Coppell, TX - Coppell-based CiCi’s, a
rapidly-expanding 600-unit pizza,
pasta, salad and dessert buffet chain,
announced it has signed agreements
for the addition of 16 units over the next
five years and hired Wingstop veteran
Bruce Evans to lead franchise sales. The
moves are part of CiCi's growth initiative, with the goal of adding 500 restaurants in the next eight to 10 years.
"Texas is a focus in our plan for
strategic and sustainable growth," said
Mike Shumsky, CiCi's Pizza CEO.
"Texas has led the nation in job growth
for the past decade, and we have
strong brand loyalty and brand recognition here. As we continue to build
restaurants for long-term success,
Texas, as well as Southern California
and Southern Florida, will be key to
our expansion goals."
All 16 restaurants will open in the
Houston and San Antonio areas. The
restaurants will be built by current
franchisees Tommy and Tami Marlin
and Guillermo Perales, who leads
Mucho Pizza, a subsidiary of CG
Management. Mucho Pizza already
operates more than 50 CiCi's restaurants in Texas and Maryland.
Perales, a Dallas resident and
prominent franchisee who oversees
more than 200 restaurants across bigname brands like Burger King, Golden
Corral, Denny's and Popeye's, will
begin developing restaurants in the
Houston area this year. One of the
largest Latino franchisees in the U.S.,
Perales has been named one of the
top 100 Hispanic entrepreneurs by
Poder magazine and is regularly recognized by business organizations as
an industry leader for his top-notch
operations results.
Current franchisees Tommy and
Tami Marlin have also signed on for
additional units. The couple, along
with their son Shane, already operates
eight successful CiCi's restaurants in
Abilene, San Angelo, Laredo and San
Antonio, Texas.
"Mr. Perales and the Marlins are
exactly the kind of franchisees that will
ensure CiCi's remains profitable as it
grows," said Bill Spae, CiCi's Pizza Chief
Development Officer. "Their experience with best practices and proven
track records sets an example, and the
tone, for future franchisees."
New Vice President of Franchise
Sales Bruce Evans, a 15-year restaurant
and franchise veteran, will work directly
with new and potential franchisees to
make certain they're poised for profitability. As director and then vice president of franchise development for
Richardson-based Wingstop, Evans
developed sales strategies that helped
grow the franchise chain from 50 units
to more than 500 in just nine years.
"Bruce understands the franchise
world and has had measurable success
driving the kind of aggressive growth we
are seeking," Spae said. "New franchisees will quickly recognize what an
asset he is to our business."
CiCi’s Pizza started in Plano, Texas in
1985, is as a family-oriented restaurant
with a fresh, hot pizza, pasta, salad and
dessert buffet featuring up to 20 varieties of pizza made with fresh ingredients for $4.99.
Legendary Burger House opens in Lubbock
Lubbock, TX - The Burger House, a
Dallas hamburger and fries institution
since 1951, will start selling its first
Lubbock-made hamburgers on May 1,
thanks to a former Lubbock Texas Tech
student who graduated in 2008.
Blake Terry, president of Terry
Ventures, Inc. and who owns franchise
rights in the Lubbock area, is putting the
finishing touches on his first Burger
House at 2405 19th Street. Terry, who left
Dallas to come back to Lubbock, deliberately found a location near the college
campus from which the honor student
graduated two years ago.
The Lubbock Burger House will be
the eighth location for the expanding
franchise, but the first in West Texas.
The Burger House first opened in
1951 as neighborhood hangout selling
burgers, fries and individually-made
malts and shakes. One of the things that
quickly caught the attention of diners
and made the three-employee operation an instant hit was owner Jack
Koustobardis’ “secret salt.” This special
seasoning, refined by Koustobardis over
the years became so popular, it’s now
packaged and sold in all Burger House
locations and on the internet.
Koustobardis continued running the
popular eat spot for 31 years, finally selling it to the present owners, Angelo S.
Chantilis and Steve G. Canellos, in 1982.
The original burgers, fries, shakes and
malts are still on the menu and prepared
the same way. Chicken sandwiches and
a children’s menu have been added. The
two men’s sons, Christopher Canellos
and Angelo Chantilis, Jr. (Sonny) have
joined the venture as well.
Accolades have been many, including numerous local and state awards.
The most recent recognition came in
2009 in a top-selling book called
Hamburger America by George Motz, in
which Motz named Burger House the
top hamburger place in Texas.
C. Keith Hudson, President of the
Houston-based Charter Franchise Services - which created and sells franchises for the 59-year-old establishment, runs one of a very few full-service franchising companies in South
and Midwest. Among its current
clients are La Paletera, with nearly
three dozen locations open or under
development in Texas and Louisiana;
the famed San Antonio Italian restaurant concepts, Luciano’s, Buzzy’s BBQ
in Kerrville and Danny’s Restaurant in
the Valley.
Hudson is one of a select group
of national business men and women
to achieve the title of Certified
Franchise Executive through the prestigious Institute of Certified Franchise
Executives. He currently serves on
the IFA’s Franchise Political Action
Committee and on its Membership
Committee.

Wolken is putting together all of the paperwork needed
for several locations. The first will be at the
International Design District, which will be an
ongoing breakfast or lunch location beginning
Friday, May 27th. “We will have multiple locations starting in Dallas, Coppell and Irving/Las
Colinas for May. In June, we will roll out more
cities. I want to have at least 3 trucks spread
out like a web across the DFW area by yearend. 10 trucks in the next 5 years,” said Randy..
“My development deal with Gandolfo's is 40 stores and trucks by

My appointments were all over the
Atlanta area so we decided to stay at a
hotel near the airport and major roads.
When I approached the check in desk I
was greeting by the desk attendant who
asked for my name and the customary
identification and credit card information. Once he had the necessary information he asked if we needed help with
our luggage and came out from behind
the counter to offer his assistance. We
didn’t have that much to bring in (LOL)
so we declined his help. He insisted on

helping and showed us to our room to
make sure we were happy, all done in a
very friendly manner.
After we got settled in the room we
decided to go for dinner and went to
the desk to ask for restaurant locations
in the area. Our new friend gave us his
recommendations and we got into a
conversation about how long he has
been in the hospitality business and
how much he loved doing his job,
which was quite evident. We offered to
bring him back dinner but he declined.
We checked out in the morning but
we were scheduled to come back after
our swing through upper Georgia and
Tennessee about five days later. When
we returned to the hotel I was on my
cell phone so my wife went to check in.
The same deskman was on duty and
came out from behind the desk to give
my wife a hug and welcome her by first
name. I was able to see all this from my
vantage point in the car. He then proceeded to check us in to the same room
we had on the previous visit. What a
welcome! This was not a five star resort
so this kind of service was not expected
but it was certainly appreciated.

This summer, residents of Burleson
will have something new to “moo”
about as the town’s first MOOYAH
moves into McAlister Square. The franchise owners, brothers in-law Bailey
McGuire and Frank Sciuto, are eager to
set up the family oriented brand within
Burleson, which has long been celebrated for its sense of community.
The location is slated to open in June
and will be located at 12632 S. Freeway
on the Northwest corner of I-35 and
McAlister Road.
“Burleson is a wonderful, growing
community, and we’re eager to be part of
it,” says McGuire. “We’re excited to support the schools and youth sports teams
and really get to know the families that
make Burleson such a special place.”
McGuire and Sciuto aren’t the only
ones who love Burleson. Last year, the
America’s Promise Alliance (APA)
named Burleson one of “100 Best
Communities for Young People.” More
than 350 communities in all 50 states
were nominated for the honor. The APA
is the nation’s largest partnership organization dedicated to youth and children.
While neither McGuire nor Sciuto
have children yet, they are very much
about family. Sciuto married McGuire’s
sister five years ago, and coming together to run MOOYAH is a large part of what
reunited the family to live in Texas
together (Sciuto is a California native).
McGuire, raised in Fort Worth and a
graduate of Southern Methodist
University, had been living in Chicago
with his wife, Kristin, when discussions
about opening a MOOYAH began. “It
was the reason we came back to Texas,”

says McGuire. “MOOYAH’s great food

MOOYAH, while known for its
family friendly, fast casual styling, is

the Advancement of Foodservice
Education (CAFÉ) announced a
new program that reviews resources
for use in professional foodservicetraining programs.
The purpose of the CAFÉ
Endorsement Program is to recommend select educational resources
as applicable and desirable for use
in a foodservice-educational environment in high schools and postsecondary schools nationwide.
According to Mary Petersen,
founder and executive director of
CAFÉ, the new program will utilize
a panel of distinguished educators
to determine a resource’s value and
relevance to foodservice education. Examples of eligible resources
include written or digital curricula,
textbooks and companion materials, identification posters, online
content and Webinars, and formal
classroom exercises such as lesson
plans. Applicable resources must
be primarily educational (as
opposed to commercial) and must
be available at low or no cost to
foodservice educators and trainers.
“CAFÉ has been approached for
many years to not only help develop educational curricula appropriate for the classroom, but also to
distribute resources that have been
designed for educators’ use,” says
Petersen. “We view our new
endorsement program as an
opportunity to further our mission
of linking the foodservice industry

Mai’s Restaurant, a landmark
Houston eatery that was gutted in a
two-alarm fire in February 2010,

launch of a new certification program
that will establish restaurants as safe
for gluten-restricted diners.
Celiebo is seeking to create
greater understanding and cooperation between restaurants and glutenfree patrons by detailing what is
involved in order to safely prepare
and serve gluten-free offerings and
create an environment free of crosscontamination.
In order to receive the Celiebo
Gluten-Free
Restaurant
Certification™ brand, the Celiebo
education team works with the
restaurant staff to instruct them on
how to safely serve a gluten-free
patron in every phase of the dining
process—from menu architecture to
food preparation and service. They
will facilitate the training necessary
in a concise, three-day program that
allows all staff, including owners,
managers, chefs and wait staff to
learn gluten-free compliance.
To coincide with the launch of
the program, renowned New York
City-based Mexican eatery, Rosa
Mexicano, has agreed to serve as the
organization’s flagship restaurant.

Celiebo in this endeavor. Glutenfree diners are a growing segment of

received requests for gluten-free
alternatives to our signature dishes.
We knew the time was right to
become more gluten compliant and

In the near future, Celiebo plans
to implement the certification program in notable Manhattan restaurants such as Nizza, Bistango and

As operators find more diners in
their restaurants, they are seeing major
increases in their invoices for food and
supplies. Higher prices for food, utilities,
gas for vehicles, paper, linen and other
supplies are shrinking margins. Can
your higher sales numbers offset the
rapid rise in food cost?
A 10% rise in your invoices will cost
you 3.5% of sales at a 35% previous food
cost level.
This may be too much to take if you
rely heavily on coupons and discounts
to attract patrons. On the other hand,
most operators would gladly part with
3.5% of sales to see more revenue.
Many of these people will eat the cost
increases for some time. They will follow their competition in any price
increases. Fearing a drop in business
just as they see a pick up, restaurant
managers are holding prices in check
at many locations.
Is this a good strategy? Happy to
have survived the recent bloodbath,
many people I speak with are happy to
wait the competition out. They quote
$5 foot longs, 2 entrees and an appetizer for $20, 2 pizzas for 1 nights, and
numerous competitors offering a meal
with full service for $9.95. Patrons have
downsized from prime steaks to
upscale burgers. Burger places are popping up everywhere I go.
If you decide to lead in the price
increase game, I would expect your
competition to follow pretty quickly.

Good food, good southern
Louisiana Creole style food, has been
the passion and career of Tom Tollett.
He is the owner of the popular
Tommy's Restaurant Oyster Bar, a
full-service Creole style restaurant, in
the Clear Lake area of Houston, Texas,
and recently celebrated his 35 year in
the restaurant business, with the
highlight being the success of his
namesake restaurant, which he
founded in late 1994.
Tollett began his career in 1975 at
Don’s Seafood Restaurant in
Lafayette, Louisiana, while attending
the University of Southwest Louisiana
as a marketing major. In 1977, he was
promoted to kitchen manager and
wrote the first company cookbook,
which is still in use today. After moving to Clear Lake, Texas, he was hired
in 1979 by the famous Jimmie Walker’s
Restaurant in Kemah, as their executive chef. Less than six months later,
he became General Manager of this
seafood restaurant with $5 million in
annual sales.
In 1980, Frans Gillebaard, owner of
the competing Flying Dutchman
Restaurant, hired Tollett as executive
chef. At that time, the Flying
Dutchman was grossing $1.5 million
annually, and consisted of a casual
dining room upstairs, and an open-air
restaurant downstairs, overlooking
the famous Kemah waterfront. In
1981, he was promoted to general
manager. When hurricane Alicia hit
the area and did substantial damage
to the restaurant Tollett was responsible for overseeing reconstruction and
the reopening 30 days later.
Over the next ten years, the Flying
Dutchman experienced consistent
growth. By 1985, the Flying
Dutchman Restaurant & Oyster Bar
was grossing over $3 million annually.
The company purchased adjacent
property in 1986 and built the Brass
Parrot, a two-story, 630-seat casual
dining restaurant with a Caribbean
concept. Tollett, who was then president of the restaurants, once again
was responsible for all construction,
design, menus, and recipes.
In 1990, with two restaurants now
grossing a total of $8 million per year,
he purchased additional property in
Kemah, including the acquisition of
two city streets. Tollett handled all
negotiations with the City of Kemah
for the rights and titles to the property, while developing the concept and
design and overseeing the construction of a third restaurant: The Kemah
Cantina, an 18,000 square foot, 850seat facility with three floors, was
completed in 1993.
In 1994, Tollett left the Kemah
waterfront and opened Tommy’s
Patio Café. Over the next seventeen
years, the restaurant has gone
through many updates and remolding efforts. In 2001, Tollett changed
the name to Tommy’s Seafood
Steakhouse and featured fresh region-

al seafood and prime steaks. With
great success, Tollett opened a second
restaurant in Houston on Westheimer.
Both restaurants were recognized for
their varied menu, warm, elegant
atmosphere, and well-trained, courteous staff. In 2008, as the economic climate changed, he closed the
Westheimer location to concentrate
all of his attention on his original
restaurant. In 2009, he extensively
remolded the restaurant, which
included a new name, Tommy’s
Restaurant Oyster Bar. The new concept is a casual, fresh, regional Gulf
seafood and prime cut steaks restaurant.
Oysters have been a large part of
his new focus and success, along with
the local involvement in the
Galveston Bay. In fact, he recently
hosted one of the very first Galveston
Bay Appellation Oyster tastings that
highlighted the different characteristics of Galveston Bay Oysters.
As a restaurateur and a member
of the Galveston Bay Foundation, he
also spoke before the Texas House of
Representatives to encourage ensure
passage of bills that would protect
the freshwater that flows down the
Trinity and San Jacinto rivers, which
are the lifeblood for the estuary that
is Galveston Bay. “Fresh water provides the proper salinity for the bay,
which is good for oysters, and it also
brings the vital nutrients and sediments necessary to protect the
entire bay’s health, commercial and
recreational fisheries, and the quality of life values for future generations. The bills passed.

the lead, you can set your own pace
for price increases.
A straight % increase across the
board on all menu items should be
avoided if possible.
Recent TV and radio broadcasts
have mentioned 5 to 7% increases in
key commodities. Consumers see
the impact when they checkout at
the supermarket. A 5% rise in your
most popular menu items may be
enough to offset the cost increases in
dollar terms.
If you experience a 3% rise in food
purchased and your food cost before the
rise was 33%, you can expect a 34% food
cost. If your most popular menu items
account for 40% of sales, a 5% increase
in these items would produce a 2% sales
increase. You can index these using a 100
point scale. Sales would go from 100 to
102 and purchases from 33 to 34. Gross
profit increases by a point from 67 to 68.
In a $2M operation, this increase in
gross profit translates to $20,000. Not a
huge margin for error but the risk of losing customers will remain quite low.
Caution should be exercised with regard
to labor costs which are often tracked as
a % of sales. The 2% sales increase needs
to be removed from the figure used to
control all other expenses.
The goal is to cover our food cost
increase with a very small margin for
forecast errors. Don't give this up in
higher costs in other categories.
