Stilton has always been a festive favourite and this year is no exception. This year Cropwell Bishop Dairy, one of only five dairies authorised to make stilton, have gone back to their roots to make a Traditional Rennet Stilton dating from the 1950’s. Traditional animal rennet is added to the pasteurised cows’ milk. The whey is ladled out of the curd and then matured slowly to develop a full bodied depth of flavour. The end result is a more complex, richer, well balanced taste with a silky-smooth texture.
