Freedom is eating what you want and still being healthy. This Gluten-Free Flourless
Chocolate Cake will sure to having you singing the Star Spangled Banner.
If you want to declare your Independence this Fourth of July, from the kitchen we’ve
got you covered in our Bakery Department. Don’t forget the berries in produce to
dress up this desert. Your guests will be grateful you did.
WHAT YOU NEED
INGREDIENTS
• ½ cup prepared coffee
• ¾ cup granulated sugar
• 18 oz. bittersweet chocolate
• 1 cup salted butter, cut into small pieces
• 6 large eggs
• kettle of boiling water
Directions
Serves: 12-16
1. Preheat oven to 300F°, with rack on lower middle position. Pour boiling water into a large baking
pan, and place pan in oven on lowest rack.
2. Line a 8½ inch springform pan with parchment on bottom. Grease and gluten-free flour the
parchment and sides of pan. Wrap the exterior of pan with aluminum foil.
3. In a small saucepan, combine the prepared coffee and sugar. Stir over medium heat until sugar
is completely dissolved. Set aside.
4. In a heavy pan, on lowest heat, stir the bittersweet chocolate chunks until just small bits of
chocolate remain unmelted. Turn heat off, remove pan from heat, and continue stirring to finish
the melting until chocolate is completely smooth.
5. Transfer melted chocolate into bowl of stand mixer. Slowly beat the butter into the chocolate,
1 piece at a time. Gently beat in the hot coffee/sugar mixture.
6. Beat in the eggs, one at a time, just until fully combined. Scrape the bowl and ensure that all
batter is fully smooth and incorporated.
7. Pour batter into prepared springform pan. Bake for 45 minutes on lower middle rack. The center
should be wet-looking, with edges looking done and puffy. The cake will set as it cools.
8. Let cake cool to room temp in springform pan, and then cover/chill overnight in fridge. To unmold,
run a thin plastic knife carefully between cake and pan all around the edges. Unlock springform,
and it should release cake easily. Keep chilled until ready to serve. Slice chilled cake and serve
with berries.

How long have you worked for Earth Fare?
I started working for Earth Fare in February of 2011 and I can’t imagine working
anywhere else.
What is your favorite item in your department and why?
That’s such a difficult question, because I have so many favorites! Something
that I definitely pick up every day is one of the mixed fruit tubs in produce. It’s
great having a healthy snack that is so simple and ready to go. Knowing it’s
always going to be fresh and taste great helps make it an easy decision.
What part of the Food Quality Standards is most important to you?
Every one of Earth Fare’s quality standards is relevant in my daily life. With no
shortage of health issues running in my family, a healthy diet is an easy place
to take control. Now, that we are avoiding artificial ingredients and choosing a
natural and organic lifestyle, my family and I are spending a lot less time and money
on visits to the doctor. I think everyone can agree that’s a pretty good side effect
of eating healthy.
What do you love most about your job?
Working for Earth Fare has been so rewarding. I’ve gotten very attached to my customers and I always make it my mission to help them
achieve their health goals when they come to the store, whether it is to lose weight or simply make their lives better. I’ve learned so
much over the years and my customers really trust me to help them try new healthy when preparing juices and smoothies. At the end of
the day, I feel great knowing that I am changing lives through food, and creating happiness one customer at a time.
