roots from the Duchess of Bedford in
the mid-1800s. In a time when it was
common to have only two meals per
day, and with the evening meal
trend becoming later and later, the
Duchess found herself becoming
fatigued waiting so long between
meals. Gathering friends together in
the afternoon for snacks and tea,
this tradition was born.

agave syrup in tea cup or tea pot.
Add Lemon Hart rum.
Steep sliced cucumber in cold
water. Steep fresh mint leaves for
tea. Mix gin, cucumber water and
mint tea. Finish with rose water
and sweeten with honey to taste.
