Welcome to the 51st Annual Elmvale Maple Syrup Festival! With
great entertainment, trips to the maple sugar bush and unique
vendors, you are sure to be kept busy throughout the entire day.

A special thank you to the many volunteers who work year-round
to make this wonderful event happen – your dedication and
commitment to this celebration is truly inspiring. What many people
are not aware of, is that the money raised from this event goes
right back into the community, supporting organizations and clubs
throughout our Township.
Events like the Elmvale Maple Syrup Festival provide a glimpse of
what life in Springwater is like to the many visitors attending each
year. As a thriving municipality, Springwater is a ‘community of communities’ with welcoming and friendly
residents who never hesitate to offer a helping hand.

I am honoured to welcome all residents and visitors to this year’s Annual Elmvale Maple Syrup Festival!
Each year this historic, memorable and local tradition delights its visitors. It brings together families and friends
from within our community to celebrate and enjoy the spring season and the Maple Syrup harvest. This festival
is woven together with a wide variety of local talent, events, contests and fun activities that ensure that there is
something for everyone to enjoy.
I would like to express my gratitude and applaud the dedicated team of volunteers and organizers who work to
bring us this Festival each year, and make this event an annual success.

It is with great pleasure that I congratulate the
organizers of the festival and all its volunteers for
making this a memorable event for over 50 years.
It is my pleasure to offer greetings and best wishes
as you enjoy the 51st Annual Elmvale Maple Syrup
Festival.
Since its inception, the festival has provided the
opportunity to celebrate a Springtime staple, maple
syrup, and offer an educational glimpse into its
production.
This is a wonderful event that celebrates our
Canadian and agricultural heritage, and I encourage
you to take part in the many fun activities provided for
your enjoyment.
The festival also supports the local economy and gives
visitors the opportunity to discover all that Elmvale has
to offer.
The organizers, volunteers, and sponsors are to
be commended for coordinating such an amazing
festival.
My sincere gratitude goes out to all involved.

It is my distinct pleasure, once again, to welcome you to
our festival, on behalf of the 2016 Elmvale Maple Syrup
Festival Committee and its many volunteers. Everyone
has been very busy working to provide a memorable
day, whether this is your first visit or if you are a regular
attendee.
Welcome to Simcoe County! For more than 50 years, the
town of Elmvale has welcomed visitors from across the
province to this uniquely Canadian event. We love our
maple syrup in Simcoe County, and with our abundance
of forests and agricultural land, we produce some of the
world’s best syrup right in our County.
Things kick off on Friday night with a variety show at
EDHS. On Saturday you can savour a delicious pancake
breakfast at our Pancake House, accompanied by
musical entertainment. Vendors, on the street and in the
arena, provide a mind-boggling assortment of wares and
our main stage features exciting events such as the world
famous pancake-eating contest, log-sawing competition,
and a variety of local musical talent. You can travel by bus
to our two local sugar bushes, to learn about the tapping,
collecting and producing of maple syrup. Don’t forget to
stop by our Sugar Shack Information Booth and pick up
your festival guide, the centre of which contains a street
map and list of events offered throughout the day.
Whether you’re a resident or a visitor, I wish you all a
wonderful experience at the festival. I hope you take some
time to explore all there is to do in our wonderful region.
As representatives of the festival, my team and I welcome
any comments or suggestions you may have, to help us
ensure that the Elmvale Maple Syrup Festival will become
one of your springtime traditions.
The County of Simcoe is Ontario’s second largest County
based on population and third largest based on physical
size. We are one of Ontario’s top tourism destinations,
welcoming more than nine-million visitors each year.
We have a growing economy home to world-renowned
manufacturing, technology and agricultural business, and
we host some of Ontario’s top events and festivals.
Thank you to the many volunteers and organizers who
have put in hours of hard work to make this event such a
sweet success each year.

Mission Statement
The Elmvale Maple Syrup Festival is a fundraising
event whose proceeds support projects which
contribute to the physical, intellectual, cultural,
emotional or spiritual well-being of our community.
Parking at the Festival
Springwater Township will be enforcing no parking
along the west side of Amelia Street, the south
side of Stone Street, and the north side of William
Street. The streets will be clearly marked by the
Township as tow-away zones and this will be
strictly enforced on Festival day. Special event
parking lots throughout the village will be well
marked. If you have any questions, please do not
hesitate to approach one of our volunteers.

50 Years of Tradition
April 25th, 2015 marked the
50th anniversary of the
Elmvale Maple Syrup Festival
Although the main day of events was Saturday,
the festival actually began on the Friday evening,
at Elmvale District High School, where a large
number of parents and local residents were treated
to an evening of musical talent. These exceptional
students were instructed and encouraged by the
multi-talented Louis Lefaive. Friday evening was
also the time when the 2015 EMSF Youth Awards
were presented to local youth who make our
community a better place to live, by their selfless
volunteer work and community participation. You
made us proud!
Saturday morning dawned bright and early, and for
the first time in several years, Mother Nature smiled
on us and gave us a cool, but sunny and dry day,
and by noon, some folks were shedding that extra
layer of clothing they have learned, from previous
experience, may be necessary.
For those of you who regularly attend the festival,
you arrived early, in eager anticipation of a day
filled with delicious food, midway rides, vendors
and exciting entertainment, both on our main stage
and throughout the village. For the newcomers,
you were yet to discover the dazzling variety of
adventures we had in store for you.
Beginning with our delicious pancake breakfast,
you braved the cool air and inevitable line-up at
the Pancake House, for the chance to experience
the mouth-watering food that was on offer. Once
you had your plate in hand, and had found a
comfortable seat, you happily drenched your
pancakes and sausages with the limitless, delicious
maple syrup, provided by our friends at Lalonde’s
and Greenlaw’s sugar bushes. The enjoyment
didn’t end there though, as you were able to tap
your toes to the musical sounds of Al Beardsall and
North of 50, along with other guest artists, who kept
you entertained from start to finish.
Once you were fed and warm, you set out into the
streets, your festival guide in hand, to see what else

the day had in store. Some chose to go directly to
the fairgrounds, where the young and the young
at heart could take in the exciting atmosphere of
the midway, provided by the one and only Carter
Shows. If you arrived early enough, you could also
jump into the tethered Remax hot-air balloon and
‘rise above it all’ for a seldom-seen view of the
festival.
The avid shoppers amongst you stopped along
the way to examine the enormous variety of items
being offered, both on our streets and in the arena,
by over 200 vendors, who had travelled from near
and far to tempt you with their wares and irresistible
food fare. Some of you sought out a favorite vendor
from whom you had purchased in previous years.
Others were discovering new and exciting crafts,
arts and a decadent array of maple products.
Whilst making your way from street to street, your
journey would take you by the Community Hall
parking lot, where lots of surprising things were
happening on the main stage. Whether you had

Doan with a number of his peers, in a heroic
attempt to retain his title, but it was not to be. He
was hastily dethroned by rookie contestant, Brett
Todd, who had finished his plate of pancakes and
was on his feet, while Doan was still working away at
his challenge. This year should be very interesting
as these two firefighters return to compete again.
Another feature of our 50th anniversary event was a
button draw, which saw members of the committee
and the Elmvale Minor Ball Association, walking the
streets, presenting as many people as possible with
a numbered commemorative button, which gave
them a chance to win one, or more, of a host of
prizes. We hope you were among the winners!
Many people chose to board a school bus at the
main intersection, and travel out to our two local
sugar bushes, Lalonde’s and Greenlaw’s, to learn
how maple syrup is tapped and processed, and to
taste the sweet elixir of spring, right at the source.

long-time MC, Dan Clement, was in charge of
introductions and announcements, and he kept
things moving smoothly all day.
The official welcome to all was given at noon, by
EMSF president, John Savage, after which Dan
introduced our local dignitaries.
Judging by the thousands of visitors, and smiling
faces we saw on our streets that day, we are
confident that a good time was had by all, and
however you chose to spend your day, we thank you
for helping to make our 50th anniversary one of the
most successful festivals ever. We hope it inspired
you to return, year after year, as there is always
something new to experience, exciting to discover
and delicious to taste at the Annual Elmvale Maple
Syrup Festival.
That’s when the REAL fun began! Starting with the
log-sawing competition, local politicians, firefighters
and members of the public could be seen giving
their all, to claim the coveted prize for cutting off
a section of log in the shortest time possible, and
bragging rights until the following year. On this day,
it was the teams of Jane and Garfield Dunlop, and
Karen Todd and Lesley French who sawed their
way to victory.
Next up was the world-famous pancake-eating
contest, hosted by the Springwater Fire Department.

The Steve McGinnis Band
The Steve McGinnis Band is returning to the
Elmvale Maple Syrup Festival as headliners on the
Main Stage.
The band is made up of talented veteran
professionals who like to bring you classic rock hits
from the ‘60s to the ‘90s. All of the fun songs you
grew up singing and dancing to.
Come listen to The Beatles, Rolling Stones, CCR,
Tragically Hip, David Wilcox, Stevie Ray Vaughn
and Neil Young hits done in perfect three-part
harmony while you sing along and remember the
good times!

including A Matter of Time which is being played
on The Peak FM 95.1 in Collingwood as well as
Beach Booster Radio in Wasaga Beach.
The Steve McGinnis Band is comprised of Elmvale’s
own Steve McGinnis, a strong and versatile vocalist;
John Marshall, a multi-talented guitar player/
singer/songwriter; bass player extraordinaire, Carl
Rabinowitz keeps the groove going; Steve Chreptak
is an accomplished drummer who holds it all
together.

Elmvale Lioness Club
The Elmvale & District Lioness Club was chartered
on April 11, 1978 and at present has 18 active
members, who are always on the job upholding
our motto “WE SERVE”.
Our club supports many local and regional
projects, including the Elmvale Food Bank, EDHS
and Sara Vista Seniors’ Home.
Donations from the EMSF and other participating
businesses and groups allow us to continue this
wonderful annual tradition.
Our meetings are held on the 3rd Tuesday of
each month, Sept-June, at 7p.m., upstairs at
the Elmvale Legion. If interested in becoming a

The annual Sleigh Ride in the Village has been our
way of giving back to the community for over 10
years. Families can enjoy a relaxing horse-drawn
sleigh ride through town and then warm up with a
delicious hot dog, hot chocolate or apple cider, all
free of charge, at the Community Hall. Also at the
hall, children can participate in activities which
include face painting, play dough, colouring and
crafts. In 2015 we added a general store for the
adults and an extra team of horses, to our event,
which gets bigger and bigger each year.

EMSF Youth Awards
Nominate a youth who makes a real difference in our
community and give them the opportunity to be rewarded
and recognized for their efforts. Nominees must reside within
Springwater Township and be in Grades 9-12.
These Awards recognize youth that have made a noteworthy
contribution during the current year, and/or given outstanding service
over a number of years. Service includes areas such as education, fundraising, charitable and
voluntary services, the environment, or any other area that contributes to the advancement of
our community and beyond their educational requirements.

Lalonde’s Sugar Bush
Welcome once again to
our Maple Sugar Bush
This is our 37th year since taking over the
business from Tim’s father, Herman and we are
still producing 100% Pure Maple Syrup and all
the other goodies that we make right here with it.
Winter was pretty easy on us this year as far as
bad weather goes, although we did get some nasty
cold days. It is mid-February as I write this and
Tim has yet to start tapping. He’s been keeping
his eye on the weather forecasts daily, waiting for
it to warm up.
We are hoping that it will be a productive season
as this is part of our livelihood. When the syrup
season is over, which is typically in April, and after
all the cleaning of tubing and of the equipment is
done, Tim moves on to his sawing business. He
has a circular sawmill and he does custom sawing
for people and sells lumber here as well. He is
never idle.
The past few winters have been quite busy for him
though. He has been towing our sugar hut across
the county and selling our products at Winter
Carnivals. Thank goodness we have wonderful
people that like to help him (that means I don’t
have to go out in the cold).
Maple Candy Floss is one of our newer products
that we have now. It is made with our own
granulated maple sugar. Mmmmm...it melts in
your mouth.
We will be selling it here at the sugar camp and
at our sugar hut uptown across from the Pancake
House along with our Maple Butter, Maple Candy,
Maple BBQ Sauce and of course our delicious
Maple Syrup.
We thank everyone that helps make this event
bigger and better each year and we thank you for
coming back each year.

Annual Logsawing Competition
Log Sawing Contest
The Great Saw-Off
It takes teamwork, communication and a little bit
of muscle to win the Elmvale Maple Syrup Festival
Log-Sawing Competition. This popular event draws
crowds from near and far, and when the 6-pound,
two-person crosscut saw is revealed, the group of
anxious politicians and dignitaries huddle in tight
circles, discussing techniques to saw through the
pine log in the quickest time.
Two-person crosscut sawing is truly a team event,
requiring an intuitive sense of your partner’s next
move. It takes co-operation, trust and the ability
to find an easy rhythm with the saw moving in
one continuous motion rather than the disjointed
tempo many first-timer's experience. Most of these
teams have worked together on local Councils and
in boardrooms for years but in this 15 seconds
of competition they truly test their ability to
communicate effectively.
When the log is set in place and referee Doug Kirton
gives his signal, the first set of lumberjacks are off,
working together to slice through the wood. When
each team has had their chance to prove their
skills, the winning team is declared based on the
fastest time. The victors are honoured with a trophy,
bragging rights and a bottle of nature’s sweetest
treat – Maple Syrup.

Maple Syrup Heist
When you hear of an $18 million theft, you tend to
think of artwork, jewellery or high-end automobiles.
Only in Canada would that amount of money
represent stolen maple syrup. During the winter of
2011-12 $18 million (3 tonnes) of maple syrup was
stolen from a Quebec warehouse.
inspected the Reserve’s warehouse. Not only did
the warehouse still have insufficient security, the
seized maple syrup had been stored improperly.
The inspection revealed the maple syrup had
fermented & exploded. So much for recovering
stolen property!
To set the stage for what happened - The Federation
of Quebec Maple Syrup Producers was formed, as
the province’s only wholesale seller. This cartel
assigns quotas for local producers, sets prices, and
sets the standardization of taste. In 1990 they
established the Global Strategic Maple Syrup
Reserve to store 50,000 tonnes of maple syrup to
offset poor harvest years. This excess, equivalent
to half an annual production, was stored in a
warehouse outside Montreal.
Quebec produces 75% of the world’s supply of
maple syrup. The theft of 3 tonnes represents just
3% of their annual production. Vermont, where
some of the stolen syrup is alleged to have been
shipped, accounts for about 5% of output. The
bulk of the remaining maple syrup is produced
right here in Ontario.
A routine inspection in early 2012 uncovered the
theft. Originally, the loss was reported to be as high
as $30 million. A closer inspection set the loss at
$18 million. To date, only one-seventh of the 3
tonnes of missing syrup, and none of the money,
has been recovered.
In October 2015 trials began for 25 people charged
in connection with this theft. Criticism about the
Federation spiked in September 2014 when
officials from the Canadian Food Inspection Agency

Pork Chops with Onions
Caramelized in Maple Syrup
June is a great month for enjoying a cookout and bringing your grill back to life after a long winter break.
Grilled pork chops are a classic, but paired with onions caramelized in maple syrup this dish will wow
your family and friends. The all-natural syrup complements the smoky meat flavors with sweet and
savory notes. Using common kitchen ingredients, this undemanding meal is perfect for an impromptu
summer gathering.
Ingredients:
Preparation:
1 cup Spanish onions
finely minced
1) In a saucepan, caramelize the onions in oil and
butter on low heat.
1 tablespoon oil
2) De-glaze pan with wine or cider and reduce to half.
2 tablespoons butter
3) Add the maple syrup and season with salt and
pepper to taste.
1/2 cup white wine or cider
1/2 cup pure maple syrup
from Canada
4) Continue cooking until the sauce thickens.
Serve with grilled pork chops.
Salt and freshly ground pepper

A Golden Legacy
The Origins of Maple Syrup
As with most legends, the exact origins of maple
syrup are difficult to find, and according to the
most popular versions, the discovery of maple
syrup was purely accidental.
A hunter had left his hatchet embedded in a
tree overnight. When he pulled it free the next
morning, liquid began to flow from the gash. As
luck would have it, the liquid collected in a pot that
had been left sitting at the base of the tree. When
the hunter returned, he simply added the game
he had caught to the pot and set it over the fire to
cook. The sweet liquid added a pleasant taste to
the meal, and the rest, as they say, is history.

Freemasons?
In our community they are a firefighter, a police
officer, a physician, a small business owner, an
insurance broker, a priest and hockey coach.
They are also an airplane mechanic, a medical
technologist, the retired gentleman next door…

Georgian Bay Hospital

of $500 to The Georgian Bay General Hospital
Foundation. This is a wonderful gift to our hospital

Tiny Marsh
In the late part of June 2015, the Tiny Marsh
conducted a ‘Bioblitz’, which was intended to
interest local residents in our marshes and to
teach them about the flora and fauna which can
be found there.
The event was led by graduates of Lakehead
University’s Master Naturalist program, and
served as training and testing for those graduates.
It was well attended and as a result, will run again
this coming June.
The money donated to the Tiny Marsh by the
Elmvale Maple Syrup Festival was both needed
and greatly appreciated, as it enabled us to get
started on this successful event.
Springwater Library
HCES Band
The Huronia Centennial Elementary School Band
would like to thank the Elmvale Maple Syrup
Festival for your ongoing support of this wonderful
music programme. Last year was a costly year as
we upgraded our drum collection and purchased
several new instruments. The past two years have
been growing years for our band as our numbers
have increased, as well as our experience! We
were proud to perform at the Maple Syrup Festival
and Variety night, compete in the Midland Music
Festival, host two evening concerts, and have an
adjudication at Canada’s Wonderland! Thanks to
your financial support, we were also able to enjoy
the park’s rides for the rest of that memorable day.
We are already preparing our repertoire for this
year’s festival so we look forward to seeing another
big crowd at the 51st Maple Syrup Festival.

The Springwater Township Public Library is a longtime partner with the Elmvale Maple Syrup Festival.
On Festival Day, the Library hosts one of its annual
book sales.
During the Festival, the Library is a place where you
can “sit a spell”, use the washroom facilities and
discover what additional resources the library offers
“beyond books”!
The Library is most appreciative of the funding
that it has received over the years from the Maple
Syrup Festival. While libraries receive needed
funding municipally and provincially, it is through
the generosity of the Maple Syrup Festival that
the Elmvale branch has been able to enhance its
collection, shelving and audio visual materials. In
the past, funds from the Maple Syrup Festival have
also enhanced the Summer Reading Program as
well as the Reading Buddies program.
The 2015 funds from the Maple Syrup Festival
helped the Elmvale branch purchase improved
seating for the many programs and community
events that we host on a regular basis. The new
chairs are easy to keep clean, bright in colour and
welcoming to residents and guests alike. Thank

Elmvale Curling Club
On Friday March 13th, 2015, the ice plant at the
Elmvale Curling Club died and the cost of fixing the
compressor of an old machine made no sense so
the curling season came to a premature ending.
The cost of replacing the whole ice plant was
estimated to be at least $125,000.00. The Elmvale
Maple Syrup Festival was the first to step forward
with a donation to start the process of raising
enough money to make the changes before the
2015-16 season.
Elmvale Curling Club members, aged 8-85+, came
up with a plan to pay the costs over five years and
the result was that a new system was installed
before the season started in the Fall of 2015.
We would like to thank the Elmvale Maple Syrup
Festival for their donation to start us on the way to
another great curling season!
2016 EDHS Awards
Commencement Program
Commencement Ceremonies are truly a
momentous celebration in the achievement
of every high school graduate. Every year
the Elmvale Maple Syrup Festival generously
contributes towards bursaries and course awards
that are presented to proud EDHS graduates at
our Commencement Ceremony. This year our
Commencement will take place on June 29th at
7 pm at the school.
The ongoing partnership between the Elmvale
Maple Syrup Festival and EDHS helps to create
a positive community experience for every one of
our students. The staff, students and graduates
of EDHS would like to express our sincere
appreciation for the support provided our EDHS
graduates and to the entire school population.
Elmvale Horticultural Society
The Elmvale & District Horticultural Society in their
38th year are excited about the new program of
events for 2016. We are an active group, meeting
monthly from February to November. We invite
you to join us for any of our meetings. Some of
our highlights are our Spring Flower Show and
Plant Sale, Bus Trip, off-site meeting at Huronia
Nurseries, Mystery Garden Tour and monthly
speakers on various topics. We also have an
energetic Earthkeepers youth group who meet
monthly throughout the school year.

provide the hanging baskets around the community.

EDHS Music Department
It continues to be an exciting year for the music
department at EDHS. We look forward to the Maple
Syrup Festival and we are pleased to be a part
of the activities. We have several more concerts
coming up. Our spring concert entitled Inspiration
is on the 31st of May. We will be performing at
Heritage Park at the end of June, and we are
also playing at the Adult Day Centre in the spring.
We really appreciate the opportunities provided
to us to be active members in this wonderful
community. EDHS has so many creative and
talented students.
Over the years, with your financial assistance,
we have been able to purchase some modern
equipment for our recording studio and improve
our school as a whole. I can assure you that
the students are very thankful for all you have
contributed.
This last year, with the money that we received
from the Maple Syrup Festival Committee we were
able to purchase new keyboards for our “intro
to piano” course. Your financial assistance was
greatly appreciated.

Adult Day Program
The Elmvale Day Program would like to take
this opportunity to thank the Elmvale Maple
Syrup Committee for donating funds toward our
Elmvale Adult Day Program which is a satellite of
the County of Simcoe Adult Day Programs. Our
program is funded by the North Simcoe Muskoka
LHIN and administrated by the County of Simcoe.
Money generously donated last year from the
Elmvale Maple Syrup Committee was spent on the
purchase of Window Shade Roller Blinds for both
our living room and kitchen windows to minimize
the brightness of the sun during days our Seniors
are participating in programming which has
assisted us tremendously.
Our Elmvale Adult Day Program gratefully
appreciates your past donations to allow us to
purchase supplies and proceed with projects for
the betterment of our elderly population in Elmvale
and surrounding areas.
Community Hall Board
In small towns, the Community Hall is the
gathering place – it’s where we come together to
celebrate life events! Weddings, fitness classes,
card games, dances, information nights, socials...
all kinds of fun can be had at the Community Hall.
We are fortunate to have such a large gathering
space with a stage, kitchen, bar area, and fully
accessible washrooms.
The Elmvale Maple Syrup Festival’s generous
donations help pay for upkeep, repairs and
general maintenance. Thanks to EMSF’s recent
significant contribution, we were able to renovate
the washroom area to ensure they are fully
accessible.
Last year, our Community Hall hosted a number
of sessions to talk about ‘recreation’ and what
our residents want! We heard lots of positive
comments about the importance of having places
to meet and mingle and to get to know one
another.
Thank you for spending time with us at the
Community Hall – today it was the Elmvale Maple
Syrup Festival’s Pancake House, tomorrow it may
be another special community gathering. If you
would like to create some amazing memories,
please consider renting this hall by contacting the

Elmvale Fall Fair
Elmvale Fall Fair once again this year partnered
up with Elmvale Maple Syrup Festival to provide
the local school aged youth a chance to win a new
bike. Each year all students in the local schools
that participate in the local fair, receive entry
forms. On Saturday of the Fair, a draw is made to
see who goes home with a bright shiny bike.
This event is an anticipated part of the Elmvale
Fall Fair. Last year's lucky winner was Matthew
Veenstra. Elmvale Fall Fair would like to thank
Elmvale Maple Syrup Festival for their ongoing
sponsorship of the bike draw and continued
partnership with the Fair.
Elmvale Skating Club
The Elmvale Skating Club would like to thank the
Elmvale Maple Syrup Board for their continuous
support. Each year we hold our Skating
Carnival in the spring to showcase our skaters'
accomplishments.
With rising ice costs, we turn to the community
and service groups for donations and sponsorship.
Last year your contribution helped us to cover the
$1300 ice bill for carnival day.
Without your support and the support of the
community, we would have to either increase
skater registration fees or discontinue our annual
carnival. Thank-you again from the members of the
Elmvale Skating Club.
Our Lady of Lourdes
Catholic School
The donation we received from the Maple
Syrup Festival in 2015 was put into a fund for
the continued augmentation of our school’s
electronic resources. We were able to purchase 5
Chromebooks to assist our Intermediate students.
As well, with the assistance of volunteers from
the Elmvale Horticultural Society, our students
plant flowers, provide food for the birds which
visit the garden, and also create floral wreaths for

Huronia Centennial
Elementary School
The Elmvale Maple Syrup Festival Committee
has been tremendously supportive to Huronia
Centennial Elementary School Playground
Fundraiser over the past several years and we are
very thankful.
It is so important to encourage children to be
active and we are hopeful that this playground
equipment will benefit the children at HCES as
well as the community.
With the committee’s generous donation in 2015,
we are getting closer to meeting our fundraising
goal and are hopeful to have our playground
opening in 2016!
Phelpston Parks & Recreation
The Phelpston Parks & Recreation Committee is a
small group of volunteers who promote community
involvement by organizing a variety of events and
help maintain our local facilities.
Our volunteers run numerous events throughout
the year including; Family Day Skating, Easter Egg
Hunt, Canada Day Fireworks, Kids’ Halloween
Party and a Christmas Wagon Ride & Food Drive.
We are also responsible for maintaining our local
outdoor ice rink.
Elmvale Leo Club
Since their Charter, this group’s momentum has
already made them known for their collective
generosity and kindness. What have they done
so far? They have organized and hosted a youth
dance, assisted with donation challenges at

Springwater Sports Heritage is once again
extremely pleased to be part of the Elmvale Maple
Syrup Festival Digest. We also wish to acknowledge
the much appreciated financial support we have
received from the Festival.
Since last year Springwater Sports Heritage has
been concentrating on refining our web design
and its primary fundamentals. Finding the
desired balance between technical challenges
and respectfully housing Springwater’s extensive
sporting heritage is always at the forefront. With
recent website modifications in place we can now
focus on our 2016 endeavours.

You can help by sharing your sporting heritage
with us. Capturing, documenting and presenting
Springwater’s extensive and diverse sporting

photos, documents and various media including

sporting history for others to enjoy.
3. Active Elite
Individuals and teams that are currently
participating in a sport at an elite level are now
being recognized on our website. Our aim is to
assemble general information on these individuals
and also maintain an active account of their
achievements and current activity. We welcome
all suggestions and input.
4. Sports Heritage TV
In addition to our website we have a display case
with sports memorabilia and a large TV in the
Elmvale Community Arena. Through 2016 the
TV content will be expanded beyond the 2014
Inductees to include Springwater’s sporting
heritage, 2016 Inductees and the Active Elites.

Community Policing
Pancake Eating Contest
A Tale of Two Stanleys
The Springwater Community Policing Committee
conducts many programs, events and projects,
year-round, throughout Springwater Township.
One such project is the collecting of data from a
roadside speed sign, which is affectionately named
“Stanley” after retired, and much respected,
Community Police Officer, Stan McNutt.
Prior to his retirement in 1998 Stan served 31
years as a police officer with the Royal Canadian
Air Force Military Police and the OPP. He ended
his career as a senior constable, by which time he
had received various awards and commendations,
including: the Governor General’s Medal, the
Queen Elizabeth Jubilee medal and served as
Elmvale Citizen of the Year, to name a few.
The funding also contributed to our many ongoing
projects, among which is the conducting of a
bicycle safety program, in all Springwater Township
elementary schools. One part of the program is
a poster contest, with a major prize going to the
overall winning poster, and secondary prizes to the
winning poster in each school. We also provide an
annual bursary to a selected student at Elmvale
District High School and assist with workshops,
such as the wellness and information seminars,
which take place at the Elmvale Public Library.
Be sure to watch out for both Stanleys as you
travel throughout the township. You never know
when either of them may be watching you!
Stan could often be seen in the evenings, patrolling
the main street and checking that all the business
were locked and secured for the night, and that
his town was safe for all its residents. Elmvale truly
is his home.
The committee would like to thank the Elmvale
Maple Syrup Association for the generous funding
we received from them in 2015. It provided us
the opportunity to purchase a booth at the 50th
anniversary of the festival, which is a major local
event.

usually in a state of
confusion as to what is
good for me and my family.
We try our best to feed our bodies well, but what's
on the menu this week is often determined by the
current Pinterest buzz! I've bored my family with
many variations of quinoa, destroyed family recipes
with coconut flour and mucked up many a cookie
recipe by substituting sugar with stevia... ewww!
During conversations with friends and family often
the topic of healthy eating and longevity comes up,
health benefits of trendy foods and what lotions
and potions will give you a youthful glow...hard to
know what's best without some proof. If I could
only look into the future to see what a head of kale
a day would do for my health 30 years down the
road.
I'm asked all the time how my grandparents stay
so healthy...I would love to say their fountain of
youth comes from the maple sap reduction known
as maple syrup alone - as that would be great for
business! But, upon reflection I now truly believe
that what we put into our bodies truly matters.
Long before the food network, Pinterest and buzz
foods, they always believed in living off the land;
grew their own veggies, raised their own protein

and NEVER used white sugar!...My grandmother
always thought that stuff, along with white bread
as poison! No sugar on my corn flakes as a kid,
only maple syrup - drove me crazy then, but darn
it, she is living proof of the benefits of using natural
unrefined sugars.
One tablespoon of maple syrup contains 33
percent of the recommended value of manganese,
6 percent of zinc, 24 different antioxidants and
scores 54 vs 65 for white sugar on the glycemic
index...I won't pretend to know what all this stuff
means, nor would I have the audacity to preach it
to you! All I know is that maple syrup has been used
as the primary sweetener in all my grandparents’
recipes over the years, and they are living proof of
the health benefits at 79 and 83 years young!

Pancake Eating Contest
Pancake Eating Contest
The Firefighters’ Challenge
Eighteen years ago, the Elmvale Maple Syrup
Festival added the most renowned, talked about
worldwide event, a pancake-eating contest. MCs
Tim and Tom McGinnis have been working the
phones for months, to find hearty participants for
this famous competition.
In 2015, local firefighter, James Doan, winner of
seven of the previous ten contests, was handily
defeated by new-kid-on-the-block, Brett Todd.
This was Brett’s first year in the competition and
he finished five large pancakes in one minute and
four seconds, leaving Doan still eating at the table.
Word on the street is that they will both be back in
2016, to claim the large trophy.
Come out and support the competitors, but don’t
get too close - this could get messy!
This event would not be successful without the
support of the Elmvale Firefighters.
The pancake-eating contest is open to the public
and follows the log-sawing contest, on our main
stage, between noon and 1pm.
The contest has two divisions: firefighter and an
open division. The rules are set and the criteria
demands that each participant must consume
five large pancakes, covered with maple syrup
supplied by our two local producers, Lalonde
and Greenlaw, in the fastest possible time. It is
important that everything stays down! Due to the
choking danger, it was decided, by majority vote,
that water will be provided.

Last year’s funds were a great help for keeping
our Sparky’s Smoke Alarm Challenge program
running. We visited many homes and families that
we could not have reached if it were not for this
program. Families or individual citizens call and
arrange a time for Sparky to come to their home
during Fire Prevention Week.

The kids love to see Sparky and tour him through
their home showing him all their working smoke

safety and home escape planning.
This program would not run without the EMSF committee’s help. Thanks for helping

Nursery School
The Elmvale Co-operative Nursery School was established in 1988 and has blossomed over the
years into a big part of the community. We encompass a unique learning environment that helps to
prepare children for kindergarten both socially and developmentally. We offer classes Monday through
Thursday from 9:00 am to 11:30 am; these classes include a variety of activities and experiences that
get preschoolers excited about “big school” and help them form bonds with other children in the
community.
As a parent of two children who have gone to this preschool, I can attest to the brilliance of this program!
My daughter is in grade 1 now and still talks about her teacher and experiences she had. My son is
currently in the program and has brought home some amazing and unique learning tools and loves his
preschool friends.
Last year we received a monetary donation from the Elmvale Maple Syrup Festival and would like to take
this opportunity to say Thank-You! With this funding we were able to get some fantastic educational
resources and take the children on different community field trips. We appreciate all of our community
supporters and continue to thrive because of them.

If you visit the Gateway Square at Yonge & Queen
Sts., you will perhaps sit down at a friendly little
cement table for a coffee. Upon looking down at
the table you will discover that it has, in fact, a
checkerboard top. Where did this table come
from? Who designed it and who financed it?
talents of local artist, Lisa Harpell. Lisa not only
designed the table and seats but also executed
the final project as we see it today. The seats
are constructed from two metal tractor seats, in
keeping with our agricultural heritage around
Elmvale.
The idea for a recreational table in the Square
came from Focus Elmvale. It was financed from
the profits raised last year at our annual Christmas
Craft Show in December, and with a generous
donation from the Elmvale Maple Syrup Festival.
This money made it possible to hire the creative
