annual break. The Rushcarts eventually died out in the early 20th Century. T The Rushcart was revived in 1975 by the newly formed Saddleworth Morris Men following research by Peter Ashworth who was fortunate enough to be able to listen to the memories of the last Rushcarts from one or two of the older members of the community, such as Harold Buckley. He encouraged Peter and the other Morris Men to move beyond dancing and to re-establish the Rushcart. Doubt turned into determination and a cart was found at a local farm, stangs bought from George Hill Ltd and rope arrived from a mill in Delph. The rushes were cut up at Castleshaw and with the help of old plans, books and Harold, the Rushcart was built in the traditional location of the Uppermill Rushcart, the Commercial. Despite being dismissed by one old timer as ‘nowt like one’ the first Rushcart for over 50 years was ready and on the Saturday morning emerged from behind the Commercial to renew the old tradition. The 1975 audience of about two is in contrast to the hundreds that now gather in Uppermill. Nowadays the rushes are cut during August at the foot of Pule Hill off the A62 road to Marsden and built behind the Commercial Hotel, Uppermill onto a twowheeled cart, usually it is 13 feet high and weighs 2 tons. The cart is then trimmed and decorated with heather, on the Saturday morning the front is dressed with a banner made by a man chosen from the ranks of Saddleworth Morris Men as ‘jockey’. He is supplied with Ale for the day in a copper kettle. The cart is then pulled around the Saddleworth villages by Morris Men, there are usually 150 men on the stangs fixed to the cart by rope. On Sunday the Rushcart is taken to St Chad’s Church above Uppermill where the top is dismantled and in keeping with tradition the rushes are mixed with fragrant herbs and flowers and then symbolically spread in the aisles. In an age where all places increasing look the same and life has less and less variety and character, the Saddleworth community can be proud of its living heritage that stretches back centuries. As with all voluntary community events and groups, the Rushcart and Saddleworth Morris Men can only survive due to the help and commitment of the people who work hard to support them during the year. Volunteers are always needed to help maintain these traditions as a part of Saddleworth life to be enjoyed by all.
