PUBLISHERS LETTER
Dear Readers,
As most of us begin to plan our summer vacations or destinations for the fall, it’s also a great time
to look back at where we’ve been and where we are going. This month’s issue is all about travel—
both near and far, the familiar and exotic. But it’s also about looking great when you get there.
Summer swimsuits foreshadow tropical hideaways, while the desert sun highlights golf resorts and
shopping explorations. Travel is also about the people we meet, the memories we share and the
lasting impressions we take with us as we discover more of the world we live in.
It’s all about location, and though San Diego beckons people from all over the world, I for one am
truly glad to call this city home. Wherever your travels take you, always make it a FINE occasion.

PLUM NEW LOCATION
Rancho Santa Fe
After breaking hearts by closing its location on Paseo
Delicias, Plume—a stationery and gift shop—recently
reopened just down the street in Browtique and Spa in
Rancho Santa Fe. Founded by Courtney MacDonald,
Plume was originally a stationery shop that soon
added unique and sophisticated accessories, clothing
and jewelry. Now women can get their stationery (by
appointment) and treats while indulging in one of
Browtique’s spa services. It’s this kind of synergy that
makes Rancho Santa Fe fabulous.

Feeling a bit peaked? The antidote is Polite Provisions, a trendy soda shop

way to peckish, you can head next door to Soda & Swine for a bite to eat.
Drinks—from creative cocktails to house-made sodas to punch bowls that
serve more than four people—are made to order while customers watch
from high bar stools. It’s equally chic and nostalgic—and just what the
doctor ordered.

Ladies of Justice
The legal minds behind INC. Legal discuss winning strategies.
By Jeannie Ferris | Photos courtesy of Richard Nesdale
Contact info: INC. Legal, APC701 Palomar Airport Rd., Suite 300, Carlsbad 760-931-4742 | inclegalattorneys.com
A
n imposing lady stands in front of most judicial buildings. She
is not security. She is not a bailiff. She is an icon of fairness
and judgment. In her right hand, she holds a suspended set
of scales symbolizing truth and fairness, upon which she measures and
balances the strengths of a case’s support and opposition. In her left
hand, she wields a double-edged sword, symbolizing reason and justice.
They call her Lady Justice. This icon may date back to ancient Egypt,
however one can’t help but conjure it up when talking to Debra Lewis
and Sara Compton, the business attorneys behind INC. Legal, APC.
The mother-daughter team is proud of its partnership, which helps
them foster long-term professional relationships.
Lewis is a 30-year veteran of small business law, which includes
litigation, contracts, trade secrets, start-ups, landlord and tenant
services, employment, buy and sell agreements, shareholder disputes
and real estate. She served as the mayor of Rancho Santa Margarita
in 2000 and in the kitchen cabinet of Orange County Supervisor Tom
Wilson.
Lewis’ daughter, Compton is a graduate of UCSD and University of
San Diego Law. She is a certified mediator and has actively served on
several jury trials, including serving as second chairperson and assisting
26
FINEsd.com | facebook.com/FINEmagazines
in jury trial. Her mediating skill has been successful in resolving disputes
without the necessity of going to trial.
An added benefit of having the two women combine their
understanding of how legal requirements intersect with business
practicality and reality is that a client gets billed for only one attorney. It
is this caring quality which differentiates them from just being attorneys,
to also serving as invaluable business and legal advisors.
The chief tenet in their philosophy is to operate with a preventative
strategy to avoid potential expensive courtroom battles. But both are
fearless champions of truth and fairness, and have the strength to
brandish the sword of reason and justice if need be. It’s no chance that
the symbol of their logo is a knight chess piece, representing strategy
and strength.
Lewis and Compton recently sat down with FINE to discuss their
success and philosophies on small businesses.
FINE: What is the success rate of your mediations versus going
to trial?
INC: Success in a lawsuit depends heavily on legal strategy. We
school our clients early on in the process. As anyone knows, it can be
an emotional roller coaster. Managing expectations is key, along with
MAY 2013
honestly assessing how each piece of newly acquired information
impacts a client’s position, for better or worse. Therefore, the strategy
is to be in the strongest position possible to win at trial, which in turn
allows the greatest potential for a good settlement before trial.
Lewis: In the overwhelming majority of cases, in my 30 plus years
of doing this, I am able to avoid trial and settle the case on terms
satisfactory to the clients.
the courage or resources to pursue their entrepreneurial dreams have
FINE: How do you stay current with new legislation between
Orange County and San Diego?
they chose, and more importantly, what they need to be doing on
Lewis: We are active in the business community [and] we regularly
meet with business owners and other professionals that service
the business community. I am co-editor of the North County Bar
Association’s (San Diego) monthly publication, which gives me access
to authors writing about legal topics and new development. Both
Sara and I have authored articles for the magazine. We [also] attend
continuing legal education classes to keep current on the law that
impacts our clients. We read numerous publications [and] maybe most
importantly, we listen to our clients.
protect them in a lawsuit or against creditor demands. Or they have
FINE: Do you find San Diego to be more prevalent in one
practice area than Orange County and vice versa?
INC: From a legal perspective, we would say: Have a good business
INC: Many of our Orange County clients are in the construction
industry. They range from design professionals to trades people such
as civil engineers, flooring, window coverings and tile contractors. San
Diego has a very prominent technology community. But both counties
have a strong entrepreneurial base or privately held corporations or
limited liability entities, many still run by original owners. This is the
type of business we service.
into a business without any idea of what it takes to make a success
FINE: With heavy taxations and liabilities in California, have
you seen a decline in small business startups?
Get a good legal advisor early. Staying out of trouble is so much
INC: On the contrary. The past few years have seen people laid off
from jobs starting new businesses. People who may never have had
been forced to do so by the economy. New businesses and growing
businesses need good legal advice from the beginning. Too often, we
have to help the do-it-yourself client clean up a mess because they did
not appreciate the longer-term ramifications of legal decisions early
on. We meet too many people who started up corporations or LLCs
through an Internet site, and have no clue why they chose the entity
a day-to-day basis to make sure the corporation or LLC is there to
incorporated in another state only to find that they didn’t avoid the
California taxes or liabilities, but rather now have exposure in two
states. Too many times, we have seen business owners who have surfed
the web, used a contract and found that it didn’t protect them as they
expected.
FINE: What are the top three important considerations for a
small business startup, and how would your firm differ from
others in expertise?
plan. [A lot of businesses] fail because someone is turning a hobby
of it. [Such as,] what is my product or service? Who are my target
customers? Do I have enough or do I need investors?
Once you decide the business idea is viable, have a clear
understanding of why you are taking a specific action, which may have
legal ramifications. For example, why am I incorporating vs. choosing
an LLC?
easier and cheaper in the long run than cleaning up a mess. Looking
for anyone, [whether] a lawyer, a dentist, or a doctor in crisis is not the
best decision.

FINE: How do you handle (if any) prejudices from male clients
or contemporaries?
death in the U.S. We give our legal services to the AFE foundation.
Lewis: When I started practicing in the early 1980s, it was common for
me to be the only woman in the room. At one deposition I was taking,
before I could ask the first question, the male deponent threatened
me, jumping up with a lit cigar in his mouth just inches from my face
and shouted, “Don’t think because you’re a woman, I won’t hit you!”
He thought he could bully me because I am a woman. He did not
know I had a green belt in karate, and that I had been training with
my husband and two daughters—Sara being one of them. I grabbed
the cigar from his mouth, threw it in the garbage and got into a karate
stance. “Go ahead. Throw the first punch, but I’m throwing the last
punch!” I will never forget the look of shock on his face. He sat down
and the deposition went forward without any interruptions.
Now I’d say almost half the lawyers are women; it is so much different.
We still run into that kind of prejudice from time to time. We handle
it by being extremely knowledgeable and confident in our positions.
When an opposing party can see that we are serious professionals and
not just blustering, that is usually sufficient.
Lewis: How lucky I am to have a great family that I love and that
loves me. To have a daughter that actually wants to practice with me.
My four grandkids that I love to pieces and my husband [of 41 years],
Steve. Not many people have all that and live in this great California
climate.
Compton: Helping people find solutions to legal problems. I am
inspired to be a role model to my two daughters. I want my daughters
to be strong, independent and self-sufficient. I want them to see that
education and hard work are what will allow them to be productive and
give them the freedom to choose a career path that is fulfilling. I also
want them to see that a woman can achieve balance between having
a fulfilling successful career and a great family life. Additionally, since
their father is a career Marine, he is gone for months at a time. While
he is gone, they inspire me to stay strong. I want to show them that even
though daddy is not with us for a while, he is still in our hearts and he
loves us and even while he is away, we are still a family.
FINE: Which charity organization does INC. Legal stand
behind?
Compton: We are huge supporters of the military, and in particular,
the Marines. My husband is gunnery sergeant in the Marines and
stationed at Pendleton. We understand firsthand the extreme financial
and personal sacrifices military families make to protect the rest of us. We
also help former Marines in their new business ventures.
Another cause we support is Amniotic Fluid Embolism (AFE). This is
a rare and deadly condition and the second leading cause of maternal
28

FINE: What inspires you every day?
FINE: How did you come to choose the knight (chess piece) in
your logo?
Lewis: Through brainstorming with Sara. She thought of the name,
“INC. Legal.” We wanted our name to say who we are at a glance.
We [also] wanted a logo that evoked the image of strength and being
strategic, since that is how we practice. We thought about the queen,
but we did not want to confine our image to strictly female. The chess
horse piece often makes the opening move, and it is used strategically
to take opponent pieces and protect its own pieces. And the horse is a
strong animal.

both history and the unknown—an exotic
Communist nation in the midst of a
postmodern globalized world.
But often it is from the ashes that new life
arises—a new destination to explore and
discover. Vietnam still lives in the shadows
of Western society, but just beyond the
horizon, a new day comes and Vietnam
is looking brighter than ever. More than
2,000 miles of coastline boarding the South
China Sea harken international travelers
to experience tropical beaches, incredible

biodiversity. And while the country’s
natural grandeur appeals to those souls who

seek adventure and wisdom, its surprising
metropolises are equally breathtaking—as
this ancient culture attempts to balance a
profoundly difficult history with modern
Western luxuries, technology and culture.
Vietnam is one of only a handful of
Communist countries remaining in the
world. Long since divided by ideology,
the country now enjoys solidarity
geographically and politically, proving it
a safer and easier travel destination. The
size of this country is best represented
by the various cities, local people and
activities that highlight various points
of historical and modern interest. It’s a
destination that has worked effortlessly
to attain status beyond assumptions that
linger from decades passed. Traveling here
is an exploration of food, culture, and
international shopping, as well as a test of
personal discovery, as adventure seekers
dive into the unknown and unexpected.
Formerly known as Saigon, Ho Chi
Minh City is the contemporary heartbeat
of Vietnam. This metropolitan area is
home to more than nine million people
with many luxurious accommodations to
take visitors from the intense city hustle to
pleasant and calming comfort. The Rex
in District 1 is an updated hotel famous
for entertaining American officers and
war correspondents in the 1960s and 70s.
Limousine services, a private gym and staff
babysitters are just a few of the unexpected
luxuries afforded to guests at this historical
hotel. The Park Hyatt Saigon effortlessly
balances familiar comfort and exotic pull.
From elegant stateroom windows, the busy
streets below look strangely peaceful as
hundreds of motorbikes, pedestrians and
small vehicles make their ways in collected
chaos. The Hyatt staff is fluent in English

and ready to assist in planning a day’s
adventure to various exciting destinations
throughout the city.
Some of the country’s best historical
points of interest, including the Saigon
Zoo and Botanical Gardens, can be
enjoyed within this city. One of Ho Chi
Minh City’s most notable crossings—Ben
Thanh Market—is prized by locals and
tourists alike. Just about anything can be
purchased from within several adjoining
buildings, from silk blouses and souvenirs,
to steaming bowls of pho and incredibly
refreshing Chè—a mixture of exotic
cut fruits, molasses, coconut milk and
shaved ice. This market is a great place to
experience the lifeblood of the economy
and the hustle of cultural intersections, as
people from all over the world come here
to shop incredible bargains.
The Diamond Plaza, also located in
District 1, is home to several high-end
luxury boutiques that cater to tourists with
discerning taste. Completed in 1999, this
multi-level shopping mall also includes
a cinema, several cafes and restaurants,
office suites, and apartments. This
beautiful architectural jewel foreshadows
the budding industrial future of the city
and the country’s desire to accommodate
Westernization.
The intense sound of transportation that
fills this busy metropolis is silenced moving
up the coast. For travelers that seek both
privacy and opulent accommodations,
there is no substitute for Da Nang.
Centrally located, Da Nang is famous for its
international port and pivotal role during
the Vietnam War. The city is quiet and
slow—almost still compared to Vietnam’s
major cities. The sand that stretches across
these beaches is fine and white, the ocean
breeze cool and fragrant—and the people
and hospitality reflect this lifestyle.
Vietnam takes an incredible leap toward
resort and luxury lifestyle in Da Nang,
which draws people in from all over the
world. The tropical climate and unspoiled
stretches of sand have been recognized the
world, and some of the best hotels and
resorts in Asia are here.
Guests will feel completely at peace at
the Furama Resort in Da Nang, a luxury
resort that surprises travelers with beautiful
suites, beachfront views, five-star dining,
spa services, and several lagoons and pools
for lounging. But the pool is the last place
to be in Da Nang. The pristine beaches
and turquoise waters are best viewed from
shady cabanas situated in the sand. During
the day, the beach is only sprinkled with a
few people, as locals don’t typically enjoy
the waves until the sun begins to set—
making these secluded beaches the perfect
place to quietly rejuvenate under the sun.
Redefining luxury at a new Da Nang
hotel is the Da Nang Sun Peninsula Resort,
an InterContinental hotel with absolutely
every amenity one could imagine while
on vacation. This palatial escape includes
a library, game room, complete business
center, health spa, limousine services and
more. An English-friendly and hospitable
staff meticulously prepares every detail for
guests in this Vietnamese paradise.
In Da Nang, a savory menu of fresh
seafood is available almost year round.
From simple fish to more adventurous
crustaceans, travelers to the city by the sea
simply can’t miss the bounty lining most of
the main streets, calling customers in with

huge tanks of live seafood—some almost
escaping these aquariums to make it back
to sea. And seafood isn’t just on the menu.
Here, most restaurants enjoy oceanfront
views as well. For a comfortable dining
experience and incredible ocean view, dine
at The Blue Whale Restaurant, known for
its modern and updated interior, complex
wine list, abundant seafood selection and
helpful Western accommodations.
Once recharged in Da Nang, Vietnam
has more adventure to offer in the north,
where the county’s culture is far more
traditional and exotic to Western explorers.
Once occupied by the French and once
the capital of French Indochina, Hanoi
is the capital of Vietnam and the second
largest city. This northern metropolis
is wildly different than Ho Chi Minh.
The urban areas surrounding the Red
River are architecturally inspired by the
French occupation and known commonly
as the French Quarter or Old Quarter.
Here, travelers can take in the collision
of European and Asian style, along with
traditional histories at several museums
including The National Museum of

Vietnamese History, The Vietnamese
Museum of Fine Arts and several Ho
Chi Minh exhibitions. Hanoi is far less
cosmopolitan than the south, as a strong
division of political ideology is present
despite the unification of this country, and
the people who live here tend to struggle
marrying the new world with the old.
From Hanoi, just a few hours east,
travelers prepare to behold one of the most
beautiful UNESCO World Heritage Sites
on the planet—Ha Long Bay. Northwest of
the Golf of Tonkin, the bay is dotted with
monolithic islands covered in lush jungle.
Many of these islands are hollow and reveal
stunning cave interiors and natural grottos
that transform the surrounding world into
a playful fantasy. The legend of this bay
claims that gods sent dragons to protect the
Vietnamese people from foreign invaders.
The dragons spat out jade and jewels that
took shape as the islands that blocked the
invaders and now make up the bay.
The stories of these island formations
may be lost to antiquity but touring these
breathtaking seascapes is more luxurious
than ever before. Aboard handcrafted
wood boats called junks, guests can watch
the panoramic views slowly change with
the tide—sailing through a maze of sea
and jungle. Enjoy fine wine and dining,
luxurious suites and several water activities
like snorkeling and kayaking, aboard
one of several fleets that tour regularly
throughout the year. These intimate and
romantic cruises provide a unique glimpse
of the natural beauty while affording a
unique slice of luxury on the open China
Sea.
Those who commit to make this journey
will return changed—by the people, the
common experience of the human spirit,
and the understanding that the world is a
much bigger and more diverse place than
one could simply ever imagine, even when
enjoying luxury abroad. For many, Vietnam
is the Far East of imagination, and perhaps
traveling to this destination will fill a much
needed reality—that Vietnam is evolving,
changing, becoming a place that people
can experience with eyes wide open, as
the sun sets on the eastern shoreline, just
beyond the horizon.

Lee Ramage is confident when he says
he and his mother can get more money
for an Olivenhain home than any other

homeowner that wants to sell their home,
including the only real estate office in the
heart of Olivenhain,” he said. “Every
prospective home-buyer will drive by our

include high-definition home tours that
offer perspective home buyers the ability to

video tours link to QR codes featured in
print advertising, brochures and for sale
signs, giving prospective homebuyers the
opportunity to view a video of a client’s
home on their cell phone or tablet. These
videos provide the Ramages’ listings with
international exposure thanks to the
internet.
“We are also consummate salespeople,”
Lee Ramage added. “We don’t send
our assistants to open our listings for a
prospective home buyer like most other
agents. We show up to sell the home and
the neighborhood. It takes knowledge
and the ability to sell to get top dollar for
an Olivenhain home. Homeowners that
choose other agents to sell their homes
don’t know what they’re missing.”
Recently, the Ramages became part
owners in the real estate company, FINE

luxury real estate and an extension of

magazines monthly to affluent communities
throughout San Diego County and into

Desert Gem
From golf to shopping, La Quinta offers something for everyone.
Article by Wayne McCollum | All photos used with permission
S
urrounded by the majestic Santa
Rosa Mountains and offering yearround sunshine, it’s no surprise that
La Quinta has been named the “Gem of
the Desert.” For decades, visitors have been
drawn to this California city to experience
the best in leisure and luxury. And this gem
does not disappoint.
Long hailed as an exclusive resort
getaway, La Quinta hosts some of the top
golf courses in all of the desert, as well as
dining, shopping in the quaint village area,
biking along the Bear Creek Trail, and
hiking in the Santa Rosa and San Jacinto
mountains.
The most prominent feature of this area
is the mountain ranges. First populated
by the Cahuilla people—one of a few
Native American tribes that dug wells—
the San Jacinto Mountains are known for
their natural beauty. The “Palm Springs”
segment of “Soarin’ over California”—
Disney’s famous simulator tour of the
state—was actually shot at the famous
PGA WEST golf complex in La Quinta,
with the Santa Rosa Mountains clearly
visible.
Thanks to its surrounding natural beauty
and plethora of amenities, the city enjoys a
healthy tourism industry, especially during
the cooler months when the snowbird
tourists arrive. A “golf mecca” in both
the summer and winter, La Quinta boasts
more than 20 golf courses, including
PGA WEST, which hosts the Humana
Challenge (formerly the Bob Hope Desert
Classic) each January. The city’s public
SilverRock resort owns the Arnold Palmer
Classic Course, and La Quinta Resort &
Club has six courses open to its guests.
And golf is not the only draw to the La
Quinta Resort and Club. In 1926, Walter
Morgan built it as a secluded hideaway
for nearby Hollywood’s celebrities and
socialites. Blessed with the natural beauty
of the mountains and the desert, it began
as a private retreat for such Hollywood
legends as Greta Garbo and Clark Gable.
Today, La Quinta has grown into a retail,
restaurant, art and entertainment hub
tucked in this quaint mountain cove.

Full of local charm, Old Town La Quinta

Global Appeal
Model Summer Crosley bares all on her mission
to encourage environmental conservation.
By Whitney Butler
Jet-setters from around the world know
that from here to there, locale is everything
when deciding what to pack and where
to play. For model and actress Summer
Crosley, her three travel essentials are
sunscreen, multiple sunglasses and a
camera to capture the action. Touring the
world is just part of the gig for this leggy
globetrotter, and these exotic locations
have inspired her passionate conservation
efforts that have people looking at the big
blue picture.
It’s hard to imagine this incredible beauty
running and hiding from a camera lens, but
that’s exactly how she describes herself
as a young girl. Today, this is clearly
not a problem, as Crosley has earned
international modeling success with GQ
India, GQ South Africa, GQ Australia,
FHM and Vogue Italy. This eco-conscious
brunette has global appeal and with
her international celebrity, she plans on
making a difference.
Recently, Crosley’s growing career has
taken her to South Africa, Brazil, Bali
and Fiji—exotic destinations perfect for
snapping pictures, enjoying culture and
taking in stunning environmental beauty.

And it’s this natural beauty that Crosley
saw under attack as she prepared for
luxurious fashion shoots and noticed these
world-renowned beaches were littered with
trash.
“I started noticing that some of the most
beautiful beaches had trash on them…
so I decided to take action and start
beach clean ups,” Crosley explained. “Our
oceans need to be protected, and we’re
the ones that need to take part in the
solution.” Crosley is using her star power to
boost awareness for ocean and wildlife
conservation, an issue that effects San
Diego personally with each passing year.

alongside charities and organizations that
support these conservation endeavors
both at home and abroad.
“I encourage people to start their own
beach cleanups amongst friends or
family… even on their own, if they’re out
on a beach stroll or taking the dogs for a
walk,” Crosley advised. “I also encourage
people to stop using plastic. Only about a
third of all plastic products are recovered
for reuse and recycling. Plastic is the
main cause of why our oceans are in
danger.”
Crosley currently works in partnership
with Sea-thos Foundation (seathos.
org), an ocean conservation program
that helps to protect ocean biodiversity
and wildlife. She also owns a company
that uses seashells to make candles,
donating a portion of these proceeds to
the organizations she supports.
“[My] hope is that I get the idea out there
and other people will take part,” Crosley
said. “There are so many areas of our
world with marine or animal life that need
to be protected. On a recent visit to Africa,

With so many organizations and charities
that focus on environmental conservation,
it seems that on a global scale, the
best remedy is perhaps the smallest. “If
everyone would just take part and pick
up one piece of trash, our oceans would
become much cleaner,” she added.
Crosley’s message is simple, and
with the support of others at home and
abroad, beauty can remain beautiful for
generations to come: “I hope my journey
takes me to more beautiful places, with
special people, and I make long-lasting
memories,” she said.

Seasonal Scottsdale
This Arizona hotspot offers year-round activities.
By Wayne McCollum | All photos used with permission
S
cottsdale has rightly been called the “Ultimate Resort
Destination.” With more than 300 days of sunshine a year,
the Arizona city offers romantic getaways, gourmet dining,
championship golf, family vacations and adventurous activities.
The city’s calendar of special events is full of annual favorites:
• January: Fiesta Bowl, Barrett-Jackson Collectors Car Auction
and the Waste Management Phoenix Open.
• February: Parada del Sol Concert and Rodeo.
• March: San Francisco Giants Spring Training.
• April: Scottsdale Culinary Festival.
• May: Summer concerts at McCormick-Stillman Railroad Park.
• June – August: Golf at exclusive courses at discounted rates.
• October: Scottsdale International Film Festival.
• November: Scottsdale Fashion Week.
To accommodate for these special events, Scottsdale resorts and hotels
are as abundant as the saguaro in the Sonoran desert. Luxury resorts,
hotels and renowned golf resorts set against the beautiful landscape
cater to those who seek the best in personal services, first-class amenities
and red-carpet hospitality. Be prepared to pamper yourself at one of
the much-talked-about Scottsdale resort hotel spas, offering unique
hand-tailored messages and services that will leave you feeling as if
you’ve visited the Fountain of Youth.
While there seems to be no end to the choice of accommodations,
you might want to stay at the prestigious Westin Kierland Resort &
Spa to be near the heart of some of the best shopping and restaurants
imaginable. If your penchant is to be close to some of the best golf in
the desert, then you want the Four Seasons Resort Scottsdale, located
adjacent to the renowned courses of Troon North Golf Club. One
of the oldest yet most popular stays is the JW Marriott Camelback
Inn, which is showing off its recent $50-million transformation. The
Phoenician, with its AAA five-diamond rating, and the “Jewel of the
Desert,” the Arizona Biltmore, round out the best-of-the best list.
The city is famous for its fine dining, and you will find a collection

has quickly become a great Scottsdale landmark. The park allows
children to have fun as parents watch and reminisce about their own
childhoods. A large track takes riders on a one-mile ride through the
park. In addition, kids will love the carousel and additional playgrounds
throughout the park. For adults, a railroad museum houses miniature
railroads and much history to explore.
For the shopping enthusiast, Fashion Square Mall, the fifth largest
mall in the country, awaits. The Borgata of Scottsdale and the Hilton
Village are two specialty malls that offer unique stores in a rich, relaxing
environment—and both are outdoor malls. A few minutes out of the
city, and you get a feel of western flavor, with activities for the whole
family, including hiking, climbing, horseback riding, hot air ballooning,
off-roading, outdoor target-shooting, rafting, tubing and water sports.
And some say no trip to Scottsdale is complete without a horseback
riding adventure. Riding along desert trails and through pristine
streams is sure to bring out the cowboy in everyone. No matter the
season, Scottsdale is where you can truly experience “Old West values
and contemporary luxuries.”

BO-beau Kitchen + bar
Distinctive French cuisine in the middle of Ocean Beach.
Article and food photos by Maria Desiderata Montana | All additional photos used with permission
A
s you wind down Point Loma
Blvd in the middle of eclectic
Ocean Beach, it’s hard to imagine
finding a quaint French farmhouse at the
end of your journey. BO-beau Kitchen +
bar is nothing less than a diamond in the
rough, a jewel of fine French cuisine that is
distinctive in its location as well as quality.
The front entrance is surrounded by
visions of the French countryside, complete
with weathered wood containers filled with
dried herbs, wrought iron accents and old
garden tools. Indoors, gaze upon stone
walls, tall beamed ceilings, antiques, and
a stone hearth fireplace. All of the tables
are packed together in typical bistro style,
surrounded by people in conversation,
adding an exciting and vibrant exhilaration
to the atmosphere.
Be sure to start your experience at the bar,
with a wonderful view of the open-air patio
and potted vegetation. A large wall is filled
with endless bottles of fine wine, finishing
the image of a far-away country and
simpler life. The wine list is nothing short
of impressive, with varietals that span the
world, but certainly the French selection
is the most logical choice. Be sure to ask
your server for a suggestion on the perfect
pairing once you’ve chosen your meal, as
the staff is well-versed in complimenting
your dish with the best wine.
It’s rare to find an authentic and cozy
French bistro in Southern California, but
this tiny little structure houses one of the
finest culinary artists in town. With plenty
of big-time experience under her belt,
Executive Chef Katherine Humphus has
an extraordinary talent in bringing France
to your tableside. “We have somehow
managed to have a real neighborhood feel
and yet be a ‘destination’ restaurant at the
same time,” she says. “Plus the ambience is
one of a kind.”
Bo-Beau’s cuisine has reached an
impeccable maturity displayed by
Humphus, who says she’s mastered the art
of multitasking, while still understanding
the difference and importance of time
constraints, quality, and perfectionism.
Her propensity for creative cuisine has
been seasoned by various stops along
the way, including an internship at the
revered French Laundry in Napa Valley,
California. “I originally started with the
Cohn Restaurant Group at The Prado at
Balboa Park,” she says. “After leaving for
a few years to go to culinary school at Le
Cordon Bleu in Paris, I returned and asked
owner David Cohn if he had any new
projects in the works. He told me to check
out “BO-beau, a new French bistro idea”.
It’s not only the diners having a good

time, but real pleasures await from a
playful and modern menu daring to offer
French specialties served in large portions
that are complete and grounded. Using
sustainable, local, and organic ingredients,
Humphus sources most of her products
from Specialty Produce, also supporting
Point Loma Farms as often as possible.
With one of Bo-beau’s most popular
dishes, the Crispy Brussel Sprouts,
Humphus makes liberal use of balsamic
vinegar, pancetta and shaved parmesan,
all flamboyantly presented in an oldfashioned glass jar, spilling out over a rustic
cutting board as a plate. Also seen floating
through the dining room on a regular
basis were flatbread choices, highlighting
Humphus’ mastery of combining old
and new styles to delight her guests. Two
perfectly different flatbread examples
include the Chorizo with Serrano,
marinara, five Italian cheeses and basil, or
the Banh Mi, with sesame pork meatballs,

pickled carrots and daikon, jalapeno,
cucumber, cilantro and sriracha aioli.
The Frisee Salad was a study in freshness
and artistic technique, boasting a
poached egg as its centerpiece, effortlessly
suspended atop tender lettuce and dressed
in a warm bacon vinaigrette with truffled
goat cheese toast as its base. This salad
pairs nicely with the Moules (Mussels) in
a red curry broth, that not only boast a
nice texture and color, but lend a subtle
sweetness and spicy bite.
My standards were set high for the Boeuf
Bourguignon, a dish many cooks cannot
master successfully. Humphus captures
the true essence of this traditional dish
that is comprised of a rich and velvety
gravy with slow-cooked and fork tender
chunks of beef and al dente vegetables,
including baby carrots, mushrooms,
pearl onions, and fingerling potatoes. Just
when I thought it couldn’t get any better,
Humphus unremittingly shows off her
exotic mystique with a juicy-to-the-bone
Chicken Fricassee balanced with tarragon
dumplings,
seasonal
vegetables
and
champagne mustard seed.
Humphus makes a sumptuous ending to
the meal with the Ménage a Trois, which
is not only delicious, but impressive to
behold. Three complimentary desserts are
strategically placed side-by-side, leading to
a treasured journey into sugar land. The
homemade Peanut Brittle is subtly sweet
and studded with salty peanuts, and unlike
your run of the mill store bought brand,
it is not overly crunchy and offers more
of a soft, cookie-like consistency.
The
Kahlua Pot de Crème is superbly silky,
complimented with an amber caramel
sauce and topped with miniature fluffy
marshmallows. And finally, the pecan
praline cheesecake adds a rich and velvety
texture to its partners on the plate –
definitely all too easy to lap up!
