Why mushrooms? Mushrooms (fungi)
play a key role within our ecosystem. They
naturally fortify plants by releasing nutrients
into the soil. Changes in modern agricultural
processes over the last century (including:
heavy tilling, pesticides, herbicides, etc...)
have caused a disturbance in this process and
may explain the decreasing concentration in
Ergothioneine and other nutrient levels in our
population.
