MARCH 6-7, 2015 FAIRLANE STATION AND THE JONES CENTER SPRINGDALE, ARKANSAS The Dig In! Food and Farming festival began in 2011 as a film festival centered on local food and farms and how our food choices affect communities, farms, local economy, and natural ecology. Producers Leigh Wilkerson, Cheri LaRue, and Charity Lewis were joined by local farm-totable chefs to produce a day filled with film, conversation, and local food. The festival grew steadily in 2012 and 2013 and attracted hundreds of participants with the addition of classes, discussions, seed swap, information and vendor fair, opening reception, keynote address and children’s activities. The festival returns in 2015 with a Northwest Arkansas regional focus on food system change. This year Dig In! Food and Farming Festival is partnering with Fayetteville Public Schools’ Farm to School Seed to Student program which will receive a portion of the proceeds from the festival. The Seed to Student program enriches the connection communities have with fresh, healthy food by changing food purchasing and education practices at schools. It empowers children and their families to make informed food choices while strengthening the local economy and contributing to vibrant community. Festival. This class is suitable for beginner, intermediate, and advanced students. Please bring a mat and 1 blanket. Rm 227- Get Pickled with Cat! Fermenting Vegetables and Kefir – Cat Swenson Farmer & Food Fermenting Fanatic, Cat Swenson, shares her enthusiasm for healthful & nutrient-dense fermented foods in this interactive demonstration. Learn about the care and feeding of your own amazing microbiome (your personal eco-system) with prebiotic & probiotic foods. Forget the hot & sweaty “canning” of your fresh garden veggies…try instead the ancient art of pickling food using fermentation. Rm 226- Winter Gardening for All – Patrice Gros This two part class will cover winter structures and costs and planning for winter-long harvesting to get you headed in the right direction for yearround garden production. Chapel- Organic Fruit Production in Northwest Arkansas – Guy Ames This workshop will primarily focus on organic pest and disease control for perennial fruits: trees, bushes, vines. The challenges associated with our area’s soils will be discussed also. (Session 1, 8:30-9:30 continued) Rm 259- KIDS: Wiggling World of Worm Compost – Jane Maginot In this hands-on session young composters will learn about the WHY and HOW behind composting. Participants will learn how decomposers help us create compost and particularly about worms and the role they may play in home composting. They will also learn how to build a worm bin and how to take care of their worms. One lucky participant will take the worm bin home at the end of the session. People with an aversion to insects may not want to attend this creepy crawly session. We will discuss drying and storage of your harvest and sourcing for herbs you don’t grow. Whether you’re growing basil for your Italian dishes or calendula for skin health, this class has something for everyone. Rm 227- No-Till Budget Gardening – Tiffany Selvey Learn about creating and maintaining a no-till garden using organic methods that are good for the environment and wildlife. This class also covers ways to save money in the garden, helping you get the most food out of a minimum investment. Rm 226- Cooking in Season – Chef Tuesday Eastlack Cooking tips and tricks on using fresh, in-season food in your kitchen. Chapel- Goats 101: Getting Started – Linda Coffey The class will cover what you need to know before starting to raise goats, including urban goats. All the basics of sheep and goat production, including managing parasites. The perfect introduction for the beginning goatkeeper or goatkeeper-to-be! Rm 259- KIDS: No Bees, No Cheese: The Importance of Pollinators – Joyce Mendenhall Participants will have some hands-on fun learning how plants are pollinated and why pollination is so important in this fascinating workshop. Presenters will also read their book, Calla and the Caterpillar, about a young girl who helps save important habitat for Monarch butterflies. Discussion of our trials last year and the different ways we are trying to incorporate mushroom production into our gardens. Rm 227- From Grain to Glass: Beer and How to Brew it – Andy Sparks We will review the history of Beer and the key ingredients that are used in brewing beer. Then we will walk through the brewing process and see how easy it can be to make beer at home. Some of the topics we will cover include: necessary equipment, cleaning and sanitation, common mistakes, brewing resources, and recipe formulation. Rm 226- Cooking with Local Food Tasty tips and great ideas for cooking with your locally grown ingredients, whether from your backyard or your local farmer. Chapel- How to Bee-Friend the Bees: Beekeeping – Don Steinkraus The class will cover why bees are important, how to make your garden and yard an oasis for bees of all sorts, how to keep honey bees and make bee homes. Rm 259- KIDS: Art in the Garden with FoodCorps Learn how to turn recycled materials into beautiful and fun garden art.
