Award Winning Volunteers
In the month of May Cedarbrook was delighted to have 2 of our volunteers recognized for their hard
work.
On May 7th Volunteer, Nick Votral was presented with the Northampton
County “Outstanding Senior” awar d as well as citations from sever al
local government officials. It is easy to understand how Nick was chosen
from over 100 nominees. Nick has been a dedicated volunteer for over 11
years. He began volunteering one day a week, saw a need for more and
now comes four days a week. His passion for helping others is obvious in
everything he does. If he sees a need, he jumps in to assist. Nick helps
with activities, events, games, bazaars, was Master of Ceremonies at our
talent show. He actively participates in our Second Wind Dreams
program; “An international organization changing the perception of aging,
one dream at a time.” He even dresses as different characters when
needed. Nick began a pinochle group, one table of players, once a week. His enthusiasm for social
activity and mental engagement of the residents’ has helped the game grow; it is now four tables, four
days a week. He is eager to teach anyone to play. Knowing how much the residents look forward to
his visits, Nick never misses a day. It is obvious that he cares deeply for every resident. Can you put
a value on how Nick’s interactions with residents inspire someone’s self-worth and happiness? No,
you can’t because what Nick gives them is priceless. He knows how to lift the spirits of others. Nick
is extremely modest about his gifts to Cedarbrook. He makes a difference in someone’s life every
time he enters the building. We are very fortunate to have Nick as our volunteer.
On May 21st we were honored to have our volunteer, Rita King chosen for
the Lehigh County “Unsung Hero’s” award, as well as citations from several
local government officials. This award recognizes older adults of our
community who display exceptional generosity with their time and talent to
enhance the lives of others. Rita is a shining example of this kind of person.
Rita’s extraordinary dedication and perseverance to improve the quality of
life for others is staggering. She volunteers as a member of our auxiliary,
where she serves as the treasurer. Her duties as an auxiliary member are
countless. Rita is also a driving force in running two bazaars each year,
where she is helping to organize, make craft items, food and bake goods.
She helps run several raffles and bake sales a year; often donating some of
the items herself. Rita also keeps a stock of assorted greeting cards and
helps residents send cards when appropriate. She brings lots of enthusiasm and encouragement to our
residents when she assists at the weekly bingo game every Friday. Need a listening ear, a warm heart,
some encouragement during a difficult time? Rita is your woman. She has an extraordinary ability to
do a million things to help others, but one of her greatest gifts is her compassion and remarkable
ability to touch others and empower them to use their strengths to strive forward through adversity.
She inspires others to reach within themselves and be their best. She has personal strengths that are
boundless. Rita is a shining example of a truly positive role model for, not only seniors, but for
everyone. Rita brings her grandchildren with her sometimes. She encourages them to interact with
our seniors and help where they can. They are wonderful volunteer trainees. We are blessed to have
this little “dynamo.”

Mary Ann Grega, RN.
Assistant Director of Nursing
Mary Ann comes with 4 years of experience as an Assistant Director of
Nursing from Weatherwood Nursing Home and Rehabilitation Center.
Mary Ann graduated from Geisinger Medical Center, School of Nursing
and has worked in a variety of settings, acute care, home care and
Long-Term Care.
Married 33 years with 1 daughter and 2 dogs. Mary Ann enjoys good
conversations, biking, reading and ballroom dancing.

Cedarbrook volunteers shine brighter than July 4th fireworks! They also
create the same amount of excitement with our residents. When a volunteer
enters the room our residents and staff light up as their day is brightened by
our amazing volunteers. We are truly grateful for your help and support.
Lazy, hazy days of summer are well upon us. I hope everyone is able to take
sometime to relax and enjoy the beautiful, sunny days and the fireworks in the night sky.

Recipes from Home
Dining Services encourages residents, family
members, and staff to participate in the Recipes from
Home Program. We are always looking for new ideas as
well as those ‘old time’ favorite recipes. Recipes can be
placed in the Recipe Box outside of the Receptionist
Office. Recipes could be as little as a dessert or as big as
an entrée. Get your name in the Hillside News, by
donating a recipe or you can choose to be an anonymous
participant. So go ahead and share some of those
wonderful recipes. You never know, your neighbor may
enjoy them as much as you do!!

Tips for Keeping Your Money and Valuables Safe
Although we discourage residents from keeping money and valuables in
their room, we realize that many of you will choose to do so. Therefore, we
would like to offer these tips to help you keep your money and valuables safe
from loss or theft. Since you have access to the money in your account during
normal business hours Monday through Friday, we suggest that you only
withdraw the amount you need for immediate use. If you need larger sums of
money for gifts or to reimburse your family members for purchases made on
your behalf, we suggest that you contact Financial Services to arrange for
payment by check. If you choose to keep money and valuables in your room,
we highly recommend that you secure such items in the locked drawer of your
bedside cabinet. Keep your key with you, or keep your key out of sight in a
safe place. As soon as you realize that your money or property is missing, it
is important to report it immediately to the Charge Nurse. Cedarbrook will
not assume responsibility for replacing missing property kept by residents on
their person or in their room. However, we will take action to investigate, and
try to recover your property if possible. Finally, we ask that you help us
maintain a current inventory of your personal property. Any property that you
purchase or receive during your stay should be added to your Valuables
Received After Admission Form, including a description of the property.
This information is essential when trying to locate missing items.

us discover our residents’ dreams. Please submit form either to Mary Hazzard,

Every quarter each Unit (shift specific) will have the
opportunity to be gifted a free lunch by fulfilling the dreams of three
residents.
Rules:
1. Inquire from a resident who has not had their dream fulfilled and
complete a Dream Discovery form (attached or on each nursing unit).
2. Talk with staff and family members on how to fulfill the dream.
Connect with a Cedarbrook Dream Catchers board members for
support:
St. 1 - Zulma Alvarez; St. 2 - Nancy Hills; St. 3 - Dave McQuillen;
St. 4 - Jenn Brown; and St. 5 - Bert or Fran.
3. Submit the Dream Discovery form and dream fulfillment plan to Cedarbrook Dream
Catcher’s board for review.

April & May 2015 Dreams fulfilled by
Cedarbrook Dream Catchers...
On April 28th, Kathryn’s dream was to
re-experience hanging out at the “Bar,” like she did
in the “good old days.” Nurse Lois and her team
made sure that Kathryn was all dolled up as she had
an amazing dinner with her son Jay at Emeril’s
Italian Table, played the slot machines and danced to
the “Oldies” music. Kathryn was smiling from ear to
ear, as she cut a rug to an oldie but goodie Elvis song.
Nurse Lois very much enjoyed getting to know even more
about Kathryn’s history. While driving her to the Sands,
Kathryn pointed out where she grew up, the various
landmarks and street names.

The activity room on Station 5 was transformed into an
upscale salon on May 24th to fulfill Eileen’s dream of a Spa
Experience. Her daughter Mary drove all the way up from
Maryland to realize this dream with her mom. Eileen included
her roommate and the other female residents on the unit for
this “ladies only” activity. The Spa Salon included pink
pudding cups for “finger bowls”, cotton candy for “cotton balls”, marshmallows and tootsie rolls
as “nail polish.” Eileen received a make-up application from volunteer Alex, a hairdo from Nurse
Lois and a manicure from Ros. The most delicious part of the dream was eating the pudding finger
bowls, cotton candy and the marshmallow with tootsie rolls.

Employees’ Birthdays for July
Selenium
Selenium is an antioxidant, helping to protect
against cancers of the colon, prostate, &
lungs. It also helps to boost the immune
system. Because the risk of cancer increases
as we age, it’s important to get enough
selenium each day to minimize your risk. The
recommended intake for Selenium is 55
micrograms daily.
Selenium works in two major ways to fend off
cancer causing free radicals. First it works
side by side with vitamin C, sparing the
vitamin while sharing the antioxidant burden.
Secondly, it is needed for the production of the
enzyme called glutathione peroxidase, which
plays an important role in the immune system.
Fortunately, selenium is easily absorbed.
However, this absorbability also makes it easy
to consume too much, especially if you take a
supplement. Experts recommend that you not
get more than 400 micrograms daily.

rooms or other public areas. Please dispose of leftover food/drinks properly.
Some residents have food and fluid restrictions, and having access to
unattended food and drinks could be harmful.
All food items, including fresh fruit or vegetables for the residents must be
in a bag or a container.

Minutes - May 28th
Notice of Rights. Your nursing facility must inform you orally and in writing, at the time of your
admission to the facility, of your legal rights while you are a resident of the facility. A written
statement of your rights must also be provided to you by your nursing facility upon reasonable
request.

Rights of Incapacitated Residents. If you are judged incapacitated under the laws of the state, a
person will be appointed under state law to act on your behalf.

New Business:
 Mary Hazzard, Assistant Administrator reported on the following:
- New website – announced Cedarbrook has a new website
“www.cedarbrookseniorcare.com.” Website includes information about Cedarbrook and
services Cedarbrook provides. Welcomed residents/families to review the website.
- Pharmacy provider – announced as of July 1st, Phoebe Pharmacy will be the new pharmacy
provider.
- Proposal for management – The LW management contract ends on June 30th. The County
Executive has selected Good Shepherd Rehab Hospital to take over as of July 1 st. The County
Commissioners will review and vote on the contract next week. The contract provides the
Director/Administrator, Chief Financial Officer, and consulting services at Cedarbrook.
- Advisory Task – The Board of Commissioners established a Cedarbrook Advisory Team to assist
the Commissioners in creating a strategic plan for Cedarbrook. Rev. Rodney Wells, retired
CEO of Phoebe Ministries, Dr. Debbie Salas-Lopez, Chief Medical Office of Lehigh Valley
Health Network, and Anne Baum, VP of Capital Blue Cross were selected from the community
to serve on the Advisory Team. They are holding a public meeting Thursday, June 25 th from
6 to 7 p.m. at the Lehigh County Government Center. Comments and suggestions from Lehigh
County citizens, residents, visitors, and employees are welcome.
 Introduction of new Assistant Director of Nursing – MaryAnn Grega introduced herself.
MaryAnn welcomed residents to bring concerns/issues to her.
 Alice Christman, TR reviewed the scheduled activities for July. Paul Swanger;
Robert Ballonoff; JR Peterson; Jimmy Edwards; “Talent Show;” Glenn Miller; Mark Dezii; and
Second Wind Dream Polka Party.
Residents’ Food Committee minutes from May and June
Minutes - May 28th
The meeting began with a review of the minutes from the last meeting.
Old Business:
 See previous minutes.
New Business:
 The residents requested having Manhattan Clam Chowder.
 One resident stated that the 3 bean salad is good.
 We went over the Father’s Day Menu: BBQ Chicken or Fresh Cut Beef, Twice Baked Potato,
Green Bean Casserole or Harvard Beets, Apple Pie or Hand Dipped Ice Cream.

 We also went over the July 4 menu: Pulled Pork BBQ Sandwich or Parmesan Chicken
Sandwich, Baked Potato, Corn on the Cob, Cucumber Salad, Cherry Pie or Fresh Fruit.
 The next meeting will be held June 18th at 3:00 pm or immediately following Resident Council.
Please encourage your fellow residents to attend the meeting. The more participants we have,
the better we can serve you!

The meeting began with a review of the minutes from
the last meeting.

New Business:
 Informed residents Chef Richie was here to help us until the new
Assistant Manager would start.
 The fried chicken from today’s lunch was excellent.
 The dining room staff on the weekend was not coordinated well and
did not pass the salads accordingly.
One resident in the MDR is not getting his gelatin every Monday, Wednesday, and Friday.
One resident stated that the Brussels Sprouts are roasted too dark.
The residents would like Taco Salad put on the menu.
One resident said that there is a large variety of vegetables that are served.
One resident would like chicken every time it is on the menu.
One resident suggested having thin crust pizza.
One resident said that the skin on the breakfast sausage is too tough.
There was a suggestion to have either sauerkraut or chili with the hot dogs once in a while.
The residents would like fine chopped celery and onions in the potato salad.
We discussed the Avian Flu and that there may be shortages in egg products due to this
situation.
The next meeting will be held July 16th at 3:00 pm or immediately following Resident Council.
