A Land of Nature: Aubrac itself is a basalt highland at an altitude of 1,000-1,500 m, Aubrac is
a mountainous area, ideal for exercise, for contemplation, for escapism...
Endowed by nature, Aubrac is rich in tradition, culture, gastronomy, authenticity and
craftsmen...
An architectural heritage : Romanesque churches styles (St. Urcize, Nasbinals...), the rough
stone shepherds cottages called « burons », farms... contemporary architecture and numerous
famous designers like Starck, Wilmotte, and Raffy who gave to this region, firmly rooted in
tradition, an aspect orientated unashamedly towards the future.
The Aubrac breed: A hardy breed of cattle whose qualities are highly valued in the agricultural
sector.
A flora which boasts over 1,000 wild plants : from the very popular yellow gentian, the
mountain arnica and mountain balm (calamintha grandiflora), known locally as « thé d’Aubrac »,
to the rarest, such as Siberian ligularia and the remarkable sundew (drosera rotundifolia),
unusual as it is a carnivorous plant 
An exceptional fauna: roe, deers, wild boars, foxes, tawny owls, kestrels, buzzards, and
stags whose deep calls can be heard in autumn during the mating season.

DISCOVER THE TERRITORY
 LAGUIOLE’S VILLAGE – 1,000 meters high
Pronounced “Layole”. It came from the local language “Occitan” means “little church”.
The symbol of the town is a bronze bull statue carved by Georges Guyot in 1947. It is located on
the main place of the village. Laguiole is recognized to be the birthplace of the Laguiole’s knife
creation.

All along the year, the smith works the iron and the fire using traditional techniques. In front of
the museum you can see the biggest knife sculpture in the world!!

At the Cheese Dairy you can learn the secrets of how Laguiole cheese AOP and Aligot from
Aubrac are made. Visits are free. They include a video, a tour of the creamery followed by a
tasting and an opportunity to purchase the products (Laguiole cheese, Aubrac Tome Fraiche,
Aubrac Aligot (fresh or frozen) of the “Coopérative Jeune Montagne ” at the shop at the end of
the visit. Open Monday to Saturday from 9 am to 12 am and from 2 pm to 6 pm. Sundays and
public holidays from 8 am to 12 am. In July and August, open Monday to Staurday from 8 am
until 7 pm nonstop. Sundays and public holidays open from 9 am to 12 am. Groups with
appointment only.

 AUBRAC’S VILLAGE – 1,312 meters high
The existence of Aubrac (“alto braco”, high place) back to the 12th century and its history is
linked to the Way to Santiago of Compostela. The Podensis via (from Le-Puy-en-Velay) is one of
the most pathways frequented by pilgrims in France. They are classified World Heritage of
Humanity by UNESCO and Great Cultural Route (Council of Europe).
The difficulties related to the climate and the insecurity when walking across the Aubrac tray,
led a man of Flemish origin called Adalard to found an hospital at the highest point from 1120.
Nowadays, we can see a few remains: the Church Notre Dame des Pauvres (12th Century), the
Tour des Anglais (14th Century) and the hospital (15th Century).

 The Botanical Garden of the Aubrac
An unique opportunity to explore over 600 wild plants, which more than 30 are protected.
Open from May 15th until September 30th from 9 am to 18 pm (19 pm in July and August).

 ST CHÉLY D’AUBRAC
A section of the way to Santiago (GR65) is on the List of Natural Properties by UNESCO:
Nasbinals – Aubrac – St Chély d’Aubrac. The Pilgrims’ Bridge on the “Boralde” in the village was
classified Cultural Property in 1998.
Documentation in English “St Chély d’Aubrac Tour” is available and movie shown in English at
the Tourist Office.

 Laguiole : The knife - history
The Laguiole knife is a high quality traditional French pocket knife.
In the 18th century, the first ones are simple and are called “Capuchadou” whose
inspiration seems to come from Catalonia. They are mainly used by farmers.
In 1828, the first knife workers settled in Laguiole. Moulin, Glaize followed by PierreJean Calmels created the Laguiole knife. In 1868, Pierre-Jean Calmels won a silver
medal in Rodez for the high quality of his knife.
In 1840, the was incorporated to help farmers pierce the stomachs of cattle that had
bloated from eating too much green grass.
In 1880, they added a corkscrew in response to the waiter's immigration to Paris.
During the 20th century the production severely declined.
In 1981, the municipality re-launched the production by traditional manufacturers with
local assembly workshops.
In 1985, Philippe Starck designed a new factory. Since then, many other workshops and
factories have opened in the village.
The symbol of the Laguiole knife is internationally famous.
Nowadays the economy and the life of the village strongly rely on the production of
knives.
The workshops6 can be visited all along the year. It’s possible to observe the workers
at each stage of the production process.
 Laguiole : The cheese
The un-pasteurized cheese of cylindrical shape weighing up to 45 Kg is made from cow's
milk grazing at an altitude of 800m at least. The Laguiole's cheese was first made in the
Aubrac's Monastery "La Domerie" during the 19th Century. Afterwards the monks taught
their method to the "buronniers" (local farmers). The maturing of the Laguiole cheese
takes from 4 to 24 months. They are kept in cellars. The temperature must be below
14°C.
The cheese enjoys the A.O.P. statue (Protected Label of Origin) since 2008.
It is possible to buy at the “Coopérative Jeune Montagne” the famous local dish “Aligot”.
It is a local product made from mash potatoes, Aubrac “tome fraiche” (fresh cheese)
and, for a varied taste, garlic can be added.

 The Aubrac cattle breed
This breed is originally from the Aubrac mountains, to the south of the Massif Central, in
the departments of Aveyron, Cantal, Lozère and Haute-Loire (Mézenc).
This breed is famous for its notable qualities in raising its offspring and for being a hardy
breed. The Aubrac is an ideal breed of mothers for the production of beef, not only in
purebreds but also in crossbreeds with bulls from other breeds specialized in beef
production.

In the heart of Aubrac, Maurice and his farmers, called “buronniers”, invite you into
the core of the traditional old cheese dairy’s life (milking cows and Laguiole cheese
making). Picnic possible. Do not forget your knives and forks ! The local dish

68 km of marked trails across the domaine of the Aubrac:
Brameloup (18 km), Laguiole (50 km).
Trails for all levels marked green, blue, red and black. Connexion trails between
different resorts are indicated by yellow poles.
A sign-posted course/path for walkers
A sign-posted course or path especially for walkers has been created at Bouyssou for
those who enjoy walking through the snow.
We would remind you that access to the cross-country trails is reserved strictly for those
in possession of a valid ski pass.
Snowshoes A sign-posted course for walkers with snowshoes is also available (30
Kms).
