The most aged Grana Padano is known as ‘Riserva’. This is matured for over 20 months. Riserva
Grana Padano has a distinctive flavour and high nutritional qualities which make it a top quality
cheese. Upon request of the cheese producer, only wheels that reflect a specific taste, flavour and
aroma profile are individually tested before they can receive the fire branded ‘Riserva’ mark which is
applied by an expert of the Grana Padano Cheese Consortium.
Riserva Stravecchio Oro del Tempo gives consumers an extra guarantee and
assurance of a high quality product which will be the star of any table.

The New Stilton for C hristmas!
Stilton has always been a festive favourite and this year
is no exception. Like Sir Chris Hoy, Stilton is British
through and through and with the London Olympics
British products have monopolised the limelight and will
continue to over the Winter months.
This year Cropwell Bishop Dairy, one of only five dairies
authorised to make stilton, have gone back to their
roots to make a Traditional Rennet Stilton dating from
the 1950’s. Traditional animal rennet is added to the
pasteurised cows’ milk. The whey is ladled out of the
curd and then matured slowly to develop a full bodied
depth of flavour. The end result is a more complex, richer,
well balanced taste with a silky-smooth texture.
