oxygen will ensure these wines stay fresh for months. Best of all, the Gotham Wine Project makes fantastic wines as we hope you
will agree. We will fill a carafe for you in lieu of a bottle.

We wanted to take a bit of the work out - here are 15 fantastic wines priced at
$45 or less (with one cheater) selected for you from our admittedly way-too-big
wine list. To make things even simpler, we put some basic tasting notes under each
wine. Don't look for "reminiscent of stone fruit with a hint of lychee" (who the heck
knows what a lychee is anyway, let alone knows what they taste or smell like). Rather
we have tried to put the wines in terms that everyone can relate to.

Medium bodied, cherries, earthy, traditional, can "bridge the gap" of Tuna/Steak
Not too big, not too small, just right - good Cabernet is like Classic Rock to us - and this is just like that
There is no Keynesian-based reason why great Napa Cab should all be $100+ - this proves it - fantastic wine
Why did everyone start drinking Malbec? - Because it is the BFF of red meat! 90 pts. w.s.
Not a mouth puckering, "too big for its' own good" Shiraz but still true to its' roots - spicy, jammy and big
Honestly, as good or better than many much higher-priced Pinots - definitely not Burgundy though this is a New World Pinot Noir meaning the fruit is more pronounced and it will satisfy many of you fruit bomb
lovers - another good bridge for the "one orders seafood/one orders steak" dilemna

WINE WEDNESDAYS - HALF PRICE!
Most restaurants mark up their wine anywhere from 2.5 x what they pay to 3.5 x what
they pay. We, as many of our guests have noticed over the years, try to keep prices
as fair as possible and often mark things up just 2 x or occasionally even less. Some of
these wines prices, with the 50% discount, are being sold for what we paid for them
(and in a few cases actually less than what we paid), not a good long term business
plan but certainly a fun thing to do when you can! Some of the selections are very
limited so apologies in advance for any outages. Prices listed are the usual menu
price - do the math as they say to arrive at what you will pay every Wednesday.

Bubblies aren't just for breakfast anymore! Not just for New Year's Eve either. These
wines go fantastic with food and we have glasses and half bottles galore. Cava is
sparkling wine from Spain. Champagne of course only comes from the Champagne
region of France but even you Francophiles will be impressed by our American sparklers,
particularly the surprise from New Mexico, Gruet.

Many people believe that wine ages better in a large bottle (surface area
to volume proportions and such). But forgetting the science, there is
nothing like popping a big bottle to celebrate a special occasion or just
a gathering of friends and family. On top of that, we have tried to keep
the prices reasonable.
A 1.5 L will pour 8 large or 10 small glasses of wine, good for
a party of 5-10 people, depending of course on your group.

Over the last 100 years, 1982 stands out as one of the best vintages for Bordeaux. It was also the birth of the modern day wine
critic with Robert Parker touting the vintage when it came out to his growing list of subscribers. Indeed, for many, it was the first time

Sake that is made up of rice, water, koji mold, yeast and a portion of distilled
alcohol, and the rice is milled 50% with 50% of each grain remaining.
Now that we have covered 4 of the 6 major categories of sake, it gets a bit more complicated, because sake can be
made in different fashions to produce more variations of sake. For example if a brewer were to leave in some of
the rice polishings the result would be a cloudy sake commonly referred to as Nigori (unfiltered sake). If a brewer
decided to store his freshly brewed sake in cedar tanks this would result in Taru (cedar sake). If a sake has not been
pasteurized the typical two times then the result is Nama (unpasteurized sake.)
If brewers decide to age their sake longer than a typical fermentation cycle, then the result is Koshu (aged sake). If
brewers are looking to try something different, say by adding sake instead of more water to the brewing process, the
result is Kijoshu (dessert sake). And lastly, if a brewer decides to allow his sake to reach peak fermentation without
adding the typical amount of water to bring sake back to a diluted state of roughly 15%-16% alcohol level, then the
result is a sake that has an alcohol percentage along the lines of 17%-19%, called Genshu (undiluted sake).
ORGANIC, LOW SULFITE & KOSHER WHITES
Some Definitions:
Biodynamic Wine: Wine made from grapes grown organically and according to Biodynamic principles formalized by Rudolf
Steiner (but as old as agriculture itself) including the use of herbal compost additives and plant treatments, practiced in conjunction
with lunar and planetary movements. (May contain added sulfites).
Organic Wine: Wine made from grapes grown by organic methods, by a certified organic vineyard. Processed without synthetic
chemicals, under 100 parts per million added sulfites allowed to prevent oxidation. This is under the amount of added sulfites
commonly found in conventional wine.
NSA: No Sulfites Added
Sulfites: Sulfites are used as a preservative in wine but they also occur naturally in grapes, and hence in the finished product.
There are wines that are naturally low in sulfites and indeed some that have no sulfites. Sulfites are not harmful although they do
cause allergic reactions in some people. Most organic wines are also very low in sulfites.
Kosher: Kosher wines are made following kosher law. Many times they are organic as well.
Many wines that are made using organically grown grapes do not state it on the label, particularly small family-run estates in many
countries of Europe. Some of these winemakers have grown grapes for several generations and have simply never used pesticides or
herbicides; neither have they gone through the certification process. We have not included those wines on this list.

Sean Thackrey is an American winemaker based in Marin County, California in the town of Bolinas. From a
background as director of an art gallery,Thackrey has been described as an unconventional winemaker who has
done pioneering work in promoting California Syrah. Thackrey sources fruit from grape growers in Napa Valley,
Marin County and Mendocino, and is prone to employ the unconventional technique of letting grapes ‘rest’ at least
24 hours outside, fermenting under the stars. Thackrey contends the idea can be traced to the texts of the Greek
poet Hesiod, Works and Days (circa 700 B.C.). Not employed by anyone else at present, Thackrey claims this
method was commonplace in wine literature until the middle of the 19th century.

Sine Qua Non is that each wine has a distinct name, label and often bottle style. The wines have been titled
with names such as Queen of Spades, Twisted & Bent, Imposter McCoy, The Bride, Poker Face and Red Handed,
and the bottles come uncommonly shaped. Each label is hand made by Manfred with linocut art work of his own
creation. This process requires each year’s wine’s names and labels to be individually approved by the United
States Bureau of Alcohol, Tobacco, Firearms and Explosives, an unpredictable
process subject to the whims and vagaries of regulators. Despite numerous and seemingly random
rejections, Krankl has persisted with this expensive and time consuming process, creating a colorful, diverse and
often-times humorous body of label art.

Charles Smith / K Vintners Located at the base of the Blue Mountains in Walla Walla (Washington State), Charles
Smith opened his first winery, K Vintners, in December of 2001. The first release,1999 K Syrah from Walla Walla
Valley, initiated the style of winemaking that Charles continues today: small lots of single vineyard Syrahs and field
blends of Syrah, Cabernet Sauvignon, Grenache, Tempranillo and Viognier, all of which are hand-picked, footstomped, fermented with naturally occurring yeasts and basket pressed.
