Are You Living at Your Perfect Weight?

Last spring, I traveled to Toledo, Ohio, a heavily bluecollar city where Jeep vehicles have been built since
1941 and home to one of my favorite team names in
baseball–the Toledo Mud Hens.
I had been asked by community leaders to come
to the Glass City to speak about how the Toledans
could get healthier. Toledo may bill itself as the
“crossroads of America” since the metropolis lies at
the busy intersection of Interstate 90 and Interstate
75, but the collective health of its 300,000 citizens
was at a junction point as well. Men’s Health magazine
had recently ranked Toledo 98th out of the 100 best
and worst cities for men after crunching numbers
in 24 categories, including life-and-death data on
cancer, heart disease, and strokes. The joke around
town was that the only heavy lifting Toledo guys did
following work was raising a cold long neck after a
long day on the factory floor.

major companies were moving out of Toledo
because health costs for employees ran double the
national average, making the cost of hiring Toledo
residents too expensive.
I had been working on a program called “Perfect

Dear Readers,
I have a friend who once told me a story of visiting St. Patrick’s cathedral
in NewYork City with her friend Amelia.The beauty, art, and expansiveness of the cathedral were breathtaking, and the friends stopped to light
prayer candles at the shrines of different saints. Anyone who has been
to St. Patrick’s can understand how the feeling of hushed, holy silence
and splendor was overwhelming to the two women.When they left the
cathedral, my friend noticed Amelia was crying. “What’s wrong,” my friend asked her, “is everything okay?” Amelia explained that she felt guilty for her prayers.“I felt that in a place like that,
I needed to pray for something really big, like for all the suffering children and refugees in the
world. But instead I prayed for my mother.” Her mother was suffering from end stage Alzheimer’s
at that time, and the family had been in a great deal of pain. My friend tried to reassure Amelia
that there was nothing wrong with praying for her sick mother, but she was inconsolable.
I can understand Amelia’s feelings, because until recently I was very much like her. I have learned
so much since my son Dominique’s transition from this earth, expanding myself and my understanding in so many new ways. I have always prayed for things, but like Amelia, felt guilty for
asking God to fill my needs when so many around the world have nothing. Then God opened a
new way of thinking for me.There are no shortages; in fact, there is an incredible abundance for
all of us.There are no limited resources, and the limitations that do exist are self-created and live
only in our own minds. There is no shortage of money, mercy, or ability.When you free yourself
from thinking out of scarcity, you are free to co-create your life with God, and free to accomplish
whatever you desire.
Connecting to Source (God) also means disconnecting from negativity and toxic patterns that
keep us from Source.Through the experience of contrast in life, I believe that we know intuitively what is of Source and what is not. On every level–emotionally, mentally, even physically and
vibrationally, we can feel those things that disconnect us from joy. Staying connected to Source
is true and absolute bliss, abundance, and peace, but to do this, it’s important to put deliberate
intention behind what you choose to allow in your sphere of thinking.
Energy follows thought.When we give our thoughts to an idea, we are directing our energy to
go there as well, and often we give ourselves permission to let negative influences into our lives
without even realizing it. As I’ve gotten older, I am so careful of what I allow into my consciousness. Violent movies, news stories designed to terrify us, drama from others’ lives, negative reading
material, harsh music, etc... those things have power, and when I allow them in my life, my energy
goes to a toxic place that keeps me from being connected to Source.
Choose to be influenced by positive things. Spend time with your family, friends, pets, or alone if
that is what makes you happy. Make time to express your creative energy in whatever form gives
you joy. If you begin to sink into negativity, look into a mirror and smile. Laugh, even if nothing
seems funny to you. Spend time outdoors taking a walk or in some other form of exercise.Write
down 5 things you are thankful for. These may seem like small things, but you may surprise
yourself with how quickly they can reconnect you to Source.
If all else fails, there is something that always helps me return to a positive, abundant state of
mind.That something is an act of service.When you choose to give to another person, you automatically position yourself in a state of abundance and open yourself to even greater blessings.
People who give are not coming from a place of scarcity. They come from a place of unlimited

resources, and as such are connected to the amazing abundance of God. Only you know what act
of service is meaningful to you- use your talents, skills, and resources for the benefit of others, and
you will be the one to reap the rewards of contentment, happiness, and peace.

SALE OF RAW MILK THREATENED
IN CALIFORNIA
For many years, California had the most
tolerant laws regarding the sale of raw
milk in the nation. However, on October
8, 2007, California Governor Arnold
Schwarzenegger signed into law AB
(Agriculture Bill) 1735, which mandates
standards so strict that raw milk producers
will not be able to comply on a consistent basis. The law, which took effect on
January 1, 2008, imposes a strict limit
of 10 coliform bacteria per milliliter in
tests taken at the point of sale. All other
states with the coliform limit of ten for
retail raw milk test at the bulk tank, and
since coliform bacteria rapidly divide and
multiply whenever milk is sent through
pipes; the new law could for all intents
and purposes bring an end to raw milk
sales in California. But, as Body Ecology
Diet author Donna Gates has pointed out,
most coliform bacteria are not pathogens
but essential probiotic good bacteria. The
Farm-to-Consumer Legal Defense Fund
has agreed to research legal options to
overturn AB 1735. This piece of “Trojan
Horse” legislation will not only potentially eliminate the major producers of
raw milk in California; it will also have
a chilling effect on the sale of raw diary
products throughout the country.

The results were certainly there in Toledo, Ohio. We had 126 participants in Healthy Toledo, and they agreed to have their weight,
blood pressure, waist circumference, body fat, and BMI taken before

The Food-Mood Connection

affects our risk of heart
disease and cancer.
Turns out that food influences our mood as
well.You don’t need
a study to tell you the
obvious: people’s moods have gotten
really, really bad. One study, published in
a leading medical journal, estimated that
42 million American adults have mood
disorders.
We see it all around us: The coworker
who’s always in a snit about something.
Those folks who charge into the elevator
before you get off. Impatient people in
line at the supermarket. Aggressive and
downright mean drivers. It all adds up to
an epidemic of, “pissy mood syndrome.”
Psychologists blame everything from
our self-centered habits to the breakdown
of traditional family structures. But could

moods?

When it comes to moods, there’s much

your blood sugar. Brain chemicals called
neurotransmitters are the true regulators
of our moods. Some neurotransmitters,

and food. The ideal: keep them in balance
so our responses are appropriate to the

Here’s the catch: To make neurotransmitters, you need adequate amounts of
neuronutrients–that is, quality protein,
vitamins, and minerals. Protein provides
chemical units known as amino acids,
which are the foundation of our neurotransmitters. Vitamins and minerals

The Impact of Stress
Many of our modern-day mood issues
result from a collision between stress and
poor eating habits. Stress boosts levels of

our eating habits usually slide when
we’re stressed. We skip meals, consume
more caffeine and sugar for energy, and
succumb to fast foods that are rich in
sugars (soft drinks, shakes) and sugar-like
carbs (buns and fries).
These foods quickly mess with our
blood-sugar levels. They also provide
little quality protein, and few vitamins
and minerals. So when we need good
nutrition to buffer the effects of stress, we
end up further undermining our calming
neurotransmitters.
So, what exactly should you eat to help
maintain a good mood?
The same blood that flows through
your heart also flows through your brain.
Not surprisingly, the same dietary habits
that are good for your heart are also
healthy for your head.
First, advice you’ve heard before: avoid
fast-foods, such as burgers, fries, and fried
chicken. Don’t drink sugary soft drinks.
Beware of packaged microwave meals
and their ingredient concoctions. All of
those foods are high in processed sugars,
sugar-like refined carbs, and unhealthy
trans fats.
Second, focus on fresh whole foods,
including fish and chicken (so long as
they’re not breaded and deep fried)
and lots of high-fiber veggies, including
broccoli, cauliflower, and salads (sans
croutons).You can make your own healthy
salad dressing in minutes with equal parts
of olive oil and balsamic vinegar, with a
little dried oregano.

Instead of skipping breakfast or just
having a bagel or muffin, start your day
with a couple of eggs and whole-wheat
toast. The protein in eggs will quickly
stabilize your blood sugar, your mood,
and, later, your appetite. A recent study
found that people eating eggs for breakfast
ended up consuming 400 fewer calories
over the next day and a half.
Some Specific Recomendations

your own roll-up with swiss cheese, deli
turkey, and a little mustard in a low-carb
whole-wheat tortilla. For dinner, try panfried salmon (in olive oil) or a rotisserie
chicken with veggies and a little brown
rice. For beverages, stick with green tea,
sparkling mineral water, and iced herbal
teas, or a “green” drink.
Anxiety covers jumpiness, tension,

The U.S. Food and
Drug Administration
(FDA) is in the process
of
reviewing
the
Generally Recognized
As Safe (GRAS) status of salt. GRAS is
an FDA designation that a chemical or
substance added to food is considered safe
by experts, and so is exempted from the
usual Federal Food, Drug, and Cosmetic
Act (FFDCA) food additive tolerance requirements.The FDA wants to control the
amount of salt that can be added to foods
in order to improve the public’s health,
since they believe that salt causes hypertension which can lead to heart disease
and stroke.
Regular table salt should be restricted because it’s not good for your health.
Typical table salt is not a natural product. It
could just as easily be sold as the chemical
sodium chloride (NaCl). Avoid it, in any
amount, whenever possible, because it
lacks many essential minerals, and combinations of minerals that are important
to good health. Unsurprisingly, these
minerals are easily available in a tasty
healthful natural gift called unrefined sea
salt.
Our bodies are 70% water; we learned
that at school. But do we picture ocean
water or drinking water when we think
of this statistic? In fact we are bathed in
ocean water internally, and we need the
minerals in ocean water to be replenished. Our love of salt flavor encourages
us to seek it out in our foods and soups.
But common salt is empty salt, just like
refined sugar is empty calories.

Most of the high blood pressure
patients I treat tell me that they “never”
use salt. What they don’t realize is that

the foods loaded with “common salt” and
to do more cooking with natural foods
and to use unrefined sea salt. I tell them
that common salt compared to sea salt is
like partially hydrogenated vegetable oil
compared to organic extra virgin olive

This is why I favor regulation of NaCl,
although I would much prefer elimination
of it. But I would resist any restriction

Another natural mood-lifter is
tyramine, an amino acid closely related
to tyrosine. Tyramine is found in aged
cheeses, such as aged cheddar, Brie, Blue
cheese, and Stilton. Processed cheeses,
such as Velveeta and cream cheese, are
not aged.
Supplemental Mood Insurance
Some nutritional supplements can also
improve mood. They provide vitamins,
minerals, and other nutrients needed to
make neurotransmitters.
One study, conducted by David
Benton, Ph.D., a psychology professor
at the University of Wales, Swansea,
found that a high-potency multivitamin
(with about 10 times the Daily Value, or
DV) improved the moods of students.
Another study, at Oxford University,
England, found that a once-a-day vitamin,
omega-3 fish oils, and gamma-linolenic
acid (a plant oil) significantly improved
the behavior of prison inmates.
Taking supplements doesn’t have to
be complicated. A good place to start is
with a high-potency multivitamin or Bcomplex vitamin. Either way, make sure
it contains about 10 times (or 1,000
percent) of the DV for vitamins B1, B2,
B3, and B6. (These percentages will be
listed on the label.) A great second supplement is omega-3 fish oils, 1 to 3 grams
daily. Both types of supplements are sold
in natural food stores and pharmacies.
There’s one important caveat.Vitamins
and fish oils are exceptionally safe.
However, be more careful if you are taking
prescription medications (e.g., Zoloft,
Paxil) for a mood disorder and want to
take supplemental GABA, theanine, tryptophan, or tyrosine. The combination can
increase the drug’s effects. Work with a

How Safe and Healthy is
Microwave Cooking?

that yields wildly conflicting information.
The Science Behind Microwaves
The microwave oven generates electromagnetic waves (called microwaves
because they’re short) at a frequency of
2450 megahertz (FM radio waves are
generated at around 100 MHz and cell
phones transmit 800 MHz). The microwaves bombard the molecules of water
in the food. These molecules each have a
positive and negative end, or “polarity”.
The polarized molecules try to line themselves up with the electrical field, like
compass needles trying to point North.
But because the electrical field is reversing
polarity at a rate of 2,450 million cycles
a second, the water molecules end up
rotating at the same speed. That activity

Conflicting Claims
There are very few studies on the health
effects of microwave cooking, but the
studies that do exist suggest you made the
right move by tossing out your microwave
oven. On the other hand, conventional
government and medical wisdom is reassuring and tends to portray the concerns
as alarmist and pseudoscientific, in spite
of no scientific research disproving them.
For instance, Food ScienceAustralia, a government and industry-funded company
whose mission is to “help make Australian
food companies among the most competitive in the world”, dismisses consumer
concerns about microwave cooking as
having been fueled by media coverage of
isolated and irrelevant reports. The Food
and Drug Administration in the U.S.
states that “foods cooked in a microwave
oven may keep more of their vitamins and
minerals, because microwave ovens can
cook more quickly and without adding
water.”
A Spanish study published in the
Journal of the Science of Food and Agriculture
in 2003 disproves that statement.
Researchers from the Spanish scientific research council CEBAS-CSIC found
that cooking by microwave is the worst
way to preserve at least one key nutrient
in vegetables. According to Dr. Cristina
Garcia-Viguera, co-author of the study,
microwaved broccoli loses 97 percent,
74 percent, and 87 percent of the three
major cancer-protecting antioxidant
compounds (flavonoids, sinapics and
caffeoyl-quinic derivatives). By comparison, steamed broccoli loses 11 percent,
0 percent and 8 percent of the very same
antioxidants.
In a 1992 article in the journal
Pediatrics, a team of researchers from
Stanford University reported that reheating human breast milk in a microwave
oven – even at a low setting – can destroy

some of its important disease-fighting capabilities. Specifically, it lost lysozyme,
which protects against bacterial infection.
The fact that adverse changes were found
at very low temperatures suggested to
the researchers that “microwaving itself
may in fact cause some injury to the milk
above and beyond the heating.”
Vitamin B-12 is another nutrient
that can be destroyed by microwaving.
Japanese research reported in Science
News in 1998 found that as little as six
minutes of microwave cooking destroyed
half of the vitamin B-12 in dairy foods
and meat, a much higher rate of destruction than other cooking techniques.
People who ate microwaved foods had
a statistically higher incidence of
stomach and intestinal cancers
Microwaving baby formula is also a
problem, according to Dr. Lita Lee of
Hawaii in the Lancet medical journal in
1989. She wrote that microwaving baby
formula converts certain trans-amino
acids into synthetic substances like transfatty acids. Further, one of the amino
acids, L-proline, converts to a substance
known to be poisonous to the nervous
system and to the kidneys.
A Link to Cancer?
Some of the earliest research into the
effects of microwaved food was conducted
in the 1950s in Russia. That research
indicated bigger dangers than destruction
of nutrients. Russian researchers found
that people who ate microwaved foods
had a statistically higher incidence of
stomach and intestinal cancers, a general
degeneration of peripheral cellular
tissues, and a gradual breakdown of the
digestive and excretory systems. Due
to chemical alterations within the food,
they had lymphatic malfunctions, causing
a degeneration of the body’s immune
system. For instance, microwaving milk
and cereal grains converted some of their
amino acids into carcinogens, thawing
frozen fruits converted their glucoside
and galactoside containing fractions

microwaved plants, especially root vegetables. They also reported structural
degradation leading to decreased availability of Vitamins B, C, E, and essential
minerals at a rate of 60 to 90 percent in
all foods tested.
As a result of that research, the Soviets
banned the use of microwave ovens in
1976 and issued an international warning
on the health hazards, both biological
and environmental, of microwave ovens
and similar frequency electronic devices.
The ban has since been over-turned and
the rest of the world appears not to have
headed the warning.
Microwaved Food and the Blood
In 1989, the Swiss food scientist Dr.
Dans Ulrich Hertel fed eight volunteers a
range of raw, conventionally cooked, and
microwaved food. Blood samples, taken
from each person after eating, showed
serious irregularities in the structure of
the food microwaved and in the blood
of those eating the microwaved samples.
These changes included a decrease in
all hemoglobin and cholesterol values,
especially the ratio of HDL (good cholesterol) and LDL (bad cholesterol) values.
Lymphocytes (white blood cells) showed
a more distinct short-term decrease
following the intake of microwaved food
than after the intake of all the other
variants. In 1991, he and Dr. Bernard H.
Blanc of the Swiss Federal Institute of
Technology and the University Institute for
Biochemistry published a research paper
indicating that food cooked in microwave
ovens could pose a greater risk to health
than food cooked by conventional means.

their results, the authorities reacted. In
1992, a powerful trade organization, the
Swiss Association of Dealers for Electroapparatuses for Households and Industry,
known as FEA, forced the Swiss courts
to issue a “gag order” against them. The
following year, Dr. Hertel was convicted
for “interfering with commerce” and prohibited from further publishing his results.
However, he fought the decision and
both it and the gag order were reversed
in 1998 when the European Court of
Human Rights in Austria ruled that there
had been a violation of his rights in the
1993 decision. In addition, Switzerland
was ordered to pay him compensation.

A New Brand for a New Day
The latest chapter in our evolution began

to the wide variety of products she envisioned the company offering. “The Celtic

been interested in adding other salts to
our line for quite some time, but I wasn’t
interested in picking up just any salt. It
was important that any new salts we
added meet the exacting standards that
Jacques established when he created the
Celtic Sea Salt® Brand.”
Something Old
Interestingly, one of the new salts was discovered through a recommendation from
one of Selina’s associates in the French
salt industry. After the creation of Celtic
Sea Salt® Brand, interest in French sea
salt exploded and suppliers often found
it difficult to keep up with demand. The
result was a growing interest in salts from
other regions that have a history of traditional salt harvesting.
One such location is the Algarve region
of Portugal, an area where salt has been
harvested for over 4,000 years. Historians
believe that the Egyptians were probably
the first to evaporate seawater to produce
salt. They later passed their knowledge
on to the Phoenicians, masters of ocean
travel who probably brought these early
salt-gathering methods to the Portuguese
coast. Roman ruins in the Algarve region
would seem to indicate that they later
produced salt there, and during 1600s it
supplied salt to much of Europe.
Through her contact, Selina was
fortunate to establish a relationship with
Rui Francisco Neves Dias, a fourth generation salter whose family has managed
salinas (salt ponds) in the Algarve for over
100 years. Rui’s salinas are located near
Tavira in the Ria Formosa Natural Park,
a pristine wildlife reserve that is home to
many species of shellfish and other marine
life. This area is also free of pollution and
has a high evaporation rate due to the
Southern European climate.
Much like Celtic Sea Salt® Brand, Rui’s

manner.The marenotos (salt workers) use
gravity and gates to funnel the mineralrich seawater into smaller and shallower
salt pans. As the sun and wind evaporate
the water, the marenotos harvest the
salt using traditional wooden implements. Unlike hand-harvest salts, sea salt
harvested by machines must be washed
to remove any contaminants left by the
equipment, which removes minerals and
nutrients.

store is too old and tastes much different.
Whole young coconuts are also sold in
health food stores. They look different

covered in a thick fibrous husk. The husk

to market, so you never see the husk, just
