Fried Sweet Bananas
original recipe makes 16 slices
3 firm bananas, halved lengthwise
1/2 cup white sugar
1 1/4 teaspoons ground cinnamon
3 tablespoons butter
Cut each banana half into 3 or 4
pieces. Mix sugar and cinnamon
together in a shallow bowl.Melt butter
in a skillet over medium-low heat; add banana slices and cook until
golden brown, 5 to 10 minutes. Transfer banana slices to a paper
towel-lined plate. Coat banana slices, 1 at a time, with cinnamonsugar.
Hashbrown Sliders
original recipe makes 5 servings
1 (20 oz) package shredded hash brown potatoes
2 large eggs, beaten
1/2 cup shredded mozzarella cheese
1/4 teaspoon ground black pepper
1/2 teaspoon salt
2 teaspoons olive oil, divided
3 small avocados, peeled and pitted
1 pinch garlic salt
4 ounces thinly sliced serrano ham
8 ounces mozzarella cheese, sliced
Place hash browns, eggs, shredded cheese
, pepper and salt in a large bowl. Mix the ingredients using your hands,
making sure everything is well coated. Add 1 teaspoon of olive oil to a
large nonstick saute pan over low to medium heat. Grab a handful of
the potato mixture, about 1/4 cup, and create a ball. Place it down on
the pan and carefully pat it down to create a flat disc shape. Cook for 3
to 4 minutes and then flip it over and cook for an additional 3 to 4 minutes. Remove and place on a paper towel. Repeat until all hash browns
have been used. In a small bowl, mash the avocados and sprinkle with
a little garlic salt. Place a spoonful of the mixture onto a hash brown
stack. Top with half slice of Serrano ham and a slice of mozzarella
cheese. Top it with another hash brown stack.

Quesadilla Burgers
Original recipe makes 4 Burgers
Southwest Sauce:
1/2 cup sour cream
1/4 cup ranch dressing
1/4 cup taco sauce
4 (4 oz) hamburger patties
1 dash Worcestershire sauce, or to taste
8 flour tortillas
2 cups shredded sharp Cheddar cheese
2 cups shredded Colby-Jack cheese
1/2 head lettuce, shredded, or to taste
3 tablespoons picante sauce, or to taste
Mix sour cream, ranch dressing, and taco sauce together in a bowl until Southwest sauce is smooth.
Cover bowl and refrigerate for flavors to blend. Preheat an outdoor grill for medium-high heat and
lightly oil the grate. Cook hamburger patties in the preheated grill for 5 minutes, seasoning with
Worcestershire sauce. Flip patties. Arrange tortillas on the grill and lower heat to medium-low under
tortillas. Add Cheddar cheese and Colby-Jack cheese to tortillas; cook until cheeses melt, 2 to 4 minutes. Continue cooking hamburger patties until cooked through, about 5 minutes more. An instantread thermometer inserted into the center should read at least 160 degrees F. Spread Southwest sauce
onto 1/2 of the tortillas; top with lettuce and picante sauce. Place 1 hamburger patty on top of picante
sauce layer and top patty with a tortilla, creating a sandwich.
Ranch Baked Vegetables
original recipe makes 6 servings
1/2 cup olive oil
1 (1 oz) package dry ranch dressing mix
4 large potatoes, peeled and coarsely chopped
2 zucchini, coarsely chopped
3 stalks celery, coarsely chopped, or more
to taste
1 onion, coarsely chopped (optional)
1/2 cup seasoned bread crumbs
1 pinch garlic salt
Preheat oven to 350 degrees F. Mix olive oil and ranch dressing mix together in an
8-inch square baking pan. Add 1/2 of the potatoes, 1/2 of the zucchini, 1/2 of the
onion, and 1/2 of the onion; stir to coat. Add remaining potatoes, zucchini, celery,
and onion; stir to coat. Sprinkle bread crumbs and garlic salt over the top. Bake in the
preheated oven until vegetables are tender, 50 to 60 minutes.
