Mix well with humility. Sprinkle generously

over a lifetime, and serve to family

RECIPE FOR AMISH
BREAKFAST CASSEROLE
1 pound sliced bacon, diced
½ pound breakfast sausage
1 medium sweet onion, chopped
8 eggs lightly beaten
4 cups frozen shredded hash brown potatoes,
thawed
2 cups (8 ounces) shredded cheddar cheese
1½ cups (12 ounces) 4% cottage cheese
1¼ cups shredded Swiss cheese
In a large skillet, cook bacon and onion
until bacon is crisp; drain. Sauté the sausage
until it is cooked through. In a large bowl,
combine the remaining ingredients; stir in
bacon mixture and the sausage. Transfer
to a greased nine-by-thirteen-inch baking
dish. Bake uncovered at 350° for 35–40
minutes or until a knife inserted near the
center comes out clean. Let stand for 10
minutes before cutting. Makes 12 servings.

RECIPE FOR FASTNACHTS
2 cups milk
¾ cup sugar
1½ teaspoon salt
2 eggs
1 yeast cake/package of dry yeast
7 cups flour
¹⁄ ³ cup lard
powdered sugar
Bring milk and lard (shortening can also be
used) to the boiling point, but do not boil.
Stir in sugar and salt, and let cool to lukewarm. Beat eggs and add to the milk. Soak
yeast cake in 1½ tablespoons of warm water
and keep warm. Sift and measure the flour.
Combine yeast and liquid. Add enough flour
to be able to handle easily. Knead well by
stretching and folding it over itself.
Let rise overnight.
The following day, roll out to ¼-inch
thickness. Cut into two-inch squares and
make a slit in the center of each. Cover and
let rise ¾ of an hour. Deep-fry until golden
brown. While warm, roll in powdered sugar.
