The Contrada Mandranova is situated in a naturally magnificent part of Sicily on a hill, a few miles from the sea. This is a place of both
ancient history and Mediterranean beauty, where the olive trees have been for centuries, blown by the winds
of the Sirocco and Maestrale. The Mandranova extra virgin olive oils are “monocultivar” meaning the oil is
pressed specifically according to the variety of the olive. An accurate control process of each stage of
production yields a product of the highest quality, recognized by awards in Italy and internationally.
MANDRANOVA RED LABEL CERASUOLA UNFILTERED EXTRA VIRGIN OLIVE OIL

Produced exclusively from Cerasuola olives hand-picked on the Mandranova farm in the beginning of October (usually
October 3rd), this oil has a green color. It is medium fruity, with hints of olive, hay, almond and marjoram. The
bitterness is prevalent, followed by a slight hint of spicy flavor. For use on a raw salad of farro, pasta dishes with
vegetables, soups, red meat and aged cheese.

Produced exclusively from Biancolilla* olives hand-picked on the Mandranova farm in the beginning of October, the
oil has a pale green color, is medium fruity with hints of fresh grass. Mandranova Orange Label complements raw
seafood, prepared shellfish and fish, as well as fresh cheeses.

Produced exclusively from Nocellara olives hand-picked on the Mandranova farm the first week of October, the oil is extracted
immediately after harvest. It has a beautiful green color with golden hues. Mandranova Green Label is intensely fruity, with
hints of fresh grass, artichoke and tomato; its pungency and bitterness are perfectly balanced. This oil pairs with raw and cooked fish
beautifully as well as vegetable and pasta dishes, stews, grilled meats and roasts and cheese.

This Tuscan extra virgin olive oil was introduced to the United
States almost 35 years ago. Badia a Coltibuono,(Abbey of the
Good Harvest),is the single most consistent producer of authentic
extra virgin olive oil in Italy and is widely considered by chefs,
food critics, consumers and media as the super-premium extra
virgin olive oil by which all others are judged. This classic Tuscan
extra virgin olive oil has been produced since 1058!
It is golden yellow with hearty green nuances. The oil has a balanced fruity flavor with a hint of toasted nuts and an
intense aroma of fresh olives. The distinct peppery sensation produced at the back of your throat on the oil’s finish is an
attribute of oil whose olive harvest was young and fresh. This oil is perfect for dressing salads, vegetables, pasta, potatoes,
soup and bread. Also use for garnishing dishes that call for drizzling with olio crudo (literally raw oil). The acidity level,
harvest and release dates are on each label to guarantee freshness.

Produced by Badia a Coltibuono, this extraordinarily rich, full flavored artisan oil is produced in limited quantities from
the highest groves on the Coltibuono estate. Albereto is produced from several varieties of olives, principally Frantoio,
Pendolino and Leccino, with smaller quantities of Moraiolo and Maurino. It has a deep emerald green hue and is left
deliberately unfiltered to achieve full expression of the oil’s aroma and flavor. Handmade from the early harvest olives
which are pressed immediately, it has a distinct, peppery aftertaste and vibrant green color. Its low peroxide content deters
rancidity and is associated with high levels of vitamin E, A and K. Albereto is best savored alone, on bread, or drizzled over
soups, pasta and beans.

COLONNA
The Colonna oils are produced by Principessa Marina Colonna. Her estate is in San Martino, in Pensilis, in
southeastern Italy’s unspoiled Molise region on the Adriatic coast. A family property for over 200 years, Colonna is
well known for its extra virgin olive oils as well as special blends that are pressed with fragrant organic lemons, oranges,
bergamots and tangerines. The family’s 140 acres of groves cultivate 22 varieties of olives including Coratina, Leccino
and Gentile. Manually harvested when slightly under ripe, Colonna olives are processed and then milled on the same
day. Each olive variety is harvested, processed, milled and cold pressed separately to ensure quality. The oils are then
expertly blended and bottled in dark, glass decanters unique to Colonna, labeled and sealed by hand. The seal bears
the family’s red coat of arms—one of the most widely recognized symbols of medieval Rome. In contrast to robust
Tuscan oils, the oils of Southern Italy are characterized by warm olive aromas and lightness.

Colonna Extra Virgin Olive Oil with Lemon - This unique oil is prepared by simultaneously crushing fresh organic lemons with early
harvest olives. It is golden yellow in color with emerald green undertones and has a slightly fruity, balanced taste accented with the flavor
of fresh lemon peels. It is delicious as a marinade for seafood or drizzled on cured meats such as bresaola. It complements beautifully
boiled or steamed vegetables and will impart a lovely freshness to pasta sauces.
Colonna Extra Virgin Olive Oil with Tangerines - This beautiful oil is prepared by crushing chopped fresh organic tangerines with early
harvest farm olives. Golden yellow in color with jade green undertones, this oil is well balanced and lightly fruity, accented by the fresh

Made from premium extra virgin olive oil, this quality truffle oil achieves its flavor by balancing the white truffle infusion with
the delicate flavor of Ligurian Oil. Most truffle oils are made with less expensive Umbrian oil, resulting in a heavy truffle aroma

This 100% Taggiasca olive oil has a light golden yellow tone. The not overwhelming flavor gives a memory of dried
almonds, ripe fruits, and fresh flowers. While tasting it, this olive oil will seem fluid and sweet. Once swallowed, a
round and delicate aftertaste will stay in your mouth. The olive trees grow up on terraces, on the side of the mountains
along the valleys that run deep in the inner part of the territory, at an altitude of 700 meters. The special landscape of
the area gives to the olives a unique quality. The mountain fall rapidly into the sea and the sea breeze reaches the

In 1911 Giovanni Carli, together with his brothers and sisters, created the Fratelli Carli Company. The system of direct
marketing to families was a success. Business expanded rapidly and Olio Carli achieved widespread distinction for its
exceptional quality. For years, Olio Carli has been sold direct from factory to consumer in Italy and cannot be bought in
stores. A fleet of over 100 trucks assures prompt direct delivery to more than 700,000 families, over 120,000, of which have
been loyal customers for two or more generations! The oil is produced from the finest olives from the first cold extraction. It
must be perfect in its aroma and flavor. The maximum acidity allowed is of 0.8% per liter. Carli EVOO has a sweet and

From southwestern Tuscany comes this wonderful find from the estate of Countess Romana Bicocchi Pichi. Nestled in
rolling hills above the sea and privileged by the mild marine climate, the Numerouno Estate is ideal for olive cultivation.
Numerouno’s first cold pressed extra virgin olive oil is produced from olives grown entirely at the Bicocchi estate, from
Frantoio di Leccino to Maraiolo and Pendaglino. The mature olives are harvested entirely by hand then cold pressed one
time only by the old traditional method in mills on the property. Naturally low in acidity, Numerouno is exceptionally dense
but at the same time has a softer, pleasing taste that is more compatible with other flavors making it highly prized by chefs. It
is left unfiltered to preserve its character then bottled in dark, protective glass. Numerouno has been featured in America’s
leading restaurants and specialty markets.

VEA: L’ESTORNELL EXTRA VIRGIN OLIVE OILS
For 100 Years, the name Vea has stood for the highest standards of quality in the cultivation of olives and the pressing of extra-virgin
olive oils. Senor Avelino Vea, who now runs the family business, has maintained and elevated those standards by introducing the latest
production techniques. He has also deliberately preserved the traditional methods of cultivation and blending, as well as the integrity of
the oils that bear the Vea family name. As a result, Vea has earned recognition among the world's most discerning chefs and
restaurateurs who value the oil for its fine and subtle flavor & consistency.
As part of EUREKA, a European program dedicated to promoting innovation and development in the EEC, Vea invested in a new
decanter that has helped refine the extraction process beginning in 2008. By extracting the oil quickly, without heating the crushed
olives, the resulting oil has a very low level of peroxides and is more resistant to oxidation. This was accomplished by utilizing extremely
cold temperatures and a short time span between milling the olives and extracting the oil. Vea is proud to say that their hard work has
paid off and that the quality of our oils has improved significantly year after year.
L 'E S T O R N E L L E X T R A V I R G I N O L I V E O I L
L’Estornell, a Catalan word for a type of bird that likes olives and comes to “help” during harvest, proudly
adorns the Vea label. This elegant oil is made from hand-picked, cold-pressed olives which come from the
surrounding community just outside the village of Sarocca de Lerida, near Barcelona in Catalonia. The
Arbequina olive is the core olive in this oil--the most widely found variety in Catalonia. L'Estornell oils are of
exceptional fragrance and delicacy, suitable for dressing salads and for those special occasion meals. Every
bottle is vintage-dated.

This delicious and organic extra virgin olive oil is produced from 100% Arbequina olives from the Vea estate as well as the estates
of eleven growers in the Sarocca de Lerida region. All product origins are controlled and certified by the CCPAE – Catalan
Council of the Organic Production – under the EEC standards. Each farmer gets the certification three years after they begin

cultivating olives in an organic manner. L'Estornell Organic, made from 100% Arbequina olives, has a very fine, almost sweet, slightly
nutty-almond taste (attributable to the planting of almond trees among the olive groves.) In addition, other trademarks include a peppery
quality and spicy aftertaste.

While L’Estornell extra virgin olive oils and L’Estornell organic extra virgin olive oils are harvested throughout the harvest season a select
few are harvested at the very beginning of the season from special olive trees from the Les Garrigues and El Segria, regions in and around
Lerida. This family collection includes L’Estornell Anniversary edition, Lerida Olive Oil and Early Harvest.

This special edition bottle was created to celebrate the 100th Anniversary harvest on the Vea estate. For 2013 harvest, 2014
release, this bottle contains a special selection of 100% Arbequina olive oil, nutty with a predominately artichokey flavor and a
sweet aftertaste. Selected to embody all the characteristics of the best oil from the region, this one of a kind oil is the best of
the Lerida harvest. It is a filtered oil, pressed after the Early Harvest listed below, with a smoother more subtle finish without
any pepper.
EARLY HARVEST ESTATE EXTRA VIRGIN OLIVE OIL
The Early Harvest oil is produced from the 100% Arbequina olives used in the classic Lerida olive oil. What
makes it unique, is that this is the very first oil that comes out of the mill at the beginning of the harvest when the
olives are very green and pungent. This oil is only pressed during the first 5 days of the harvest and in limited
supply. This oil is left unfiltered to capture the true expression of early harvest olive oil. The result is a beautiful green and
fruity oil, fragrant from the young olives with the same distinctively nutty flavor and buttery texture of the rest of Vea’s oils
but with a stronger finish. This oil has a little pepper in the end and a distinct green tomato aroma and flavor. This is the
pure essence of mature Arbequina trees allowed to grow in their native soil harvested just as they reach maturity.
LERIDA EXTRA VIRGIN OLIVE OIL
Lerida has long been a classic of the Vea line of olive oils. Lérida extra virgin olive oil is renowned for its delicate, fragrant
flavor. Lerida gains its ardent taste from under-ripe Arbequina olives. Fruity and relatively green, Lerida has hints of
almond flavor and has a buttery, delicate flavor and aroma. The Mediterranean climate of the area surrounding Sarroca de
Lérida, a northeastern village in the Spanish province of Lleida in the Catalonia region of Spain, is ideal for growing
Arbequina olive trees. It is in this area of Spain where the Arbequina olive originated. Here, as in very few other olive
growing regions in the world, the cultivation process has remained organic and the harvest is reaped by hand so as not to
bruise the fruit and thereby adversely affect the oil's quality. Lérida extra virgin olive oil comes from the result of the first
extraction process of the select Arbequina olives. This process is carried out in a cold environment without pressure.

LES COSTES ESTATE OIL
This property, bought by Don Domingo Vea Santclement in 1942, was home to approximately 350 Arbequina
olive trees. Over the years, the family purchased more acreage from adjacent estates and now has over 3,250
Arbequina olive trees! The average Arbequina olive tree on the Les Costes estate is 200 years old. As a result
of increased age, productivity is reduced by about 20 kilos per tree. The region’s lack of rain further reduces
the estate’s harvest. Les Costes is known to be difficult to access and farming is therefore complicated. The
end result is well worth it! The region’s soil is incredibly rich in minerals making Les Costes Estate Oil a truly
outstanding liquid gem.

Avelino Veá, has searched for 500 year old trees to produce this superb extra-virgin oil. The age of the trees
is authenticated by reference to local records and family archives. Veá offers a strictly limited production
which is presented in hand-crafted glass 'taberna' decanters, of the kind used throughout Spain during
Columbus' lifetime. Each decanter comes complete with a glass stopper, and is decorated with specially
designed labels. Every case, and every decanter, is numbered and packed in individual gift boxes using
Galician pine - a magnificent presentation to celebrate the historic voyage of Christopher Columbus from
Spain to America over 500 years ago. The extra-virgin olive oil itself is of outstanding quality, color and

From the Carlos Falco family farm near Toledo, Spain, this ultra premium extra virgin olive oil has
a gleaming golden hue, with exceptionally vivid and intense aromas. The scent is reminiscent of
green tomatoes, freshly mowed grass, artichoke and green almonds. On the palate, it exhibits
beautifully concentrated green vegetable and nutty aromas. Its finish is pleasantly spicy and
persistent indicating its high poliphenol content (antioxidants); seven times that of the average oil.
It is estate bottled in dark Bordeaux style glass like those of the family’s world class wines. The oil is made predominantly
from Picual olives and is custom blended with Arbequina olives; it is then processed within two hours of being harvested.
It adds refinement and flavor when drizzled over roasted vegetables, cured meats and grilled fish. It is also excellent for
tossing with pasta and salads or simply dipping a piece of wonderful crusty bread.

Walnut Oil in Orange Tin - A L’Olivier extra virgin walnut oil is made in our Poitou mill exclusively from local toasted
walnuts. The best quality walnuts are lightly toasted to bring out their full, warm flavors. They are gently pressed to
ensure quality oil with a smooth finish. They are stone-milled and gently grilled to add the sweet and pleasant flavor
of cooked kernels. They are then placed in a hydraulic press where the oil is extracted. Walnut oil is rich in omega 3
fatty acid, essential to a healthy diet. It is delicate, lightly roasted, fruit beautifully enhances salads.
Toasted Almond Oil in Orange Tins - Made from fresh, hand roasted almonds that are pressed, lightly filtered and
bottled, toasted almond oil has more natural antioxidants than refined nut oils.

Toasted Sesame Oil - This Asian oil is rich in phospholipids and essential fatty
acids. It is prepared in the traditional manner. The sesame seeds are grilled and
then crushed to ensure superior flavor. Using a little of this very sophisticated oil
toward the end of cooking will give any dish an Asian flair. This oil can be
heated, and is well suited to wok cooking.
Toasted Rapeseed Oil - This oil is obtained from the first pressing of rapeseed
immediately after being toasted in order to bring out its full flavor. Its exquisite
scent and robust taste make it a wonderful dressing for salads.

In the shadow of the Canigou mountain, Papillon Extra Virgin Olive Oil is produced
from olives from the Combusta olive grove in the district of Salses le Chateau on the
French Mediterranean coast. This area is bathed in sun from morning through evening.
Arbequina and Koroneiki varieties are beautifully blended giving the oil a very fruity taste,
neither bitter nor spicy. It is very well balanced with notes of apple, artichoke and almond with extremely
low acidity. Papillon Extra Virgin Olive Oil is grown without the use of pesticides. It is beautifully
presented in a metal tin designed to protect freshness with an anti-spill pourer cap. This extra virgin olive
oil is best used as a finishing oil to dress dishes such as chicken, fish, vegetables, pasta and salads.

CHATEAU D’ ESTOUBLON
The Château d’Estoublon is located on the southern slopes of the Alpilles mountain range, near
the village of Fontvieille. It lies within the geographical territory defined as the Appellation
d’Origine contrôlée Vallée des Baux de Provence. The history of the estate, sometimes peaceful,
often marked by war, conflict, and successive frosts, is closely linked to the history of Provence
itself, where the estate is undoubtedly one of the most outstanding sites.
The Estoublon olive groves contain 5 different varieties of olive, Bouteillan, Grossane,
Salonenque, Béruguette and Picholine. Each variety of olive is harvested by hand,
separately so each one is picked at its optimal level of ripeness. Then the Estoublon
olives are crushed and pressed individually for the best results and each of the varietal oils are stored in separate tanks until it is
time for bottling or blending to obtain the estate’s signature A.O.C. Extra Virgin Vallée des Baux blend.

This oil radiates a beautiful intensity of color with a very slight opacity and a lovely bouquet. It has a mild nose, combining
almond and green apple, with a sweeter note of watermelon. The attack is unctuous, mild, and fresh while the dry matter
present throughout the entire tasting provides good balance. Retro-olfactory hints of freshly-cut grass that finish on a slightly
pungent note. A delicate balance of all the varietals going into the blend, it will suit very well any course of your meal.

Salonenque - Fresh, grassy, round and buttery. With aroma of fresh cut grass, La Salonenque is
very fresh on the palate. This is the lightest of the varietals.

Bouteillan - Developing aromas of asparagus tips, sweet tomato leaves and green apple.
Beruguette - Vegetal, fiery and full bodied. This oil has an extraordinary flavor of artichoke and green hazelnuts. La
Beruguette is slightly bitter with a very characteristic hot and spicy aspect.

It is extracted from olives called Racimo, a variety unique in the world with Chilean origin. Petralia is certainly the most

The avocados used to create this delicious oil are manually harvested from November 15th to December 15th from Chileangrown Hass avocados grown in the Central Valley where TerraMater only uses the avocados of the most experienced

TRADITIONAL BALSAMIC VINEGAR & BALSAMIC CONDIMENT
Balsamic vinegar is manufactured from the juice of crushed white grapes, typically, trebbiano
grapes. The grapes are slowly reduced to create a concentrated must, which is then
fermented in a slow aging process that concentrates the flavors. The flavors develop and
intensify over the course of time while the vinegar is stored in wooden casks. The end result
is sweet, viscous and concentrated.
Balsamic vinegar is classified in two categories: Industriale also called Condimento, and
Tradizionale. Tradizionale, the finest balsamic vinegar, is labor-intensive to produce. To
receive this designation, by Italian law, the vinegar must be produced from 100% pressed
grape juice--called “must” – that is cooked down, then aged in a series of special casks for no
less than twelve years. Only two consortiums produce true balsamic vinegar, Modena and
Reggio Emilia.
Modena (Aceto Balsamico Tradizionale di Modena) designates balsamic vinegars age by label color. Reggio Emilia (Aceto Balsamico
Tradizionale de Reggio Emilia) uses a similar system to indicate the age of its balsamics. A white label means the vinegar has aged for at

least 12 years and a gold label bearing the designation “extravecchio” indicates that the vinegar has aged for 25 years or more. In
addition to Tradizionale, most companies produce a less expensive, but high quality vinegar, called Industriale or Condimento that is
the same vinegar but not aged as long.

carries three brands of Tradizionale approved by the Consortiums of Reggio Emilia & Modena. They are Cavalli, Del Cristo and Villa

CAVALLI
Cavalli Balsamic is produced by the Cavalli brothers, sons of Ferdinando Cavalli, the legendary founder of the Reggio Emilia
Consortium. Giovanni Cavalli, resigned from the Consortium in order to independently produce Balsamic of Reggio Emilia according
to his own exacting standards. Although his father founded the Consortium, Giovanni believed that he must be free of the
Consortium's constraints to achieve his vision of excellence. The Cavalli name and reputation assures the highest quality.
By law, this vinegar must be aged in wood casks of oak, cherry, mulberry, chestnut or juniper. Two basic levels of quality have been
established --Silver Seal and Gold Seal. In Reggio Emilia, the Silver Seal represents balsamics aged a minimum of 12 years and the Gold
Seal 25 years. However, these are minimums and do not reflect the true age of many of Cavalli’s balsamics which can reach up to 300
years old.

Riserva Nando, named after Ferdinando Cavalli, is the condimento balsamico that he kept for his personal use. The
antique mulberry and juniper barrels that Nando collected in the late 1920’s have imparted this product with silky
smooth richness, like rare port, with a deep prune-like color. Cavalli Riserva Nando is of a higher caliber than most
condimento balsamico due to the fact that it is aged longer in small casks, resulting in a finer, more intense flavor. It is an
excellent addition to marinades, mayonnaise, gravies and salads. Riserva Nando is aged for 5 years in chestnut and
mulberry barrels.

For several decades the Barbieri Family has been passionately dedicated to the ancient values and traditions
handed down for generations. The "Acetaia del Cristo" is a small farm situated north of Modena in Italy. The
Barbieri Family starts the production of the worldwide famous TRADITIONAL Balsamic Vinegar of Modena
from their own biologically grown grapes. Their values and traditions make "Balsamico Tradizionale" a reality
and famous for its high quality. The grapes utilized are Trebbiano and Lambrusco grapes only. The Del Cristo
Traditional Balsamic Vinegar of Modena (DOP) is produced by the family from maturing this grape must over
a long and slow vinegarization process through natural fermentation.
This is followed by progressive concentration by ageing in a series of casks made from different types of wood and without the addition
of any other spices or flavorings. The vinegar’s fluid yet syrup- like consistency is complemented by its rich, dark brown color full of
warm light. Its flavor is distinctly complex, sharp, and unmistakably, but pleasantly, acidic.

MARTIN POURET WINE VINEGARS (ORLEANS)
The Orleans process, as it has long been called in France and other parts of the world, is just the old way
of letting wine ferment slowly into vinegar inside partly filled barrels. Slow, old fashioned methods do not
fit easily into modern economy but Jean Francois Martin, a 6th generation producer of wine vinegar, is
convinced that his company has survived solely because of the merits of the product.
Founded in 1797, Martin Pouret, produces French vinegar using the traditional Orleans slow process. It
is a Cabernet Franc based wine vinegar that uses grapes from the Bordeaux and Loire Valleys. The wine
is fermented, and then aged in oak casks. At the end of this process, exquisite Orleans wine vinegar is
born, retaining the full flavor and deep bouquet of the original
wine. The richness of these vinegars is balanced by its naturally high acidity.
Martin Pouret features a wide range of flavors including classic red & white
wine vinegars, shallot, tarragon, lemon & chili, purple basil, raspberry, apple
cider, chardonnay, champagne & silver sofi award winning four berry.

L'Estornell Reserva Sherry Wine Vinegar is produced from choice Palomino Fino, the primary grape used in Spain's

nutty with an abundance of ripe that is delicately balanced by its tangy acidity. Enjoy its intense flavor as a dressing

This vinegar, produced in the southern region of Priorato in Catalonia, is made exclusively of red Garnacha grapes

and aged in oak barrels for more than 20 years. The vinegar is then extracted from the barrels in small quantities at intervals of no less
than one year. It has a rosy, coppery-colored hue with hints of orange, and is slightly opaque. It has a bold, powerful aroma which
reflects its maturity. Intense and slightly acidic, this vinegar is a completely natural product with no additives.

CONSERVAS ORTIZ
In 1891, Bernardo Ortiz de Zarate founded in Vizcaya (Spain) Conservas Ortiz. Since
then, a total of 5 generations have overseen the family business and continued to advance
the artisanal and traditional fishing and processing techniques of Bernardo. From the
beginning, Ortiz has dedicated itself to the preparation of the highest quality canned
seafood. Today the Conservas Ortiz label is

for tuna, anchovies and other related specialty
canned fish.
The high quality of Ortiz
products is internationally acknowledged and its products are sold today in over 40
Countries.
Preserving the world's fisheries is one of today’s major environmental problems and Ortiz
remains very concerned about the future of their fish stocks, as well as regeneration of the
species they catch. Live bait and trolling techniques to catch the Bonito del Norte tuna and
the use of "purse seine nets" for catching anchovies support the environment. Using only
artisanal methods, Ortiz takes particular care to preserve the art of fishing, the origin and the freshness of the fish.
De Medici has searched for a line of fishes for many years and we are very proud to be welcomed into the Ortiz family and welcome
them to ours. De Medici prides itself in developing the original brands of our producers and could not find a better brand to pursue
than Ortiz. Today, De Medici's line of Ortiz products consists of Anchovies, Bonito del Norte (which Ortiz calls White Tuna), Yellowfin
Tuna and Boquerones (white Anchovies).
TRADITIONAL ANCHOVY FILLETS

Cook’s… “The three best-tasting tunas were made by Ortiz”
The painstaking respect for tradition by workers whose parents and
grandparents performed the same tasks for the generations of Ortiz
owners is still followed closely today. The fillets are prepared using
the traditional method of trimming and filleting each anchovy by
hand, which ensures that high quality is maintained.
Once the anchovies reach port, they are cleaned and placed in barrels
where they are left to mature for at least six months. This is followed
by a six-step process of having the anchovies de-boned and filleted by hand.
Caught close to the coast in the spring using nets, they are classified, salted and then kept until they reach perfect maturity. Once the
anchovies are properly preserved, they are either packaged whole in saltwater, or hand filleted one by one and packaged in olive oil or
salt for preservation.
La Gran Anchoa ala Antigua or the Ortiz selection of large size anchovies is prepared in the traditional manner. The fillets are matured
in barrels for at least six months and are presented with the skin on in extra virgin olive oil.
B O N I T O D E L N O R T E (W H I T E T U N A )
Bonito del Norte is found in coastal waters of the Bay of Biscay in the Basque region of Spain during the summer
season when they come north to dine on the Cantabrian Anchovy. The Bonito del Norte is the most valued
member of the tuna family, highly appreciated for its white flesh, exquisite flavor and delicate texture. This Ortiz
specialty is fished using artisanal fishing techniques with the philosophy that we must preserve our earth and its
resources. Each tuna is individually line caught and not netted. They are fully dolphin safe. When these fish are
caught within a 24 hour period they are cooked in seawater and the loins are then hand-packed in olive oil to

keep it moist and flavorful and left to mature for at least two months before they are shipped to customer around the world. Whether
served as an antipasto, hors d'oeuvres, snack or part of a Spanish tapas meal, there is a pack size and selection for almost every consumer
or chef.
BONITO DEL NORTE VENTRESCA
Lovers of Ortiz's Bonia del Norte may select a special pack of the finest part of the species - -the belly or
"Ventresca". Bonito del Norte is the softest and most delicate part of the Bonito del Norte. It presents a
much lighter and sweeter palate than the rest of the flesh on the fish, and is considered an exquisite
delicacy. At Ortiz, we only use the best fillets.
BONITO DEL NORTE FAMILY RESERVE
Conservas Ortiz launched the first premium White Tuna line which falls into their Bonito del Norte
Family Reserve product line. In Ortiz's search for excellence, this product is the traditional Bonito del
Norte that has been aged an additional year before shipping to the market. The Reserve is aged in the
Ortiz cellars after packaging. The additional aging improves the Bonito's flavor and smoothness.

The Yellowfin Tuna (Yellowfin tuna) originates from the tropical waters. These are wonderful cuts of
Yellowfin tuna loins packed in olive oil. The flesh of this fish is delicious, juicy and has an impressive

BOQUERONES (WHITE ANCHOVIES)
A unique curing process of no longer than three days gives the boquerones their classical white appearance. This
controlled method of curing eliminates the possibility of over-curing as can be seen in many other "white anchovies"
in the market today. Hand selected to order, they are packed "traditional" style in a bath of garlic, parsley and
extra virgin olive oil for their journey from Northern Spain to the your table.
Unlike most other anchovies, Ortiz boquerones are neither excessively fishy nor salty, making them ideal for eating

CAMPANINI
ITALIAN RICES
For three generations, the Campanini family has produced superior Italian
rice. It is located in a small riseria where production is under the strict
supervision of the family. The rice is natural and does not undergo any
chemical treatment. This superb rice is certified Kosher star K. Quality rice
has the following properties: it absorbs it’s cooking liquid well, each grain
remains consistent, and it is not sticky. Three varieties are available from
Campanini:
Carnaroli Superfino- This rice has a long, tapered grain with a central wide pearl. It is not very wide, cooks uniformly and amalgamates
well with condiments. It is perfect for making rice salads, pilafs and risotto that require a less creamy consistency. The cooking time is
approximately 16 minutes.
Vialone Nano Semifino- The traditional rice of the Mantua and Vento regions, it is a round, half-long grain, with a central, wide pearl.
It absorbs twice its own grain weight in liquid and is ideal for making perfectly creamy Risottos.
Arborio Superfino- This rice has a very wide and long grain with a central wide pearl. It is the most well known Italian rice and cooks in
approximately 14 minutes. During the cooking process, the external part of Campanini's Arborio cooks quicker than the central part.
The result is rice that is perfectly "Al Dente," and is great for making Risotto with a firm texture.

True farro, original Italian spelt has a long and glorious history. It is one of the oldest foods on earth. Farro is a wheat-like plant and

BLACK VENUS RICE
Black Venus Rice is a medium-grain rice with a dark black color, nutty, sweet taste and the aroma of freshly baked
bread. It is a hybrid grain that combines Asian black rice with an Italian varietal for a unique texture and appearance.
Its striking black appearance is due to pigments in the rice’s hull. Black rice is a whole grain and an excellent source of fiber as well as
the minerals manganese, molybdenum, phosphorus and magnesium. The cooking time for black rice is approximately 40 minutes.

BENEDETTO CAVALIERI “DELICATE METHOD” SEMOLINA PASTA
Pastificio Benedetto Cavalieri was established in 1918 near Lecce in Apulia, Italy.
Today, the fifth generation of the Cavalieri family continues to run the business with
the same devotion and wholesome ingredients.
The durum wheat still grows on the southern exposed hillside which results in low
yields but consistently high quality. “Delicate methods” of production are then
employed and grain characteristics are enhanced, carbohydrates and vegetable
proteins are preserved, guaranteeing the pasta is more nutritious.
Artisan pasta is by far tastier than mass produced pasta. The use of better
ingredients and a slower hands-on process gives it a better texture that is conducive to holding sauce.
Packaged in cello bags with a colorful blue sleeve, the color and texture of Cavalieri’s pasta is highlighted.
Accurate cooking times and recipes are listed on the sleeve as well. There are 10 one-pound packages per case.

Calamarata: a very wide tubular pasta that is shaped like a ring of calamari.
Mezze Maniche: This pasta is named after short sleeved shirts. It has ridges and is similar to a rigatoni, but is shorter
and square shaped on the ends. It is great for holding a meat and chunky vegetable sauces.
Paccheri: A large, hollow, tube-shaped pasta that is wider than rigatoni and without ridges. This pasta can also be
served stuffed and makes a beautiful presentation!
Pennoni Rigati: This is Penne Rigati, the XXL version! It is about as long as a penne and has the sharp diagonally cut
ends, like an old fashioned quill of a pen. Great stuffed with a soft cheese or with a hearty meat sauce.

Three of the best olive varieties from Spain’s premier olive oil producing regions are

selected from the tree and placed in water and salt for a minimum of three months.
Finally, they are rinsed and bottled with fresh water, salt and aromatic wild herbs.

These caper berries grow wild in the sun-drenched mountains of the VEA estate. Once selected, they are placed in rock salt for a
minimum of three months. Before bottling, the salt is removed by rinsing the caper berries several times in fresh water. They are then
bottled in their softened state in white vinegar with no additives or preservatives. Capers can be enjoyed with purées, sauces, sautés and
dressings, even as a topping for pizza! They are also an elegant garnish to your Martinis and Bloody Mary’s.

Safinter S.A, one of the world’s oldest and largest producers of Spanish saffron,
only harvest Saffron from the La Mancha region of Spain, renowned for its
quality Saffron. Saffron, the dried stigma of the Crocus Sativus plant, is the
world’s most precious spice, owing to the fact that it takes 160,000 flowers to
produce 1 kg.
Safinter follows ISO -3632 standards in its gardening technique and quality
control. The saffron flower must be handpicked at dawn when it is in bloom.
Saffron is only in bloom from 15 to 20 days of the year, usually during the end of October. The
flowers are collected in baskets and transported to the village, where the precious stigmas are removed
by hand.
Many people, even professionals, find it difficult to distinguish good quality saffron from bad. One of the most marked indicators of
quality saffron is its depth of color and flavor when cooking. General guidelines for judging the quality of Saffron before purchasing it
are to look for the following: Genuine La Mancha Saffron filaments should be joined in
three’s at the base, they should be between two and four cm. long and their color should
be a vibrant, bright red, never dark. When the label reads Safinter S.A, even the most

SAFINTER SMOKED PAPRIKA “DENOMINATION OF
ORIGIN"
The cultivation of red pepper for Pimenton was first introduced in the La Vera region of
Spain in the XVI Century by monks. Pimenton de La Vera’s exquisite flavor is due to the

unique process by which is it made. La Vera Paprika (D.O.) is one of the most exclusive spices in the world, due to its unmistakable
aroma and flavor. It is prepared from the dry pulp of the Ocales and Jaranda peppers grown in La Vera region, West of Spain.
The secret of its excellence lies in the laborious and delicate process by which it is dried. A hearth filled with Holm oak wood is kept
burning until the fruits become perfectly dehydrated. It is a slow process that takes between ten and fifteen days to complete. Experts
turn each pepper by hand until dry perfection is achieved.
This traditional system of drying gives the paprika its three fundamental characteristics: Balanced aroma, flavor and stability of color.

This original, famous music-paper bread called Pane Carasatu (or Carasau), is the artisan staple from
the island of Sardinia. The bread was originally baked for nomadic island shepherds, who enjoyed it
with sheep's milk cheese and olive oil. The ‘Panificio’ (bakery) Giulio Bulloni was created in 1970 by
Celeste Bulloni and her family. The children continue to carry on their mother’s legacy today by
maintaining the same exception standards of production for this artisanal product. The bread is
laborious to produce. It is twice baked in wood
burning ovens, and then split apart and baked
again for a crispy texture. The traditional recipe
produces perfectly thin, fragrant and tasty crisp

Appreciated since antiquity for its aroma and vigorous taste, fine mustard reached new quality standards
with the introduction of official laws governing production in 1634 in Dijon, France.
Advancing from handmade means to stone grinding, pressing and sieving the seeds, a production site in the
center of nearby Beaune, ancient capital of Burgundy wine, was established in 1840. Here the firm of
Edmond Fallot (still family owned and operated by Edmond Fallot’s great grandson) continues the
uncompromising production of Dijon mustard by stone grinding the seeds, artfully blending them with the
highest quality ingredients and following Fallot's own family recipes. These methods result in an intense
robust taste not available in commercially produced "Dijon style" mustards.
Perched at the edge of the plate, mustard is by definition, the ideal complement for every type of meat, from beef to
poultry, pork to game, whether served hot or cold. As a seasoning, mustard enhances an oil and vinegar dressing.
In a mayonnaise, or blended in a sauce, it will constitute a worthy accompaniment for broiled meats, roasts, or fish
dishes.
The culinary arts have always been inventive, but when it comes to finding new uses for mustards, they are
extraordinarily so. In fact, mustard is known to possess "aperitif" or appetite-stimulating properties. Offered in the

Fallot Cornichons-As with the Fallot mustards, the utmost attention to the provenance and superb quality of raw materials
are considered for this selection of gherkins (also called cornichon which is the French word for gherkin). Selected extra
small and crunchy gherkins are then placed in the jar and covered with a vinegar based mixture flavored with tarragon and
spices (jealously protected recipe!!) before being capped and pasteurized. Cornichons are great to serve with your hors
d’oeuvres selection, with a cheese board, pate or with selections of other pickled fruit or olives. Fallot cornichons are
available by special order in two sizes.

LAZZARONI COOKIES
The famous Amaretti di Saronno have arrived at De Medici! Lazzaroni has
continued to faithfully produce their cookies in the best Italian confectionary
tradition, according to the original recipe from 1888. The cookies come
beautifully packaged in a variety of different tins and boxes. Amaretti now
come in ‘soft’ as well as classic! Try one with your coffee or crush them and use
the amaretti for baking.
Never before available in the United States, Lazzaroni is happy to offer a range
of tins based on vintage advertising and pop art comics in addition to the
classics line. They contain a variety of cookies, including amaretti and chocolate
dipped cookies. Although traditional for the holidays, the tins are perfect year
round and feature fun, on trend colors.
Also available are the bruschette and the retail gold boxes perfect for supermarket and grocery shelves.
